And he called His name JESUS.”

remember this; if nothing else ever goes right for you in this life, don't forget that you still have Jesus. The Bible says that Jesus is a friend that sticks closer than a brother. John 15:13 says, “Greater love has no one than this, than to lay down one’s life for his friends.” Therefore, Jesus should not be a last resort, because He is always there for you.

More than ever, it takes faith in God to stand when things are so difficult. When people are facing hard times,

But what about Christmas? What does Christmas mean to you? I am a Christian today because of the fact that God sent His Son Jesus, Who by laying down His life made it possible for you and I to have a real relationship with a living God on a dayto-day basis. But when it comes to celebrating the birth of Christ on the day we Christians call Christmas, it can mean different things to different people.

Matthew

1:22-25

says,

First of all, we know that Jesus was not born according to the Western calendar or even a Christian calendar. But what we do know is that He was born in the city of Bethlehem, conceived by the Holy Spirit, being placed in the womb of a virgin by the name of Mary. And no matter what day you celebrate this gift from heaven, which was given to us on a day known as the birthday of the child Jesus, He deserves to be celebrated each and every day. Still to some this day means family getting together; to some it


means a time to have presents to share; and for some it means a Christmas dinner. But whatever prompts you to celebrate Christmas, make sure you keep Jesus as the guest of the party. Here is some of what Christmas means to me.

how to stick with you like a brother. And even if this holiday season presents disappointments by way of family, friends or just life in general; Jesus knows how to stick with you—no matter what.

First

and foremost, Christmas means being thankful for a Savior. Matthew 1:23 says, “Behold, the virgin shall be with child, and bear a Son, and they shall call His name Immanuel,” which is translated, “God with us.” So for me Christmas is about JESUS and He is still the reason for the season as far as I’m concerned. I am thankful that the Son of God was willing to come from heaven to earth for our benefit. And yes—Jesus came to die on the cross for the sins of the entire world. The angel of the Lord said in Matthew 1:20-21, “20Joseph, son of David, do not be afraid to take to you Mary your wife, for that which is conceived in her is of the Holy Spirit. 21And she will bring forth a Son, and you shall call His name JESUS, for He will save His people from their sins.” Jesus was deliberately sent by Father God, as His gift to mankind. And if He came on purpose, then I want to live my life for Him on purpose. He knows

Christmas for me means, “His name {is} Immanuel” which is, “God with us.” Hebrews 13:5 says, “For He Himself has said, “I will never leave you nor forsake you.” Jesus is the one who never leaves you nor forsakes you. He will stick with you through thick and thin. This is a quote from Deuteronomy 31:6 & Joshua 1:5, just letting us know that God made this promise so that you and I would understand that it is impossible for a believer to be left alone at any time; even on a holiday. Jesus was God, who was fashioned as a man by being born of a flesh and blood woman. And since His arrival and becoming our Savior; the message of His life and teachings have become known as “The Gospel of Jesus Christ.” And in this Gospel, Matthew 2:2 says, “For we have seen His

star in the East and have come to worship Him.” Many today do not worship Jesus, yet celebrate Christmas for all of the wrong reasons. Still, on the day that Jesus was born, it was a long hard journey for even wise men to travel across the distances they did, just to bring gifts and worship the newborn King. As a minister, I’ve noticed that it seems harder for some people to travel across town just to go to church and worship Jesus as we celebrate His birthday. However, gifts worth giving usually take some effort. That’s why when we give gifts to family or friends, we are to honor Jesus and give to celebrate, based on the gift of the Christ-child that was given to us. The wise men knew the value found in the effort of coming to worship this newborn King.

Thirdly, Christmas for me means that Jesus understands what we go through and shows us a better way to deal with it. Hebrews 4:15 says, “For we do not have a High Priest who cannot sympathize with our weaknesses, but was in all points tempted as we are, yet without sin.” So, Jesus is not only a Savior to us, but He also understands our thoughts and feelings, which is the act of friendship. And


having passed from heaven to earth, living as a man, defeating death, and then passing from earth to heaven, He is now both God and man, who brings us the message of heaven, yet understands the feelings of mankind on earth. Therefore the question is, do you take the time to honor Jesus on whatever day you set aside to celebrate His birthday? Christmas is not just a time for spending money buying gifts, watching parades or sports on TV or even making a big deal over the things we have made traditions of on this holiday. It’s not about

