et ready to go bare! Beach season is here again. There’s no reason to cringe or to plan to hide out in the air conditioning all summer. Here are just a few suggestions to help you achieve a toned, trim, and healthier version of yourself, so that you will feel confident enough to go sans cover-up when you head to the beach, pool, or lake.

RAISE YOUR GLASS! There is a reason why you’ve heard it countless times. DO NOT cut corners when it comes to water intake. To figure out how much water you should be guzzling each day, divide your body weight in half. The resulting number represents the number of ounces of water you should consume in a day. Keep in mind that this number is a bare minimum amount. How much more water you need varies based on numerous factors. Not only will staying hydrated help you to feel your best, but it will also help you to look your best. Proper hydration is one of the simplest ways to ward off fatigue, making it easier to stay committed to an exercise plan. Furthermore, we often confuse thirst for hunger, which can lead to taking in more calories than you need, leading to weight gain. Remember the calories that you do not burn are stored as fat. Drinking water throughout the day, (and not waiting until you feel “thirsty”), can help diminish false feelings of hunger, which will make it easier to curb unnecessary snacking. Drinking water also promotes healthy digestion, removal of waste products and toxins, and reduces inflammation, swelling, and fluid retention. CLEAN UP YOUR DIET…. You’re only human. Therefore, it’s unrealistic to permanently cut out occasional indulgences such as alcohol, refined sugar, and processed foods- doing so will undoubtedly backfire. Cutting down on these foods, though, and gradually replacing them with options lower in carbohydrates and higher in protein and fiber, will lead to faster visible results from your fitness plan. Keep portions under control as well. It is easy to consume more than the recommended portion size, especially when eating at a restaurant. Portion control is, in fact, in your own hands. A serving of meat, fish, or poultry should be around the same size and thickness as the palm of your hand. A serving of pasta, rice, or other grains, should be around the size of your fist. One serving of cheese (1oz) should not exceed the length or circumference of your thumb. Although it seems tedious, keep a journal for one week of the foods you eat, paying attention to the calorie content of the foods you consume on a frequent basis. Add up the amount of calories you consume over the course of a day. The following week, particularly if weight loss is your goal, find a way to cut 500 calories from your daily intake, thus cutting out 3500 calories over a week, approximately the amount of calories that are stored in 1 pound of body fat. Therefore, to lose a pound of fat each week, cut 500 calories a day from your food intake. Do not
turn to a crash diet out of desperation. Keep in mind that slow and steady wins the race. HIIT IT WITH HIGH INTENSITY INTERVAL TRAINING! Jacque Albus, certified personal trainer, practitioner with the world-renowned CHEK Institute, Holistic Lifestyle and Nutrition Coach, and owner of TONE Athletic Performance and Professional Fitness in Brentwood, Missouri designs a variety of 30 minute classes based on High Intensity Interval Training (HIIT) for her clients. Albus notes that one of the basic premises behind HIIT is working intensely hard for relatively short periods of time, resting for a short period, and then working intensely again. It is up to the individual how hard they push themselves during the work intervals, but the more effort you put in, the greater the results. Albus lists some of the benefits of HIIT on her blog at www.toneprofessionalfitness. com. HIIT allows the body to burn fat, but maintain muscle. It also allows for improved conditioning while increasing strength. Best of all, this type of training boosts your metabolism and anabolic hormone production, which means that your body will continue to burn fat long after the 30-minute workout. At Tone, a 30-minute group training class may consist of intense bursts of rowing, followed by training using ropes, with strength sets in between. The strength sets increase lean muscle mass, so you will burn additional fat while training. OLD WARSON COUNTRY CLUB
OLD WARSON COUNTRY CLUB Old Warson Country Club is an exciting 18 hole regulation golf course located in Ladue. Since its opening in 1955, it has become one of the country's outstanding golf courses and a recipient of The Best Country Club in Saint Louis in 2010. The course rating is 74.5 with a slope rating of 144. It features 7130 yards of golf from the longest tees for a par of 71. Old Warson hosts a number of amateur events including the Western Amateur, Trans-Mississippi National, United States Golf Association Mid-Amateur, Ladies Amateur and the 2016 Senior Amateur. Old Warson hosted the Ryder Cup Matches in 1971. This was 34

