If you follow health and diet news at all, you’ve likely heard of the keto diet. This meal plan has become increasingly popular because of the way in which it encourages weight loss. A typical keto diet consists of an abundance of fats, a moderate amount of protein, and a very limited intake of carbohydrates. After starting the diet, the body enters a state of ketosis, in which it turns to fats for energy and fuel in the absence of carbs. That’s right—by focusing on fats (and staying away from carbs), you’ll actually burn fat, too. Keto is not for everyone since it eliminates a lot of foods that can be difficult to give up. In addition to items like the bread, pasta, and desserts that you’d expect to be off-limits, starchy foods like beans and potatoes and sweet fruits are also no-gos. But the diet also puts emphasis on things that are super crave-worthy—if you ever wanted an excuse to eat tons of avocados, keto might just work for you.

AVOCADOS Everyone’s favorite creamy green veg is high in unsaturated fats as well as vitamins and minerals, making it practically the perfect keto food. RECIPE: FAIRWAY OLIVE OIL MASHED POTATOES Trying to eat healthier in the new year? Good for you! That doesn’t have to mean giving up your favorite foods. Introducing small changes here and there can make a big difference overall. In this mashed potato recipe, we’ve swapped the usual butter and cream for olive oil, which ups the antioxidants and healthy fats while reducing your post-meal bloat. There’s garlic and herbs in there too for extra flavor and a dash of Mediterranean flair.
SERVES 8 INGREDIENTS: 3 pounds Yukon Gold potatoes 4 cloves garlic Salt and pepper
2 small sprigs rosemary or thyme ⅓ cup Fairway extra virgin olive oil
DIRECTIONS:
1.
Peel the potatoes, then cut into evenly-sized chunks. Place in a large pot and add enough cool water to cover by 2 inches. Season with salt. Bring to a boil over high heat and cook until tender, 12-15 minutes. Reserve 1 cup of the cooking water, then drain.
2. While the potatoes cook, strip the rosemary or thyme leaves from their stems. Discard the stems and finely mince the leaves. Peel and mince the garlic.
3. Heat the olive oil in a small pan over medium heat. Add the minced herbs and garlic and fry until fragrant and just starting to brown, 30 seconds to 1 minute, then remove from heat.

Return the potatoes to your empty pot. Add the garlic herb oil and a small splash of the reserved cooking water. Mash to desired consistency, adding more water if they seem stiff. Season with plenty of salt and pepper.

RECIPE: HEALTHY OAT SQUARES Looking to satisfy your sweet tooth wholesomely? These baked oat treats will hit the spot, plus they’re packed with fiber. This recipe is flexible and can be customized as you see fit—try swapping out the raisins for other dried fruits or mixing in some nuts. INGREDIENTS: 1/2 stick salted organic butter (2 oz.) 2 tbsp. coconut oil 2 organic eggs 1 c. organic unsweetened apple sauce 1⁄4 c. pure maple syrup 1⁄2 c. organic sugar 1 tsp. pure vanilla extract 1 c. organic raisins 2 c. organic flour 1⁄2 tsp. coarse sea salt 1⁄2 tsp. baking soda 1 c. of organic old-fashioned rolled oats DIRECTIONS: 1. Preheat oven to 350 degrees. In a bowl, mix together butter, coconut oil and sugar until smooth and creamy. Add apple sauce, maple syrup and vanilla extract and mix well. Beat in eggs. 2. In another bowl, mix flour, oats, baking soda and salt. Slowly add dry mixture to wet ingredients while stirring. Mix until evenly combined. Mixture should be dry to touch and not stick —if still wet, add a little more flour. Then, stir in raisins. 3. Line a baking sheet with parchment paper. Scoop mixture into golf ball-sized lumps and place on sheet. Flatten slightly with a spatula. Bake until set, 12-20 minutes.

RECIPE: CASHEW CHEESE KALE CHIPS This salty, “cheesy,” high-fiber snack from Fairway community member Stefanie Devic is super healthy and really hits the spot! It’s made with her favorite vegan “cheese” sauce, which also pairs wonderfully with pasta, over veggies or as a dip. INGREDIENTS: 1 cup raw cashew nuts* ¼–1 tsp. cayenne pepper (to taste) 1 red bell pepper ½ cup water 2-3 bunches kale 2 tsp. garlic powder 1 tsp. mustard powder Salt and pepper (to taste) *If you have time, soak the cashews in water overnight. DIRECTIONS:
1. Toss everything except the kale into a blender and blend until smooth and creamy. Add more water a little at a time, if needed, until mixture has the consistency of a very thick sauce.
2. Strip kale leaves from their stems (discard stems). Wash and dry leaves thoroughly, then tear them into chip-size pieces.
3. Pour the “cheese” sauce over the kale and massage with hands until coated all over. 4. For oven: Preheat oven to 275 degrees. Place the coated kale in a single layer on a baking sheet lined with parchment paper. Bake until crisp, about 30 minutes, flipping the kale halfway through. For dehydrator: Place coated kale on the rack(s), and set to dry at 130°F for 10-12 hours, or overnight (make sure to check on it periodically).