whether you believe in Santa Clause or if you believe there is no harm in our children having a healthy imagination about the many traditions of Christmas. It is about celebrating and being thankful that He came and gave His life for us. But even more so, it is about why this holiday exists in the first place… and that reason is Jesus! Remember, Jesus is not only “the reason for the season,” but He is the BEST reason for the season. And for me, everything else should become second place to the celebration of the birthday of Jesus. This Holiday is filled

with family and the joy of giving gifts, just as the wise men brought gifts to baby Jesus on that day and worshipped Him. When we give gifts to those we love, we should remember that our giving is in honor the King of kings & the Lord of lords. Christmas should not be celebrated just once each year, in which you become thankful for His birth. Christmas should be celebrated regularly as you give of yourself to benefit those around you. This Christmas, think of how you can honor King Jesus as you celebrate His birthday. …Think about it!

Jesus the Messiah is the Greatest Gift of All! ”

by Dan Corse Recalling my childhood days, I remember the great anticipation I had each year related to the presents I would receive for Christmas. Though my Mom had always maintained that Santa Claus brought my older brother and I our presents, her story suffered irreparable and permanent destruction for me when I was about four or five. It happened that my grandparents were given the task of watching us in my parents’ absence one day. For whatever reasons,

my grandparents did not pay close attention to what my older brother and I were doing. So, when we out of their sight found our Christmas presents already stored in a large closet on the second floor of our home, rather than sounding

the alarm to our grandparents, we instead spent the afternoon playing with them. Yet, somehow, knowing that my parents were responsible for the Christmas gifts that I received did not diminish my anticipation for future presents. As an aside, it did, however, mean that my older brother and I found it prudent to feign some surprise when we received our previously played with presents that Christmas. Hopefully, you can understand our pleasure upon them not discovering our secret.

The very title, Messiah, finding its roots in the Hebrew “Mashiyach,” and meaning “The Anointed One” fueled this resolute anticipation. For them, the much-anticipated “Anointed One” was to be their Deliverer, their Savior and their Rescuer.

Anticipation is something that the human race is quite familiar with. Sometimes, this anticipation has not always been based on the expectation of good things to come. Sometimes it has. For God’s chosen people, the Hebrews, their anticipation of a promised Messiah, based on numerous prophecies found recorded in the Old Testament of the Bible, was the latter, one of much positive expectation.

Speak of the Savior and some skeptics, seemingly clueless to the effect of sin in our lives, will inevitably ask, “Save us from what?” Yet, the Hebrews, God’s chosen people, having experienced God’s great blessings related to their relationship with Him, understood that their quality of life had been greatly diminished by the effects of their sin. Thus, they looked forward to the Messiah who would save


them from sin’s negative consequences, both in this life and eternally in the next. They understood their need for the promised Savior, Deliverer and Rescuer, “the Lamb of God who takes away the sin of the world” (John 1:29, NKJ). The Hebrews had long experienced God’s prescribed atonement by having their sin covered by the blood of bulls and goats that they may maintain fellowship with Him, a process repeated again and again. Yet, they anticipated a day when their sins would no longer be merely covered, but remitted, a day when their sins would be washed away and they would stand before God free from the condemnation. Recognizing that their righteousness was as filthy rags (Is. 64:6), the Hebrews may not have fully understood that the coming Messiah would be made sin for them (2 Cor. 5:21). His becoming sin would empower Him to then clothe those who embrace Him as Savior with His righteousness, that righteousness placing them in right standing or relationship with God. Yet, fully understanding His becoming sin for them or not, in waiting with eager anticipation for the promised Messiah the Hebrews were on a course that would usher in the reality in their lives that is expressed in a song familiar

to many of us, “What can wash us white as snow? Nothing but the blood of Jesus.” Knowing these things, we can only imagine the magnitude of the impact that the angel Gabriel’s words had upon Mary when he declared to her, “Do not be afraid, Mary, for you have found favor with God. And behold, you will conceive in your womb and bring forth a Son, and His name shall be called Jesus” (Luke 1:30-31, NKJ). Though Jesus was a common name, Mary understood the absence of commonality related to the birth of this Jesus, the name Jesus being from the Hebrew “Yeshua,” meaning “He Shall Save,” the shorter form of “Yehoshua, meaning “Yahweh is Salvation.” God’s salvation speaks of the need for a Savior, His name clearly pointing to that Savior, the Savior long anticipated by the Hebrews and promised to them in the Old Testament. The fact that Mary had never known a man in a

