o one was more surprised than Pat Byrne when he was crowned the winner of The Voice of Ireland at the end of April. On page 30 E catches up with the Carlow singer, who has been so busy recording his new album (due to be released in September) and hanging out with Bressie that he hasn’t had time to miss the show! … paying tribute to local artist Jock MacHale whose life was sadly cut short at the age of 39 back in August 2010. Accepted as one of the town’s most gifted artists, John MacHale’s memory and talent lives on in his art, a lot still being visible all around town to this day. A sample of his works will be on display in the Droichead Arts Centre from July 4th-July 31st and will feature drawings, paintings, comic boards, sketchbooks and musings. Bohemians can certainly make a salient argument as to the validity of their match-ups as the true Dublin Derby, in this writer’s humble opinion, there simply is no other contest that can hold a candle to the electrifying spectacle of a typically mammoth tussle between Louth’s finest on a sultry mid-summer’s evening in Oriel or Hunky Dory Park. Dundalk historically hold the upper hand in the Derby by a considerable margin (we needn’t go into too much detail on that point), but the advent of the annual Jim Malone Cup match in 1997 has proven an outlet for the Drogs’ dominance over their north Louth counterparts in recent years, having won all but two of them to date. It may not boast the grandeur of El Classico or the partisan ferocity of the Old Firm, but the passions and emotions evoked by our own Derby of the North-East are truly unique in their own right. Barring the probable meeting of the sides in this year’s FAI Cup final (we live in hope after all), the first Louth Derby of next season will mark the 150th competitive contest between Dundalk and Drogheda, and judging by the record of just 11 scoreless draws in the 148 matches to date, there won’t be too many people aggrieved to see 150 more.

ood critic Tom Doorley makes a welcome return to Fuchsia House, Ardee this month where he will co-host a Bangladeshi Street Food evening. Doorley – of RTE’s The Restaurant – has always been a big fan of Fuchsia House, and proprietor and chef Sarajit Chanda is delighted to welcome him back to charm and entertain guests. The themed evening, which takes place on Thursday, July 12th, will be an interesting twist on the classic beer and curry combination. Kicking off at 7pm, guests will be greeted on arrival with a Cooley Whiskey cocktail before being seated. ‘In true Street Food style, we
won’t restrict the evening to a starter-mains format,’ said Sarajit, who is very excited about introducing his guests to really authentic food from his home country. The menu will be a constant flow of delights from Bangladesh, most of which he learned from his mother, Aruna. ‘Food will flow all evening,’ added Sarajit. ‘Tandoori items, bhajis and exquisite bite-sized snacks will be followed by vegetable, chicken, beef and fish dishes. Food will be so authentic that those who have never been to Bangladesh can be guaranteed dishes they’ve never tried before.’

This will set your make-up for the night. Decide whether it’s your eyes or lips you’re going to dramatise and stick to it. Never play up both, particularly if you’re doing it yourself. If it’s your eyes you’re focusing on, know exactly what colour combination

Let them dry naturally, never use a hairdryer as it will melt the bonds that hold the hairs together. Being rushed or stressed will lead to mistakes, therefore on the day itself give yourself plenty of time.

