Uncertain Times Create Memories Welcome to May!
As I type this note it is March 24th, one day into our statewide shut down except for “essential” services. So I’m going to assume by the time this arrives in mailboxes we’ll all be healthy and back to work! At day two I’m already getting a little stir crazy, however, it’s getting a little warmer outside so we’ll be able to enjoy evening walks. We will be able to spend a little more time together as a

family and slow down a little. We did decide on a family structure for our weekdays, the boys have to get out of bed and do chores, spend time doing something educational, something active, time learning a new skill and plenty of free time and family time in the evening. Both Meegan and I are still getting up at our normal time and following the same routines each morning. Trying to keep our lives in order during this difficult time. We were able to get out to my family farm over the weekend and went searching for deer antler sheds. We found a full skull with antlers in the woods which was cool. That is the first time we have ever done that. We are planning to go back morel mushroom hunting this spring. Another positive change we decided to implement is a no cell phones in the bedroom policy. The first couple nights were difficult but after the addiction was broken I have noticed falling asleep much quicker and a better night’s sleep, and I was getting 7-8 hours previously. We’ll see what the remaining 3 weeks will have in store for our family. I also want to encourage you to consider hiring and working with the businesses that sponsor this publication. In this uncertain time all the businesses you see in this issue have continued their commitment to support the publication. We haven’t lost a single business partner at this time, and that speaks volumes for the types of businesses that we have been able to partner with. One last thing, we used our social media and email list to encourage others to support the Greater Lansing Food Bank during the shutdown. Over the past few days, I’ve been going through my old books and reading some of them. One of the ones that I really enjoyed was A Night Divided, a story set during the Cold War. This book is about the Berlin Wall, and how it affected a German family. Half of the family is in East Berlin while the other half is stuck in West Berlin, unable to get back home. This is a story of how the family struggles to find a way to reunite, as well as of the challenges faced by people in Berlin during this time. The book will keep you at the edge of your seat, and the author does a great job of portraying emotion throughout the whole story, making you feel like you’re really experiencing what was happening. Watermelon Lemonade Ingredients:
Cocktail
• 3 pounds seedless watermelon, rind removed and cut into 1-inch cubes (about 6 cups) • 1 cup light rum • 1 cup freshly squeezed lemon juice (from about 7 medium lemons) • 1/2 cup blackberry or raspberry liqueur • 2 tablespoons granulated sugar
Instructions:
2 Place the watermelon in a blender and blend until liquified, about 1 minute. Pour through the strainer into the bowl and scrape a rubber spatula against the inside surface of the strainer to push the juice through until only pulp remains. Discard the pulp. (You should have about 3 cups of juice.) 3 Transfer the watermelon juice to a nonreactive 2-quart container. Add the rum, lemon juice, liqueur, and sugar and stir until the sugar has dissolved. Cover and refrigerate until chilled, about 2 hours. Just before serving, stir to recombine. Pour over ice and garnish with a few blackberries.
1. Set a fine-mesh strainer over a large bowl and set it aside.

pring has officially sprung in all corners of the country! The sun is shining, and our lawns and gardens are coming alive with greenery, birdsong, and, yes, springtime pests. Just as we humans have been eagerly waiting and watching for signs of warm weather, these vermin have been biding their time. Whether they’re stealing their way into your home, latching onto you as you hike, or ambushing you as you try to enjoy your outdoor space, learn more about the common springtime pests below and how to combat them proactively... before your warm-weather fun is compromised! Fire Ants These reddish-brown insects live in large colonies of up to 250,000 workers and build their nests in the ground, with visible mounds rising up to 2 feet in height, usually in sunny areas like parks, large lawns, and fields. These aggressive insects are especially hazardous to young children (and those of us Southerners who like to go barefoot when it’s warm!), as their painful bites can cause a severe allergic reaction in some and will certainly cause stinging and swelling in all. Limit ants’ access to food and harborage by keeping your lawn growth low and removing grass clippings, leaf piles, and ripe fruit promptly. Eliminate any mounds you encounter as soon as possible with ant bait. Mosquitos In many areas, the mosquito is public enemy number one during warm weather, with their bites playing host to any number of diseases, including West Nile, dengue, and Zika. Reclaim your outdoor space by removing all sources of standing water, keep-

ing your lawn and other foliage trimmed, and clearing away yard debris promptly. You should also arm yourself with a DEETbased repellent (or natural alternative), stay away from scented lotions and soaps, and avoid outdoor activities during the hottest times of day. Termites While these pests won’t attack humans, you still don’t want to see them swarming your property during springtime. Often called “silent destroyers,” these wood-eating insects cause up to $5 billion in damage to American homes yearly. Be on the lookout for warning signs of infestation, such as hollow-sounding or crumbling wood, sagging floors or ceilings, or mud tubes on exterior walls. To help deter termite houseguests, eliminate any outstanding moisture problems by diverting water from the foundation, keeping gutters and downspouts clean, and sealing entry points, in addition to removing wood/paper termite food sources from around the outside of your home. Ticks These small, blood-sucking parasites are a serious concern for outdoor enthusiasts, as they can carry diseases that are debilitating for both humans and animals, including Lyme disease and ehrlichiosis. Common across the entire U.S., ticks often find their way onto people by jumping onto exposed skin, so the best ways to avoid a tick bite are to wear long pants and sleeves while in grassy and wooded areas and to use a DEET-based repellent. Check over your body, gear, and clothing (and your children’s and pets’) and shower as soon as possible after coming indoors.