the last Ryder Cup team that included Arnold Palmer, Jack Nicklaus and Lee Trevino, and was the final Ryder Cup in which Palmer played. Head golf professional Garth Bayer commented, “The foundation of Old Warson has always been based on the key principles of quality and excellence. Everything done at Old Warson is performed with these guiding principles as the cornerstone of our efforts.” Bayer added, “Although the golf course and championships have been world-class over the years, our diverse membership really sets Old Warson apart from many others. COUNTRY CLUB OF ST. ALBANS Opened in 1992, the Country Club of St. Albans is situated on the western edge of St. Louis County. Not only one of the finest clubs in our area, it’s a natural preserve, enclosing 5,400 acres of outdoor beauty, Missouri wildlife and plant varieties. What a magnificent backdrop to golf! St. Albans is in the process of a $3.5 million renovation including the clubhouse, aquatic center, and a complete renovation of bunkers on its two distinctive 18-hole championship golf courses - Lewis & Clark and Tavern THE COURSES AT FOREST PARK Golfers can enjoy the best city golf course in mid America right here in St. Louis’ beautiful Forest Park. The Forest Park Golf Course, also known as the Courses at Forest Park or the Norman Probstein Community Golf Course, offers variety and flexibility for golfers of all skill and ability levels. Built in 1912 on the site of the 1904 World's Fair, Forest Park Golf Course is one of the oldest courses in St Louis. It has played host to a number of events, such as the 1929 National Public Links Championship. Forest Park Golf Course was named the Best Golf Course in St. Louis by the Riverfront Times Between 2001 and 2004, the three courses and the clubhouse were completely rebuilt. The idea was to incorporate the look and feel of the original layout, including the unique, and popular, square green. Aaron Loehr, Director of Golf Operations explained, “We

Notable 2015 Tournaments will include the Metropolitan Amateur Golf Association Open championship as well as the MISSOURI WOMEN’S GOLF ASSOCIATION 77th Amateur Championship. The par 71 Tavern Creek Course spans 160 exquisite picturesque acres, with rock-lined creeks presenting dramatic holes around every bend. UT

feature 27-holes made up of three (3) 9-hole courses – named for St. Louis trees, Hawthorn, Dogwood, and Redbud. Each 9-hole course plays to a par of 35. BELLERIVE COUNTRY CLUB Bellerive Country Club’s spectacular golf course can truly be called the Course of Champions, for it is the third club in history to host all four men's Major Championships (US Open, PGA Championship, US Senior Open and Senior PGA Championship). The 1965 U.S. Open began its historical path to many championships. These included the 1981 inaugural MidAmateur Championship. In 1992, Bellerive played host CREVE COEUR GOLF COURSE Last but certainly not least, there’s Creve Coeur Golf Course. This almost hidden treasure is a municipal nine-hole course located in the heart of Creve Coeur. It’s a great place for golfers looking for a quick game. The well maintained location is also perfect for anyone living in the county or city. The course measures 3,050 yards from the men's tees and 2,419 yards from the women's tees. With the course’s relatively short length and with no sand traps, you might think it would be easy to tame, but that's not the case. With a slope rating of 109 for the men and 104 for the women, and a course rating of 67.6 for men and 68.8 for women, the course is a tremendous challenge. Sloped fairways, two tiered putting surfaces and short 36

to the most successful PGA Championship to date, and in 2004 the U.S. Senior Open. Then in 2005 Bellerive’s golf course underwent a year-long renovation and reopened in 2006. The Club’s Golf Professional Mike Tucker explained, “We have a championship yardage of 7400 yards with a Par 71. All fairway and greenside bunkers were repositioned and reshaped, with the fairways tightened and regraded, dramatically improving the drainage.” Subsequent awards included Golf Digest’s 2007 Second Best New Private Remodel and one of Golf Magazine’s Top 100 Courses in the U.S. Later tournaments included the 2008 BMW Championship, and in 2013 the 74th Senior PGA Championship. Looking ahead, the 100th PGA Championship in August 2018 will be a crowning achievement for Bellerive. Mike Tucker said, “We are excited to play host to this major Championship, as the best golfers in the world will come once again to St. Louis to contend for the Wanamaker Trophy and Glory’s Last Shot.” UT

As a designer I like to get to know my clients and present them with unique and original design options. There are so many influences that I consider, historic, ethnic, location, budgetary and the personal environment. Along with these influences I am inspired by a walk through the park seeing the colors and textures, fabric stores spark ideas, magazines trigger new concepts and present new ways of thought, travel inspires through local design and customs and watching design shows is a great place to get ideas. It is also very important in any design project to create balance, rhythm, and harmony which sometimes results in pushing you outside of your box.

