Full of flavour and ready in a flash, these one-dish dinners are perfect for busy cooks. PAN-FRIED DUCK BREAST WITH BRUSSELS SPROUTS, PANCETTA, AND BEANS

Duck breasts are so quick to cook, and the addition of seasonal Brussels sprouts and canned beans makes for a delicious one-dish meal. Save and refrigerate or freeze the duck fat; your future self will thank you next time you want duck fat roasted potatoes.

4 Saveur duck breasts 400g Brussels sprouts, trimmed and halved 2 cloves garlic, finely chopped 4 rashers pancetta, sliced 2 tins white beans, drained and rinsed 2 Tbsp chopped parsley Trim and discard the silver skin from the duck and remove any excess fat. Using a sharp knife, carefully score the skin of the duck in a crosshatch pattern. Season generously with salt, rubbing it into the skin.

winners Place the duck breasts, skin side down, into a cold, wide frying pan and turn the heat to medium. Cook for 10 minutes, until the fat has rendered and the skin is golden. Flip over and cook for another 4 minutes. Set aside to rest. Using the same pan, drain off most of the duck fat (keep it for another use), keeping 2 tablespoons in the pan. Turn the heat up to high and add the sprouts. Cook for a few minutes, until they’re just starting to colour, then add the garlic and

pancetta and fry for 1-2 minutes. Add the beans and ¼ cup water, cover with a lid, and steam for 2-3 minutes until the sprouts are tender and the beans are warmed through. Stir through the parsley. To serve, slice the duck breasts and add any resting juices back into the pan with the beans. Spoon a large ladle of beans onto each plate, then top with the sliced duck. Perfect with a crisp salad served alongside.

Who doesn’t love a tray bake for a super-fast meal? This quick and colourful version is a breeze, with winter favourites like kūmara and broccoli roasted together with tasty chorizo and a moreish spice mix. Serve it with avocado, sour cream, and fresh coriander, alongside your favourite salsa. 2 Tbsp olive oil 1 Tbsp Wild Fennel pork seasoning (smoked paprika, cayenne, and garlic) 1 large (or 2 small) head broccoli, cut into florets 3-4 medium kūmara (approx. 600g), any colour, scrubbed and cut into 3cm chunks 2 red onions, cut into wedges 1 packet Martinez chorizo a la plancha, skins removed and sliced on a diagonal To serve: 1 avocado, cut into slices Sour cream Salsa (we used Tio Pablo red enchilada sauce) A handful fresh coriander leaves Preheat the oven to 200°C. Line a large, lipped baking tray with baking paper. Combine the oil and seasoning mix with the broccoli, kūmara, onions, and chorizo on the tray. Season with salt and pepper, then bake for 30 minutes, stirring halfway through cooking. Serve with the avocado, sour cream, salsa, and coriander.

Make it Meat-Free! For a vegetarian version, use a 400g block of sliced tofu or tempeh and fry it first in the oil until golden, then set aside before proceeding with the recipe. Replace the oyster sauce with black bean sauce and increase the amount of sweet soy sauce to 2 tablespoons.

DRUNKEN-STYLE NOODLES WITH PRAWNS AND SHIITAKE

This weeknight winner is ready in a flash! When wok frying, it is essential to not overcrowd the pan, hence why this recipe is only for two. It’s easily doubled, but we would suggest cooking it in two batches to ensure the best possible result.

200g wide dried rice noodles 3 Tbsp oyster sauce 2 Tbsp soy sauce 1 Tbsp sweet soy sauce or kecap manis 3 cloves garlic 1-2 red chillis (or add 1Tbsp sambal oeleck to the sauce ingredients) Oil, for frying 250g medium-sized prawns, defrosted (or use 1 packet tofu, sliced and patted dry) 1 onion, sliced 100g shiitake mushrooms, sliced 1 packet mung bean sprouts 1 bunch spring onions, cut into

5cm lengths A good handful of Thai, holy, or regular basil leaves Put the noodles in a bowl and pour over boiling water to cover. Soak for 3-4 minutes, or until the noodles are soft, but al dente. Drain and refresh in cold water, then drain well again before using. In a small bowl, combine the oyster, sweet soy, and soy sauces with 2 tablespoons water and set aside. Using a mortar and pestle, mash the garlic and chilli to a paste (or finely chop both).