Did you read the title of this article and ask yourself, “What is charcuterie?!” This French term, though hard to pronounce (“shar-cu-tuh-ree”), refers to an assortment of meats paired with different accompaniments, such as crackers, fruit, cheeses, and sauces, and it’s growing more popular by the party here in the U.S. There’s a certain art to putting together the perfect charcuterie tray, once considered a holiday or special occasion dish. As we move into picnic and garden party season, check out the following suggestions for making your next gathering deliciously successful!
The first rule to remember when preparing charcuterie for your gathering is there are no rules. Obviously, you will likely want to include the basics – meats and cheeses – but otherwise, have fun with this! Choose items – local, if possible – you and your guests will enjoy as well as those that will work well together visually, keeping in mind any known allergies. Here are some key components of a good charcuterie board.

Meats: Choose a variety of meats, such as prosciutto, salami, pepperoni, ham, chorizo, and pâtés; you’ll need approximately 2-3 ounces per guest.

Cheeses: Make use of diverse soft and hard
cheese options with varying milk types and colors, such as brie, havarti, gouda, hot pepper, cheddar, mozzarella, or blue cheese, soliciting suggestions from the cheese counter employee if needed. You’ll need approximately 2-3 ounces per guest. Nuts and Seeds: Go big or go home! Marcona almonds, spicy nut/seed mixes, caramelized nuts, and even chocolate-covered nuts or raisins are great choices. Fruits/Veggies: Mix in a colorful assortment of (preferably in-season) fresh and dried fruit, such as grapes, berries, sliced apples, dried apricots, dates, and figs, as well as herbs like basil, rosemary, or thyme. Olives and other pickled or cured vegetables

Add a few spreads, jams, and mustards; honey and olive oil with balsamic vinegar work well here too. Go for artisan breads, a toasted baguette, and gourmet crackers with different shapes, textures, and flavors to keep things exciting.
Last, consider beverage pairings for your delightful delicatessen. Wine is most often paired with charcuterie (though a good scotch, bourbon, or rye will certainly work) to harmonize with the fattiness and saltiness of the proteins. Stick with less complex wines with subtle tannins and low alcohol, such as crisp, white wines (sauvignon blanc, pinot grigio, riesling, and sparkling white wines like prosecco) and lighter and fruitier red wines.

where we change the floor plan and drastically change the interior of a home. It’s always fun when someone is willing to be creative and want custom features that we can provide. That’s always appealing to me and keeps things interesting.” Using his expertise, Jake loves to transform living spaces to his clients’ desires. He comments, “Where we shine are the large kitchens, the builtup moldings, and half posts on the islands.” Jake can remodel a kitchen with custom cabinetry to completely give it a new look and functionality. Jake has been the trusted expert for clients in Whitehills Lakes and Whitehills Woods. This successful entrepreneur also does a lot of work for customers in the East Lansing area, including Okemos and DeWitt. He says, “A lot of my work comes through referrals.” His goal is to create the highest quality product possible with expert craftsmanship. Jake estimates that 90% of his work is generated through referrals. He adds, “We appreciate someone who knows what quality looks like and expects it.” Jake also works with great partners in the local area, including Bennett Drywall, a local stonework company, and John Gray. In addition, he works with “great subcontractors” to get the job done right the first time. Jake is excited to announce that he will soon have quartz and granite displays available for selection in his showroom. People can look at finished options for cabinetry and pair it up with a countertop. Staying on Schedule and Budget “I have an allowance for every scope of work that will allow you to achieve what you want based upon your budget,” says Jake. Although that does inflate the initial number slightly, he takes the necessary safeguards to prepare for the unexpected in doing any possible home project. He explains, “I will give you a more than acceptable allowance upfront.” In remodeling, unforeseen problems pop up. Jake says, “In 90% of our jobs, we will come in under the initial bid and any add-ons or unforeseen issues are usually absorbed by the initial bid.” In other words, the customer does not have to pay extra as the project is undertaken. As Jake says, “No one likes surprises, especially financial ones.” May 2020 • The Lakes