Mixing rather than matching. Using antique pieces with modern day accents. Motorized shades and multi layering window treatments of shades and sheers with panels which offer privacy during the day and light blocking at night. Made in America is very important to consumers. Metallics , lots of gold, silver, bronze and pewter being used in accessories. Finally, Blue is the color this year. Q: WHAT IS YOUR AREA OF SPECIALIZATION? uerto Vallarta (pronounced somewhere between “P Where toe Vah Yar ta” and “pooh-air-toe vye-ar-tuh” ) is one of the top three coastal resort areas in Mexico and justifiably so. While mostly manmade Cancun, Cozumel, the Riviera Maya and Playa Del Carmen are all on the east coast of Mexico. P.V. is on the west coastline where the Pacific Ocean sits dramatically in front of the dynamic, scenic Sierra Madre Mountains. The Bahía de Banderas (Banderas Bay or the Bay of Flags) is 62 miles long and one of the largest bays in Mexico and as an extra bonus, is a breeding and birthing ground for the Humpback Whale. Because of the geographical location, Puerto Vallarta offers it all. Ecotourism, the small Mexican town ambiance, great beaches, beautiful ocean front resorts, restaurants, shopping and lovely friendly residents ad to the breathtaking scenery. St. Louisans love the weather! Puerto Vallarta is the same latitude as the Hawaiian Islands with an average temperature of about 78 degrees and has more than 300 sunny days a year. The rainy season runs from June through Mid-October, but even then, the rain falls in short little bursts usually at night so the days are normally almost perfect! geographical layout, Bay of Banderas forms a barrier and the storms go out to sea. Unbelievably, in 35 years, citizens experienced any real damage from a hurricane only once . Even though the local currency is Mexican Pesos, most resorts accept American dollars as well and will let you change the dollars to pesos according to your needs. If you are going shopping, hotel desks will usually change our money. Most flights out of St. Louis are connections so your best bet is to go through Apple or Funjet and take a Frontier charter flight which is non-stop! Flights are only about 4 hours long and the great part is that P.V. is in the same Central Time zone as we are! (Caution: Check! Although we are in the same time zone, they don’t change their clocks
over in the spring or fall exactly when we do). The airport is Gustavo Diaz Ordaz Airport. You first go through immigration with your passport and Tourist card (given to you on the plane) which officials will stamp and give back to you. Keep it. You need it when you go home! Just go to baggage claim then to Customs, where you NUEVO VALLARTA are subject to random luggage inspections. Hopefully, (this is coming from a former travel consultant (me) you have booked with a travel agent who has provided your transportation to and from your hotel ahead of time so you can avoid time-share folks or taxi drivers competing for your business. You have hotel choices galore! All along the coast, resorts of all shapes and sizes are intermingled with golf courses, tropical flora and fauna with the downtown, south of the airport and the Riviera Nayarit located to the north. You can choose from all inclusive luxury hotels, adult only, family oriented, close to downtown, downtown and with or without spas all with your particular needs and costs in mind. A great first adventure after you acclimate yourself to your hotel is to take a trip to the Malecon Boardwalk (actually concrete which is super for strollers and wheel chairs). Located by the water, the walk is full of shops, joggers, sculptures, street performers and incredible sunsets.
Fireworks flare every night just before 10 pm. You won’t run out of things to do! Chances are that your chosen resort offers enough amenities and activities that you will never want to leave! Most have pools, bars, ocean fronts, spas and entertainment. If you like to explore, don’t miss the Farmers Market in the Old Town section on Saturdays. A truly cultural experience, local vendors offer home grown produce, homemade art, handmade jewelry and crafts, foods and clothing along with festive Mexican live music! Charter a private sailboat, take a tour to go whale watching, zip lining, tour a tequila distillery, go golfing or horseback riding at the foot of the Sierra Mountains, take a sunset cruise to a private cove with a ancestral show and candlelit buffet. Visit the art galleries and cultural festivals held throughout the year. HINT: If you are arriving by cruise ship, (around 270 cruise ships arrive in Puerto Vallarta every year) please know that if you have not booked any tours through your cruise company, you have to wait an hour to embark after all the passengers who did book their tours ahead of time through their travel agent or the cruise line. hen I go to the grocery store, I am cold as a popsicle when I’m in the frozen food section, confused as to what “bisphenol A” means on the canned food label and if it is carcinogenic (it is according to state of California) or I wonder how old the tomatoes are on the shelf. The summer comes and so does the wonderful opportunity of getting fresh produce at a local Farmers Market! Below, find a list of reasons why your neighborhood food market is a blessing! 1. You don’t have to farm and grow your own in order to know what is in your vegetables and produce. You can talk directly to the farmer and find out exactly how the food was grown, what was used to make it grow, where it was grown and even if you like the person that grew it! You are meeting the people who grow your food! Amazing! 2. Your food is fresh! Each market has its own criteria but usually a real Farmers Market has folks present who are from nearby Missouri or

