NSC Welcomes New Director By Marcella Peyre-Ferry
David Keller has been welcomed into the position of executive director of Oxford Area Neighborhood Services Center (NSC) as of July 23. Keller has more than 20 years of experience working with nonprofit organizations, particularly in the arts, and most recently he was with the Smyrna Opera House in Smyrna, Del. Keller said that one reason he was attracted to the role of executive director for NSC is that he is used to living and working in small towns. “I grew up in southwestern New Jersey in Salem County; it’s very rural,” Keller said. “When I was looking for a new job opportunity, I saw the listing for the center and immediately was intrigued. Early on in my life, my parents were churchgoers, and they instilled in me
the love and the need to give back to the community.” He explained that he had served as his church’s mission chair in the past, running that committee for about three years. “That committee did many of the things this organization does, so I felt like I was a good fit,” he added. NSC provides direct services such as a food bank, fuel assistance and help with emergency needs. The organization also helps people access information and provides referrals to services and programs NSC does not directly offer. The organization helps link volunteers who want to help with those in need of assistance, plus it provides office and operating space for a variety of health and human service agencies. Keller is looking forward to working with the NSC board members. “I could feel their passion for the organization. See NSC pg 3

Youths from 4-H clubs throughout Chester County proudly showed the animals they have been raising throughout the year, as well as their projects on a variety of topics, during the Chester County 4-H Fair held Aug. 6 to 11 at the Romano 4-H Center in Honey Brook. The event also gave youths an opportunity to share their knowledge with others. On Aug. 7, free tours of the fair were offered to the community. The tours were conducted by 4-H members, including Zach Johnson of Elverson, who is a member of the Chester County 4-H Swine Club and the Chester County 4-H Livestock Judging Team. “(The Swine Club) is actually the largest (4-H) club, consisting of over 60 people,” Zach said, noting that the club meets at the Romano 4-H Center. “We See 4-H Fair pg 4

Her name is Lorraine Murungu. Her son, who is named Blessed, was born with cerebral palsy, and he is paraplegic and unable to speak. Murungu has learned to make rag dolls, a product that can be marketed heavily near the beginning of the school year in Zimbabwe, where Murungu lives. A loan from a HOPE International group has helped make her business possible. When Jeff Rutt, founder of HOPE International, landed in Zimbabwe with a team of 22 others in January, he was thinking about the difference HOPE International has made by teaching individuals in 15 countries about savings groups and microfinance. But as he watched Murungu and other women who have benefited from HOPE as they worshipped God, he found himself learning from them. “I heard them talk, praying for each other and supporting each other,” said Rutt, who was struck by the humility and gratitude he witnessed. “Before we left, Lorraine asked me, ‘What can we pray for, for you as you go back to Pennsylvania?’ That struck me as insightful and showed me so much depth of character and integrity,” said Rutt. HOPE International is a Lancaster-based nonprofit that strives to empower clients through basic business training to help them start their own businesses. The organization is currently planning its 18th annual golf tournament at Heritage Hills Golf Resort, 2700 Mount Rose Ave., York, on Friday, Sept. 14. Round one of the four-person scramble-format tournament will