Y
our outdoor area is much more than the space that surrounds your home, it is an extension of your home – and there are so many ways that it can be brought to life. First you need to decide exactly what you want; do your plans feature a cosy courtyard or an expansive patio with all the amenities? Or create a backyard oasis by simply buying some new stylish furniture and leafy plants. Take inspiration from these three styles: Oriental, classic or contemporary-chic...
The Classic Look They say you can’t improve on a classic, and indeed most Irish homes adopt the traditional leafy backyard. To complement this look, metallic furniture – wrought iron, aluminium or steel – is the perfect partner. The wedding took place of school sweethearts Aoife Leddy and Patrick Murtagh in St Teresa’s Church, Bellewstown, Co. Meath. Aoife, from Duleek, first fell for the Drogheda man when they attended St Oliver’s Community College. ‘We were in the same class – and had been going out 10 years when we married,’ she said. The pair decided on Trim Castle Hotel as their dream wedding venue where they were joined by 160 of their family and friends. Music for the evening was provided by the James Peake Experience. Aoife’s sister Marie Leddy and friend Kathryn Ennis were bridesmaids, and Patrick’s bestmen were Keith Arnold and Ciaran Reilly. Anthony Donaghey weds Leann Eustace
Leann and Anthony first met through friends 12 years ago however they waited another four years before they started dating. Fast forward a few years and Leann, from Beamore, Drogheda and Anthony from Yellowbatter, Drogheda tied the knot in St Mary’s Church, Drogheda with a reception afterwards in the Ardboyne Hotel, Navan. ‘It rained for the whole morning until after the church,’ said the bride, who wore an exquisite Mori Lee dress by Madeline Gardner. ‘Then the sun came out and it turned out to be a beautiful day! It meant we were able to go to my parents’ house to have some photos taken in the garden.’ The bridesmaids were Niamh Cassidy, Gillian Harte, Fiona Hackett and Fallon Moore. The bestman Ronan Phillips was accompanied by three groomsmen, Christopher Eustace, Conor Kelly and Eoghan Judge. Music was provided by Deco5 who ensured the dancefloor was full all night. The Miriam McCarthy School of Irish Dancing also performed for the couple and their guests and the pair said they were excellent. For their honeymoon the couple flew to Mexico. Photos by Eugene Lane
Kevin Farrell weds Edel Crilly
Edel and Kevin first laid eyes on each other while on a night out in Ridley’s nightclub, Dundalk. The couple became smitten with one another and began dating in 2005. Five happy years later and while visiting the Great Wall of China, Kevin got down on one knee and proposed to his elated future fiancée. They were married in Walshestown Church, Dunleer and had their reception in a marquee on the grounds of Barmeath Castle which is situated in Grangebellew. It was a perfect summer’s day with sunshine, ice-cream van and lawn games! The bride – who is a school teacher in Julianstown – wore a gown from Maria B Bridal, Navan and her bridesmaids included sisters Sinead, Arlene and Lauren and friend Briege Carroll. The bestmen were Kevin’s brothers Stephen and friends Thomas Sheelan and Ryan O’Neill. Edel’s brother Brian Crilly had the honour of walking his sister down the aisle. Following the delicious buffet meal, the happy couple danced the night away to the sounds of local band Time Zone. For their honeymoon they visited Kenya and Zanzibar. Drogheda’s fitness fanatics will be getting up to their own circus antics now that Labfitness has introduced a new Aerial Hoop Class to its summer timetable. ‘The Aerial Hoop Class is a circus concept that up until now enthusiasts could only try if a circus ever had a workshop on,’ said Labfitness instructor Laura Armada. ‘Never in Ireland has Aerial Hoop been offered as a class so normal people like me or you can learn the same tricks you see in shows like Cirque du Soleil – but only a couple of feet from the ground! Behind the Salons
Between them they’ve been creating cuttingedge hair styles for nearly 70 years. But amidst the glamour that surrounds it, being a hairstylist has its challenges too. E finds out what lured three Drogheda men to pursue hairdressing – and how a pair of scissors and a hair cut could change their lives forever

How did you get your start in the industry? I was 15 when a teacher of mine got me a job in a salon in the Abbey Shopping Centre (it’s long gone now!). I stayed there for a year and then moved to Peter Marks where I stayed for two and a half years. But my real start only came when I moved to Eamon Kierans on Laurence Street – he took me into his salon and showed me how to cut and manage a salon. Between Eamon and my dad Owen, I was given the opportunity to attend many cutting courses in the UK, some lasted one week others where six weeks. So I have to give them a big thanks for helping and guiding me along in my path as a hairdresser. As a hairdresser, what are the challenges you face in your line of work and how do you overcome them? In the time we live in the recession is the big challenge every business has to face. Is there any particular hair style/ trend you love right now? After 27 years I have seen a lot of trends come and go. But these days I love the look of Frankie from The Saturdays – that style involves a lot of cutting! God, I love my scissors! Whose hair would you most like to cut? Davina McCall – she’s at the top of my ‘free list’. After that the next client who walks through the salon door. Which product is your favorite and why? Tell us about your salon and how many people do you employ? Well, I’ve actually been open six weeks but have been working in Drogheda for the past nine years. I employ three people as well as myself. Why do you think you decided to become a hair stylist? Well, it wasn’t something I had planned all my life. I sort of fell into it when I finished school and then the longer I worked

