Preface The end of the students academic tenure at the National Institute of Design is marked by the culmination of a substantial investigation in the field of design on a topic closely aligned to their discipline of study. It is through the graduation project and subsequent documentation of the same that this investigation takes place. This is final academic project for the student. Jury compromising faculty members evaluate student’s performance in the graduation project, after which, students are awarded NID’s professional educational programme final graduation. The graduation project is an opportunity for students to demonstrate their expertise as independent practitioners of design. However, this project must be done with academic rigor incorporating system inquiry and informed design decisions.

NID The National Institute of Design is a design school that functions as an autonomous body under the Indian Ministry of Commerce and Industry. NID has been declared as one among the Institutes of National Importance by Act of Parliament, under the National Institute of Design Act, 2014. The school offers educational programmes at Bachelors and Masters with five faculty streams;Industrial Design, Communication Design,Textile, Apparel & Lifestyle Design, IT Integrated(Experiential) Design and Interdisciplinary Design Studies. NID is a unique institution with many problemsolving capabilities, depths of intellect and a time- tested creative educational culture in promoting design competencies and setting standards of design education. Education at NID is a combination of theory, skills, design projects and field experiences supported by cutting edge design studios, skill & innovation labs and the Knowledge Management Centre. The Bachelor of Design at NID is a four-year programme at the Ahmedabad Campus, offered in eight disciplines; Animation film Design, Film and Video Communication, Graphic Design,Exhibition Design, Ceramic and Glass Design,Product Design, Furniture and Interior Design and Textile Design.

Product Design Product design is concerned primarily with the relationship between products, systems and those who use them. The product design programme at NID inculcates user-centric approach and processes. Responsibility and concern towards the social, physical and ecological environments is emphasized in the process of developing innovative ideas. The product design programme assimilates inputs in diverse domains such as human factors, cognitive ergonomics, form studies, studio skills, advanced cad, research methods, design management, materials & manufacturing processes & social sciences. Emphasis is on process centric approach which shapes a student’s education through participation and teamwork. Product design aims and explore for Design for quality of life, Design for healthcare, Design for social impact, Design for social impact, Design for sustainability and Design led futures.

Samsung Samsung India electronics of production Ltd headquartered in Gurgaon, is one of the leading manufacturers of electronic and technological devices in the world. The company offers mobile phones, tablets, televisions, home appliances and computers. The company’s vision is, based on human resources and technologies, create the best products and services, and contribute to society. Samsung Design Delhi (SDD) is one of the global design studios of Samsung, strategically placed along with the Samsung Research Institute, Noida at Logix Cyber Park located in Noida. SDD is a Vital Part of the Community Leading the Way in Design. The design team is majorly working with UX, ID, CMF, graphics and packaging, research, and service design.

Synopsis The project commenced with an open brief to identify new product opportunities in the living and kitchen space, supporting Indian consumer needs and incremental value to Samsung’s existing range of Digital appliances. Through research, it got centred around the topic ‘healthy snacking’. It eventually turned to the idea of designing an appliance for preparing snacks at home using the hot air cooking method. Trend study, generation study, market research, user behaviour, current scenarios, and so on had shaped the idea for the final product. Functionality, safety, and ergonomic parameters became the backbone for the selection of design and concept models. The initial stage was looking at all kinds of cooking methods and later narrowed down to the new snacking habits evolving around the western influence in the country. Covid 19 pandemic affected the lifestyle and triggered a work from the home scenario that had scarcely seen prior. All the possible archetypes were explored during the ideation stage to develop under four different heat throwing directions. Ideations had done considering various possibilities to identify the pros and cons. Eight models with various archetypes were ideated, modelled, and 3d visualised for further reviews. Three out of the eight models had taken forward for the mock test. It had based on the scores in the parameter analysis.