sexual way amplified the miraculousness of this pregnancy, prompting Mary’s query in Luke 1:34 (NKJ), “Then Mary said to the angel, ‘How can this be since I do not know a man?’” Gabriel’s answer further magnified the allencompassing impact of both Mary’s pregnancy and the birth of the Messiah, Jesus, “And the angel answered and said to her, ‘The Holy Spirit will come upon you; therefore, also, that Holy One who is to be born will be called the Son of God’” (Luke 1:35, NKJ). It is with this backdrop in mind that we now turn to the announcement of Jesus’ birth to the shepherds in Luke 2:10-11 (NKJ), “Then the angel said to them, ‘Do not be afraid, for behold, I bring you good tidings of great joy which will be to all people. For there is born to you this day in the city of David a Savior, who is Christ the Lord.’” Several things should be noted with regard to the angel’s announcement: 1. The Messiah’s birth was surely not cause for fear, but served as “good tidings of great joy”; 2 Those good tidings were not merely for the Hebrews, but for all people, foreshadowing the fact that salvation would not be merely for Hebrews, but for both Hebrews and Gentiles; 3. As prophesied in Micah 5:2, the Savior was born in Bethlehem, the city


of David; and 4. Mary’s child was the promised Messiah or Savior. Let us consider the ramifications of the angel’s announcement that with Jesus’ birth the promise of a Savior was no longer to be anticipated, but had been fulfilled. We will do so by considering the amplitude of the meanings encapsulated in the title Savior. Savior is from the Greek “soter,” designating a deliverer, preserver, benefactor and rescuer (“Word Wealth” from the New Spirit Filled Life Bible). Thus, we see with the birth of Jesus that the long-anticipated birth of the Anointed One or Deliverer or Messiah had been fulfilled. Having considered the Hebrews’ anticipation of the promised Messiah and the fulfillment of that promise with the birth of Jesus via Mary, a virgin, let us now fast forward to the present (over two millennium after said birth). In doing so let us remember to keep in mind the ongoing greatness of the gift that is Jesus the Messiah. Obviously, much has transpired since His birth, death and resurrection. The population on the planet has greatly increased, revealing mankind’s effectiveness to “be fruitful and multiply”

(Genesis 1:28, NKJ). Yet, in terms of being good stewards of the planet, we are often found wanting, with habitual disagreements occurring related to just how wanting we are and in what ways. Some nations have fallen and new ones have taken their place. Overall, our knowledge has greatly increased upon this planet, especially in the field of technology. Yet, with all the changes we could note, both positive and negative, even in light of attempts by mankind to diminish the reality of sin via moral relativity and other non-Biblically supportable factors, mankind’s penchant for sinning has remained constant. The truth that is contained in Romans 3:23 (NKJ) is just as relevant now as it was prior to the coming of Jesus, the promised Messiah, “for all have sinned and fall short of the glory of God.” That fact continues to necessitate the ongoing need for a personal relationship with Jesus Who is the Savior, the Messiah. We experience this relationship by believing in Him (John 3:16), confessing Him as Lord and embracing Him as Savior, thereby experiencing the spiritual rebirth Christ spoke of in John 3:3. Spiritually made new creations in Christ (2 Cor. 5:17), His blood does

not merely cover our sins, but remits or removes the stench of them from our lives. And, though sinning should never be our goal, or that which on any level we seek to justify, having embraced Him as Savior, let us always quickly confess our sins to Him that He might forgive us and cleanse us from all unrighteousness (1 John 1:9). Having embraced Him as Savior, we experience the blessedness of what it means to have His Spirit bear witness with our spirit that we are His children (Rom. 8:14), also experiencing the blessedness of ongoing fellowship with Him. That being so let us reflect our thanksgiving for the gift that Christ is at all times, not forgetting to do so during this Christmas season as well. With the Yuletide season upon us, let us in the midst of our celebrations, in the midst of our giving and receiving of gifts, in the midst of our times of blessed fellowship with family and friends, never forget to habitually acknowledge this truth, “Jesus the Messiah is the Greatest Gift of All!”

