We asked our facebook fans to send in some favorite dining experience. “My favorite Shula’s experience was in April 2010 when I needed a first-rate venue to host a private dinner with Speaker Newt Gingrich and his wife. It was an unusual situation because we had to do it at an unusual time (Sunday night at 10:00 PM). The Shula’s staff was so accommodating and provided a perfect experience for our party and Speaker Gingrich was most impressed. I needed a Naples establishment to reflect the best of our community and Shula’s came through in a big way. That was my favorite Shula’s experience, among many others.” - Johnathon Knowles

luten-free diets are one of the most popular emerging health trends in recent years, but many dieters who avoid gluten still find it daunting to dine outside their homes. They often worry about a shortage of gluten-free foods on restaurant menus, accidental gluten contamination, and long, embarrassing explanations in front of their friends, family, and restaurant staff members. The following tips will enable any gluten-free dieter to have a healthy, delicious meal while avoiding any embarrassment. Gluten-free dieters should remember that they should not avoid dining out at restaurants. Although it may seem easier to simply eat at home, dieters who do this deprive themselves of exciting new foods, fun and luxurious experiences, and the enjoyment that comes from dining out with friends, family, and business associates. When gluten-free dieters dine outside their homes restaurants become more aware of the needs of those on special diets. Many restaurants already provide gluten-free menus to their customers because they are now mindful of the needs of gluten-free dieters. The keys to easy gluten-free dining are awareness and planning. If a dieter is interested in eating at a particular restaurant, he or she can easily call the restaurant and ask if there are glutenfree menus or ingredient lists available to customers. Many restaurants now put their menus online so potential customers can view their food options. When looking at menus gluten-free dieters should avoid ordering food with wheat, barley, rye, or oats. In Italy the average life span is even higher, at 80.5 years. And French woman Jeanne Calment, who lived to the ripe old age of 122, claimed her long life was due to her daily consumption of olive oil. But why is this particular oil so effective? What magical, life-giving properties does it possess? First of all, let’s explore the different types of olive oil.

Extra Virgin olive oil is arguably the best type of olive oil as it boasts the most antioxidants and the strongest flavour. It is called ‘virgin’ because no chemicals are added to it during production. Extra virgin olive oil is best used on cold dishes like salad or added to foods after cooking, as when the oil is heated above 177°C it can become toxic. Virgin olive oil also has no chemiacls added, but is slightly more acidic than extra virgin olive oil.

Refined olive oil is virgin olive oil which has had chemicals added to it, and therefore has fewer antioxidants and a higher acidity level than the other types of olive oil. Pure Olive oil is a mixture of both virgin and refined olive oil. It has fewer antioxidants, as some are lost during the refining process, and not as strong a flavour as virgin oils.

This type of fat has an anti-inflammatory effect on the body, which in turn can lead to a lower chance of developing heart disease, high blood pressure and LDL (bad) cholesterol. Olive oil also contains polyphenols – beneficial chemicals found in plants – which may reduce the risk of heart attacks and stroke. Research suggests that olive oil could also help to prevent certain types of cancer, such as gastric cancer and skin cancer. There are a number of ways to feel the benefit of olive

oil if you don’t enjoy the taste. For example, you could use it as a moisturiser to ward off signs of ageing, such as wrinkles, or rub it into your hair to achieve a healthy shine. It is even used by some people to eliminate excessive ear wax. So, if you want to live longer and look younger, try adding olive oil to your food and rubbing it into your skin. Always store your olive oil in a cool, dark place and replace it every few months.

In 1950 a woman walked into Harry’s Bar in Venice, Italy, and requested a meal but she had very specific dietary requirements: her doctor wanted her to only eat raw meat. Somewhat taken aback by this unusual request, the chef at Harry’s Bar rose to the challenge and presented the woman with the world’s first carpaccio. The dish was very thinly sliced raw beef arranged in a circular pattern on the plate, and served with a mustard dressing. The owner was so thrilled that he instantly named it carpaccio after the famous Italian painter because the colors were reminiscent of his art. Carpaccios have evolved since the 1950’s, and the traditional combination of thinly sliced raw beef and mustard dressing have been politely set aside in favor of raw lamb, raw fish, fruits and vegetables. Proteins and sauces can now be found in combinations like yellow fin tuna dressed with a sesame oil and Thai basil dressing for a southeast Asian flavor or a cured ham and goat cheese carpaccio with a sherry and olive oil dressing for a taste of Spain. For those less adventurous who still want a carpaccio experience, there are myriad vegetable and fruit combinations to entice your palate. Zucchini carpaccio with a lemon olive oil dressing or melon carpaccio, with a melon liqueur drizzle over top are just a couple of examples. Despite the evolution of carpaccio dishes a few things remain constant. The protein, vegetables or fruits are always sliced paper thin and are arranged in a circular pattern on a chilled plate. There is always a sauce of some kind, be it oil based or an aioli, and the raw meat carpaccios are frequently served with micro greens or other leafy greens to elevate the flavor of the dish. While you can certainly find carpaccios on the menus of fine dining establishments, the intrepid home cook can also prepare

