Editor’s Letter Inspiration exists, but it must find you working. –Pablo Picasso August is finally here and just as most flee the rude summer heat, here I am flying back in. Spending a few weeks away in an Amazonian paradise always has surprises, but this time they were nestled in the heart of Ecuador’s capital: Quito – my home. The trip was unique; a combination of meet ups, experiences and eye-openers all came together by chance, or maybe fate. Personally, I don’t believe in accidents, and getting to know two of the most inspiring people I’ve met to date was no coincidence. Andrea – my outrageously fun childhood friend – took me along to a fantastic Fondue evening at her friend Scott’s. The food? Delicious. The company? Life changing. For dessert, we got a taste of Andrea’s curiosity as she questioned Ahmad on his Inca’s Treasure project; what came from it was the proverbial cherry on top of the cake. She ignited an enthusiastic fever that lit up the room as he explained “Ahdieh and I wanted people to understand that the real Inca’s treasure is not in the gold and possessions they buried, but rather in the mountains and nature that hold them” he smiled. “The page shows everyone just how much beauty this country has to offer.” We all want to move and be moved and their photography sways and stirs.

Who says abayyas can’t be fashionable? Maha Al Qattan, Founder and Creative Director of Roselle - an Emirati luxury fashion label, has redefined the cultural piece of clothing into a fashion statement.

From couture to prêt-à-porter, each piece designed by Roselle is an expression of subtle luxury and elegant culture, made from exclusive high-end fabric with specific attention to detail using time-consuming, hand-executed techniques. Roselle is an Emirati luxury fashion label founded by Emirati couturier Maha Al Qattan in 2011. Qattan, born and raised in Dubai, is the Creative Director of Roselle. With a BBA degree from the University of WisconsinMadison and a master’s degree from Cornell University, her personal fashion values of simplicity and practicality reflect in her designs. From a very young age, she was extremely passionate about exclusive materials and haute couture. Her first encounter with the world of fashion was when she bought an Indian sari fabric and made a dress. She states, “I grew up developing a very deep passion for exclusive fabrics and haute couture, and always preferred personally designing chic abayyas and dresses for myself and my sisters, especially for festive seasons and special events.” Her pieces received many compliments and generated a high interest for orders, and that is when she decided to launch her personal line. “After returning from the US, I attended professional courses at ESMOD Dubai and went on to establish Roselle with my partner Abeer Al Darwish.” Qattan says that “statement jewelry, laces and pastel colors” will be the hottest trends this season. And it sure reflects in her latest Summer 2013 collection. It consists of beautiful abayyas in soft pastel colors like baby blue and pink in addition to the conventional blacks giving the collection its haute couture edge. Qattan’s favorite pieces are the Roselle signature cuts as she believes them to be the perfect substitutes for dresses that are worn to special events and weddings. She believes that the abayya has evolved from a plain black piece of fabric to a piece of clothing through which Emirati women express their unique selves. This is done through the various details colors, fabrics and cuts that make an abayya what it is. Qattan, through Roselle, has transformed the abayya from a piece of black fabric to a fashion item that can be individualized and used as a statement of self-expression. She does so by incorporating bold prints such as polka dots, unconventional abayya colors like hot pinks and electric blues, tradition defying abayya fabrics such as lace and innovative appliques. She does all of this while still retaining the beauty and modesty of a traditional abayya and this is what makes Qattan a successful abayya couturier. Even though the label has been established for short span of 2 years, Qattan has big hopes for its growth. She aims to include high fashion readyto-wear pieces and limited edition accessories to the brand in the future. Her goal is to keep the brand Roselle evolving and delivering the best in abayya haute couture by taking inspiration from the continuously evolving, ever changing, dazzling country that she belongs to – the UAE.

Rebellious Dark Elbows: the taming tools in your kitchen. Are you afraid of going sleeveless in public? Maybe it’s your dark elbows tainting your insecurities in the bare arms department. Longing for free arms? Just follow these steps and bring light to the darkness.