Heat 2 tablespoons of oil in the wok, add the shrimp, and fry for 2-3 minutes until tender. Remove from the wok and set aside. Add a little more oil to the wok, add the onion, and cook for a few minutes until slightly softened. Add the garlic and chilli mix, then add the shiitake and cook for a few minutes. Add the bean sprouts, spring onions, rice noodles and the sauce, and stir fry until noodles are heated through. Add the basil and serve immediately.


ROASTED CARROT, BEET, AND BAKED FETA SALAD

Serves 4-6

Earthy beets, sweet carrots, and tangy feta are always a fool proof combination. Here, we’ve given the feta a simple marinade for extra deliciousness and added lentils and spinach to make it a more substantial, standalone dish. The roasting takes a little time, but the prep is so simple that you can get on with other jobs (or pop your feet up for half an hour!).

200g feta 4 Tbsp olive oil 2 oranges A pinch chilli flakes 2 Tbsp thyme leaves 500g baby carrots, scrubbed and trimmed 500g baby beetroot, scrubbed and trimmed 1 Tbsp balsamic vinegar 1 tin black lentils, drained and rinsed 120g bag baby spinach, rinsed Preheat the oven to 220°C.

In a small, oven-proof dish, marinate the feta in 2 tablespoons olive oil, the zest of 1 orange, the chilli flakes and 1 teaspoon of the thyme. Set aside. Cut any large carrots in half lengthwise and cut the beetroot into wedges. In a large, lipped baking tray, toss the carrots and beets with the remaining oil and thyme, and the balsamic vinegar. Season with salt and pepper, add ½ cup water, cover the tray with foil and bake for 50 minutes.

While the vegetables cook, cut the oranges into segments, reserving any orange juice, and set aside. After 50 minutes, remove the foil, add the lentils, and top with the rinsed spinach, leaving a little water on the leaves to help them steam. Return to the oven, along with the feta dish, and bake for 10 minutes.

Stir the vegetables to combine and transfer them onto a serving platter. Scatter over the orange segments and their juice. Break the feta into chunks and place them onto the salad, then drizzle over any remaining oil. Serve immediately.

APPLE, AVOCADO AND PEPITAS SALAD WITH GOAT’S CHEESE AND CAPSICUM CHILLI DRESSING

Don’t be put off by all the ingredients here; the spiced pepitas and dressing can be made ahead, but even if you’re starting from scratch, you’ll have dinner on the table in under an hour. Full of fresh, autumnal flavour, this simple salad is great as-is or serve it, as we have, with a plate of spiced lamb cutlets. For the dressing: 1 460g jar Lindo roasted red peppers 1 red chilli (seeds removed if you wish), roughly chopped 2 Tbsp red or white wine vinegar (or use the liquid from the pepper jar) 1 tsp maple syrup 3 Tbsp extra virgin olive oil Combine all the ingredients, except the oil, in a small food processor, or use a stick blender to combine. Stir through the oil and adjust seasoning to taste. For the spiced pepitas: 1 tsp cumin seeds 1 tsp coriander seeds 1 tsp sea salt 2 cups pumpkin seeds, approx. 300g ½ tsp sweet smoked paprika 2 tsp soy sauce 2 tsp maple syrup 2 Tbsp olive oil Preheat the oven to 180°C. Dry toast the cumin and coriander seeds in a frying pan until fragrant. Allow to cool slightly, then grind with the salt in a mortar and pestle or spice grinder. Put onto a large,

lipped baking tray with the remaining ingredients and combine well. Bake for 15-20 minutes, stirring halfway through. The seeds should be crunchy. Cool before storing in an airtight container. For the salad: 120g kale leaves 1 avocado 1 red or green apple 75g goat’s milk gouda Remove the stems from the kale leaves and shred finely. Massage the leaves with 2 tablespoons of dressing and a sprinkling of salt to soften slightly, then set aside for 5 minutes to wilt and transfer to a serving platter. Slice the avocado and apple and arrange on the leaves. Drizzle with some extra dressing. Break up the cheese into small pieces and scatter over the leaves. Sprinkle with some of the spiced pepitas.