Two models were forwarded, adding all improvements which the parameter analysis showed. One model had hot air blowing from the top lid. The other one had it from the bottom and sidewalls. Since the project happened during the Covid-19 pandemic of 2020, data collection and research had restricted to digital platforms. User test and market research had conducted following the Covid-19 safety protocol. The project had aimed to create healthy snacking and support the epicure and nonculinarians to be independent in cooking.
Initial brief The core mission is to discover deep consumer insights and propose new business opportunities in the domain of products in the living and kitchen space. The secondary mission is to capture micro and macro trends to suggest improvements and incremental value additions to Samsung’s existing range of digital appliances (Eg, Refrigerator, Washing Machine, Microwave, Air Purifier etc). This project will aim to arrive at the radical or incremental innovative product opportunity and scopes in appliance by understanding the consumeric- lifestyle- psychosocial behavioral trends of mass consumers- the millennial and Gen Z

Analysis of
Design features & trends Through Design Eras
Until 1930 industrial design was considered as a decorative art. After World War II it became the Industrial design which this era is witnessing. There were several design trends and movements that happened in the 20th century in which Some are still considered to be the best of the best- Designer master pieces. Analyzing each of these movements one could understand the social cultural influences and human life of that location in that time where the trend evolved. The products that were invented during each period shows how human life wants to improve the lifestyle in a better way looking towards a better future. In the early periods like the art and craft era the design inspiration was from nature, materials and later where technology and new steps in human history like space traveling gave birth to a space age design trend. As the time passes where more people start to travel across the countries and get to see new products eventually build demand for those products and that leads to mass manufacturing. Furniture, automobiles, and industrial products are the best examples which express the characteristics of the design trends in the design era. Being an Industrial designer, it is always an advantage to have knowledge about Industrial design history which helps to design products well for the future and develop aesthetic sense.

The art and craft movement (1834-1896) was influenced most prominently by both the imagery of nature and the forms of medieval art like the Gothic style. The practitioners of the movement strongly believed that the connection forged between the artist and his work through handcraft was the key to producing both human fulfillment and beautiful items that would be useful on an everyday basis. As a result, art craft artists created a vast range of decorative art including Ornamental objects, floral fabrics, bookmaking, weaving, jewelry, enameling, metalwork, ceramics, and architectures.
Mission style furniture
William Morris one of the best practitioners of this movement, known for his pattern design which is inspired by nature. Furniture done in this style is very rectilinear often with an emphasis on elongated forms using wood as the primary material. The decoration on these furniture pieces is minimal, allowing the natural materials and crafted details to shine. These products were not manufactured, each product shows the highly skilled craftsmanship.

Art nouveau, an ornamental style of art that flourished between 1890-1910 throughout Europe and the US. Art nouveau was aimed at modernizing design, an escape from the historical styles. Artist drew inspiration from both organic and geometric forms from nature. The distinguishing characteristic of art nouveau was the long organic line with rhythmic patterns with high details same time appears to be delicate. Objects form, texture, space, and color with its own decorative effect. An elegant and graceful fuse of shapes especially flower stalks and buds, vine tendrils etc with the combination of materials such as iron, glass,

Art Deco, also called style modern movement within the decorative arts and architecture that originated within the 1920s and developed into a serious style represented modernism became a fashion which broke the traditional elegance. This trend created both luxury items and massproduced wares. The characteristic features of artistic movement reflect admiration for the modernity of the machine and for the inherent design qualities of machine-made objects— e.g., relative simplicity, planarity, symmetry, and unvaried repetition of elements. Art Deco objects often showcase simple, clean shapes, usually with a streamlined look.

Bauhaus, founded by Gropius in Weimar, Germany, in 1919, as a replacement quite conservatory based around a holistic approach to the creative disciplines. Combining two schools, the Weimar Academy of Arts and therefore the Weimar School of Arts and Crafts, into what called the Bauhaus, or “house of building,”. The design innovations commonly related to the radically simplified forms, the rationality and functionality, and therefore the concept production was reconcilable with the individual artistic spirit—were already partly developed in Germany before the Bauhaus was founded. Aesthetic use of primitive shapes

1950 the furniture design was influenced by the retro and minimalist era. That time, furniture was made for being function as the primary focus. During that time, most of the furniture was made with solid materials like Steel wood and polyfoam even though designers were encouraged to use and explore new materials for furniture aside from wood. All the furniture of that decade created an identity and build a connection with human emotion which made all these an iconic piece with tremendous design value even in the 21st century. Most of the furniture was having an organic shape with a fuse of sculpture and furniture.

