Coconut Muffins – Gluten, sugar, dairy free ½ cup organic virgin coconut oil (melted) Vanilla or almond to taste (1-2 tsp or even more if you want) Coconut milk ¼ cup (canned, sugar free organic) 10 drops stevia extract (or to taste) 7eggs ½ cup coconut flour ¼ cup sprouted brown rice flour ½ tsp salt ½ tsp aluminum free baking powder ¼ cup unsweetened coconut Nutmeg, cinnamon and clove are all nice additions Variations, you may add cranberries, blueberries, chopped nuts of your choice. There are many variations you can make. Makes 12 large muffins Oven 400 degrees Bake for 12-18 minutes Mix wet and dry ingredients separate, mix together and bake in greased muffin tins.