How did the idea for your business first come about? In 2002, both myself and my business partner David Forde were made redundant by an American water treatment company. I was customer service manager at the time and David was the chief engineer. We decided to pool our redundancy money together and start up our own business so in April 2002 European Water Technologies (EWT) was born. How many employees do you have? Full- or part-time? We have 28 full time staff in our offices in Blanchardstown, Galway, London, Poland and Lithuania. Do you have any other businesses? No – we are 100 per cent focused on making EWT the largest
water treatment company in Europe at the moment which already takes up more than enough of our time. What is an average workday like for you? I generally start at 8.30am and finish at 6.30-7pm. I work from our Blanchardstown office. My main focus is getting the phones to ring so I work on designing newspaper adverts, radio and TV campaigns. What motivates you? My wife and children. Every day they inspire and motivate me to be the best I can. What are the most crucial things you have done to grow EW Technologies this last year? We opened offices in Poland and London this year which was a massive step for us. We dissected every minute cost of our water treatment systems, from our suppliers to installations and sales costs. We’ve been able to cut the cost of our products by over 50 per cent and this has helped double our customer base. We also won Business of the Year 2011 in Novemeber by Action Coach

Give your customers what they want, not what YOU think they want. Back yourself, you will succeed, it just might take longer than you thought. Marketing works. What’s the worst business advice you’ve ever received? One of the very first sales calls I made in 2002 was to a business owner in Dublin who told me that I was wasting my time trying to sell water filters in Ireland when it fell from the sky every day of the week for free. Now 10 years later and with 65,000 people across Ireland now using our systems on a daily basis I’m glad I didn’t take his advice. What was your first job and how much did you earn? I worked as a gardener for my neighbour when I was 14 and I earned £1 per hour. Who do you most admire in business? Michael O’Leary. Although some of his policies are controversial he’s given us all the option to travel by air at half the price of his competitors in most cases.

rogheda’s newest bar and restaurant Wm Cairnes & Son Gastropub has been receiving rave reviews since its opening last month. The Gastropub is situated in what was originally Cairnes Brewery Drogheda Scotch Hall, established by William Cairnes in 1825. The brewery gave employment to almost 200 workers for over 150 years and was famous for its ales and stouts, including Leprechaun Beer and Viaduct Ale which were exported to the USA and beyond. The brewery closed in the mid 1960s and the buildings remained idle until they were refurbished to create Wm Cairnes & Son Gastropub. The décor of the pub is stunning and reflects much of the 19th century charm of the brewery with exposed stone walls and flooring and a mix match of old antique furniture. Wm Cairnes & Sons also features a large selection of Irish Craft beers on tap and bottle, including a tasting paddle of three Irish Craft beers for €5. It also has the most extensive collection of whiskies on offer in Drogheda with over 55 bottles of whiskey from Ireland, Scotland, American and Japan available. Head Chef Gary Harvey offers a varied lunch and dinner menu which incorporates many local ingredients and where main courses are accompanied by recommended wines and beers. Buttermilk Fried Chicken What you need: 3 cups of butter milk ¼ cup lemon thyme 3 cups of flour 1 egg yolk 2 chicken breasts, halved Vegetable oil Salt and pepper to season
What to do: • Mix the milk, egg yolk and lemon thyme in a large bowl. Add the chicken and season with salt and pepper, leaving to marinade for 2 to 3 hours.
• Dredge the chicken in seasoned flour until lightly coated. • Heat 1 inch of vegetable oil in a large deep skillet over medium-high heat until a deep-fry thermometer registers 360. • Place in the hot oil and fry, turning occasionally, until golden brown and cooked through, about 15 minutes (adjust the heat as needed). Drain on paper towels. • 5. Serve with corn on the cob and chips on the side.
Sticky Plum Pork Ribs
What to do: What you need: 1 rack of ribs per person Pinch of cardamom pods Pinch of star anise Some salt as required Some water for topping up
For the Chilli Glaze What you need: 1ltr plum sauce 200ml hoisin sauce 100ml balsamic vinegar 100g fresh ginger, chopped 200ml sweet chilli sauce 1 cup brown sugar 1 cup honey 3 tbsp birds-eye chillies, pureed
• Place ribs in the pot with enough water to submerge. • Add the rest of the dried ingredients, allowing to simmer until tender (normally 1-2 hours). You can test for tenderness by pinching the meat with tongs to see how easily it comes off the bone. Once cooked lay the ribs on a tray and chill down.

