his year

the 1066 Wine and Food Festival runs from 14 until 29 May. Last year’s pilot proved there was tremendous enthusiasm about the food and drink available in this part of the South East and this event focuses on the quality of both. The 950th anniversary of the battle that made us famous is drawing attention to everything that is happening locally and the Festival aims to help us celebrate in style. The opening ceremony is in the historic Battle Abbey, courtesy of English Heritage. Guest of Honour, Jilly Goolden, will naturally be toasted in English traditional method sparkling wine, acknowledging the 1066 area as being at the heart of English wine production. A limited number of tickets are available to the public, so

early booking through our website is recommended. Food and drink of all kinds will be on offer during a one day Fair in the Grade One Listed De La Warr Pavilion in nearby Bexhill on Sunday 22nd May, which will provide a showcase for local wines and produce to taste and buy. Admission is free. Throughout the fortnight of the Festival individual restaurants, wine merchants, vineyards, food producers and resellers will all be making a special effort to provide quality and variety – many with themed events, tastings and promotions. To close there will be a finale celebration on Bank Holiday Sunday 29 May at St Mary in the Castle on Hastings seafront, with live music and a superb pop up wine bar. n the 950th anniversary year of the Battle of Hastings, we thought it really appropriate to hold the official opening at Battle Abbey. The Abbey and battlefield site are maintained by English Heritage who have allowed us to use this historic setting for the opening event, when Guest of Honour, wine critic and TV presenter Jilly Goolden, will formally start the fortnight of celebrating the great wine and food offering of 1066 Country and surroundings. A limited number of tickets are available to the public from the Festival website www.1066wineandfoodfestival. com or from Hastings Tourist Information Centre priced at ÂŁ15 (plus small booking fee). Over 18s only and smart dress is requested. This entitles holders to enjoy appetising canapĂŠs accompanied by a glass of quality traditional method sparkling wine and music in the historic and atmospheric surroundings of the Novices Quarters, overlooking the battlefield site. A bar will dispense a variety of English wines and soft drinks.

o festival celebrating the variety of food and drink available to us here in 1066 Country could be complete without a chance to sample and buy some of that great produce at a fair – or should it be a farmers’ and winemakers’ market? In the stunning surroundings of the auditorium of the De La Warr Pavilion in Bexhill food producers and suppliers, vineyards, wine merchants and farm shops will be showing their wares – with plenty to sample from 11am until 4pm on Sunday 22 May in the free-to-enter fair. As a bonus, every visitor will have a chance to win a number of prizes

donated by participants in the 1066 Wine and Food Festival: from a pair of tickets for the White Rock Theatre’s production Beyond the Barricade on Friday 10 June, to bottles of fine wine. Whilst in the Pavilion, visitors can enjoy (again free of charge) entry to the exhibitions from Richard Forster, William Sandberg and the University of Brighton Masters of Architecture; and admire the building itself Mendelsohn and Chermayeff’s Grade 1 listed masterpiece. If it’s more than a taste you want, the Café Bar and Kitchen will have some special offerings, plus good food from participating restaurants nearby. T’S OFTEN THOUGHT that you cannot pair wine with hot or spicy foods – and many would recommend beer instead. This is because of the effect on wine of chemesthesis – the term for the burning sensation from chillis and other hot spices. This will increase any taste elements that are bitter or dry and reduce any apparent sweetness or fruitiness. So, for a wine to be able to stand up to spicy food it should not be too dry or bitter and ideally have plenty of fruit character; a little weight helps too. This all points toward wines such as: – Gewurztraminer – often with some sweetness and lots of fruit, – P inot Gris – similar but usually with less spice Both of these varieties are excellent from Alsace but there are good versions from Eastern Europe and South America.

– R iesling – especially Spätlese from Germany, again with a touch of sweetness – Torontés – a relative newcomer variety, mainly from Argentina. One other thing to bear in mind is that the alcohol in wine will increase the chemesthesis, that burning sensation. This is where you must use your judgement. You have to be aware of the tolerance to heat of those eating and the actual heat of the dish. If it’s not too hot to begin with and you and your guests like a bit of a kick, then forget about the alcohol level of the wine – otherwise choose carefully. And it’s worth mentioning that not all Asian dishes – Thai for example – use chillies or other spicy ingredients. Many are mild or can be made mild. The chef may even make them to your specification! Of course you could try the traditional yoghurt based lassi – alcohol free (!) – and very cooling.