According to HOPE special events coordinator Carley Bilindabagabo, the tournament can comfortably accommodate about 160 golfers per round. Special prizes will be given to golfers who are closest to the pin, make the longest drive, or shoot a holein-one. Through working with her savings group, called “Kuwirirana,” which loosely translates to “getting along,” Murungu was able to purchase a sewing machine she can use to make rag dolls. Labor Day Auction from pg 1 Hospice & Community Care’s 34th annual Labor Day Auction will be held at the Solanco Fairgrounds, 101 Park Ave., Quarryville, on Saturday, Sept. 1, and Monday, Sept. 3, beginning each day at 7:30 a.m. with Amishmade food, specialty auctions, and packed schedules. The Labor Day Auction is free to attend, with proceeds from winning bids and food sales benefiting patients and families receiving hospice and palliative care and bereavement support. The two-day event will feature new and used items up for bids, a furniture auction, an array of gift certificates and gift baskets, and five specialty auctions. The specialty auctions on Sept. 1 will feature plants, artwork, and days of care. Through the auction for days of care, folks will be able to contribute directly to patient care. On average, a day of hospice care for one patient costs $186. Auction bidders may “buy” one or more days of care. The art auction will offer original paintings from local artists as well as the debut of the 2018 Memorial Garden Ornament. Gardeners will love the plant
auction, which will continue on Sept. 3 in order to accommodate the six truckloads of plants donated to the fundraiser. A high-end auction on Sept. 3 will focus on vacations, fine jewelry, handyman services, once-in-a-lifetime experiences, and handcrafted items. Additional auctions that day will include sports and quilts. The sports memorabilia auction will showcase items from regional, state, and national icons with guest auctioneer and SportsTalk host Eric May. The specialty quilt auction will offer hand-quilted pieces from Amish crafters, quilters’ groups, and volunteers, as well as gently used quilts in a wide range of sizes. There will also be opportunities to win a 2018 Ford Mustang Coupe and $2,000 or $1,000 Visa gift cards. Folks who are hungry during the Labor Day Auction are invited to join the Auction Club, which is designed for anyone who loves Amish-made food, enjoys access to an all-you-caneat array of hot and cold sweets and savories, and wants to support medical, emotional, and

NSC from pg 1 one of the objectives is to expand NSC’s volunteer base. Keller’s wife, Brittany, works as a marketing manager in Wilmington, Del. They plan to relocate from their current home in New Jersey to an area that will be a closer commute for both of them. Keller is a Philadelphia sports fan and an avid tennis player. He is also interested in travel in the United States, as well as in American history. He plays guitar and mandolin in an acoustic country/rock band called Along the Road. “It’s a great cathartic release to get to play music and have fun together and sing and have a good time,” he said. NSC is located at 35 N. Third St., Oxford. NSC also operates the Neighborhood Thrift Shop at 21 S. Third St., Oxford, where donated items are made available to clients or sold at reasonable prices to local shoppers. For more information, readers may visit www.oxfordnsc.org, call 610-932-8557 or search for “Oxford Area Neighborhood Services Center (NSC)” on Facebook.

vitamins and minerals plays a role in strengthening the immune system. Fresh fruits and vegetables contain a bevy of vitamins and antioxidants that help the immune system fight off potential infections. Many people bemoan the absence of fresh fruits and vegetables at their local grocery stores during certain times of the year. But the Cleveland Clinic notes that manufacturers typically package frozen fruits and vegetables at peak ripeness. That means frozen fruits and vegetables provide similar nutrition to fresh fruits and vegetables during those times of year when foods are not in season. Like a healthy diet, routine exercise provides a host of benefits, and one such benefit is its impact on the immune systems. The U.S. National Library of Medicine notes that the precise relationship between exercise and immune system function remains a mystery. Some researchers suspect that physical activity may flush bacteria out of the lungs and airways, reducing one’s risk of getting a cold, flu, or other illness. Another theory suggests that exercises causes changes in white blood cells, which the immune system uses to fight disease. These exercise-related changes may make it possible for the cells to detect illnesses earlier than they would if the body was not exercised regularly. While it is important to note that these are just theories, the Harvard Medical School suggests that it is reasonable to consider moderate regular exercise an important component of a healthy, immuneboosting lifestyle. Men and women interested in boosting their immune systems will no doubt find many products claiming to do just that. The Harvard Medical School urges consumers to be skeptical of such products, many of which make dubious claims that are not rooted in recognized scientific research. The immune system remains a mystery in many ways. But several healthy strategies may help people bolster their immune systems and potentially reduce their risk of infection.