What to do: • Whisk all the ingredients together in a bowl. • You only need to reheat and baste the ribs with the glaze. Do this on a BBQ for best results or use an oven. • You know the ribs are ready when they are hot all the way through, there is a little bit of char on the ribs and the glaze has caramelized. • Brush ribs with more glaze and serve.

The Voice of Ireland winner on his upcoming album, sharing a room with Conor Quinn – and why he’s the luckiest man alive! Many congratulations Pat on your success! So what have you been up to since winning The Voice of Ireland? It’s been a crazy couple of weeks! I’ve been all over the country doing charity gigs, interviews, photo shoots, etc – and it’s been amazing. I feel like everyone’s my friend! And, of course I’ve been finding time to write for the album, which I’m currently recording. It’s such an amazing experience and a lot of fun. Do you miss the show? Who have you kept in touch with? To be honest I haven’t actually had enough free time to ‘miss’ the show. Things have just been too hectic. But I know I will! It’s the most fun I’ve ever had and I’ve made some lifelong friends. I’ve kept in touch with loads of them, but mainly Conor, Gavin, Gari, Dara, and Bressie. Do you see much of Bressie or any of the other
coaches? I see loads of Bressie. He has been incredible. He’s almost like a big brother\mentor even still! I actually had the privilege of singing at his sister’s wedding party recently. It was lovely to meet all the Breslins! I’ve seen Brian once or twice as well but that’s all. What about your teaching – are those days behind you now? Not at all! Obviously, it’s much more difficult to make time for it now but when I’m around I still teach. It’s a massive part of my life and I love it. What’s been the highlight of this whole experience? It’s really just been Drogheda meeting so many brilliant Medical Centre people. We all got on so (DrMC) well, and getting to play Dublin Road with that great band every Drogheda week was cool. dream job! The album is at early stages. It looks like it’s going to be a largely feel-good positive album which I’m delighted about. It reflects my mood! I’m hoping it’s going to have an E street band feel as well. When do you expect to release the album? Do you feel under pressure to get it out pretty quick? There is a bit of pressure. The album does have to be released quickly because of the nature of reality show success. I don’t want to be forgotten! So we’re aiming for September, fingers crossed! I don’t think this will compromise the quality though. Have you got personal expectations for the album, about how well you want it to do in the charts? I’m just delighted I’m even going to have an album! But, of course I’d love it to do well in the charts. I’d also love to do well in the UK. We’ll see! Who is your biggest musical influence? Mick Flannery, Declan O’Rourke, Bruce Springsteen and Paul Simon. Are there any unusual artists you’d like to collaborate with in the future? I haven’t thought about that! Any of the above would be a dream come true. I also love to sing with Lisa Hannigan – she’s amazing, In terms of touring have you much coming up – what‘s the plan for the next 12 months? I’m not too sure just yet. But there’ll be more details following the release of the album. I’m sure I’ll be very busy with a tour though! Are there any other Irish acts around that you think should be getting more exposure? Anyone you’ve seen live and thought, they’re really good? Mick Flannery and Declan O’Rourke are two of my heroes. I really think they’re two of the best artists going. The certainly deserve more recognition. And finally what is your ‘Top Festival Tip’ for everyone heading to Electric Picnic next month? Bring toilet roll!
