Hi there, Welcome to our December edition Merry Christmas everyone! Thats right December is here and Christmas is upon us. I know I say it every year but where on earth has this year gone? All of us here hope you all enjoy the festivities this year and have a brilliant start to 2019. With Christmas in mind we have a sweet treat for you all to try this month. Chocolate and Drambuie Truffles, hopefully they are as simple as the recipe sounds and as tasty as the picture looks. The events page is jam packed this month. Chocolate & Drambuie Truffles 6 tbsp of cocoa powder, 200ml of double cream 1 tsp instant coffee powder, 80g of butter, chopped 4 tbsp of Drambuie, 300g of bitter chocolate, roughly chopped
Method
Prep 60 mins › Plus Chilling › Serves 15 People

Start the truffles by combining the cream and butter in a pan. Place the chocolate in a large bowl. Bring the cream and butter to the boil, then pour over the chocolate. Add the coffee and whisk well

Place the bowl on top of another one filled with ice cubes and a bit of cold water. Whisk the chocolate mixture energetically until it starts to thicken (about 5 minutes) then add the Drambuie

When the mixture is thick enough to hold its shape, spoon into a piping bag. Cover a tray with cling film, pipe 30 truffles onto it then leave in the fridge to set

When set, roll the truffles onto a plate and cover with the cocoa powder. Shake them, four at a time, in your hand to loosen any excess cocoa. Store in a container in the fridge, until ready to serve

GIVE NATURE A HOME THIS WINTER Help give nature a home this winter with ideas and tips from RSPB. Here’s one from their extensive library on www.rspb.org.uk DIG A DAMP DITCH FOR DIVERSITY Many of our gardens are flat, unlike our rising and falling natural landscape. By adding a shallow ditch – (or what’s called a ‘rill’ on our nature reserves), you can create a wider variety of homes for nature. It will mimic natural undulations in our countryside, and give hedgehogs and reptiles a lush byway to travel along, and song thrushes a perfect hunting ground. If you have clay soil, your ditch may form a temporary pond during part of the winter. But don’t worry if it never holds any water, as it’s always likely to have a rather more humid microclimate than open, sun-scorched, flat land around it. You can, of course, start digging when you like, and indeed in autumn the ground may not be so wet. But it’s in winter that you’ll be able to see most clearly where you are going. 1. CHOOSE WHERE TO DIG YOUR DITCH Make sure you’re not digging along the line of any services, like electricity, sewage or water pipes!It’s really up to you to decide where to put it. You could create it at the far end of your garden. Or be brave and put it alongside a lawn or flowerbed. Just be careful it’s not where someone could trip.