Homemade Scrub 1: Sour Sweetness. You will need: Lemon Sugar

Beautify: • Squeeze the juice of one lemon and add a tablespoon sugar.

Homemade Scrub 2: Tangy Soda. You will need: Bakin Soda or salt Lemon Juice

Beautify: • Take ¼ cup of baking soda or salt and add a good amount of lemon juice. • Mix it well until it forms a paste.

• Mix it well until it forms a thick paste. • Apply the paste to your elbows, and scrub, scrub, scrub! • Apply this mixture on your elbow for five to ten minutes every day. Fact: Lemon is a natural bleaching agent that will aid the fading of dark elbows. Fact: Sugar acts as a natural exfoliator and clears dead skin.

• Let it sit for 20 minutes. • Rinse it off with warm water.

Fact: The gritty texture of baking soda will make your skin soft and supple.

3 Steps to perfect pouty Ombré Lips

Step1: First, apply the darker, opaque lipstick. Using dark lip liner, make an outline on your lips. Slightly bring the color down. Step2: Apply the lighter lipstick (or concealer). In the middle of your pout, apply the lighter shade lipstick or concealer.

Ombré is an effect with a gradual color changeover from light to dark.

You will need: Dark lipstick or liner Light lipstick (or concealer)

Step3: Now blend. Blend the lighter color inwards and try to merge it with the darker one. Make sure you leave the ends darker than the middle.

Optional Step: Transparent gloss. Smooth out your lips with the transparent gloss to add that sexy lush touch.

Brighten Your Locks Soak your strands for high-wattage shine and rich color, whatever your hue is. Once a week or whenever you feel you could use a shine boost.

You Will Need: 2 tea bags Chamomile: a golden mix for blondes Rooibo:, a rich orange for redheads Black tea: dark for brunettes 2 cups of water

Beautify: • Steep tea bags in boiling water for 10 minutes. • Let the liquid cool to room temperature (In a rush? Refrigerate it). • Pour the mixture over wet, just-washed hair, rubbing it through (the way you would shampoo).

Fact: Tea lowers the pH of hair, closing the cuticle for extra shine, softness, and manageability. Tea’s natural pigments can also neutralize brassiness for a more flattering color.

Read on and get the lowdown. 1) Rinsing after brushing your teeth – The protective fluoride coating that the toothpaste leaves on is washed away, which otherwise would add hours of protection to your teeth. Brushing right after a meal is also a no-no. Food acids and sugars that condense in your mouth weaken the protective enamel on the teeth. By brushing immediately after a meal, we brush away the weakened enamel; and hence it’s always recommended to wait for at least half an hour before you pick up your toothbrush.

2) Sleeping eight hours a day – Scholars argue that sleeping for eight hours a day could leave you feeling more tired. A more flexible sleeping

schedule, with sleep patterns that involve fragmented rest and daytime napping, could prove to be far more beneficial. To all the students who often pull an all-nighter, power naps of 15 to a half hour minute sleep are also just as effective as sleeping for an extra hour at night.

3) Showering every day Personal hygiene has perhaps been overdone. Dermatologists argue that using hot water and harsh soaps could strip the skin of its natural oils, leaving it drier, which makes it more prone to cracking and infections. Everyday showers are also bad for the hair, and increase the chances of developing split ends and hair cracks! To avoid looking like a withered old woman, use cooler water, and a cucumber soap, which would moisturize your skin for hours after your shower.

4) Cutting your hair will make it grow faster – 6) Shaving against the direction of the hair growth – In reality, trimming your hair will help prevent it from splitting at the ends, but it does not speed up its growth. An occasional “refreshing” is mandatory, and this keeps it from forming a “Y” at the ends, which if not taken care of immediately, will spread upwards, weakening the hair. The broken ends ought to be taken off, but not for the purpose of making the hair grow faster.

