Do you love fish? Do you love cheese? Do you love the environment? Well then, we’ve got good news for you. Our Branzino (fish) and Gruyère D’Alpage (cheese), two selections that we’re featuring this month, take respecting Mother Earth very seriously.
Branzino: doing its local part to help out the rest of the globe. Let’s start with the fish itself. Besides being raised with no hormones, antibiotics or chemicals, this Branzino is Monterey Bay “Best Choice” Rated, as well as BAP (Best Aquaculture Practices) Certified. If you love your health as much as the environment, you’re in luck there too, as this Branzino is high in Omega-3, Selenium and Vitamin B-12 & D. It’s also a great fish for kids because it’s easy to prepare and does not taste, well, fishy. But what separates our Branzino from others is Ideal Fish – where we get it. Ideal Fish is a state-of-the-art recirculating Aquaculture fishery. And just as important as its technology is the fact that it’s local too, dedicated to bringing fresh Branzino to local markets. How close is it? It’s based in Connecticut, only 85 miles away from our warehouse in the Bronx. It’s also entirely exclusive to New York City. As a result, it can bring its responsibly and sustainably raised fish from their waters to our stores within 24 hours of harvest. And if that weren’t enough, Ideal Fish is the only company in the world, as of today, raising Branzino in a Recirculating Aquaculture System (RAS). This means no fish escapes and no environmental issues.
Gruyère D’Alpage: Friendly to the environment and your taste buds. The path for this cheese to our stores (and, ultimately, to you) begins high in the Swiss Alps, where herds of dairy cows graze at an altitude of more than 3,600 feet. Between mid-May and mid-September, they are constantly moved so that they’re always enjoying fresh, rich and varied grasses to eat. This eventually helps to create an incomparable flavor for the cheese. But the positive impact of how Gruyère D’Alpage is produced goes far beyond just its flavor. Every aspect of Gruyère D’Alpage production is regulated by the Swiss AOP (Appellation d’Origine Protegée, or, in English, Protected Designation of Origin). All details are considered, including the milk used, which must originate within 12 miles of where the cheese is made. Not only does this help to protect the alpine ecosystem, it also enhances the cheese’s unique characteristics.

To the average consumer, this may seem like overkill. But to someone like you with a more discerning palate, it’s well worth it. Especially when it comes to an experience that starts with an aroma that’s herbal and faintly nutty, then continues with flavors that include overripe pineapple, balsamic cherries, sautéed red onions, roasted hazelnuts and beef broth. It also possesses both a delicate crystalline crunch and a smooth, even texture with flavors that build and linger for a long finish. And if you’re wondering how to enjoy Gruyère D’Alpage, serve it with a juicy Gamay or unoaked Tempranillo. Why? Because the red fruit in the wine brings out the fruitiness of the cheese.

Spring is a time of emergence. IT SIGNALS THE REAWAKENING OF THE GROUND: THE SOURCE OF ALL THAT WE EAT. Growing up, that meant everything around me. My family and I would go on “food walks,” pilgrimages into the surrounding desert and mountains of Northern New Mexico where we foraged and gathered whatever nature had to offer. My father, a science teacher, encouraged us to taste our world and taught us that food was everywhere. We plucked honeysuckle. Ate dandelion, clover and chickweed. Picked wild grape leaves, wild asparagus and lettuce from the acequias. Cracked pine nuts and gathered tiny, immensely sweet wild strawberries. Now, when spring arrives, I am invigorated by the return of sprouts and shoots and colors and scents. I take the time to notice. Even a single crocus in a city sidewalk planter enlivens me. As chefs, we love the arrival of tender and delicate spring greens, garlic scapes, onions, fiddlehead ferns, artichokes, asparagus, and the very beautiful morel mushroom. This time of year reminds me of the gentle butchery of spring lamb and goat, soaking burlap bags – we called them gunny sacks – to wrap the meat, choosing river rocks that to hold the heat from a fire and burying these bundles in the ground to cook. It also reminds me of my mom planting tomatoes and chiles, and of us making tortillas together.