Spice Up Your Seeds! This recipe makes a big batch of pepitas, but we think you’ll love having them on hand for snacking or sprinkling over soups and salads. They keep well in an airtight jar, but in our experience they’re too delicious not to be nibbled up in a few days!

For the lamb: 2 Tbsp olive oil 1 Tbsp Wild Fennel pork seasoning (smoked paprika, cayenne and garlic) 1 tsp ground cumin 8 lamb cutlets Sour cream or yoghurt for serving Mint leaves for garnishing Combine the oil, seasoning mix and ground cumin. Rub into the lamb and set aside until ready to cook. Fry or grill for 3-4 minutes on each side. Rest for a few minutes, then transfer to a platter smeared with sour cream or yoghurt. Finish with any meat juices and garnish with mint leaves.

Fruity and sweet, with a perfumy aroma, these autumn icons are perfect in crumbles and cakes, or try them poached with your favourite granola. Pairs well with: ginger, honey, vanilla, or oats.

KOHLRABI

RAGLAN CHOCOLATE

In sunny Raglan, chef-turned-food-technologist Mike Renfree is leading NZ’s bean-to-bar movement with his exquisite, small batch chocolate. Mike, who believes good chocolate should be an exotic treat, sources his fair-trade cacao from the Solomon Islands, Peru, and the Dominican Republic, with plans to set up trade with growers in Samoa and Vanuatu this year. On arrival in Raglan, the beans are roasted, winnowed, and stone ground for days, before being poured into moulds and hand-wrapped in their iconic packaging.

THE BLACKBALL SALAMI COMPANY

Hawke’s Bay’s fêted Gimblett Gravels are synonymous with the production of worldrenowned wines. From these celebrated shingle soils hails one of the region’s most exciting boutique wine labels: Squawking Magpie. The ‘cradle of quality’ that makes Squawking Magpie’s wines so exceptional is the Gimblett Gravels area, an 800-hectare stretch of gravelly soil, globally revered for producing some of the world’s finest reds. Squawking Magpie planted their first four hectares nearly 30 years ago in 1995, making the

winery one of the early pioneers in the area. In 2002, a glut of awards already in hand, they expanded their operation, adding a 20-hectare vineyard planted predominantly in Cabernet Sauvignon, Merlot, and Syrah. Owner Gavin Yortt and his talented team, including renowned winemaker Jenny Dobson, hold the firm belief that great wine comes from great grapes. From the very first plantings, emphasis has been placed on creating outstanding wines by focussing on viticultural excellence, a tradition that continues today.

‘Just walking through the vineyard, you get so much knowledge and inspiration,’ says Jenny. ‘There’s a real freshness to the fruit. Even though you’ve got intensity, it’s not heavy and jammy. Alpha Domus, a beloved Hawke’s Bay winery in the renowned Bridge Pa Triangle and a long-standing proponent of sustainability, is now a long way through its journey and conversion to becoming fully organic with BioGro NZ. ‘Organic agriculture is more than just spray or residue-free,’ says co-founder Paul Ham, ‘It’s a holistic style of farming where the health of the soil and environment is prioritised, including the surrounding flora and fauna, and Alpha Domus has been orientated towards this future.’

Health is at the heart of the change, and the organic label acts as a reassuring symbol of a better choice for one’s body and for the environment. Organic growing is an important contribution without the use of synthetic fungicides, pesticides, or herbicides. ‘It’s exciting to have two new organic releases as part of our range available at Farro,’ says winemaker Barry Riwai. ‘With all our wines, we strive for the highest quality, with minimal intervention from what the season and harvest

provides us and without a premeditated formula that can forsake the wine’s soul and unique seasonal profile. ‘It’s about the enjoyment, discovery and authenticity of each vintage and the interest and emotion that it provides. I spend a lot of time in the vineyard at this time of year; harvest has begun, always beginning with the hand pick of Chardonnay for our joyful and celebratory Cumulus Méthode.