Illinois and usually less than 4 hours away! That is as long as your food will be in transport on a truck. No polishing, no chemical cleaning, just fresh off the vine or stem veggies and fruit! Beware of markets that are open that sell produce that are not really farmers markets and are “grocery stores” outside. They can offer less expensive produce by going to a food distributing service in the city, waxed to be preserved, etc. This is different than buying from the actual farmer or farmer’s family at a Farmer’s Market.
3. You are protecting the environment! Not only are you involving less chemicals in what you eat, but you are limiting how much gas trucks use, emissions they emit, using less water, creating less land and air pollution, less trash from plastics and packages and how about all that electricity and store operational costs that you are paying for in grocery stores! 4. You are going outside! You can’t get better than walking, talking, enjoying the seasons, connecting with nature and seeing the results of living life! Enjoy the weather, the earth, the people and looking forward to fresh tomatoes and when the fall apples appear, and the corn, etc. Meet your friends! Bring your kids! 5. Educate yourself and your family while having fun! Teach your children how to get excited about the right kinds of food! How many kinds of mushrooms can you name? What is a winter carrot? The warm weather is finally here – with birds chirping, flowers in bloom, and barbeque pits a blaze! I love this time of year when I can grill outdoors leaving the cleanup to a burning fire with virtually no mess inside – making entertaining easy! If you’ve got friends coming over why serve the traditional burgers, chicken and hot dogs you always do when you can grill Beef Fajitas? Fajitas a Tex-Mex cuisine, is casual like your typical fare, only more fun to play with. Set up a table spread with plenty of fixings for everyone to create their own dish. I like mine with grilled balsamic onions, black beans, guacamole, plain Greek yogurt, and salsa. Place these ingredients on a store bought or homemade tortilla wrapped up, and enjoy a flavorful meal! Typically beef fajitas are prepared with flank or skirt steak. Though it's extremely flavorful, it is one of the tougher cuts of beef. Since we would be grilling this, it’s important not to overcook it. The trick is grilling it over a very hot grill for a short time, and allowing it to rest for approximately 5 minutes, then slicing it very thin, against the grain. This is especially important; otherwise the muscle fibers will be chewy. It's common to marinate flank steak, which adds flavor and can help prevent it from drying out on the grill, but it won't tenderize it. Although everyone I know loves flank steak my family prefers I make our beef fajitas with a boneless sirloin steak, eliminating the issue of being chewy. The recipe below has few ingredients in the marinade, but creates outstanding flavor. Paired with balsamic grilled onions your guests will finish every last bit so you might consider doubling this recipe.