5) Plucking one gray hair will lead to multiple gray hairs growing back in its place– Each follicle of the scalp allows for only one hair to come out, regardless of the color. The grayness is due to the melanin slowly withering away from the follicle, which contains pigment cells called melanocytes. As the graying of the hair color progresses, the melanocytes become less active, and eventually die off, leaving no cells left to produce the natural hair color. And the moral of the story is? Pluck away!

Although it is the fastest way to a cleaner shave, shaving “against the grain” is also the route to razor burns, damaging of the hair follicles and the unwanted occurrence of ingrown hairs. Hairs tend to grow in all directions, and dragging a razor against the natural direction of hair growth results in you pulling the hair back on itself. Rather, try using short, gentle strokes without applying too much pressure to obtain a more comfortable shave.

7) Waxing leads to more hair growing back – The color and the texture of the hair directly correlate to the gene pool, and hence, results concerning the consequences of epilation vary with each individual. In most cases, waxing leads to finer and thinner hair growing back for most people. To be on the safer side, take the following advice: hairs on your arms, legs, eyebrows, bikini line and underarms could be waxed off. On the other hand, hairs on your top lip, chin and breasts, which are related to hormonal changes, should not be waxed or plucked, as they are more likely to grow back thicker.


8) Changing shampoos will cause dandruff – It isn’t what you use, but rather how often you use it. Washing your hair on a daily basis is likely to increase the dryness of the scalp. Specialized shampoos can help reduce dandruff, and effectively soothe and nourish your skin. The severity of the flaky woes is also related to seasonal changes, and many scientists argue that dandruff tends to worsen during winter.

9) The more you wash your face, the fewer breakouts – Even though washing your face helps remove dirt and oil from the pores, overdoing it is very likely to lead to dryness and irritation of the skin, which in turn will cause even more breakouts. The general rule is: find an exfoliating facial wash that suits your skin, usually with apricot or aloe vera extracts,

use circular motions to spread it across with your fingertips and apply it every morning, and before you go to bed. Wash it off with lukewarm water, and pat dry when you are done. For best results, do not leave your make up on overnight, but rather, allow your pores to breathe a little!

10) Always comb your hair from top to bottom No Sir! Combing wet hair from top to bottom can actually lead to breakage. Rather, brush it in the opposite direction to avoid snapping strands. If you have knots, starting at the ends and working your way up puts less stress on your hair. To detangle massive knots, try holding the hair above the knot while you untie it. The pressure exerted from top to bottom causes the hair to be pulled from its roots, which could result in an increase of hair loss.

Wait for the hair to dry before finishing by spritzing light hold hair spray to set the waves.

Patrick Mavros, a fifth generation Zimbabwean, a man with a unique vision who draws inspiration from the landscape, flora and fauna of his native Africa. After crafting a pair of earrings for his wife, her friends’ flattery and admiration for his work was relentless. The question of where this talent came from is inevitable. The Mavros family ranch was always surrounded by the wildlife that is so often depicted in his work and began playfully tickling inspiration in Patrick as a child. “Full Spectrum” showcased the collaboration of the works of Hong Kong-based handbag designer, Piecco Pang and New York-based painter, Antoinette Wysocki. The exhibition showed the two artists coming together to not only reveal their art but also create ready to wear art pieces in the form of evening clutches. Their love for fashion, function and art, created a one of a kind collection with pieces just like in the painting they were inspired by. After years of collaborations, they created limited edition handbags, designed by Pang, that feature abstract paintings created by Wysocki which debuted at Pro Art Gallery here in Dubai. The artist has developed a process of combining various materials, chance, control and analysis in her pieces. Each work starts with gestures and washes, and then moves into controlled brush strokes with detail. When the painting reaches a comfortable finished point, it is then time to indulge in the materials. The goal is to balance raw, sometimes untouched surfaces – in some areas with highly saturated color – in others sometimes consciously or by chance.

