The holidays are my favorite time of year - the food, the family, the cupcakes, the gifts from "Santa" even though I'm a grown adult. However, the holidays are also a very difficult time for those with celiac, non-celiac gluten sensitivity, or those avoiding gluten. The holidays for "normal" people are full of baking flour, gluten in the gravy, stuffing and dressing full of gluten, and even gluten in your gifts (thanks for the body care set I'll never be able to use). But we can have an amazing holiday season - full of gluten-free love, joy, cheer, and safe food. Enjoy Life Foods All-Purpose Flour 1 t. pumpkin pie spice 1 ½ t. baking soda ½ t. salt 2 C. finely chopped apples ½ t. xanthan gum or 1 t. guar gum topping: 3 T. demerera sugar + ¼ t. ground cinnamon + ¼ t. ground cardamom

In a large bowl, stir to combine turkey, yogurt, cranberries, walnuts, parsley, and orange zest. Add salt and pepper according to taste. Follow the baking directions on the package for the rolls.
Ingredients: 2 cups turkey breast, diced 1/2 cup plain Greek yogurt 1/2 cup dried cranberries 1/4 cup toasted walnuts 2 tbs fresh chopped parsley 1 tsp orange zest, grated Salt and pepper to taste 6 Udi’s Dinner Rolls
With a knife, cut into the top of the roll, creating a slit, and spread the roll slightly open. Tuck a large spoonful of the turkey salad into the roll. Garnish with additional orange zest, if desired. Serve and enjoy those leftovers!

Remove each Toaster Pastry from wrappers; discard wrappers. Break Toaster Pastries into smaller pieces and place into the container of a food processor. Pulse until mixture resembles a coarse meal. Add cold butter pieces and pulse until a ball of dough forms. Pat dough into a disc, cover with plastic wrap and place in freezer for 20 minutes, or refrigerator overnight. Roll mixture out to ¼-inch thickness; cut with a 2 ½-inch round cutter. Place cookies on a parchment-lined baking sheet; prick three times on top of cookies with a fork. Chill cookies for 30 minutes in refrigerator.
Ingredients: 1 pkg Glutino Frosted Strawberry Toaster Pastries ½ cup butter, chilled and cut into small pieces Preheat oven to 350°. Bake at 350° for 20 mins. Yield: about 13 cookies

Ingredients: : 8 oz Greek or non-dairy yogurt 1 cup unrefined coconut palm sugar or white cane sugar 2 eggs (or substitute) 1 Tbs. pure vanilla extract 2 cups gfJules™ Gluten Free All Purpose Flour 2 tsp. baking powder ½ tsp. baking soda ¼ tsp. sea salt 1 ½ cups tart or semi-sweet apples, peeled & finely chopped ¼ – ½ cup chopped pecans (optional) Directions: Preheat oven to 350º F. Combine yogurt, sugar, eggs and vanilla extract. Stir in gfJules flour, baking powder, baking soda and salt, mixing well. Add finely chopped apples and pecans. Spoon batter into an oiled 9 x 5 inch loaf pan sprinkle with another 1/4 cup pecans (optional).

After baking 45 minutes, cover bread with foil to prevent pecans from burning (if on top). Bake an additional 15 minutes or until a pick inserted into the center comes out clean.
