Since its inception, the Welsh Mountain Health Center (now Union Community Care), 584 Springville Road, New Holland, has sought to reach members of the community with needed health care.
Starting in April, the new Union Community Care Mobile Care Team is continuing toward that goal by bringing health care literally to the doorsteps of members of the Plain community from as near as East Earl and Morgantown to Quarryville and Mount Joy. The team, made up of medical provider Janine Muir and medical assistant Heather Parmer, journeys out each Wednesday to homes in specific areas based on a list of requests Parmer has compiled. A circuit of visits is completed every eight weeks. In addition to the aforementioned locations, the unit visits homes in Ephrata, Lititz, Terre Hill, New Holland,

Coatesville, Honey Brook, Narvon, Parkesburg, Gap, and Kinzers.
Muir noted that Union has responded to the fact that transportation is a known barrier to care and that while telehealth can help, mobile units bring providers directly to those in need. “I think our administration has amazing idea generators, but it’s also listening to the community,” she pointed out, adding that providing mobile care enhances the Plain Healthy program that was already in place.
“The Mobile Care Team is working to implement the Plain Healthy program, that serves the Plain population in Lancaster County,” said Muir, noting that the program includes administering vaccines and performing well child checks, as well as making house calls.
According to Parmer, members of the Plain community contact her through a special number.

Powering The Factory

“Any given day we are open, there are between four and 20 volunteers needed to just do what we do,” said Shira Zimmerman, senior director of programs, with The Factory Ministries. According to Zimmerman, the ministry, located at 3293 Lincoln Highway East, Paradise, is fueled by volunteer power. “The volunteers are not just valuable,” noted Zimmerman. “We can’t do what we do without volunteers.”

Dehydration collaboration
Local nonprofits pool their resources to feed the world
BY JEFF FALK
World hunger isn’t a food shortage problem. World hunger is a logistical difficulty, a supply problem.
Working together, a pair of local nonprofit organizations have come up with a solution that is making a real difference in addressing the global problem. The key to their successful solution is an innovative approach to the process of food dehydration.
“The problem isn’t that the world doesn’t have enough food;
it’s the distribution,” said Jeremy Frith, the CEO of Barnabas Aid, an international nonprofit headquartered in Lancaster. “We’re trying to address that problem. It’s a distribution issue, but it’s also an educational issue. We need a change of mindset. We have so much food and people don’t think about it, and when it goes into landfills, it creates problems. That food could be feeding somebody.”
Near the end of 2022, Barnabas Aid, which is located at 80 Abbeyville Road, Lancaster,

Blessings of Hope
approached Blessings of Hope, 500 Becker Road, Leola, about the possibility of donating a $90,000, 20-square-foot commercial food dehydration unit to its ministry. Fresh fruits and vegetables are placed in the unit, which preserves the produce’s nutritional value and extends its shelf life by five years.
From the process, the organizations concocted a dehydrated soup mix that can provide one meal for up to 12 people.
“Our ministry’s mission is to help suffering Christians around the world,” said Frith. “The goal is to get food to places where it’s basically nonexistent. We’re feeding people who need food. We’re doing it because we’re directed to do so in the Bible. We want to help as many people as possible. The suffering in the world is getting worse. We have a duty to help our brothers and sisters the best we can.”
In November of 2023, the Barnabas Aid-Blessings of Hope collaboration sent out its initial container load of donated food -
valued at $250,000 - to Haiti. The second container load of donated food is currently being prepared for shipment to Cuba.
“In the United States, an estimated 80 billion pounds of food is wasted each year, which equates to 242 pounds per person,” said Frith, a resident of Lancaster. “Forty percent of America’s annual food supply is wasted. When we go to a restaurant, we get huge portions of food. But it’s not just a United States problem. A lot of food is wasted in the Western world. Globally, 1.3 billion tons of food is wasted each year.”
Frith said that Blessings of Hope receives so much donated food from farmers, supermarkets and distributors that it is sometimes forced to turn it away. Unused food usually ends up as animal feed or is dumped in landfills.
“We knew the partnership would work,” said Frith. “Blessings of Hope has so much food coming in. A lot of it is food that’s going to go by the wayside if not used.”
More than just work, the partnership between Barnabas Aid and Blessings of Hope has blossomed. It’s a joint venture that has produced a win-win situation.
“It’s been great to have this partnership,” said Frith. “Blessings of Hope has the facilities, and they also have the volunteers. We have the international connections. We know where the food is needed. It enables our participants to realize they are really making a difference. It’s a way for Americans to feel they’re part of the solution, not part of the problem.”
“Now what we want to do is scale this up,” Frith added.

