HEARTY HOME-MADE TOMATO SOUP

INGREDIENTS:

• 2 tbsp extravirgin olive oil • 1 medium onion, chopped • 1⁄2 tsp fine sea salt • 2 tbsp tomato paste • 1 tin whole peeled tomatoes, with liquid • 2 cups vegetable broth • 1/2 tin kidney beans, rinsed • 2 tbsp cubed unsalted butter • 1 tsp Illovo White Sugar, to taste • freshly ground black pepper, to taste • 10-15 fresh basil leaves (optional) – additional to garnish

METHOD:

In a saucepan warm olive oil over medium heat. Add onion and salt, cook until onions are translucent. Add tomato paste, cook for about 30 seconds. Stir in tomatoes and vegetable broth, increase heat to medium-high, and simmer for 30 minutes. Reduce heat gradually and stir occasionally. Remove pan from heat and leave to cool. Pour mixture into a blender (in batches if necessary), add beans, butter, sugar, black pepper and basil leaves. Close lid and blend soup until smooth. Serve in bowls with a swirl of cream, decorated with a basil leaf or two, and chunks of your favourite bread.