Knowing that the board was so committed to the organization, I felt like it could be a good fit,” he stated. “I could jump right in and use my 20-plus years of experience in nonprofits to advance the organization to the next level.” Keller brings a number of positive traits to the new job. “I think I’m very energetic, first and foremost. I think that I’m a good communicator, a good people person,” he said. “One of the directives from the board is to get out in the community and represent the organization. I feel like I would do that well.” Keller noted that he would like to become involved in the community, partnering with other organizations and increasing awareness of NSC. Keller is just the third executive director NSC has had since its founding in 1971. Coming into such an environment, Keller is not planning on making immediate changes. “I think we need, as an organization, to take a step back and evaluate where we are and get an overview of where we stand and where we can improve,” Keller said. “I think little things matter, so I think we need to find those little nuances we can correct and make better, and that will help propel us into the future.” NSC board chair Rudy Allen and search committee member Justin Hostetter are both enthusiastic about Keller. “We were very impressed with his willingness to go out and become engaged in the community,” Hostetter said, adding that
A strong immune system can go a long way toward ensuring one’s overall health. But bolstering one’s immune system is no small task, as even medical researchers admit there is still much to learn about the links between lifestyle and immune function. The Harvard Medical School notes that a strongly functioning immune system requires balance and harmony. So it stands to reason that a highly unhealthy lifestyle will compromise the immune system, but it is also worth noting that pushing the body too hard in the other direction also can adversely affect immune function. Researchers continue to study the potential links between immune response and variables such as diet, exercise, age, and psychological stress. Though studies are ongoing, the Harvard Medical School notes that the immune system is bolstered by various strategies associated with healthy living. Smoking is linked to a host of diseases and ailments, so it is no surprise that it also compromises the immune system. The National Cancer Institute (NCI) notes that cigarette smoke contains high levels of tar and other chemicals, which compromise the immune system’s ability to effectively combat infections. The effects of smoking on the immune system are both immediate and long-term. Smokers’ immune systems may not be able to fend off infections like the common cold as effectively as the immune systems of nonsmokers. And over time, as smokers keep smoking, their immune systems will continue to weaken, which the NCI says makes them more vulnerable to autoimmune diseases such as rheumatoid arthritis and multiple sclerosis. There is no magical food or foods that can strengthen the immune system to a point where infection is impossible. However, the Cleveland Clinic notes that a balanced, healthy diet that includes a mix of

Upon arrival at the stadium and after the resolution of a computer ticketing glitch, the members of the group were surprised to learn that they would be given access to club-level seating. “It took us a while to get in and once we got in, I have a buddy in the Eagles (organization) and he met us at the door and ushered us through, and guest services gave us passes for the club level,” said Turner. “We were treated to club-level seating, which was air conditioned, and there was complimentary food and beverages and sideline access.” Turner, who was accompanied by his wife, Joy, and their daughter, Sam, said he enjoyed visiting with the veterans, most of whom had never visited the Eagles’ stadium. “One of the vets told me his mom was an Eagles fan. It was really moving.” He said that the local veterans really enjoyed their special treatment at the practice. “The Eagles showed their love and respect for our veterans, and our veterans appreciated it,” Turner said. “It was nice that they got a little bit of the VIP treatment.” David’s Drive is named for David Turner Jr., an avid Eagles fan, who was a cashier at the canteen at the VA hospital when he

