“Returntonormalcy”islikelytobethetoptrendingtopicinHongKongforthepastfewweeks: thecallforlessrestrictiveCOVID-19measures,andtheincentivestorestorebusinessand travels,etc.Afteralmostthreeyearsofthecity’s“lockdown”,manyofuscannotwaittogo backtonormal.

But,whatis“normal”?Anddowenecessarilywanteverythingtoresettopre-2020?

Itistruethatthepandemichasbroughttremendousgriefandloss.Duringthistryingtime, we’velearned,we’veimprovised,andwe’veadvanced.For VinoCondiviso,wehavealso foundnewopportunities.Fromthe SabrageCorner lastDecembertotheWineAuctionand MasterclassesthispastJune,wehaveincubatedtheappreciationofItalianwinesfromdifferent angles.Ourresiliencehasrewardeduswithaverysolidgroupoffollowers,allaspiredto becomechampionsofItalianwines.

ValleD’Aosta

NestledintheAlpinenorthwesterncornerofItaly–surroundedbyFrancetothewest, Switzerlandtothenorth,andthePiedmontregiontothesouthandeast;thecountry’ssmallest winemakingareainbothsize(750acres)andproduction(around200,000cases,dependingon vintage).TheofficiallanguagesareItalianandFrench,thoughthenativepopulationalso speakValdôtain,adialectofFranco-Provençal.

ThefirstinhabitantsoftheAostaValleywereCeltsandLigures,whoselanguageheritage remainsinsomelocalplace-names.RomeconqueredtheregionfromthelocalSalassiaround 25BCandfoundedAugustaPrætoriaSalassorum(modern-dayAosta)tosecurethestrategic mountainpasses,andtheywentontobuildbridgesandroadsthroughthemountains.Thus,the nameValled'Aostaliterallymeans"ValleyofAugustus”.Today,therearenumerousmedieval castlesandfortifiedhousesintheAostaValley,mostarevisiblefromthehighwaythatgoesto theMonteBiancotunnel;someofthemdeserveavisitandyouwillbeimpressedbythe magicallandscapes.

Whattoeat

ThecuisineofAostaValleyischaracterisedbysimplicityandrevolvesaround"robust" ingredientssuchaspotatoes,polenta;cheeseandmeat;andryebread.Manyofthedishes involve,cheese,madefromcow'smilkthatoriginatesfromthevalley,allbeenproduced locallysincethe15thcentury.

Regionalwines

Theregion’sbackboneisthenarrowvalleyoftheDoraBalteaRiver,whichflowssoutheast downfromMontBlanc.Thisiswheregrapegrowingisconcentrated,primarilyonsouth-facing lowerslopesandataltitudesuptoaround4,000feetabovesealevel.Steepinclinesnecessitate terracingformostvineyards,andworkingthemrequiresintenselabor.Climateiscategorically continental–harshlycoldinwinterandintenselyhotinJulyandAugust.

ThereisonlyoneDOCfortheregion,Valled’Aosta/Valléed’AostewritteninbothItalianand French.Thevalleyappellationiscommonlydividedinto3sections–Lower,Central,and Upper–eachwithitsownsub-zonesanddefininggrapevarieties:

LowerValley:Almostentirelyredwines,especiallyNebbiolo(locallycalledPicotendro)and blends.DonnasandArnad-Montjovetarethetwomostrenownedsub-zoneshere.

CentralValley:Redandwhitewines,especiallyfromPetitRougeandblends;it’sthelargest ofthethreewiththesub-zonesofChambave(PetitRougeandMoscatoBianco),Nus(Viende Nus,PetitRouge,PinotGrigio(locallycalledMalvoisie)),Torrette(PetitRouge)andEnfer d’Arvier(PetitRouge).

UpperValley:Primarilywhitewines,especiallyfromtheindigenousPrié,whichgrowsalmost exclusivelyhere.Sub-zoneMorgexetLaSalle:is100%Priéindry,sparkling,andsweet versions.

Therearesome40wineriesinValled’Aosta,sixofwhicharelarge,well-established cooperatives:Thesecooperatives,whichareresponsibleforabout70%oftheregion’soutput, servethevitalfunctionofallowingtheirmemberstocontinuefarmingsmall,commercially unviableplotswhilepursuingotherincome-providingoccupations;andtheyproducegenerally good-qualitywinesintheprocess.