W

HEN WILLIAM, Duke of Normandy, arrived on these shores 950 years ago, he didn’t know what he was starting! Just a few miles away lay the beginnings of the fishing township of Hastings, after which the world-famous battle would be named. The rest, as they say, is history! On the West Hill, overlooking the town, remain the walls of William’s castle. Six miles inland is the great Benedictine abbey which he founded to commemorate his victory. Where more appropriate, then, for our Festival to start this year than in the magnificent setting of Battle Abbey? Our grateful thanks go to its custodian, English Heritage. Today, Hastings (along with its distinctive neighbour St Leonards) is widely recognised as one of England’s great historic towns. There’s a new upsurge in confidence as more and more people are enjoying its superb architectural heritage ranging from the Middle Ages to the Regency and the Victorian period – and even more recent times. And all this in the wonderful natural setting of 1066 Country.


Here lie some of the loveliest villages in England with their nearby farms and orchards and their abundant harvest of good natural produce; and of course the superb vineyards – some of the finest in England - producing wines which are a match for many in the world: none more so than our quality sparkling wines. Throughout the area, there’s a buzz of creative energy that can be felt in the music, the art, the local popular culture, the colourful festivals (including ‘Root 1066’) – all contributing to that indefinable spirit of Hastings & St Leonards and the 1066 Country. And what an exhilarating seashore, along which are linked the galleries at the Jerwood, the De La Warr Pavilion at Bexhill and the Towner at Eastbourne – the Coastal Culture Trail. Nothing illustrates this new confidence better than all the people and places taking part in this year’s 1066 Wine & Food Festival. What a feast just to look through this programme – mouthwatering! The founding aim of the Festival seems almost to have been achieved: to make our part of the world THE wine and food destination of the South-East. But we won’t be stopping here. This year’s a very special one, but each year we shall aim for bigger and better. Besides, any excuse for a party in 1066 Country!

at Plumpton College rightly prides itself on its international reputation for excellence in wine education, training and research and offers BSc and Masters Courses. Plumpton produces both sparkling and still wines involving the development of high level wine making skills. nice piece of fish? Then it’s got to be a dry white wine – or has it? The first “rule” of wine and food pairing is matching intensity of flavour. Most fish dishes are quite light – so any heavyweight wine could simply overwhelm, never mind the colour. Red wines often have quite high levels of tannin. That’s the mouth drying slightly bitter effect you may have experienced if you’ve ever tasted stewed black tea. This can react badly with many food flavours and why generally such wines are not ideal with most fish. Also, consider texture. Many fishes are oily, in which case a wine with reasonably high levels of acidity will balance the oiliness. If the fish is cooked in batter or tempura, again that acidity will help in the same way that lemon juice or vinegar are used as condiments. Speaking of which, there are two things that can easily improve the balance of many dishes with wine. 17

Acidity, usually in the form of a sauce, can enhance fruitiness and reduce any bitterness or too high acidity in the wine. The simple addition of some salt can again make the wine taste less bitter or acidic – and bring out the richness and smoothness. Salt is also very useful for making wines with tannin more approachable. There are fish dishes that have the weight that would go best wish light red wines – think tuna steak, swordfish or monkfish. The wine should be light and lowish in tannin – Pinot Noir rather than Cabernet Sauvignon. Of course, the favourite wine in Mediterranean France to accompany their many varied seafood dishes would be the ubiquitous rosés – light, fruity refreshing acidity and almost no tannin. Rosés are becoming more fashionable in the UK, so a greater choice available. Next time you have fish and chips – think pink!

HOW TO TASTE

T

asting, when it

comes to wine, is a little more than just slugging back a mouthful and deciding whether you liked it or not. To get the most from a glass of wine, it is best to take a more ordered approach. This will enable a better examination of what the wine can offer, what it might best accompany and whether it is worth the purchase price. Tasting, as opposed to drinking, is slightly slower and is in three phases. The first is the appearance - the wine should be clean and bright. If there is sludge at the bottom of a bottle of red or clear crystals in a white, they are quite natural. It is often a sign of age or that the winemaker has chosen to produce the wine with minimum intervention, so no fining or filtration. Everyday supermarket wine will invariably be bright as it will have been highly processed. Next comes the smell – first swirling the wine around the glass (which should be large enough so it doesn’t spill) to release the aromas. Again, look for cleanliness; if the smell is musty, vinegary or like old dishcloths – stop there.

The aromas we are seeking will be of fruits, perhaps floral and many others that point to such things as grape variety, climate, winemaking technique, maturation and others. Finally take a sip and swirl around the mouth so that all of the tongue and gums have contact with the wine. Professionals and wine students will also draw air in through the wine so that the tastes and aromas can be more accurately sampled – though they may be a little discrete if in a restaurant with guests who may find too much slurping off-putting. So after all that – what do we make of what has been sampled? Most wine drunk is fairly simple, and there is nothing wrong with simplicity if the wine is to be enjoyed with a straightforward meal or as refreshment. If you have discovered lots of complexity, perhaps intense flavours, and this is accompanied by a good length – the time the pleasant flavours last after swallowing - then the wine can be considered good. If lucky, it will be very good and memorable. 45
