Starting the morning on the right foot can help set a path toward a successful day, and for many, that strong start begins with breakfast. In fact, a lot of research supports the idea of having a balanced meal in the morning. When you turn to breakfast to fuel your morning, look for seasonal recipes that provide a delicious way to start your day. FOR EXAMPLE, YOU CAN SKIP high-sugar grains with refined carbohydrates like doughnuts and pastries to instead opt for savory, protein-rich dishes like this Asparagus and Goat Cheese Frittata and Fluffy Scrambled Eggs. If you’re an on-the-go eater, try easily transportable recipes like a Tropical Green Smoothie or Vanilla Almond Crunch Overnight Oats. These breakfast recipes are bolstered by the rich, creamy texture and nutrition profile of fairlife ultra-filtered milk, a lactose-free option with 50% more protein, 50% less sugar and 30% more calcium than regular milk. In large bowl, beat eggs, milk, 1/4 teaspoon salt and pepper, to taste; beat in 1/3 cup basil until just combined. 10

In 8-10-inch ovenproof nonstick skillet, heat oil over medium-high heat until hot but not smoking. Add asparagus and salt and pepper, to taste. Reduce heat to medium and cook, stirring occasionally, 5 minutes. Add shallot and continue cooking until asparagus spears are lightly golden and just tender, 2-4 minutes. Pour in egg mixture. Cook 1 minute then scatter goat cheese on top. Bake until frittata is set, 4-6 minutes. Using spatula, slide onto cutting board then sprinkle with salt, to taste, and additional basil. Cut into wedges. Serve warm. Vanilla Almond Crunch Overnight Oats Prep time: 10 minutes, plus at least 6 hours refrigeration Servings: 2 1/2 (about 2 1/2 cups each) 1 carton (5-6 ounces) non-fat or low-fat vanilla Greek yogurt


2 teaspoons pure honey 2 teaspoons flax seeds 2 pinches cinnamon 2 pinches kosher salt 4 tablespoons blanched, slivered or sliced almonds 1 cup rolled oats 1 cup fairlife Fat-Free Ultra-Filtered Milk Toppings (optional): cut berries or citrus additional yogurt additional flax seeds or almonds Divide yogurt, honey, flax seeds, cinnamon, kosher salt, almonds, oats and milk evenly between two 8-10-ounce glass jars or small glass bowls with tight-fitting lids. Securely close or cover containers; refrigerate at least 6 hours, or up to 48 hours. When ready to serve, remove lid, stir and top with berries or citrus, yogurt and flax seeds or almonds, if desired.

1 cup fresh baby spinach or baby kale 3/4 cup fairlife 2% Ultra-Filtered Milk 1 ripe banana 2/3 cup fresh or frozen diced pineapple 1 lime, zest only 1 lime, cut into wedges 1 tablespoon virgin coconut oil 3/4 teaspoon pure vanilla extract 1 pinch ground cinnamon 3/4 cup ice (optional)

6 large eggs 1/3 cup fairlife Whole Ultra-Filtered Milk 1/8 teaspoon kosher salt, plus additional, to taste, divided pepper, to taste

In blender, blend spinach, milk, banana, pineapple, lime zest, juice of one lime wedge, coconut oil, vanilla extract, cinnamon and ice, if desired, until smooth If refrigerating prior to serving, omit ice.

In medium bowl, vigorously whisk eggs until about double in volume and light and lemon-colored, about 1 minute. Use immersion blender for extra fluffiness, if desired. Set aside. In separate bowl, vigorously whisk milk until light and frothy, about 30 seconds. Gently fold frothy milk and 1/8 teaspoon kosher salt into fluffy eggs. Pour egg-milk mixture into lightly greased skillet over low heat. Let setup 1 minute then use silicone spatula to gently fold eggs over on top of themselves. n 11

Over The Moon store owner Debra Slais talks about her store

How long have you been in this business? I have approximately twelve years experience in the retail business. I opened my first store in 1991 called the “Knot Hole” in West Bend, and sold the store in 1996. I then opened “Over The Moon” in November of 2014, after having worked in the financial services industry for 16 years in between. How did you get started/inspired to open your business? I have always been more of a creative person, having had a mother who was constantly creating when I was growing up. She made candles, decorated floor to ceiling for Christmas, made clothing for my sister and I, etc. I love that part of retail– creating displays, making things, etc. I never have to “plan” my displays, it’s a process that just seems to come naturally to me. Has your business always been in the present location, or more? I recently moved my shop from the north side of West Bend to the downtown area. It is now located in the “West Bend Pilot Boutique and Unique Finds” building at 101 South Main Street. The change meant doubling my square footage, and afforded me the opportunity to have more time to create and hunt down new products for the store, as there is one checkout for the 3 floors in the building, and I am not required to be there to check people out, etc. How many employees/family members work with you? I pretty much do everything with the help of my husband. I always felt I would like a shop that people could come to in order to find quality, unique items; I work very hard at searching out different vendors, always trying to buy “made in the USA” items whenever possible, and the product mix changes frequently. I work closely with “Flowers and Gray” a woman-owned business that has a beautiful clothing line, supplying me with clothing for all women, all ages and sizes which is important to me. I also “sprinkle” vintage items throughout the store, as I love and appreciate beautiful items from the past. What do you love most about your industry? I have always loved interacting with my customers and have developed some wonderful friendships over these past years. Also, I think the ever-changing trends/colors/styles in the retail business mean you never get bored–there is always something new and exciting coming down the road. Each day is different. What are some of the common myths you come across in your business? I think there’s a common myth that, because you own your own business, you have a lot of money. Actually, everything that I bring in goes back into new inventory