AltoPiemonte

MostofAltoPiemonte’swineproductioniscentrednorthofBiellaandNovara,inthenorthern reachesofPiedmont.AcidicsoilsandgenerallycoolconditionswithrespecttoBaroloand Barbaresco,yieldbright,focusedredwinesthathavetheunderlyingmineralityandacidprofile toageeffortlesslyforyears,andinmanycases,decades.Today,AltoPiemontehasbenefitted greatlyfromclimatechangeandgenerallywarmerseasonsthatgivethewinesabitmoremidpalaterichnessthanwasoncethecase.

Theregionhasreceivedbothculturalheritagefromtheregion’scapitalTorinoandalsofromits proximitywiththeMilanarea,thusyouwillfindacuisinewhichisamixofthebestof PiemonteandLombardy.TheValleypartoftheregionproducesthebestricesandthelandscape iscoveredbyricepads,whilethehillysideatthenorthwillhavevineyardsplanted.

Whattoeat

Risotto:anorthernItalianricedishcookedwithbrothuntilitreachesacreamyconsistency. Thebrothcanbederivedfrommeat,fish,orvegetablesandthenyouaddbutter,onion,white wine.ItisoneofthemostcommonwaysofcookingriceinItaly.

Gorgonzolacheese:aveinedbluecheese,madefromunskimmedcow'smilk.Itcanbecreamy orfirm,crumblyandquitesalty,maybeeateninmanyways:Itisoftenaddedtosalads,either straightoraspartofabluecheesedressing.Combinedwithothersoftcheesesitisaningredient ofpizza;Itisoftenusedasatoppingforsteak,sometimesintheformofasaucewithPortor othersweetwine.Itmaybemeltedintoarisottointhefinalstageofcooking,orserved alongsidepolenta.

Bollitomisto:classicnorthernItalianstew,mostcloselyresemblingtheFrenchPot-au-feu, consistingofvarioustoughercutsofbeefandveal,pork,andawholehenorcaponthatare gentlysimmeredfor2–3hoursinanaromaticvegetablebroth.Themeatisslicedthinlyand servedwithcoarseseasalt,mostarda,salsaverde,horseradish,orchutney.Theresultingbroth isskimmed,strained,andusedasabaseforsoupsandrisottos.

RegionalWines

Today,AltoPiemontehasbecometrendyaswineloversandindustryprofessionalslookfor alternativestoBaroloandBarbaresco.ButAltoPiemonte’ssuitabilityformakingworld-class winesishardlynew.Itmayseemhardtobelieve,butinthe19thcenturyGattinaraandnot BaroloorBarbaresco,wasPiedmont’smostfamousredwineandthefavouriteoftheRoyal Court.Sadly,aprolongedperiodofcrisesrangingfromphylloxeraandothervinediseasesin thelate1800stotheriseofindustrialexpansion,specificallywithinthetextileindustryinthe early1900s,causedvineyardsinAltoPiemontetobeabandonedinfavourofmoreprofitable economicventures.

Nebbiolo,knownlocallyasSpanna,reignssupremeinAltoPiemonteandisthemaingrapein alloftheregion’sappellations.IntheLanghe’sproductionzonesNebbioloisfoundalone,but inAltoPiemonte,NebbiolocanbeblendedwithotherindigenousvarietiessuchasVespolina, Croatina,Erbaluce,BonardaNovareseandUvaRara.

InCaremaDOC,theNebbioloiscalledlocallyPicutener,thisareabordersValleD’Aostaand makeslighterwinesthantheotherDOCmentionedbefore.

ThemostimportantsubzoneforNebbioloaretheDOCGs Ghemme and Gattinara,andthe DOCs Boca, Lessona, Bramaterra, Sizzano and Fara.Westofthiscenteris CaremaDOC andthewhitewineproducing ErbalucediCalusoDOCG.TothenorthisValliOssolane whereNebbioloislocallyknownasPrünent.

Lombardia

ThemetropolitanareaofMilanisthelargestofItaly,andisamongthelargestintheEuropean Union.Ofthe58UNESCOWorldHeritageSitesinItaly,11areinLombardia.

ValtellinaisthemostnorthernValleyofLombardiaandthemostimportantareaforalpine winesinLombardia.Itisknownforitsskicenter,hotspringspas,bresaola,cheesesin particularBitto,pizzocheriandwines.Inpastcenturiesitwasakeyalpinepassbetween northernItalyandSwitzerland.

Thisisoneofthemostdramaticvineyardlandscapesintheworld,usuallycomparedtothe terracedvineyardsofPortugal’sDouro,Germany’sMosel,andtheValled’Aosta.Most vineyardsareplantedonsunnysouth-facingslopesat300-800meters,onterracessustainedby dry-stoneretainingwalls“muretti”whichmakemechanisationnearlyimpossible.Allpruning, maintenance,andharvestisdonemanually.