1950s cars come up with space-age reflection such as large and prominent tail fins, flowing designs like rockets with a lot of chrome. An ideal car concept was that the elements of the car that were functional, such as taillights, wheels, radiator grills were to be shown rather than kept hidden from view. The wrap-around window was a nice look though. Most of the cars appear to be lower- longer and wider with pastel shades of blue, pink and green. Luxury items such as power steering, power brakes, and automatic transmission became more popular and widely available.

1960-69 was the space age, at the same time pop art influences were significant in this decade. Most of the objects appeared to be in round shape with vibrant primary colours focusing on bold and fun attractive choices. Designers were experimental and relayed on the advancement of the plastic industry for capturing new forms and unprecedented changes lead to fresh ways of thinking. Furniture was developed for mass manufacturing considering comfort, multi-functionality, and stack ability.

The 1960’s automobiles belonged to a definite decade of automobile history with the arrival of economy, muscle and pony cars. 1964 models were designed with serious consideration for the needs and economy use. 1965 was called the “the year of the stylist.” Engineering changes took a back seat to changes in overall appearance. A long hood, a short deck and low, sleek profiles were the characteristic design trends of that decade. Stripe line starting from the nose was quite trending design feature appeared in many car designs including muscle cars. Overall there was a change from bubble top to boxier forms.

In 1970s contemporary style has started. This decade’s furniture has an influence of postmodern architecture which result in expressive design yet functional. This decade was facing an energy crisis and the environmental issue at the forefront of the consumer mind lead the design environment to return to eco-friendly materials. Recycled materials took place in the furniture industry. Furniture with compartments and nomadic furnishings which can be moved become popular in this decade. Natural shapes, colours and fluid shapes were the features of those periods of furniture.

In the 1960s and ‘70s, luxury automakers like Porsche, BMW, Audi, and Mercedes-Benz were some of the first to reintroduce curved exteriors. Wedge design, pop-up headlights, and the emergence of the supercar are just a couple of of the trends that hit the streets within the ’70s. The 1970s, almost every American-made car had hard, sharp edges, with few curves. They were uniformly designed as a series of three connected boxes: the hood, the cabin, and the trunk. Most of the cars in that decade appeared to be elongated forms with racing strips, opera windows and lamps. Fender vends were quite famous in those eras designs.

Most of the products in this decade come up with simple colour schemes, clean font style futuristic minimalism. The products in this period were designed keeping functionality in mind. Perfect integration of shapes with minimal elements giving overall a simple form shape. Portable radio made by Sharp company is an example of Japanese miniaturization - a design trend emphasized the efficient use of small spaces has been identified in this decade. Also, the influences of the Hippy movement were noticed during this period.

The 80s witnessed unseen integration of geometry, flat colours combined in bold contrasting palettes and stylised geometric patterns in furniture design. Black and white stripes and abstract squiggles become the ingredients for the Memphis inspired design which was fueled from the earlier movement such as pop art and art deco. The 80s considered being the time for modern design with recognizable design styles. Bright neon primary and pastel colours and repetitive patterns often found in those decades furniture. Asymmetry was on the futuristic characteristic of Memphis furniture.

80s cars were boxy due to 3 reasons- European style trends, a government-mandated push for the fuel economy and new technologies that allowed manufacturers to design and create curved shapes more easily. Car design prioritized the aerodynamic designs with sleek exteriors to minimize the wind resistance. Moreover, the design was moving towards the futuristic style. During 1980 computer modelling for a car has begun. Which gave the automakers the means to produce those soft curves and manufacturing technologies made it easier and cheaper to produced curved shapes. So, they have high expectations about their retired life where they want to spend time more with their kids and grandkids. They are healthy, energetic, and relieved from the family responsibilities as their children are now the backbone of their families. Baby boomers find time to fulfill their bucket list such as visiting religionrelated places, treating their children and grandchildren etc. which seems to be silly for other generations, but they value it a lot. They like to follow the same routine that they followed for the past 50 years such as waking up in the early morning meeting friends in the park, regular chai and newspaper etc. Another big concern for these elderly people is that will they become a burden in their children’s life when often health issues come. The spread of Covid 19 became mental stress and fear of this generation and forced them to be inside the 4 walls of their homes.
Values relationships The baby boomers generation value relationship because they grew up in making calls and writing letters. Define strong interpersonal skills. This generation relies on the old Indian cultural values where they want to guide their children to specific professions, follow the customs and religious rituals.

