Cook the asparagus in salted boiling water for two to three minutes until tender. Add to an icecold bowl of water to stop the cooking process and maintain that vibrant green colour.

In a pan, heat the oil and gently cook the shallots and garlic until tender taking care not to brown the ingredients. Add the butter and rice, stirring f requently until the rice is coated in the butter. Add the wine and simmer until the wine has been fully absorbed into the rice. Now slowly add the vegetable stock one ladle at a time stirring between each addition, allowing the rice to completely absorb the stock until the rice is cooked. This could take up to 30 minutes. Once the rice is cooked, add the peas and cook for a further two to three minutes. Finally, add the asparagus and parmesan and stir. Season generously with salt and ground white pepper before serving.

4 cod steaks
300ml milk
50g plain flour
½ small onion, f inely chopped
Salt and pepper
25g plain flour
2 tbsp Olive oil
40g butter Fresh parsley sprig Pinch of grated nutmeg ½ dozen peppercorns 1 f resh bay leaf Squeeze of lemon juice
M eth od . Pour the milk into a saucepan and add the onion, nutmeg, peppercorns, bay leaf and cloves. Bring the mixture to a gentle boil, then remove f rom the heat and leave to one side. Melt the butter in a separate pan (over a low heat). Add the flour and stir continuously for about a minute, then remove f rom the heat. Add in the milk mixture, straining it through a sieve, and stir it into the flour well. Return the pan to the heat and cook it on a medium heat until it’s thick – this should take no more than 5 minutes. Add the parsley, lemon juice and seasoning (to your taste) and remove f rom the heat. Spread the flour onto a plate and coat the cod steaks on each side, making sure they are completely covered with flour. Heat the oil in a large f rying pan over a medium heat and cook the f ish for about three minutes on each side. They’re cooked when the f ish is white and opaque.

500g/1lb 2oz strawberries,
120g plain flour
50g/2oz golden caster sugar,
60g caster sugar
4 tsp vanilla extract
60g unsalted butter
Meth od. Preheat the oven to 180’c. Cover 500g Strawberries with 50g of golden caster sugar and 4tsp of Vanilla extra. Stir well. And place into an oven-proof dish. Crumble together 120g plain flour, 60 caster sugar and 60g unsalted butter. Cover the strawberries with the crumble. Bake for 30 - 35 minutes. Allow to cool for 10 minutes before serving.

Meth od. Add the ingredients together in a cocktail shaker. Shake well with cracked ice. Strain into a glass over cubed ice. Garnish with a twist of orange peel.