hether you’re a tourist or a resident, you haven’t done UAE the honors unless you have visited its deserts. What makes the UAE worthy of awe and appreciation? even though globalization is omnipresent and has taken over the infrastructure in the big cities, the peoples’ original traditions still remain prominent throughout their sandy areas. Back in the day, the desert was where people found a living. It was inhabited with Bedouins, who owned tents and camels, and camped in the desert. With the boom of urbanization and the shifting of nationals away from their traditional desert huts, the desert has spun into a renowned, recreational site. It is a place to run off to from the hot weather as soon as the sun sets, a place to test your driving skills, or simply, a place for your family to reconnect over some barbeque, some tabbouleh, and some hummus. Do not forget the Arabic pita bread! A temptation to the tourist as well as the resident, the desert offers a number of opportunities, such as getting in touch with nature, by camping out in the open; maybe even experiencing its wilderness, through driving quad bikes through the dunes. For those who have a calmer nature, grabbing some meat, cold mezze, and Arabic bread, will go very well with a desert barbeque. Regardless of whether it is friends or family, the desert welcomes everyone, with its cold wind and its golden sands that allow for all sorts of reconnections. One can also take part in a desert safari, one of the UAE’s most popular pass times. The scenery allows for a truly exceptional experience for all. A desert campsite usually welcomes visitors with a traditional cup of Arabic coffee, alongside a flavored sheesha. One can sit in the widespread tents – often offering air-conditioning. However, during the later hours of the night, the weather cools off, and the swift breeze calms the heat. One of the most cherished moments one can experience is getting on top of a dune to watch the sun set as it casts its orange luminosity over the vastly spread horizon. Desert driving and dune bashing in a four-wheeled drive, or on a number of quad bikes is a must for every safari trip. Getting into a Patrol or a Land Cruiser is the way to go, while the driver does all kinds of twists and turns that make your head spin, as your stomach turns upside down. It truly is as thrilling as a rollercoaster ride for all the adrenaline addicts! Certain safari camps offer exciting rides on a camel, the one or two-humped animal that could go for days with water it hasstored in the fatty deposits on its back. Do not fear for your safety, you are in the hands of a trained guide who uses the reigns to direct the camel, while you rest on its back. It’s a soothing ride, and the best part of it is experiencing the camel rock itself to and fro in an attempt to stand up or sit down, for you to get on or when you’re getting off! Other activities that could be enjoyed include dressing up in local costumes, usually accompanied with the delights of getting a henna tattoo drawing that beautifully decorates the hands and arms. Sand boarding can prove to be far more entertaining and thrilling of an experience, surpassing the joys of snow boarding. Finally, the perfect night out in the desert would come to an end with an enchanting belly dance entertainment, performed to the tunes of typical Arabic music, where you can shake your belly with the performer, or if you are the shy type, relax back and watch the show while you puff on a sheesha. The UAE offers a variety of fancy, exotic hubbly bubbly flavors: cherry, melon, double apple, and if you really want that refreshing taste in your mouth, make sure to try the watermelon sheesha with a slight hint of mint! Desert safaris could take place in the morning or at night, or for the nature fanatics, you could signup for an overnight stay at the camp. Enjoy a private safari as a couple, or if you are with a bigger group, sign up for one of the numerous group packages. Mukesh Jagtiani, Indian

Nadine has also seen her work sold at various auctions including Christie’s Dubai, with a specially commissioned piece during their Jewels and Watches: The Dubai Sale in April 2010. Today, she is repeatedly featured as one of the most powerful Arab women on many lists.

Mukesh Jagtiani is the richest and most influential Indian expatriate in the Middle-East and one of the most powerful leaders in the retail industry. He is the founder of the ‘Landmark Group’, one of the largest retail conglomerates in the region. However, success didn’t come easily to Jagtiani. He didn’t finish his accounting school in London and then cleaned hotel rooms and drove a taxi to earn money, before eventually returning to his family in Kuwait in 1972 .By the time he turned 21, he lost his brother and mother to cancer, and his father to diabetes, all in a span of two years. This left him without a concrete education, a job or a family. Nevertheless, he persisted to overcome his grief and addiction and set out to make a name for himself, using his business acumen. With only $6000 in his pocket, he established the first ‘Babyshop’ in Bahrain with one employee. Eventually, he saw the opportunity in the UAE and moved to Dubai where he established yet another ‘Babyshop’. This was just the beginning for the Landmark Group. Today, under Jagtiani’s leadership, the Landmark Group operates over 900 stores, with over 35000 employees in a total of 15 countries.