This generation works to live rather than live to work. Most of them are Adapted to the 8-hour office jobs in which they usually get time to spend with their children. Overtime working is not common for them. This generation started with a shift hour system to jobs, giving them a work-life balance that was necessary for the balancing of a family where both parents are working. But still, Generation X has a lot on their plates, not the least of which is care giving. While more than 52 per cent have children living at home, many Gen X’ers are caught off guard when they are also expected to take care of aging parents. Financial planning and retirement decisions often get put on the back burner to take care of more immediate needs. A millennial in India still lives with his parents, even after marriage. So the concept of filial relationships plays a more important role than “friends”. This culture can be an important force in guiding generations. That often results in higher expectations from younger generations. Even though Gen X parents are more open-minded and have given the opportunity and independence to their millennial and Gen Z children, society and the social circumstances raise questions about their parenting. Gen X teens didn’t have many rights to decide or to choose from. Their parents were the decision-makers for them, and they went through many struggles as mentioned above. Gen X are the upcoming senior citizens enthusiastically looking forward to their retirement life expecting to be free from the family responsibilities and spend some time for their own passion such as gardening, traveling, charity and social works, politics etc. Despite the amount of debt, they are carrying, Gen X has goals of reaching financial freedom. Members of this generation are thinking about retirement time and they expect their children to start earning their own for financial safety and encourage them to start a new family. Some of Gen X also consider retirement planning as their top financial concern. And another set of people who work in the informal sector would like to “fully retire” someday, but do not believe that goal is attainable. Of course, considering this generation has lived through not one but two significant recessions, their gloomy outlook makes sense. This generation is more aware of their health and well-being. Boiling Simmering Poaching
While water-based cooking methods cause the greatest losses of water-soluble vitamins, they have very little effect on omega-3 fats.
These are water-based cooking. These differ by the water temperature and duration of cooking. These reduce the vitamin content within the food. Vitamin C is heat sensitive and water- soluble which may leach out of vegetables. Up to 60% of thiamine, niacin, and other B vitamins could also be lost when meat is simmered and its juices runoff. However, when the liquid containing these juices is consumed, 100% of the minerals and 70–90% of B vitamins are retained. Blanching may be a very similar cooking technique to boiling and involves immersing food into a boiling liquid for a really short period of your time, before being removed and plunged into drinking water to prevent the cooking process. Common sorts of food that are blanched include vegetables and fruits. In simmering the food is cooked below boiling point. it’s a slower method of cooking. Usually used for preparing soups and sauces. In poaching the temperature of the liquid, the food is cooked in is slightly cooler than simmering point (around 70-85oC). This method is best for fragile food like egg and fish. Polycyclic aromatic hydrocarbons (PAHs), which are potentially cancer-causing substances that form when meat is grilled and fat drips onto a hot surface. However, researchers have found that PAHs can be decreased by 41–89% if drippings are removed and smoke is minimized.
These are similar methods of cooking with dry heat. When grilling the warmth is from below, but when broiling the warmth is from above. Grilling is hottest due to the good flavor. However, up to 40% of B vitamins and minerals could also be lost during grilling or broiling when the nutrient-rich juice drips from the meat. PAHs which are potentially cancer-causing substances that from burn meat is grilled and fat drips burn or fall under hot surfaces. It is often decreased by controlling smoke and droppings.

As food heated sucrose in the food melts and starts to boil, that temperature is caramelisation temperature. So in initial stages, it has a butterscotch flavour. After that temperature point, sucrose decomposes into its component molecules, glucose and fructose. Further chemical reactions result in flavour and aroma.

The denaturation of protein molecules in food are the reason behind the change in the texture of the food. During cooking hydrogen bonds between amino acid strands breaks and ultimately the protein unravels to retake its initial form of amino acid strands. the rearrangement of the protein molecules results in the change of a runny, fluid texture to a rigid, firm texture. Conversely, protein denaturation can also cause the formation of softer textures. For example, the protein collagen, which is the major component of the connective tissue in meat, has a tough, chewy texture. However, during cooking, the weak hydrogen bonds are broken and the protein begins to decompose and react with water molecules to form gelatin. This tenderises the meat, giving it a softer, more palatable texture.