By: Faye Hanshew Love is known in every town, state, and country. But what does the word love really mean? Our definition and God’s definition may be totally different. A couple of definitions for love is, “very strong affection and God’s love for humanity.” I’m not sure everyone understands God’s meaning of love. In John 3:16 it says, “For God so loved the world that He gave His only Son…” Father God and His Son, Jesus are deity. Yet they loved us…all of us…past, present, and future, so much that Father God GAVE His Son for the entire world. Jesus suffered in every area so we can have a way out. He lowered Himself from a God to a man and died for us. He took the stripes for our healing; he gave his blood for our salvation. In order to really understand salvation, one must understand the Greek word Sozo, which means, “deliver out of danger and into safety; used principally of God rescuing believers from the penalty and power of sin – and into His provisions (safety)… bring...safely, cured, ensure salvation, get, get well , made...well , made well, preserved, recover, restore, save, saved, saves, saving.” Jesus loved us enough to take on everything for all of us. In fact, if you had been the only person, Jesus would have died just for you. It does not matter what you do, God loves you. He never leaves you and never gives up on you. Does that mean He approves of everything you do? NO! But that comes into play in how much WE love HIM. God’s love is unconditional. Some may get upset and want to quit serving Him, so they

will just walk away….or think they will walk away. But the truth is, if they decide to turn back around and tell our Heavenly Father they are sorry for whatever it was that made them turn away from Him, they will find that when they turn around, He is right there! So, if you try to walk away, remember, Jesus does not leave you, He will be there when you need him and are ready to turn your life back over to him. As far as human love….How much do you really love? Do you love only those who fit into your mold and are in your social groups? What about those who are broken or scarred; or those that no one else wants to touch or be around? If we love like Jesus loves, then we will not care about those things. This Christmas, let God’s love shine out of you. Help someone by bringing a family home with you that does not have anyone to spend Christmas with. Buy them a gift and make them feel special. And, if it is you that is in that position, let someone know; call a local church and see what they are doing this Christmas. Maybe they will be having a Christmas dinner and you can get involved with them. This can be a way for you to show love to others. Many people do not have someone special in their life, and feel very lonely at Christians, let’s do our part this Christmas and Spread a Little Love, God’s Love!


by Kim Miller Christmas is coming so quickly! As I sit here typing this month's article of "Faith Unlimited" Magazine, there is only six more Fridays before Christmas! I love Christmas and a songs even says, "it's the most wonderful time of the year." As a believer, I celebrate Christmas every day. To me, Christmas is a celebration of Christ. I have given Him all of my heart and have committed to serve Him with my life until I finish my course here on Earth and go to see Him face to face. This nation has set aside December 25th as our national holiday of Christmas. To many, Christmas just means trees, presents, food, and Santa Claus. Sadly, to many it means nothing more than that. Many also celebrate Christmas religiously, going to church this one day of the year. They haven't accepted Jesus as their Lord and Savior. They believe that if they are a good person and go to church on the

"important holidays, " they are okay and will go to Heaven. Jesus told us differently. John 3:3 says “Jesus answered and said to him, ‘Most assuredly, I say to you unless one is born again he cannot see the kingdom of God.’" We must accept the sacrifice of Jesus, believing in our hearts and confessing with our mouths that He is Lord, and that God raised Him from the dead. as it says in Romans 10:9-10. Jesus was born for you and me. His birth had a purpose. Christmas is so much more than the world portrays it to be. Like many of you, I enjoy the beauty of the season, decorations, special family times and fun during the Christmas season, but we must not stop there. First, accept Jesus as your Lord and Savior. Going to church and "being a good person" isn't enough. The Bible says that all have sinned and fallen short of the glory of God. We needed a substitute for our sin. His name is Jesus Christ. We must become a new creation, a child of God in order to

spend eternity with Him in Heaven someday. Are you ready to meet Him if you died today? Are you completely sure that you will go to Heaven? If you would like to accept Jesus Christ as your Lord and Savior, repeat this prayer out loud, believe it in your heart, and sincerely mean it.: God, I come to You in the name of Jesus. Acknowledging that I am a sinner and need a Savior. I believe that Jesus is the Son of God and that He took my sin on the cross. I believe that you, God, have raised Him from the dead and He is alive forevermore. Jesus,