Nadine Kanso, Lebanese Having spent her entire childhood in Beirut, Nadine, a photographer and jewelry designer, came to the UAE with a clear passion for Arab culture and in particular, expressing it through a contemporary visual framework. In 2006, Nadine rose to prominence when she came to Dubai to exhibit a solo show at the B21 Gallery, with a collection that included a series of portraits depicting Arabs from across the region with an eclectic mix of artistic, creative and cultural milieus entitled, ‘Who I Am’ or ‘Meen Ana’ in Arabic. In the same year, Nadine created her jewelry line, a complementary offshoot to her exploration of Arab identity, ‘Bil Arabi’, taking inspiration from the Arabic alphabet to craft rings, bracelets, pendants and earrings. Since then, Nadine has further developed her work on both fronts with a continued

Gerald Lawless, Irish Often ranked as the most powerful hotelier in the Middle East, Gerald Lawless left the UK in 1978 to come to Dubai as he wanted to work abroad. He describes moving to Dubai as “pretty exotic”, but “one of the defining” moments of his career. Lawless, who hails from Ireland, is one of the key people responsible for the development of the Jumeirah Group (of which he is now the CEO). This included the establishment of the Jumeirah Beach Hotel, Burj Al Arab, Wild Wadi, Emirates Towers and then Madinat Jumeirah. “I was invited to have a look at the Jumeirah Beach Hotel which was under construction and afterwards, I said to my wife ‘there’s no doubt, there’s no question this is what I want’. Lawless has taken the Jumeirah Group from strength to strength and it is under his leadership that this home grown hotel brand has now become a globally recognized one.

Nashwa Al Ruwaini, Egyptian Dubbed as the Oprah Winfrey of the Middle East, Nashwa Al Ruwaini, Egyptian, worked in Qatar on the radio at the age of 15. She later worked for MBC in London before finally moving to Dubai, UAE. Today, she is the CEO of one of the most prominent production companies in the Middle East – Pyramedia, which is based in the UAE. Even though she established Pyramedia in 1998, it wasn’t until the launch of The Nashwa Show on Dubai TV in 2006 that Al Ruwaini became a household name. Through her show, she chose to discuss topics anchored on social reform that few would dare to. As a result of the show she launced ‘The Nashwa Foundation’ to support women and children who have suffered from abuse and violence. If that isn’t enough, she is also the director of the Middle East International Film Festival. Al Ruwaini has had a successful 20 years in the media industry and it is likely that another 20 years of success lie ahead of her.

A good watch is nothing short of an engineering marvel. Made of hundreds of miniscule parts, watches became prominent during the First World War. Soldiers used simple, easy to maintain watches as an asset in the battlegrounds. When the war ended, men wanted to emulate the war heroes and thus wristwatches found prominence. Today, with smartphones overtaking the proliferation of watches as timepieces, the obsolescence of watches is definitely debatable. A quality watch, however, goes beyond being a timepiece – it is a status symbol, an investment, a legacy. Here are seven things to look for when spending mucho dinero on a quality watch:

1. Precious Metal Construction It goes without saying that a luxury watch should be constructed from precious, quality materials. It is wise to ensure that the materials are going to be inherently valuable. Investigate how much of the watch make is from precious metals, for instance: are the hands and hour markers gold? Platinum and gold are the most commonly used precious metals for luxury watches.