2500kilometresofdrystonewallsrunningalongthevalley,theresultofapeacefulrelationship betweenmanandnature.Theterracesareclearexamplesofaprimitive,butstillrelevant, architecture,knownas“RuralHistoricLandscape”whoseconstructionisincludedinthelistof theIntangibleCulturalHeritageofHumanity.

Pizzoccheri areatypeofshorttagliatelle,madewith80%darkbuckwheatflourand20%wheat flour.Itiscookedwithsavoycabbageandpotatoes,generouslyflavouredwithAlpinebutter andlocalcheese.

Bresaola isafinedry-curedmeat,createdovermonthsinsmallbatchesbyexpertartisans.it’s madegenerallyfrombeef,butyoucanfindalsovenisonandhorsebresaola.Itislowinfatand richinprotein,readytoeatasitisortouseinimaginativerecipesandrefineddishes.

BittoStorico ismadefromwholecow'smilkproducedinthesummermonthsaroundthe Valtellinavalley,towhichmustbeadded10%to20%goat'smilk.Addingahigherpercentage ofgoat'smilkallowslongageingof10yearsormore.

RegionalWines:

Nebbiolo,locallyknownasChiavennascahasalonghistoryinValtellinadatingbacktothe 12thcentury,leadingsomeexpertstobelieveitmighthaveoriginatedherebeforemakingits waytoPiemonteduringthemiddleages.

Nebbioloaccountsformorethan90%ofthevineyardareainValtellina.LikemanyotherItalian regions,there’sabroadrangeofwinemakingstyles,rangingfromthetraditionaltothemodern. Valtellina'swinesofferafresher,morealpinestyleofNebbiolo,nottoodissimilarfromthe winesfromAltoPiemonte.

Theregionhas3appellations:2DOCGsand1DOC,allofthemmadewithaminimum90% Nebbiolo,thoughmostofthebestwinesare100%.

SforzatodiValtellinaDOCG

Valtellina’smostfamouswineistheSforzatodiValtellinaorSfursat.Itusesdriedgrapesthat haveundergoneadrying“appassimento”processtocreatearich,Amarone-likewine.Awine thatisrootedinthelocaltraditionof“straining”(sforzare)thegrapestoconcentratethemin ordertoenhancegreaterstructureandpower.Itwasthefirstdrypassito-stylewinetobegranted DOCGstatusin2003,sevenyearsbeforeAmarone.

Valtellina SuperioreDOCG +sub-zone+Riserva

Thesewinescomefromthebestvineyards(usuallymid-slope).Theymustbeagedfora minimumof24months,withatleast12monthsinoak.

ValtellinaSub-Zones:5sub-zonescanbeincludedinthelabels,fromeasttowest,namely Maroggia,Sassella,Grumello,InfernoandValgella.

The“entry-level”wines,representingamoreapproachable,straightforwardintroductiontothe region.

Fromthe9thcenturyuntil1801,theregionwaspartoftheHolyRomanEmpire,thenitwas partoftheAustrianEmpirefrom1815until1919whenitwastransferredtoItalyattheend ofWorldWarI.

TheregionisborderedbyEastandNorthtoTyrolAustriaandbySwitzerlandtothenorth-west; Itisextremelymountainous,coveringalargepartoftheDolomitesandthesouthernAlps, composedoftwoprovincesTrentinointhesouthandSouthTyrol(AltoAdige)inthenorth. Theregion'sfertilevalleysproducewine,fruit,dairyproducts,andtimber,whileitsindustries includepaper,chemicalandmetalproduction.Theregionisalsoamajorexporter ofhydroelectricpower.Themostimportantfeaturesoftheregion'seconomicstructurearethe strengthoftourismandthespecialsystemofco-operationbetweenagricultureandindustry whichhaveleadedtoaverysustainableeco-system.

Polenta:boiledcornmealthatwashistoricallymadealsofromothergrains.Itmaybeservedas ahotporridge,oritmaybeallowedtocoolandsolidifyintoaloafthatcanbebaked,fried, orgrilled.Thevarietyofcerealusedisusuallyyellowmaize,butoftenbuckwheat,whitemaize, ormixturesthereofmaybeused.Coarsegrindsmakeafirm,coarsepolenta;finergrindsmake asoft,creamypolenta.PolentaisastapleofNorthernItalian.

Sincethe1980s,thevarietalcompositionoftheTrentinoviticulturalareahasconstantlyand profoundlychangedinfavourofwhitegrapes,whichcurrentlyrepresent74%ofthetotalarea ofproduction.