come into my heart, I accept your love. Make me a new person on the inside with the desire to serve you. Forgive me of my sin. Make me brand new. You are now a child of God. Thank you, Lord! If you are a believer and have not been living the word of God that you know, what better time to repent and make a new commitment to Him than right now! Ask Him to forgive

you and decide to turn from your way of living. Remember, you have His nature and power inside of you! 1 John 1:9 says that if we confess our sins, He is faithful and just to forgive us and cleanse us from all unrighteousness. One of the things that I love about the Christmas holiday is that many are open to receive the love of God. We are to be lights to this world

and make the most of every opportunity to share His love because the days are evil and He is coming soon. Use the Christmas season to touch lives and point people to the best Christmas gift and true meaning of Christmas, our Lord, Jesus! Don't allow yourselves to get coo caught up in the busyness of the holiday season that your focus is taken off of Jesus and others. Take time also to ask yourselves "What does Christmas mean to me?"

by Leon Gosiewski At various times in the Christian (Gregorian) calendar year our minds are particularly focused on events that remind us of our precious Lord and Saviour and what He has done for us. Many of these annual remembrance and celebratory events are of course not just applicable to a specific day in the year; they are part of a Christian’s daily and intimate walk with God. It is for this reason that our concentration should always be on the biblical meaning of key events and not the maninspired technical, superficial or artificial aspects that have crept in and, often not so subtly distract from God, Jesus and the Holy Spirit.

can help us not to forget who we are because of Jesus and offer opportunity to give thanks to God. This is partly why God gave the Jewish people appointed or calendared holy days to remember. Christmas on the Christian calendar is one of those celebratory events, which reminds us to remember new beginnings, get excited about what the Lord Jesus has done, rest in the Lord’s peace, unite in togetherness and show our thankfulness. And so when I think of Christmas it reminds me of: 

The fact is our Lord has done great things for us but complacency; pride and selfishness can sometimes cause us to forget to honour God as we should. It is partly for this reason that when talking about the dangers of pride Moses said, ‘Take heed lest you forget the Lord your God, by not keeping his commandments and his ordinances and his statutes, which I command you this day’ (Deuteronomy 8: 11). You see, calendared events

The Angels – Holy messengers of God who brought the message of the coming child Jesus to both Mary and Joseph. And the angels who came to the shepherds, bringing messages of good news, goodwill and peace to earth; a message that has led to that lovely personal picture of rejoicing angels in heaven, joyful because of ‘one sinner who repents’ (Luke 15: 10). It is wonderful to know that the love flowing from

the angels caused them to rejoice when you and I repented, but when I think of angels I am also reminded of our duty to love one another and not to neglect to, ‘show hospitality to strangers, for thereby some have entertained angels unawares’ (Hebrews 13: 2). I wonder how often we have entertained angels and how many times we have missed these precious opportunities! 

The birth of Jesus – And the happiness of parents as they looked, as all parents, affectionately look in awe upon the miracle and wonder of a new life. But I am also reminded that this miracle was extraordinary; this new birth brought all people of the world into the very presence of God


who gave His Son, to live here on earth with us. It fulfilled Isaiah’s prophecy that, ‘the Lord himself will give you a sign. Behold, a young woman shall conceive and bear a son, and shall call his name Immanuel’ (Isaiah 7: 14); Immanuel, God is with us! Wow, how wonderful it is to always be reminded that God is with us. The birth of Jesus reminds me of Mary who lived a life so committed to God that the angel Gabriel said, ‘you have found favour with God’ (Luke 1: 30), and Joseph, ‘who did as the angel of the Lord commanded him’ (Matthew 1: 24). The love, commitment and obedience of Mary and Joseph brought Jesus into their lives and changed them. We too are completely changed when our love, commitment and obedience to Jesus bring Him into our lives and the miracle of new life radiates from us. This miracle birth changed the world and it changes you and me. 