2. Natural, Quality Jewels Jewels on watches can be sourced naturally or manufactured. Natural stones are derived from the earth through mining before being cut, polished and used on the watch. There is an inherent romance to the fact that a stone used on your watch was naturally derived. The alternative to natural stones are manufactured stones – real stones grown in a lab. Sapphires and Nacre (mother-of-pearl) are the most common manufactured stones. Natural stones are considered to be more valuable. Look at the number and quality of stones. Common complex movements in quality luxury watches include: perpetual calendars, rattrapante chronographs (a type of chronograph that lets you time two intervals instead of only one), moon phases, and multiple time zones along with world timers. The best watch makers such as Patek Philippe, Audemars Piguet, Jaeger-LeCoultre design and construct their own movements in house.

4. Seal Of Geneva Swiss branding is not just a matter of reputation. The Seal of Geneva is an actual certification of quality and origin. The seal is handed only to a few watch makers whose watches meet the stringent requirements given by Swiss law. The watch must be created and assembled in the canton of Geneva, Switzerland. Additionally, the movement of the watch should comply with a myriad of technical and decoration requirements. A watch with the Seal of Geneva is at the apogee of luxury watches.

5. Exotic Materials Giving a break to the usual gold, diamond and platinum makes; renowned watch makers have forayed into making watches with unique and rare materials. These materials range from unique alloys to exotic compounds. Watchmakers may do this to differentiate themselves, or improve the functioning of a watch. For instance, an exotic material called Silicium is increasing being used by watch giants like Patek Philippe and Ulysse and Nardin. The material does not require lubrication, thus improving the longevity and accuracy of a watch. An Extravagant Flavor Burst An old guilty delicacy: the sumptuous foie gras bite. Luxury without controversy is not possible. So where does the polemic lie? Foie Gras. A special and luxurious delicacy which literally means ‘fat liver’. This deluxe bite is extremely fatty with a rich flavor and smooth texture. It’s making however, isn’t exactly what PETA applauds. The technique used to fatten the goose is highly controversial, as this delicious bite requires force-feeding ducks/geese until their livers burst. It is a well-known delicacy in French cuisine; the sumptuous bite is rich, buttery and delicate in flavor. Foie Gras is sold as a whole, prepared as a mousse or parfait. It may also be served as a delicious companion to another food item such as steak. Foie Gras melts very easily so it can be very tricky to cook it au point. The color ranges from cream to a pale café au lait. Hence, when it is sautéed quickly, the melting silky foie gras becomes amazingly crisp along with subtly sublime flavors. Foie Gras are of two types, one of them is foie gras d’oie which is considered to be the more refined one. Its milder flavor makes it more delicious. On contrary to foie gras de canard, which has tangier flavor and it is slightly fatty.

C

onstant reinvention when you feel you’ve reached the top is a risk few will take. Leave this to Mr. Ahmed, a fearless soul to make this attempt. Recently, he decided to revamp his restaurant by introducing a new menu altogether in the shape of Café Le Gourmet. Le Gourmet Café is a new invention in the culinary world but located in the heart of Jumeriah Beach Road. Le Gourmet is an Italian word meaning at home. The focus? Café Le Gourmet’s team strives to serve people with good quality, fresh food and in a homely environment. As my friend and I entered the restaurant, I cloud not help noticing the unique décor surrounding us. Featuring big glass windows with white walls, light brown wooded tables and chairs covered with sky blue fabrics. Heavenly. It all danced beautifully into a silvery grey floor. This spacious, airy, multi-level restaurant offered an impressive range of dishes from five different cuisines: Lebanese, Italian, French, Japanese and Greek; the choice is vast. In addition, the upper floors of the café are available for private parties and exclusive events.