In terms of timing, Jake allows for an acceptable span of time for home remodeling projects. Higher-end kitchen remodels are scheduled for 6-8 weeks. Generally, 2 months is a standard allotment of time for remodeling projects. Jake always maintains a good working relationship with clients throughout the course of the jobs. He aims to under-promise and over-deliver to ensure customer satisfaction. Jake also serves as the point of contact from concept to completion (and beyond) with his clients. He stands behind his work, has a storefront location, and is available when customers need him. Advice for Residents Jake also has some advice for customers. First, he encourages people to seek out remodeling advice from a good friend or a relative when it comes to choosing contractors. Second, Jake encourages people to find finished work that might be similar to a job they would like in their own home, which he says is “key.” Jake adds, “If those first two aren’t options, ask for a reference list from a contractor. Do your due diligence and contact those people.” In terms of choosing a contractor, don’t make a decision based upon price point alone. Sometimes the cheapest price might result in the most expensive work done (often not all items are included in the initial estimate).

Broiled Salmon Inside Romaine Lettuce
Ingredients: • Salmon Fillets • Romaine Lettuce • Lemon • Salt • Dill Weed

Capers Cooking String Fresh Ginger Carrots Butter
Instructions: Place a salmon on romaine lettuce leaf. The leaf is larger than the fillet. Salt lightly and squeeze lemon juice on top. Add a generous sprig on fresh dill weed, 2 tbsp capers and 1 lemon slice. Cover with another piece of romaine lettuce leaf and tie with water soaked string. Broil 6 minutes on each side. Serve guests as is but cut string form them. Leave all intact. Serve with fresh cooked carrots. (Add grated fresh ginger on top of buttered carrots). ***This recipe can also be grilled Check next month for a great use of the left over salmon for a delicious salmon dip.

Going to college away from my twin sister is something that always excited me, however, I knew it would be hard to see each other. Thankfully, with me at Michigan State in East Lansing and my sister at Ohio State in Columbus, we’re only about 4 hours apart. This month, with spring break right around the corner, my family took a trip to see my sister at OSU. Although most people wouldn’t consider Ohio as a destination, there is a lot to do there and it is a bigger city than people might think. With different neighborhoods with restaurants, bars, shopping and activities, I can see why my sister and many others love OSU, despite the rivalry between the Buckeyes and the Spartans (go green always). The first thing we did when we got to Columbus was go see my sister at her sorority house. She lives off-campus in the Alpha Epsilon Phi house and Greek life at Ohio State is really popular. She had a philanthropy event the next day for her sorority so we got to go to that with her, which was really fun. The event was a basketball tournament that fraternities entered teams to play games and the girls in the sorority coached them. The event was to raise money for breast cancer research, so it was a really fun event with an even better cause. The first day, we also walked around campus and visited the library, the union and the RPAC, their Recreation and Physical Activity Center. The main library is 11 stories stall and has beautiful views overlooking the entire campus. The whole campus is really pretty and mixes old and modern styles.
Our first night there, we went to Short North, the arts and cultural district right off Ohio State campus. We did some shopping there and went out to dinner. I really like Short North because it has shopping chains and some boutiques and shops that are native to Columbus and is walkable from campus. For dinner, we went to an Italian restaurant called Marcella’s. It was a really cool atmosphere and the food was all good. We got pizzas, salads and pasta dishes and we enjoyed all of it. For dessert, we went to my favorite spot in all of Columbus: Buckeye Donuts. This quick dive is known for being open 24-hours and has the best donuts around. They also have lots of other hot foods all night long, perfect for college students or just anyone looking for a quick, cheap and yummy meal or snack at any time of the day. We got lots of donuts and brought them back to my sister’s sorority house to eat and hang out with all her friends. The donuts were definitely a hit with me and my family, and everyone at the house. The next day we woke up and went to Easton, a huge shopping district a short drive away from campus. Easton has an outdoor and indoor shopping complex, again featuring chains and classic mall shops as well as boutiques and higher-end stores. At Easton, they also have lots of restaurants for all different cuisines and budgets, making it ideal for anyone. We had brunch at Northstar, another favorite of mine and my sister’s. We got a frittata, a veggie burger, a regular burger and a breakfast sandwich served on a homemade biscuit and Michigan preserves. Everything was May 2020 • The Lakes

delicious and just like it wasn’t our first time there, I guarantee it won’t be our last. For dinner our last night, we went to Z Cucina Di Spirito in Upper Arlington, which is another neighborhood of metropolitan Columbus. It is a very nice neighborhood with more shopping and restaurants. Our favorite things at Z Cucina were the salads and drinks. We didn’t have time this trip, but another one of our favorite activities in Columbus is the North Market that has vendors and merchants of all different kinds of fresh produce, meats, seafood, flowers and specialty items. It’s really fun to just walk around and you’ll definitely find something you want. So whether you’re visiting your sister like me, or just looking for something to do, you’re sure to find something to keep you busy in Columbus and it’s only a four-hour drive away, go Buckeyes (unless they’re playing MSU!).