Honoring Our Veterans License Plates Available The Pennsylvania Department of Military and Veterans Affairs (DMVA) has posted information about Honoring Our Veterans license plates that community members may obtain for their vehicles as a way to show patriotism and support veterans in need. Available for passenger cars, motorcycles and light-duty trucks up to 14,000 pounds, the license plates may be purchased by anyone. A portion of the proceeds benefits Pennsylvania’s Veterans’ Trust Fund (VTF). The VTF issues grants to statewide charitable organizations that aid veterans service organizations and county directors of veterans affairs. These advocates use available grants to assist veterans in need of shelter and necessities of living, among other services. In addition to the sales of the license plates, there are a number of other programs designed to help fund the VTF in support of Pennsylvania veterans. To learn more about VTF programs and to purchase an Honoring Our Veterans license plate, readers may visit www.vtf.pa.gov or www.facebook.com/padmva.
Dealing With Extreme Heat The Department of Health shares important tips to keep families safe in extreme heat this summer. During the heat, it is important to protect oneself from harmful ultraviolet radiation and stay hydrated to prevent heat-related illnesses. Several safety tips are recommended to help people prepare for the summer weather. People should remember to wear lightweight, loose-fitting, light-colored clothing; a hat or visor; sunglasses; and SPF 15 or higher sunscreen and reapply as necessary. To stay hydrated, people should drink plenty of water throughout the day and not wait until they are thirsty; outdoor workers should drink between two and four cups of water every hour; avoid consuming caffeinated, alcoholic, or sugary beverages; and replace salt lost from sweating by drinking fruit juice or sports drinks. To safely exercise during the summer, people should limit outdoor exercise and stay indoors in air conditioning on hot days; exercise early in the morning or later in the evening to avoid the hottest part of the day from 11 a.m. to 3 p.m.; and pace oneself when running, walking, or otherwise exerting one’s body. To protect others, children, older adults, or pets should never be left behind in a vehicle. Individuals who may be more at risk from extreme temperatures should be checked on, including infants and young children, people age 65 and
older, and people with chronic medical conditions. It is also important to know the difference between heat-related illnesses, like heat exhaustion and heat stroke. Symptoms of a heat stroke include a high body temperature (above 103 F); red, hot, and dry skin, but no sweating; a rapid, strong pulse; throbbing headache; dizziness; nausea; confusion; and unconsciousness. If someone is having a heat stroke, it is important to first call 9-1-1. After calling for help, the person should be taken to a shady area and cooled down quickly by putting them in a tub of cool water or spraying them with a garden hose. The victim should not be given any fluids, including water, to drink. Symptoms of heat exhaustion include heavy sweating, paleness, muscle cramps, tiredness, weakness, dizziness, headache, fainting, and nausea or vomiting. The person should be assisted in cooling off and seek medical attention if symptoms are severe, symptoms last more than one hour, or the victim has heart problems or high blood pressure. During extreme heat waves, cooling centers are opened in cities across Pennsylvania for individuals without air conditioning. To find a cooling center, readers may contact the local municipality or county office. Additional information on how to prepare for summer weather can be found at www.health.pa.gov.
Roasted Wild Alaskan Black Cod Fish can provide a host of flavors and make for a healthy addition to one’s diet. Alaskan cod, for example, is easy to find and, because it is high in certain omega-3 fatty acids, packs quite a heart-healthy punch. In fact, the U.S. Department of Agriculture notes that wild Alaskan cod contains the same levels of the beneficial omega-3 fatty acids eicosapentaenoic acid, or EPA, and docosahexaenoic acid, or DHA, as salmon. Men and women who want to improve their diets but not sacrifice flavor can try the recipe for Roasted Wild Alaskan Black Cod with Kambu Dashi, Kale and Sage, courtesy of Jill Lightner’s “Edible Seattle: The Cookbook” (Sterling Epicure).
1 tablespoon chopped fresh sage
Instructions: 1. In a spice or coffee grinder, grind 1 tablespoon of the salt and the porcini mushrooms together until very fine (roughly 1 minute); then sift the mixture through a fine-mesh sieve. Cover and set aside. 2. Heat the olive oil in a large soup pot over medium-high heat. Add the onion, garlic, ginger, celery, bay leaves, and 1 teaspoon salt and cook until the vegetables are fragrant and sweating, about 5 minutes. Add the fish bones and scraps, kombu, and wine and simmer for 10 minutes. Add 3 quarts water and simmer slowly over medium heat for 1 1/4 hours, skimming off any impurities, gray Roasted Wild Alaskan Black Cod with matter, and excess ingredients that float to the surface of the broth. Strain the broth Kambu Dashi, Kale and Sage (Serves 4) 1 tablespoon plus 2 teaspoons kosher salt through a fine-mesh strainer, discard the solids and simmer the broth again for 15 min5 dried porcini mushrooms utes. Remove from the heat and keep warm. 2 tablespoons extra-virgin olive oil 3. Preheat the oven to 185 F. Line a sheet 1 yellow onion, thinly sliced pan with parchment paper. Place the cod fillets 2 cloves garlic, smashed 2 inches peeled fresh ginger, thinly sliced on the pan and season liberally with the porcini salt. Place the pan in the oven for 38 minutes. 1 stalk celery, thinly sliced 4. While the fish is baking, place a sauté 2 bay leaves pan over medium heat and add the butter, 3 lbs. fish bones and scraps 4 sheets dry kombu or 1 pound fresh Pacific shallots, leek, and remaining 1 tsp salt. Sauté until tender but not browned. If the vegetables kelp start to brown, add a couple of tablespoons of 1/2 cup dry white wine the broth. When the leek is tender, add the 4 6-ounce Wild Alaskan Black Cod fillets kale and sage and sauté until the kale is soft. 2 tablespoons butter 5. Divide the kale among 4 serving 1 tablespoon finely chopped shallots bowls. Using a spatula, place the black cod 1 leek, roughly chopped on the kale, pour the broth on and around 1 teaspoon kosher salt the fish, and serve. 1 cup stemmed, thinly sliced kale

