PARDON US FOR GETTING A LITTLE CHEESY, BUT IF THERE’S A FOOD THAT SPEAKS THE LANGUAGE OF LOVE IT’S FONDUE. What is fondue, you ask? If you don’t know, what have you even been fon-due-ing? Fondue is only the most amazing way to eat cheese to your heart’s content, and who doesn’t love cheese? Here’s the lowdown: fondue is a Swiss specialty made by melting cheese in a small pot, which is placed on the dining table over a small burner to keep it warm. Diners are given a selection of cubed bread and veggies, plus skewers for picking them up with. Then, the dunking commences and everyone is allowed to dip their bites in the cheese, smothering them in gooey dairy deliciousness. The Swiss ingenuity doesn’t end there, either. We can also thank the European country for raclette, in which a cheese of the same name is gently warmed, then scooped out straight from the wheel and directly onto diners’ plates for enjoying with potatoes, pickles, and other small bites. When hot gooey cheese is involved, we’d normally want to hog it all for ourselves. That’s why fondue is so romantic: only your true love is worthy of sharing it with.

RECIPE: GIRELLE PASTA WITH ZUCCHINI & GORGONZOLA At Fairway, pasta night always means deliciousness is in store. Our selection of fresh and dried pastas is one of the largest and most authentic you’ll find outside of Italy. We carry shapes that you never even knew existed, like girelle. This curly pasta takes its name from the Italian word for “swivel”—you can think of it as pasta spirals gone wild. Those curves are perfect for holding a hearty sauce, which is why we’re bathing them in gorgonzola cream and adding a good handful of veggies in this old-school Italian recipe.
INGREDIENTS: (SERVES 2) 2 medium zucchini 2 tablespoons butter 2 tablespoons Fairway extra virgin olive oil 1 medium shallot, finely chopped 1 large stalk celery, finely chopped 1 clove garlic, minced ½ lb Fairway girelle artisanal pasta
Fairway sea salt and freshly-ground black pepper 1 tablespoon freshly-squeezed lemon juice 4 oz gorgonzola dolce 2 tablespoons parsley, minced Leaves from 2 sprigs basil, julienned Grated Parmigiano Reggiano for topping, if desired
INSTRUCTIONS:
1. Bring a large pot of salted water to a boil. Trim the ends from zucchini, then grate on the large holes of a grater and set aside.
2. Heat the butter and olive oil in a large pan over medium heat. Add the shallot and celery and sautée until softened and beginning to turn translucent. Add the minced garlic and continue cooking for another minute. Add the zucchini and cook until it begins to soften and wilt. Season with salt and pepper.
3. Once the water in the pot boils, add the girelle pasta. Cook, stirring occasionally, until al dente, 8-10 minutes. Reserve ½ cup cooking water before draining.
4. Around the time that the pasta is nearly al dente, add the gorgonzola, lemon juice and ¼ cup of the pasta cooking water to the pan with vegetables, stirring to melt the cheese. Stir in the parsley and basil, and let the mixture simmer gently for 5 seconds.
5. Add the drained pasta to the pan and toss to coat. Let everything cook for one minute. If mixture seems dry, add more of the pasta cooking water. Serve immediately, topping with Parmigiano Reggiano if desired.

But sometimes what you really want is a snack that won’t weigh you down and that’ll keep you revved up for all the action. If this scenario sounds familiar, let us make a suggestion: the all-mighty veggie platter! We know, we know—you’re probably rolling your eyes right now while envisioning a stack of dry carrot sticks next to a sad little container of ranch dip. But hear us out: with a little ingenuity, it's possible to elevate your party's veg offerings deliciously. Think of it this way: when you enter the produce section at Fairway Market, it’s hard not to be impressed by the array of fresh and colorful seasonal items that greet you—they’re proof that fruit and veggies can be exciting. Think beyond the basics: any veg that you can eat raw would be a perfect candidate for a crudité plate. Like young stem-on carrots, radishes, endive leaves, heirloom tomatoes, fennel, and snap peas (the list goes on). Then, find a few versatile dips: plain or flavored hummus, Cara Cucina Italian spreads, tapenade… if you head to our specialty section, there’s a treasure trove of options.
Who doesn’t love a snack on a stick? Although kebabs are best grilled, you can always make them with a grill pan or your broiler when it’s too cold out. The classic combo of zucchini, yellow squash, mushrooms, and grape tomatoes is always great, although it’s always nice to get a little creative—try mixing things up withchoices like cauliflower, baby bell peppers, or eggplant. And it also helps to have a sauce—chimichurri, honey mustard, or green goddess dressing are a few of the many options.
People love foods that go crunch. This is a fact. That crisp sensation is what makes veggie chips of all sorts so delectable. Root vegetable chips, kale chips, plantain chips—homemade or store-bought, it’s hard to have just one. For a quick fix, check out all the dried veggies in our bulk section. Or if you’re feeling more ambitious, you can make your own chips by baking thinly sliced produce in the oven.
Mediterranean cuisines are very veg-focused—meze platters are practically celebrations of the region’s bounty. Olives, hummus, artichokes, babaganoush, tabbouleh—are you hungry yet? Lay these out in smaller bowls and make sure to throw in some pita triangles into the mix.
When in doubt, grab a piece of bread and stick something delicious on it. The key to great crostini is combining a variety of textures and choosing complementary flavors: the basic approach is to layer on top of your toast something smooth and creamy, something snappy and crisp, and something that’ll add a nice flavor accent. For example, ricotta cheese, apple, and honey or red pepper spread, arugula, and balsamic vinegar. P.S. Slices from a Fairway baguette would be the perfect base for these.
OK, so this is looking toward the sweeter side of the produce section, but we have to give fruit boards a mention because they are everything. Need a tropical accompaniment to your luau? Fill your spread with slices of pineapple, mango, papaya, and dragon fruit. Want to explore the best of winter? Stock up on citrus of all sorts. And fruit loves a good dip too: serve those slices with some Greek yogurt or a nut butter.