Family – When Jesus was born Mary and Joseph became a family. They now belonged together in a special and unique way just as we belong to our family, parents, brothers and sisters. But more than

this, the new-born baby was born into a wider family of grandparents, aunts, uncles and cousins. All were totally overjoyed and all rejoiced together. So just as families join together at times like Christmas and other celebrations so we, as the family of God belong to one another. We call one another brother and sister and rejoice together as God’s family all because of Jesus. Let’s make sure no-one is left alone over the Christmas period and may we, the family that is Church, the Body of Christ set aside all differences and unite as one. 

Gifts and presents – The wise men bringing precious gifts to the child Jesus reminds me of the pleasure and honour that comes with giving; the delight and love that is enthusiastically shown both by the giver and the receiver as the gift is excitedly unwrapped and revealed. I am also reminded of the precious gift of eternal life that Jesus has made possible for those that will receive it, take it, unwrap it and use it. The awesome thing about God’s gift is that when we accept and use what Jesus has given us so more favours are freely

made available through the Holy Spirit who gives us supernatural holy gifts so that we can use them for others and bring more glory to God. 

The bright star, candles and Christmas illuminations – Lights glowing at Christmas remind me of the star that the wise men followed to find Jesus, ‘the bright morning star’ (Revelation 22: 16) of whom His Father said, ‘This is my beloved Son, with whom I am well pleased’ (Matthew 3: 17) and Peter who wrote, ‘You will do well to pay attention to this as to a lamp shining in a dark place, until the day dawns and the morning star arises in your hearts’ (2 Peter 1: 19). This is a time for Jesus to shine brightly in our hearts. When I see the lights illuminating, it reminds me that Jesus said of each Christian believer, ‘You are the light of the world. A city set on a hill cannot be hid. Nor do men light a lamp and put it under a bushel, but on a stand, and it gives light to all in the house. Let your light so shine before men, that they may see your good works and give glory to God who is in heaven’ (Matthew 5: 14 – 16). Christmas is a time to


renew our commitment and shine as beacons in a dark world. 

The Tree – That stands in a place of prominence tall, firm, lush, majestic and decorated in good things. This tree reminds me of those that put their full trust in God. Those of whom Jeremiah said, ‘He is like a tree planted by water, that send out its roots by the stream, and does not fear when heat comes, for its leaves remain green, and is not anxious in the year of drought, for it does not cease to bear fruit’ (Jeremiah 17: 8). Christmas is a time to ask

ourselves how much fruit we are bearing. 

Singing Carols – A time to joyfully praise God. A time to celebrate together with glad hearts and a time of thankfulness. A time to hold hands, embrace and tell one another how much we care about and love each other.

Snow scenes – The pure white snow of traditional Christmas scenes reminds me of the holiness and purity of Jesus and the fact that because of Him my sins are completely wiped clean, making my heart white as snow.

What means to me by: Rev. Richard H. Hanshew, Sr. As I spent time thinking about this article for this December’s issue, "What Christmas Means to Me" I pondered. What does Christmas mean to me? I'm not old but a grandfather still and being born in the late 60's my childhood was spent in the 70's. It was a different time. My thoughts traveled back to a time of large family gatherings, lots of food and presents but most of all, Family. My thoughts were of my Grandmother on my Mom's side of the family. My Grandma Smith, born Mary Doreen Hamilton was the ring leader of our family gatherings for Christmas. My GreatGrandma Hamilton was the unifier of her family. She loved God passionately and instilled that in her children. Grandma Hamilton had 5 children. Uncle Willie attended church and was a Sunday School teacher;

Grandma and Grandpa Smith were Pastors, Uncle Dr. Ray and Aunt Jean Smith were Evangelists, Pastors and worked in the District and National office of the Pentecostal Church of God; Uncle Dr. Don and Aunt Pat Hamilton are Pastors and worked in the District and National office of the Pentecostal Church of God; Uncle Dr. Gene and Aunt Sharlin Baldwin are Pastors and have evangelized the nation. As you can see, our family gatherings were full of people who loved God. Although being born in Modesto, California we moved to Oregon when I was six months old as my Dad, Rev. Fred L. Hanshew went into full time ministry. We would travel to Grandma Smith's house no matter where we happened to live. What I took for granted but realized later in life was that my Aunts and Uncles

