PRE-PROHIBITION ERA

Pre-Prohibition cocktails have been served in saloons and bars in the era of the mid 1800’s until 1919 with the start of the national ban on alcohol in the United States.

Experts then with basic ingredients of the traditional cocktail bitters, simple syrup, Citrus twists and predominantly Whisky, Brandy, Gin and Rum were blending hundreds of different drinks depending on their regions and available natural ingredients from the East, to the South and the West Coast.

It was Jerry Thomas born in 1830 in New York, a pioneer in American bartending having worked in St. Louis, Chicago, San Francisco, Charleston and New Orleans, who documented in 1862 the art of mixology, by publishing the first cocktail book: “How To Mix Drink, or The Bon vivant’s companion”, containing clear and reliable direction for mixing all the beverages used in the United States, together with the most popular British, French, German, Italian, Russian and Spanish receipes, embracing Punches, Juleps, Cobblers, etc. in endless variety.

As part of his 262 pages with recipes for Punches, Sours, Slings, Cobblers, Shrubs, Toddies, Flips, and a variety of other types of mixed drinks were 10 recipes for drinks referred to as “Cocktails”.

At Porterhouse we are highlighting eight of the most important drinks served until 1919 in bars across America to set you back in time, enjoying the reviving Art of Cocktails almost two centuries ago.


PRE-PROHIBITION COCKTAILS

WARD 8 65

Rye whiskey, lemon juice, orange juice, grenadine syrup Widely believed to have originated in Boston, Massachusetts in 1898, this cocktail was supposedly created in honour of political czar, Martin M. Lomasney by bartender Tom Hussion. Ward 8 was a voting district famed for its political corruption and the story goes that the drink was first mixed at the bar of the Gilded Age restaurant, Lock-Ober and celebrated Lomasney’s election for Ward 8.

WHISKY SOUR 65

Bourbon, lemon juice, agave syrup, Angostura bitters, egg white The Whiskey Sour is believed to have been the creation of Elliot Stubb in 1872 - this perfect pre-dinner cocktail has sailed the high seas and has been sipped by many a Hollywood star on the silver screen. Sour and seductive, the Agave syrup’s sweetness offsets the tartness of the lemon to produce this popular cocktail classic.

OLD FASHIONED 65

Bourbon, sugar, Angostura bitters An all-time favourite, the taste is sweet and strong. First created in 1881 at the gentlemen’s Pendennis Club in Louisville, Kentucky, the recipe is said to have been the invention of a bartender there in honor of Colonel James E. Pepper, a prominent bourbon distiller who introduced it to the Waldorf-Astoria bar in New York.

SAZERAC 65

Rye whiskey, sugar, Peychaud’s aromatic bitters, herbsaint A local New Orleans variation of the old-fashioned cognac or whiskey cocktail, the Sazerac is reliant on one essential ingredient: Peychaud’s Aromatic Bitters. Antoine Amedee Peychaud created the bitters after arriving as a refugee in New Orleans in 1795 when his family was forced to flee their San Domingo coffee plantation following a slave revolt. Distinguished by a unique preparation it is sometimes referred to as the oldest known American cocktail with origins in Pre-Civil War.

PLANTER˙S PUNCH 65

Dark rum, lemon juice, grenadine syrup, soda water Rumoured to have been created at the Planters Hotel in Charleston, South Carolina, this classic rum cocktail has disputed beginnings as the recipearguably has roots in Jamaica, concocted as a cooling libation for plantation workers. No matter its origins, Planter’s Punch is equal parts strong and sweet, making it the perfect antidote to a hot summer day.

This wine hails from the original vineyard of Gavi surrounding the village. Aromas of apple, lime and peach with a hint of minerals with good acidity and lively fruits takes through a long finish.

RED Château Pierrefitte, Lalande de Pomerol Chateau Perron 130

Supple and fleshy, with the generous plum, berry fruit of the appellation’s Merlot, lifted by a seam of mineral elegance and some fresh currant notes from the Cabernets.