Since school is canceled, and most activities are too, I have had to find ways to keep myself not only busy, but from going insane as well. We all have so much time on our hands, and quite frankly, absolutely nothing to do. Normally, my mom will make brother and I lists of tasks that we need to get done. At first, I kind of hated these lists, but now I kind of enjoy them because they give me something to do. They have stuff like completing chores, exercising, playing instruments, and reading. I normally take all day to do the lists because I want to do other things throughout the day too. Another activity that I do is ride my bike. I have always loved biking around to neighborhood, but now more than ever I find myself telling my mom I’ll be back in a bit, because I’m going out biking. It is really fun, and you get a bit of exercise and fresh air as well.

I also love to bake. I have made bread, cupcakes, and brownies so far. I really enjoy this because I get to eat some sweet treats when I’m done! It takes a couple of hours, so it’s a nice thing to occupy yourself with when you have nothing else to do. Lastly, I have recently been working on re-organizing my bedroom! Every six months or so, I mess around with where my bed is in my room, or putting some art up, and that is exactly what I’m doing now! So, my parents helped me to get started and now I can work on the finishing touches. I love doing this and it will definitely keep you occupied and give you a “new” space to sleep and hang out in! Overall, this quarantine has been pretty... boring. It’s hard to have fun when you are not allowed to leave. Hopefully, this will give you a couple ideas on what to do to keep yourself busy, but make sure that you continue to stay inside and stay safe!

The Ticket Machine Grab a Front Row Seat!
“I’ve always been involved in sports and going to sporting events,” says Brian Posey, owner of The Ticket Machine. He always knew how to get tickets to the Tigers, Red Wings games, and concerts. Little did he know that this trait would serve him well in life. He attended Michigan State, and, shortly after, his business fell in his lap. One day he bought tickets to the Notre Dame game, looked up numbers in the Yellow pages (for ticket brokers), where he found a buyer willing to pay a premium for the seats. The rest is history. “I looked for him every Saturday at Wherehouse Records and I would buy tickets for him,” says Brian. He started to realize, “Why am I buying tickets for just one guy?” With Wherehouse Records all over the state, he and his friends would go there and buy concert tickets for Michigan, Ohio, Illinois, and all the surrounding areas, including Ontario. They would then visit various cities, such as Chicago, check out the entertainment brokers or ticket brokers in the Yellow Pages, and call them to sell them tickets.

Brian explains that his business assumed a new form once the internet became popular. He sold tickets on eBay before StubHub came out and other avenues. He soon had a budding business on his hands. He started out buying only concert tickets before purchasing tickets to events of all sorts, selling them to brokers all over the Internet and people in different states. Through the years, Brian built a network of connections in different states. He can see other ticket brokers’ online inventory and match his customers’ needs with the existing availability of tickets. Tickets can be sent via FedEx or other methods of delivery. Customers turn to Brian and his dedicated staff for tickets because they have a lot of helpful tips to make people’s events a success. They can also any questions or concerns that their customers might have. These might include — What seats are the best for the event? Or how can you avoid the sunlight at a 7 p.m. game in your eyes? Or what seats are best for an older person? Fortunately, Brian and his team can help people maximize their experience with their knowledge. As Brian says, “It’s not just about getting tickets; we know the venues and the seats.”
Brian started his business in the basement of his house before moving to their current location on 4480 S Hagadorn Road #105. They are located at the corner of Mt. Hope Avenue and Hagadorn. Brian has some impressive memorabilia in his possession, including from the 1954 Rose Bowl and the 2014 Rose Bowl. These include the end zone field goal pads as well as helmets. But the biggest draw is the Breslin center court of their original floor from when they won the national championship. He also has Breslin lockers signed by NBA players. Currently, The Ticket Machine is in its 21st year in business and Brian employs seven full-time staff and five part-time employees. He even hires Michigan State students, providing a scholarship in addition to their pay. “They work with us every year,” he says. “One of them will be taking a full-time job when he graduates in the spring.” He adds, “I wouldn’t be here without my employees. I am proud of them.” He says, “My favorite part [of my job] is coming to work every day with my employees.” Brian also believes in giving back to others. The Ticket Machine serves as a collection location for Toys for Tots, each year bringing in more and more toys. Brian had the opportunity to see their distribution center a few years ago, which was very impressive. “We’re happy to be a part of Toys for Tots,” says Brian. The Ticket Machine also gives back to the Ronald McDonald House, the main charity of the National Association of Ticket Brokers (NATB). Brian and his dedicated team help out with the golf outing each year. The Ticket Machine is part of the Lansing Regional Chamber of Commerce, the Detroit Chamber of Commerce, Michigan Chamber