for the shop, and managing cash flow is its own special challenge. What message would you like most to share with people? I would like people to know that I work very hard at making it an “experience” to come to my store, that I am interested in providing them items that they would love to give someone else, or to treat themselves with. I want them to “get lost” in the displays, the colors, the lights, etc. and be able to escape the stresses of everyday life for a few minutes when you step foot in the store. What would you like customers to know most about your business? It is very important to me that you have an “experience” as I said above, and also that it is my goal to bring you a wide variety of unique items, so you know if you visit us, you will leave with a treasure. What is the biggest compliment customers give you? The biggest compliment customers give me is that my store is “unique”. There are a lot of gift shops in this area and it is a lot of work to find new, unique items that cannot be found anywhere else. I work very hard at being unique, so it feels good when customers comment on that. What are you most grateful for? I would say that I am most grateful to be able to fulfill my dream of having a beautiful store in such a great community of wonderful people. The gift shop owners in West Bend work together to have unique items and provide a different shopping experience, which isn’t always the case in small towns. We all want each other to succeed. To whom/what can you credit your success? I would like to give credit to my mother, who always encouraged creativity and was a great teacher on not only how to create, but how to treat people. I would also like to give credit to those customers that have

become friends in my journey as they are my inspiration to work harder, seek out the unique, and go that extra step to give them a great experience when they are here. And lastly, I credit my husband of 47 years, for his creative ideas, his ability to take my ideas and bring them to life, and his constant support as I make my way through each day in retail. What are you most proud of? I believe I am proud of my willingness to take risk, despite the odds, in opening a retail business in this day and age. My adage of “no guts, no glory” has served me well, and I have learned so much in my journey through the maze that is retail. What are some of the biggest challenges? I would say learning how important

social media is/was a challenge–how to best communicate with your customers. Also, how to draw people into your brick and mortar store in the shadow of Amazon is also challenging–how to make the trip exciting and providing a real experience that ordering online cannot give you. Managing cash flow is also a challenge –when to buy product, when to receive product, when to stop buying, when to take a chance on a new trend, etc. Is there anything else you would like to share about “Over the Moon”? I just want to thank all my friends, family, and customers for helping me achieve my goals and for always being there for support and friendship–I appreciate each and every one of you, and will never take our relationship for granted. n

Arté store owner Kelly Cannizzaro talks about her store How long have you been in this business? I purchased Arté Wine and Painting Studio on August 4th, 2016. The business had been operating in our current location since September of 2013. How did you get started/inspired to open your business? The opportunity was initially presented to my sister, Jessie, who owns a plumbing company in Wauwatosa. Arté was not publicly listed for sale. The business broker that was trying to sell the business for the previous owner was in various networking groups with Jessie and thought she would be a good fit for taking the studio over. The idea was then presented to me as Jessie had, and still has, her hands full with building her own business and growing family. Has your business always been in the present location, or more? The business was initially opened in a much smaller location around the corner. The move, in Fall of 2013, boasted an expanded bar, larger class space and the addition of a beautiful outdoor patio! How many employees/family members work with you? Arté currently has 10 part-time and seasonal staff members. I have to laugh when reading the question asking “how many employees/’family members’...” because the number of staff members does not include the crucial hours put in by my family members on a regular basis. It has been an absolute godsend to come from a family of plumbers when you embark on the purchase of your very first bar! What is the Primary focus of your business? As cheesy as it may sound, we are all genuinely here to show everyone that walks in the door a good time! We host painting events of all sorts from 4 year old birthday parties with kids painting “Happy Feet Penguins”-to-glitzy and glamorous WISCONSIN COUNTRY LIFE

Kids love our hot chocolate topped with whipped cream and sprinkles. My favorite drink to enjoy after a shift has always been our signature “Starry Night Mojito” muddled with blackberries, green apples and citrus fruits. And you’ll find plenty of happy customers sipping seasonal craft cocktails and playing games on the patio in the summer. What do you love most about your industry? Being able to paint on a weekly basis is something I will never take for granted. Once all the errands are run, payroll is done, bills are paid, schedules are written, new menus are developed, etc, etc, etc… There is always room on our gallery walls and class calendars for a new work of art to be created and added to our Painting Library. Art is such an amazing hobby and getting to dabble in creative projects really brings you back to your childhood over and over again! What could be better?