As I made myself comfortable on the corner table, sipping the freshly squeezed watermelon juice, I could see the afternoon hustle and bustle on the busy JBR road through a window. What a glee! As I was enjoying the gorgeous view, we were served with our first course. For starters - Mediterranean breeze salad, a mix of rocket leaves with fresh summery apricots, mangoes and strawberries sprinkled with their special secret salad dressing along with deep fried shrimps with tahini dip. Being the mushroom fan that I am, I ordered cream of mushroom soup out of the four options for my second course. The moment it landed on my taste buds, I could feel the light, velvety texture filled wit a bursting flavorful experience. Well, dear readers the journey is still on. We were served with Alfredo chicken pasta, grilled sea bream fish with pepper and lemon sauce and Lebanese mixed grilled platter as a main course. Looking at the perfection with which the dish was so beautifully garnished was enough to make me a Café Le Gourmet addict. As the mouthwatering dishes continued to make their way to us, I was getting restless to taste them. I immediately started with Alfredo chicken pasta. True to its claim! The very first bite reveals the flavors of the dish; the creaminess of white sauce and parmesan cheese mixed with freshly boiled pasta and grilled chicken was just delicio. Getting my hands on grilled sea bream with lemon and pepper sauce was simply put a summer delight bringing out all the flavors of a great fresh fish. It was firm and moist with an ever-so-slight touch of tangy lemon and pepper sauce to compliment the flavor. Last but not the least came an exotic mixed grilled platter serving tasteful lamb kebabs with barbequed mutton bites served with pita bread and hummus. Everything from the seasoning to the tenderness was an absolute culinary gem. Though almost full, we couldn’t skip out on the dessert. The pleasure of tasting the special red velvet mud chocolate cake covered in rich chocolate syrup was a pleasant chocolate-covered surprise. Though the food was out of this world delicious, that wasn’t the only highlight of our terrific meal. All dishes were prepared with fresh ingredients and spades of skill. The staff? Hospitality at its finest. Café Le Gourmet is adding to a genuinely welcoming experience in a bustling and exciting environment - an authentic feast for all the senses. Next time I’m in JBR, my first stop is no doubt this culinary gem. Pasta Di Mare Ingredients: • 100 grms small shrimp, unshelled • 100grms very small squid (calamari), cleaned and cut into 1/2-inch rings • 100 grms mussels, unshelled • 100 grms small clams (littlenecks), unshelled • Coarse-grained salt • 2 cups cold water • 2 large cloves garlic, peeled • 3/4 cup olive oil • 200 grms canned tomatoes, • Salt and freshly ground black pepper • 500 grms linguini pasta • 20 large sprigs parsley leaves only

Preparation: Place shrimp, squid, mussels, and clams in 4 different bowls of cold water with a little coarse salt added to each, and soak for 30 minutes. Drain the shrimp and rinse under cold running water, then shell them. Place the shrimp in a small bowl; put the shells in a small saucepan. Pour the cups cold water over shells, place saucepan over medium heat, and simmer for 30 minutes. Strain the broth (it should yield about 1 cup), discard the shells, and set aside until needed.

Coarsely chop the garlic on a board. Place a small saucepan with 1/4 cup of the olive oil over medium heat. When the oil is warm, add the garlic, saute for 2 minutes, then add the tomatoes Simmer for 30 minutes, seasoning to taste with salt and pepper. Pass the contents of the saucepan through a food mill, using the disc with smallest holes, into a flameproof casserole. Set casserole over low heat to reduce liquid for 15 minutes. Meanwhile, drain the squid and rinse under cold running water. Place another medium-sized saucepan with 1/4 cup of oil over low heat. When the oil is warm, add the squid and saute for 5 minutes. Season with salt and pepper, and keep adding the shrimp broth until the squid is tender, for 10 to 20 minutes, depending on the size of the squid. Bring a large pot of cold water to a boil and add coarse salt to taste. Once the squid are cooked, add the pasta to the boiling water and cook for 8 to 11 minutes depending on the brand: that is, 1 minute less than for normal al dente. As the pasta cooks, drain the mussels and clams, scrub them under cold water, then place in a large skillet with the remaining 1/4 cup of olive oil. Place over high heat, cover, and cook for 10 minutes, by which time they should be opened. Add the shrimp to the pan with the squid and cook for 3 minutes. When the pasta is ready, drain it, transfer to the skillet with the mussels and clams, add the tomato sauce with the shrimp and squid, then mix very well and let cook for 1 minute more to all the pasta to absorb some of the sauce. Transfer to a warmed serving platter, sprinkle the whole parsley leaves over, and serve.