time for a visit and the amount of time necessary to provide services before setting an appointment. “I plot on a map and calculate how long it will take to get there, and I call and tell them what time we will be there at their house,” she explained.
Looking ahead, Muir hopes to see the unit taking part in area gatherings. “We have these community events coming,” said Muir, who noted that at a fair or festival, the team may focus on lead testing, blood pressure checks, or glucose testing.
Nicole Specht, Union Community Care’s chief communications officer, noted that putting the unit on the road is just the beginning. “The way we are mobilizing health care is going to evolve,” she stated,
adding that mapping out the locations of those in need and listening to community members will spearhead the next steps. “(We plan on) having the freedom and flexibility to meet folks where they are (and provide care) with people they trust,” she said.
While the mobile unit puts medical services on wheels, the feel for a patient entering the customized van is not unlike that of walking into a medical exam room. “It pretty much has everything we would need to be able to provide care,” said Muir of the unit, which includes a chair, an exam table, a sink, and the instruments and medicine necessary for the
services the team plans to provide that day. There is also a television for education purposes or a virtual connection if necessary.
Muir noted that the mobile unit represents a new concept in health care by expanding the original vision of the clinic. “The idea of reaching under-resourced people has not changed,” she said. “It’s just taking that mission and making it bigger.”
A blog post about the team may be found at https://union communitycare.org/blog. Information about the Plain Healthy program may be found at the same website under “Patient Care.”

resources in a variety of ways, including advocacy, The Factory Market, a learning center, a youth center, help with housing, and more.
Laurent Pelletier, vice president and commercial branch manager with M&T Bank, has taken part in the bank’s program to encourage volunteerism by connecting with The Factory. “Each of our employees receives 40 hours paid time (during banking hours) to volunteer,” explained Pelletier, who uses some of his hours to stock shelves in The Factory Market
each week. “We are a community bank,” said Pelletier, “so we want to invest back in the community.”
When Pelletier was looking for places for employees to serve, he spoke with Adam Nagle, executive director with The Factory. Pelletier discovered The Factory’s mission to better the community aligned with the bank’s goals. Pelletier and Erica Pennabaker, business banking relationship manager, stepped up to help out at The Factory’s first Homecoming fundraiser in 2021. Since

then, Pelletier’s staff members - Chris DiStasio, Heather Burket, Brittany Hawkins, and Tami Thompson - have all volunteered with the ministry. Pelletier shared that serving goes beyond simply donating money. “At the core of it, it’s helping people that don’t necessarily have what I can get every day,” he said. “There’s a power in actually being there and giving our time. It warms my heart to know that I can help in any way.”
Volunteer Laurie Fleurant said that her efforts serve two purposes. “I volunteer at The Factory because they not only meet people’s needs,
but they also empower them to grow,” shared Fleurant. “I always liked the concept that if you give someone a fish, they have a meal, but if you teach them to fish, they have food for a lifetime. The Factory teaches folks to fish.”
“The Market and the youth center have the highest needs (for volunteers),” Zimmerman pointed out, “But hospitality and early learning and elementary (programs need volunteers as well). Every single department (has needs).”

Untold stories from the Civil
BY ADRIAN ESCHENWALD
During the Civil War, numerous Americans who lived throughout the Northern and Southern states risked their safety to help free slaves and to aid people who sought an escape from the violence. Despite the South being occupied by those loyal to the Confederate cause, many Southerners opposed the conflict, and they operated right under the enemy’s nose to hide escaped slaves and refugees of the war. As the nation pieced itself back together after the war, most of these Americans’ stories remained untold to avoid residual conflicts among neighbors. This included the story of Peggy Rhodes, until Karl Rhodes, her great-greatgrandson, stumbled upon a piece of long-lost family history.
On May 9, Karl visited Mennonite Life, 2215 Millstream Road, Lancaster, to discuss his novel “Peggy’s War,” which details Peggy’s efforts to help Americans who sought to escape the bloodshed of the Civil War. Peggy was a Union loyalist and Mennonite woman who lived in the Shenandoah Valley of Virginia during the war. As violence ravaged the country, Peggy hid other Mennonites and members of the Church of the Brethren who refused to participate in the war in a secret cellar beneath her farmhouse. Peggy protected draft-dodgers until they could safely escape the region, and they often found refuge in Pennsylvania.
“The people who ran the Underground Railroad were mostly
War
Mennonites and members of the Church of the Brethren, and there were large numbers of them in both Virginia and Pennsylvania,” Karl said. The event at Mennonite Life also highlighted several Mennonite hymns commonly sung by refugees as they made their escapes. The current members of the Rhodes family had no prior knowledge of Peggy’s story, although a few rumors related to the Civil War circulated among Karl and his siblings. One rumor spoke of caves near the family home that contained stockpiles of weapons abandoned by deserters. When Karl was 4 years old, his brothers convinced him to crawl down a narrow shaft that they believed to be full of Civil War-era weapons. Young Karl never found the fabled arms, but the endeavor sparked his lifelong interest in the history surrounding the Rhodes’ family home. While conducting genealogy research many years later, Karl finally stumbled upon a book series titled “Unionists and the Civil War Experience in the Shenandoah Valley.”The books contain testimonies from many Southerners who sought compensation for land and livestock that were taken or destroyed by Union forces during battle, including more than 20 pages of testimony from Peggy and her family members. “People often oversimplify life during the Civil War; many Americans in the South didn’t want to fight a war or secede,” Karl said. “This story gives a very different perspective.” For more information, visit https://peggyswar.com.