What are some of the common myths you come across in your business? Many of our guests have been to similar styled “Paint & Sip” businesses and have the impression that they are all the same. For this reason, guests often think that they will be arriving to spend the evening tracing stencils and coloring in the lines of presketched canvases. It is awesome to see how pleasantly surprised our guests are when they start with a blank canvas and go on to complete an impressive masterpiece of their own. Our team of staff is made up of grade school art teachers, college professors, master’s students, professional cake decorators, etc. The staff all bring something different to the (drawing) table and have a real knack for instructing acrylic painting to beginners, more advanced artists and everyone in between. What message would you like most to share with people? Arté is fun for all ages. This past Saturday, we had 100+ painters and there were literally happy painters from the age of 6 to 85. And it’s not just an age range that we successfully accommodate but all skill levels from beginner to expert can find the

perfect project to enjoy here at the studio. What would you like customers to know most about your business? You do not need to paint to enjoy a beverage at Arté. The environment of an art studio is fun to hang out in, painting or not. If you’re not up for an art project for the day, please join us for a homemade Sangria or Beer Cheese with Soft Pretzel appetizer! Multiple times every week I have phone call inquiries, emails and customers in the studio that are surprised to learn that we serve any beverages other than wine at the bar. The specialty cocktail list is a real hit, there are plenty of beers and ciders to choose from, kids have tons of sweet drink options, Bloody Mary’s and Mimosas are always a morning hit... You name it! What is the biggest compliment customers give you? It’s not necessarily what the specific compliment is but more so the random and unexpected locations that I overhear them. It’s so rewarding to be in stores or restaurants in and out of the area and overhear someone raving about their wonderful experience here at Arté without Continued on page 36

I love it when this happens and I have drink tickets or coupons with me to offer and invite them back with! What are you most grateful for? The support my family has given me with this business venture has been overwhelming. I can’t say Mom and Dad were ecstatic when I told them that their daughter with a college degree and steady full time career was quitting her job to buy a bar that people go to and paint. It didn’t take long for them to see that Arté is definitely where my heart is and they are beyond supportive every step of the way in this adventure. Who/what can you credit your success? Definitely my parents. I was raised in a household with parents who owned a business, here in the Village of Tosa, so I have always been familiar with what hard work truly is. Sun up to sun down hours, on call 24/7, having your laptop attached to you while out of town, worrying about your employees well being on and off the clock…It’s all a part of running a business. The good news is that I have learned that the rewards 100% outweigh the stresses and would not trade that in for anything. What are you most Proud of? I’d have to say just simply never giving up. When I look back on the last few years, I have definitely had some bad breaks and I couldn’t be more proud for continuing to push on every step of the way. What are some of the biggest challenges? Figuring out how to balance an ever changing schedule can be incredibly challenging. Sometimes there are breakfast networking meetings at 7 am in the morning after you get done with work at 3 am. There are countless days where employees have called in sick and trying to physically be in multiple places at the same time to get all the shifts covered, must happen. Having to figure out how to make it up to your Grandma that you were absent from her 80th birthday dinner because you had to work is never ideal but it happens. Life as a business owner really is a constant balancing act that you definitely can’t sign up to learn in school. At the end of the day, I have been incredibly fortunate to have all of the important things fall into place both personally and professionally. n

Around farro, arrange 1 cup spinach; 1/4 cup cucumber; 1/4 cup tomatoes; 1 slice red onion, separated into rings; and 1/2 cup cauliflower. Drizzle balsamic vinaigrette over salad. Top with 1/2 cup chicken and garnish with 1 tablespoon feta cheese and 1 1/2 teaspoons olives. Repeat with additional servings. Curry-Spiced Tofu with Asian Vegetables Recipe courtesy of the American Heart Association Servings: 4 12 ounces light, extra-firm tofu, drained and patted dry, cut into four slices 1 tablespoon, plus 1 1/2 teaspoons, curry powder, divided 12 ounces packaged fresh stir-fry vegetables 1 tablespoon water 2 teaspoons canola oil 1 teaspoon toasted sesame oil 1 large onion, cut into 3/4-inch wedges 4 large garlic cloves, minced 1/4 cup light coconut milk 1/4-1/2 teaspoon chili garlic sauce Put tofu on large plate. Sprinkle tofu on both sides with 1 tablespoon curry powder. In large microwaveable bowl, microwave vegetables and water on high 2-3 minutes, or until vegetables are almost tender-crisp. Pour off remaining water. In large nonstick skillet, heat canola oil over medium-high heat, swirling to coat bottom. Cook tofu in single layer 3-4 minutes on each side, or until browned. Transfer to separate large plate. Cover loosely to keep warm. In same skillet, heat sesame oil over medium-high heat, swirling to coat bottom. Cook onion 1 minute, stirring frequently. Stir in vegetables and garlic. Cook 1-2 minutes, or until vegetables are tendercrisp, stirring constantly. Stir in coconut milk, chili garlic sauce and remaining curry powder. Bring to boil over medium-high heat. Spoon vegetable mixture over tofu. n