2 large onions, peeled, cut into wedges 2 ½ tsps. Balsamic vinegar ¼ cup fresh lime juice 2 ½ tsp. sea salt – divided 3 tbsp. olive oil – divided 2 ½ lbs. boneless sirloin, flank or skirt steak 2 ½ tsp. freshly ground black pepper Flour tortillas
OPTIONAL TOPPINGS:
• 1 cup fresh cilantro leaves, chopped • Black Beans • Plain Greek Yogurt • Guacamole • Salsa
DIRECTIONS: 1. Stir together lime juice, 2 tsp salt, and 2 tbsp. olive oil in a small bowl. 2. Add steak to marinade and toss to coat. Set aside for 30 minutes to several hours to marinate in the refrigerator. 3. Toss onions with 1 tbsp. olive oil. Grill onions in a grill basket approximately 20 minutes or until tender. Transfer to a cutting board. When cool enough to handle, chop onions into 1-inch pieces. Toss with vinegar and ½ tsp salt. 4. Remove meat from marinade, and pat dry. Add freshly ground pepper. Grill steak 3-5 minutes per side (medium – medium/rare). Allow to rest 5 minutes, and then thinly slice on the diagonal. 5. Place tortillas directly on grill, turning once, until puffed and slightly browned. 6. Serve steak, with grilled onions, and optional toppings if desired, in warmed tortillas. Enjoy!!!

Tamara Keefe—Ice-Cream Queen ntrepreneur Tamara Keefe left a corporate career in order to follow her real vocation – making decadent ice cream!
Tamara was born in Denver and raised in Southern California . She earned a BA from Pitzer College, an MBA from Peter F. Drucker Graduate School of Management, and then a year at Oxford University studying corporate ethics. In 2008, DuPont relocated her from California to St Louis in order to work in their food ingredient division. That move would change her life forever. “I was always on the road, and never home. I was gone 262 days that year, commuting between Columbus and St Louis, traveling across the globe often times with little or no notice. I became increasingly unhappy and decided to leave corporate America, follow my passion and turn my love for ice cream into a business." “Ice cream has always been my thing.” Tamara’s love for making ice cream began as a child when her mother found a yard sale ice cream machine. So began a family tradition of creating new flavors. She opened Clementine’s micro creamery in June 2014. Why that name? “I love all things vintage and Clementine is a name from my grandmother’s generation. I always said that if I ever had a daughter, I would name her that. I haven’t been blessed with a family thus far in life, so my company is the next best thing. It was a natural.” Tamara proudly explained, “I have the first and only micro creamery in St. Louis. It’s smaller than industrial creameries (producing less than 3,000 gallons of ice cream a year) and produces 100% natural, hand packed super premium ice cream. I worked directly with some local dairy farmers to create a proprietary 100% all natural dairy blend. A micro creamery is characterized by small batch production, hand craftsmanship, scratch cooking techniques, and commitment to quality and flavor. There’s nothing artificial here.” Secrets to her frozen treats include 100% all natural ingredients from two local dairy farms.
“The milk and cream comes from grass fed, pasture raised and hormone free cows. It’s hand packed premium ice cream made with at least 16% butterfat and less than 20% air overrun. That makes it so dense, it doesn’t melt right away.” A true hands-on owner, Tamara is up each morning at 4:30 making ice cream in her commercial kitchen. Business is very good – she regularly supplies local restaurants, corporate events and weddings. In fact, Clementine’s has been recognized by two James Beard Award nominated restaurants and most recently won the “Dessert First” competition, one sponsored by the Girl Scouts of America and created for the top pastry chefs in the city. She calls her line of 30 rotating flavors naughty and nice. After developing a trade secret process method of freezing alcohol, Tamara has been able to create boozy “Naughty” flavors like maple-bourbon with salted candied pecans, chocolatecabernet and banana rum with salted caramel swirl, as well as nonalcoholic “Nice” treats such as gooey butter cake made with real chunks of Park Ave Coffee’s award winning gooey butter cake. She also has a exclusive collaboration with Perennial Artisan Ales, one of St Louis’ finest local craft brewers to produce a line beer ice creams. Tamara fell in love with St. Louis for its people, diversity and attractions. “The city offers a rich culture - parks, museums, and theaters. The cost of living here is great too.” She renovated her home and is an active member of the neighborhood her shop is in– the historical residence is close by Clementine’s Creamery in Lafayette Square. “My neighbors here are wonderful. I wouldn’t live anywhere else.” UT