traveled, from where ever they happened to be to, Grandma Smith's also. I had memories of the Baldwin's staying at house. Us boy's were made to sleep in the living room with our cousin David and the girls, Chandra and Darla got one of our rooms. Mom and Dad gave up their room to Uncle Gene and Aunt Sharlin and then took my room for themselves. It might sound like a bunch of inconvenience but I want you to know I looked forward to it each and every year. The time with my


cousins and family was so special that it became common, in fact for it not to happen was uncommon. We would gather at Grandma's on Christmas Eve for presents and then Christmas afternoon for lunch/dinner. Aunt Jean would make her Boysenberry Cobbler, Grandma would make her Peach and Apricot, Mom would make her home made Cheese Cake and there was much, much more homemade foods. We would gather around the Christmas tree and Grandpa Smith would step up to the base of it with his Bible in hand. He opened it up and began to share the story of the birth of Jesus. As my mind goes back and I look around the room, I see over 30 people, all family coming from all over

the country to celebrate family and join together to celebrate Jesus. See, to me Christmas means celebrating my Savior while sharing and celebrating family. Heritage and legacy are invaluable. If we're going to see Jesus and the love of God shared with our families, we're going to have to realize the valuable lessons of old and share with family. It sounds like a happy place with no troubles or problems but trust me, family is family and we had our share of disagreements and stress. But we didn't allow it to dictate the environment or purpose or our gathering. The Hamilton children ruled the time, together ensuring the gathering of family. To this day my family means the world to me. Sharing my joy and my sorrow wouldn't

quite be the same without them. I'm proud of the family God placed me in. To this day my cousins and I are still close. My Aunts and Uncles showed us the love of God. They tackled the obstacles of time and distance to share family and love with us. My Uncle Dr. Ray J Smith wrote a song I've share that says it all. What does Christmas mean to me you ask? Christmas means the Family of God being shared by the family God placed me in, raising my children and grandchildren to know family as I have, and not allowing time, distance or modern day excuses to keep me from them so that we too might share the love of God with our family.

One of Our Best Ever Mission Trips - The Philippines By: Kenneth Wilson Kenneth Wilson, Director of the Ballymena based Reaching and Teaching Ministries organization (R.T.M0, has reported back on what he describes as one of his 'best ever' mission trips to the Philippines. During a month-long visit to Southeast Asian republic of the Philippines Kenneth and his colleagues, Philip Johnston, who is also from

Ballymena and Nick and Debbie, who hail from the USA. The trio were blessed with the opportunity to speak in churches, schools, Bible colleges, at Pastor's conferences and even a holding centre for prisoners’ on remand. They testified and shared the Gospel with thousands of

people throughout the Philippines Islands and saw many accept Jesus Christ as Saviour and Lord. Recalling one particular meeting at a Church on the Island of Negros, which is run by Pastor Glenn, who is sponsored by RTM, Kenneth said: "I ministered in the main Church on Sunday morning, Then we did four outreaches in the afternoon in the midst of heavy rain and strong winds. On the first outreach ten precious souls committed their lives to the Lord Jesus Christ." An all-day Pastor's Conference in the city of Kanbankalon presented Kenneth and his team with a new long-term challenge. Hungry Pastors desiring Good Bible teaching and needing Good Gospel literature. He explains: "Many of those pastors are the only person in the congregation with a Bible so there is a great need for Bibles. Since I came home I have committed

myself to try and raise ÂŁ1000 for 200 Bibles in the local dialect." Each day brought new opportunities on the team whether they were speaking in a small church, at a missionary breakfast or encouraging thirsty students at the Living Rock Ministries Bible College and PICM Bible College. Recalling a three day period when they visited seven schools and reached nearly 3,000 pupils, Kenneth said: "We had an opportunity to speak to every class and we were able to give a copy of the Gospel of John to every student and every teacher in their local dialect. We had a


wonderful time in each of those schools with teachers and pupils. Many of the local Pastors were able to go in after us and teach from the Gospel of John.