this stunning dish with a few simple tips. Restaurants rely on professional slicers to slice meat paper thin, but most home kitchens don’t have this kind of tool. Instead, take your meat and wrap it tightly in plastic wrap and then put it in the freezer for about 20 minutes. You want it to be very cold but not yet frozen. Make sure your knife is very sharp. A dull knife will just make a mess of a fine cut of meat. Slice the meat as thinly as you can and if the slices aren’t thin enough you can place the meat between two sheets of plastic wrap and lightly pound it with the flat side of a meat tenderizer mallet. Be gentle though else the meat may tear. Less adventurous home cooks may want to start their carpaccio education with chilled fruits or vegetables. These dishes make stunning and refreshing starters to summer evening dinner parties. They can also be plated ahead of time and left to chill in the refrigerator in order to cut down on last minute preparations. No matter how you slice it, carpaccio in any form is a visually pleasing and tasty dish. Let your creativity soar, perhaps you’ll come up with the next greatest combination of a thinly sliced ingredient and dressing!

Directions: Boil off one serving of angel hair pasta and hold. Saute onions, red pepper, garlic with butter, then add red wine then heavy cream. Let it come to boil and then add 1 tsp lobster base and pinch of cayenne pepper, when thicken then strain into pasta. Now saute with butter the shrimp, scallops, crab, lobster claw etc.. till cooked then toss all products into sauce and on top of pasta. You may mix all product with sauce then on top of pasta or keep seafood separate and add on top of pasta.

Directions:

Slice dates length wise and remove pit. Combine goat cheese and heavy cream in a blender and mix well. Place goat cheese mixture in a pastry bag and cut a 1/4 tip. Put one ounce in each date. Cut bacon in half and wrap a bacon strip around each date. Place four dates on each wooden skewer. Place fryer oil in a deep pan and bring up to 350 degrees. Place one skewer in fryer oil for about 45 seconds until golden brown. Serve with a Blood orange balsamic glaze.

Grill: Pre-heat grill on medium high heat. Skewer the shrimp & scallops with the lemongrass stalks, place 3 scallops on two skewers and 3 shrimp on two skewers. with salt & pepper. Grill the skewers on each side for two minutes per side or until done. Stir-Fry: Place large fry pan on stove on high heat place oil in pan. In a medium mixing bowl mix all vegetables. Once pan is hot add vegetables and stir constantly with a spoon or tongs allow two to three minutes for vegetables to cook. Add sesame oil, soy sauce, salt & pepper and serve.

MADEIRA SAUCE 1/8 c. Water 2 c. Beef broth 1 c. Madeira wine 3 tbsp. Butter 1 tsp. Cornstarch 1 tsp. Soy sauce Simmer broth and add butter and soy sauce. Dissolve cornstarch in the water and add broth, stirring until smooth and thickened. *Due to copy written exclusive recipes, some of instructions are slightly altered. Results may vary.

Peel and butterfly shrimp along back ridge so they are flat with tail attached. Spread 2 oz. of crab cake mixture evenly on top of shrimp. Spray an even coating of pan spray over the crab/shrimp. Cook crab cake side down on the top of the broiler for 30-40 seconds to a crisp golden brown color. Spray pan coating on metal plate and place stuffed shrimp on top crab side up. Set aside. Cross but bacon in half. Drain bacon and place 1 piece on top of crab stuffed shrimp. Bake until shrimp is cooked and crab cake

has an internal temperature of 150º. Season both sides of each filet with ¾ tsp. salt and pepper. Cook in broiler the desired temperature. Season each poached Portobello mushroom with ¼ tsp. salt and pepper and broil for 1 minute on each side. Plate with filet and cut Portobello mushroom in half. Place 2 crab stuffed shrimps with tails down. Ladle 1 oz Madeira sauce over the left edge of steak and lemon garlic butter sauce over the shrimp. Garnish each plate with ¼ tsp chopped parsley.

Stuffing 1/2 Large Spanish Onion 1 Leek 1/8 unsalted butter 1/4 c. Flour 1 pinch of ground nutmeg Salt and Pepper to taste 1 pint Milk 1 bag Fresh Spinach Béarnaise 1 lb. Butter 4 Egg yolks 1/4 c. Lemon Juice 1 c. Hot water 2 Tbs. Tarragon reduction Tarragon and White Wine Vinegar reduced together to a semi dry paste. 2 roasted shallots

Directions: Over a low heat melt butter, and the onion and chopped up leeks, slowly sauté until wilted. Add the flour and nutmeg and whisk in. Cook for about 10 minutes. Add the milk while continuing to whisk. Continue to cook stirring often so the milk does not scorch. Add in Spinach and cool. Béarnise: Put egg yolk and Lemon Juice in a food processor and run for 1 minute. Take the hot brown butter and drizzle it in thru the top. If it gets to thick, add a drizzle of hot water. Add the Tarragon reduction and roasted shallots. Add salt and pepper to taste. Place the oysters in the oven for 10 minutes at 350 degrees. Then glaze with béarnaise and brown under broiler. Watch carefully as to not burn, just lightly browned.