Organization Welcomes Dubas Keep Pennsylvania Beautiful announced the new hire of Rob Dubas, who joined the team as a program coordinator. Dubas will help facilitate the Illegal Dump Free PA initiative across the state, working with local governments, communities, and enforcement agencies to identify and hold accountable individuals and businesses that choose to dump their trash illegally. IllegalDumpFree PA.org is an innovative program launched in 2015 that provides surveillance camera loans, training, and support to Pennsylvania municipalities and community groups. After working in banking for almost a decade, Dubas earned a Master of Environmental Science and Management from Duquesne University. He decided to change careers to one that made protecting the environment a priority after having spent many hours in the woods volunteering with Pittsburgh-area trail groups, mountain biking, running, and hiking. As part of his studies, he also had internships with an area land trust and a long-term water-quality research project. The Keep Pennsylvania Beautiful Surveillance Camera Loan Program provides grant recipients with three surveillance cameras to capture evidence of illegal dumping at an active dumpsite and technical assistance with installation. To learn more about the program, readers may visit www. illegaldumpfreepa.org or contact Dubas at rdubas@keeppabeautiful .org or 724-836-4121, ext. 107.

Revival Productions, a new nonprofit theater company in Coatesville, recently announced that it will hold open auditions for its upcoming performance of “Miscast Broadway. The show will feature traditional Broadway tunes by unexpected performers. “‘Miscast Broadway’ is a show where actors, singers and dancers perform popular Broadway songs, but with a twist - the song the performer chooses must not match their type, age or gender, explained Vinnie Zambuto, the theater’s director of marketing. He cited an example of an older woman or man singing “It’s the Hard Knock Life, which is normally performed by young orphans in the Broadway play “Annie. “(The goal) is to mix things up and be a little silly, he said. Auditions will be held on Thursday, Aug 23, beginning at 6:30 p.m. at the Gordon Early Literacy Center, 351 Kersey St., Coatesville. Those wishing to audition must register in advance at www.revival -productions.com/auditions. “The revue concept is popular among theaters all around the country, noted Zambuto. “We will put together a show of people singing and dancing. It will be individual performances, but everyone will rehearse together and create a cohesive show. Performers are asked to prepare two 32-bar cuts, an up-tempo tune and a ballad unlike their normal “type. Performers should be prepared to dance, if asked. If needed, a dance call will take place at approximately 8:15 p.m. An accompanist will be provided. The performers must be age 16 or older and must prepare a dance or tune that is family-friendly. “They should have musical ability and a theater performance background, Zambuto noted. “Miscast Broadway will be performed at the Gordon Center on Saturday, Oct. 13, at 7 p.m. All proceeds from ticket sales will go toward funding Revival’s 2019 performance season and its Youth Summer Theatre Camp series. “The (Gordon Early Literacy Center) is located two blocks off Lincoln Highway, noted Zambuto. “The school district has given us this space to use as our theater. It is a full auditorium with over 500 seats. Revival Productions was founded in October of 2017. The goal of the theater is to provide quality and affordable live entertainment in the city of Coatesville, which is curently undergoing a revitalization. For more information, readers may contact Zambuto at vinniezambuto@revival-productions .c o m o r v i s i t w w w. r e v i v a l -productions.com.