OMEGA-3: YOU’VE HEARD OF IT AND KNOW IT’S GOOD FOR YOU. Maybe you even saw that Fairway Market now exclusively offers omega-3 chicken from Murray’s. But if you are wondering why this new product is a big deal (or what omega3s are), we can tell you should definitely check it out the important health benefits that an omega-3-rich diet offers.
Research suggests that these fatty acids can reduce the risk of heart disease, prevent cancer, and even help with anxiety and depression when incorporated into a balanced diet. The only problem? They’re found mostly in foods that most of us don’t eat very often, like oily fish and certain seeds and nuts. To help consumers get more of this nutrient, farmers and scientists developed a method for making chicken rich in omega-3s (chicken being the most widely consumed meat in the US). And it’s pretty simple—by switching from the usual feed of corn and soy to one with ingredients like whole wheat, green peas, and flax, the animals obtain omega3s through their diet. Meat from birds raised this way contains about 40 times more omega-3s than ones raised on conventional feed and about 75 percent as much as salmon, which is pretty impressive.
Only a handful of farmers have adopted this method, so make sure to look for chicken that has the omega-3 label to take advantage of these benefits. RECIPE: BUTTERNUT SQUASH SOUP WITH TOASTED FAIRWAY PUMPKIN SEEDS Piping hot, creamy deliciousness: sometimes, comfort comes in a bowl. Our recipe for butternut squash soup is just the ticket for satisfying all those wintertime cravings. We like to start off by roasting the squash in the oven so it gets a little caramelized and reveals its best flavor. Then, it’s pureed with Granny Smith apple, heavy cream, and sage to hit that right balance of sweet and savory. Serve it with a salad and a piece of toast for the ideal winter meal. INGREDIENTS: (SERVES 8) 2 medium butternut squash, halved lengthwise and seeds removed
2 tablespoons unsalted butter
8 fresh sage leaves, plus more for garnish
1 medium Granny Smith apple
2½ cups low-sodium vegetable or chicken broth
½ medium yellow onion
A few sprigs roughly chopped thyme leaves, or more sage (optional)
⅓ cup heavy cream
Kosher salt and freshly-ground pepper
½ cup Fairway pumpkin seeds ½ cup Fairway vegetable oil
INSTRUCTIONS:
1. Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil and place the squash halves cutside up on it. Melt 1½ tablespoons butter in the microwave and brush it over the tops and insides of the squash. Season generously with salt and pepper. Roast in oven until easily pierced by a knife, 50 minutes to 1 hour.
2. Meanwhile, peel, core, and dice the apple into medium-sized pieces. Halve, peel and dice the onion into medium-sized pieces.
3. Melt 1 tablespoon butter in a large pot over medium heat. Add the apple, onion, and sage leaves and season with salt and pepper. Cook, stirring occasionally, until softened, about 7 minutes. Remove pot from the heat and set aside.
4. When the squash is done, remove from oven and lower heat to 325 degrees F. Set squash aside until cool enough to handle. Spread the pumpkin seeds onto the same foil-lined baking sheet and drizzle with ½ tablespoon vegetable oil, then season with salt. Bake in oven until lightly toasted, about 45 minutes, stirring occasionally.
5. Once cool, use a large spoon to scoop the squash flesh into the pot with the apple mixture. Discard the skins. Add the broth, 2 cups water, 1½ teaspoons salt and ¼ teaspoon pepper. Stir to combine, then bring to a boil over medium-high heat. Once boiling, reduce heat to medium-low and bring to a gently simmer. Cook, stirring occasionally and breaking up any large pieces of squash, until the flavors meld, 15-20 minutes. Remove from heat and stir in the cream.
6. Using a blender or an immersion blender, purée the soup in batches until smooth. Season with salt and pepper if needed. Divide between bowls and garnish with pumpkin seeds and sage or thyme leaves if using.