Starch granules consist of amylose (linear chain of glucose) and amylopectin(branched chain of glucose). So while cooking starch granules absorb water and swell at the same time amylose leach out of the granule and bonds to form a lattice structure, which traps water molecules resulting in thickening the gravy.
Maillard reaction Millard reaction is one of the most complex chemical reactions between amino acid and glucose, fructose or lactose. Heat is required for this reaction which results in the formation of a range of flavour and colour. Similar to caramelisation, hundreds of flavours are produced during Maillard reactions depending on the food cooked. Maillard Reaction is responsible for producing many sulphurcontaining compounds, which contribute to the savoury, meaty, flavour characteristics of cooked meat. Melanoidins are responsible for the brown colour during the Maillard reaction. Maillard reaction usually occurs during frying, baking, grilling and roasting. Antioxidants are also generated during the Maillard Reaction. Antioxidants are molecules that can slow down or prevent other molecules from undergoing reactions that can cause damage to human cells.

There are three R’s for nutrient preservation which reduce the quantity of water utilized in cooking, Vegetable stew reduce the cooking time and reduce the area of the food that’s exposed to air or heat. Waterless cooking, pressure cooking, steaming, stir-frying and microwaving are least destructive of nutrients. If possible, save the cooking water for creating soup, sauces or gravy. If food is cooked in water, add it to a little amount of boiling water, cover the pot and cook it rapidly. Destructive enzymes are inactivated by heat so it’s best to cook foods during a preheated pan or oven or in water that’s already boiling. Frozen vegetables are often steamed. The smaller the pieces food digs, the greater the probabilities of losing nutrients. On the opposite hand, small pieces mean faster cooking. Root vegetables like potatoes should be boiled with skins on then peeled after boiling. This helps the nutrients to migrate to the centre of the vegetables. Reheating cooked vegetables further destroys vitamins. Deep frying and heating for an extended time or heating at a heat should be avoided during cooking.
Cooking methods and the utensils have a relevant role in defining the time for the cooking process. These fried snacks like samosa, potato chips are part of our daily chai time. It is often found in most Indian houses and restaurants reusing the oil multiple times or mix with other oil for food preparation. When the oil is heated to heat for an extended period of your time, toxic substances called aldehydes are formed. Aldehydes are linked to an increased risk of cancer and other diseases. Reheating oil also increases aldehyde formation. These are the three different frying methods with oil. It is often found that the obsession with street food is packaged from a young age. And the driving out has more to do with the Covid-hit economy and poorly planned lockdown than safety concerns. An open mind for cooking Most of the millennials forced to step into the kitchen during this period, which will reduce the dependency on a third person for food preparation. The indicator lamp is wired in parallel with the heating element, so it simply indicates that power is applied to the heater. Heating signal Usually appeared in Red light. Keeping the design minimal, all the functions has been controlled through an app. Primary power on/ off and app connecting buttons are on main focus.
Both basket and the top cover is completely detachable making it convenient for serving as well as cleaning. Top part of the basket is made of anti-thermal material for the safety and the size of holes around the basket kept smaller than a corn seed to minimize the dropping into the appliance.
Dock connection provides both convenience and safety while handling. This dock has given spac for a small container to hold the ingredients.

Basket designed with removable neck holding handle, which help to hold the basket at the rim and lift the basket for serving. It kept movable considering the cleaning feasibility. The basket has given multiple holes on the side walls for the hot air enter. The holes on the side also prevent the food particle to drop inside the appliance.

Take away It’s been a great journey in NID right from the day I joined. I am glad that, I have taken the right decision of taking design as my career and product designer as a profession. This journey taught me countless things which is an asset to my professional and personal life. NID always remind me to explore everything without a second thought and learn from failures enjoy every single success moments and move forward-thinking to the next. While at NID, many of my projects were based on cleaning and cooking-related products. I was into core product design, so I wanted to do my graduation project on home appliances. My internships helped me to develop visual stock and sensitive towards details. All the design course and project in the curriculum helped me to improve my skills and quickly present them. All the design projects was an opportunity to find the possibilities to make it better.