The Gospel booklets used by Kenneth and his colleagues were actually printed in Dromara County Down by The Revival Movement and somewhere in the region of 500,000 have been distributed in the Philippines. We appreciate all that The Revival Movement do to produce Gospel literature One found its way into the

hands of a man who is CEO of a 800-strong co-operative. He got converted after reading his Gospel and has since ordered one for each of his employees and members. A copy of John's Gospel was also given to each of the 2,000 residents on the remote Island of Carbolal. There is no transport around this tiny place, except for bicycles. Most of the men work in the fishing industry and according to the local pastor, Sunday worship begins anytime between 9am and 12noon when the workers come in from sea. A final highlight of the expedition emerged when the visitors when to a Holding Centre for remand prisoners. In this cramped facility, 30 prisoners share

three small cells and depend on their families to feed them. Ken remembered: "Philip shared about the gospel of John and his own personal testimony. Then, I preached a simple Gospel message and eight of those prisoners committed their lives to the Lord Jesus Christ. The Officer in charge of the holding centre has given us permission to go back once a week and continue Bible Studies with those eight prisoners. The possibility remains of reaching out to those other prisoners as well.

That was another tremendous highlight towards the end of our trip." We appreciate all those who prayed for us every day during this mission month, it was very obvious to us that people were praying back home.

Special Christmas Recipe Section


Banana Split Cake Mix 1 stick Oleo or Butter, melted and 2 cups crushed Graham Crackers, mix well. Press in bottom of a 13x9x2 inch pan. The Hanshew Family Secret Enchalida Recipe from Grandma Sanchez Ingredients: 3 lbs. Hamburger 3 Packages Flour Tortillas (10 each package) 1 29 ounce can Tomato Sauce Flour Oil Chili Powder Cumin Salt Pepper Garlic Powder 1 Yellow Onion diced (optional) 2 large bags of Monterey Jack shredded cheese Cook hamburger in skillet; drain. Set aside Sauce: Add approximately1/2 cup oil to sauce pan and heat. Add flour to oil as if making gravy. Cook, stirring so no lumps and light brown. Add entire can of tomato sauce slowly while stirring. Fill can with water. Stir sauce continuously, and as it thickens add water slowly until the sauce is a thinner consistency. Add salt, pepper, garlic powder to taste. Add 1 Tbl Cumin Now to what makes the recipe our secret‌.. Add Chili Powder (about ½ of a 2-1/2 oz bottle). But the secret is to add chili powder until the red tomato sauce turns to a deep burnt orange color. Cook until flavors mix well.


Heat tortillas in a small amount of oil (about 1 tsp per tortilla). Heat one tortilla and put on a plate. Add about 1 tablespoon sauce to tortilla. Heat 2nd tortilla, place it on top of the first tortilla and add sauce. Heat about 5 then stop. Use the largest baking pan you have. Add hamburger, cheese, and onion (your choice) to top tortilla. Roll and place in baking pan. Do this to remaining 4 tortillas with sauce. Then cook 5 more tortillas and do the above again. 3 pounds of hamburger usually makes about 25 enchiladas. (Depending on how much you put in each tortilla. Once you get all tortillas made into the enchiladas and in the baking pan, add more sauce to the top of the enchiladas. Then add more cheese on top of the enchiladas. Since families usually serve Ham and/or Turkey on Christmas, these make a wonderful Christmas Eve Dinner Dish. Serve with your favorite tortilla type chips and Salsa Dip Variations:  Shredded roast beef instead of hamburger (my favorite)  Shredded chicken instead of hamburger

Rice Pilaf

Rice Pilaf Start with 16 cups of Uncle Ben’s Converted rice. Best to use this brand of rice. Break vermicelli into 1 inch pieces or use cut fideo - 1Lb. Brown to tan color. Use 35 cups of hot water. 5 full TBL. of Knorr’s powder chicken flavor bullion. 2 TBL of Season All. 2 Tsp. of powder garlic. 2 Tsp. of dried onion. 2 LBS. of salted “ butter “.  Pre – heat water in your roaster at 350 degrees. Add your spices & butter. Let all blend together. Taste your broth, should be very rich and tasteful.  Now add all your ingredients. Add rice and vermicelli or cut fideo then stir well. Allow to cook for 1 1/2 Hrs. Check on rice to see if broth has evaporated.  If you see or hear the broth allow another 30 minutes. Turn temp down to 200 degrees and let stand for approx. 1 Hr. Now stir & check moisture content.  Rice will be ready to serve. Serves 80 to 100 person. ( 6 oz. portions) This is for a 18 qt. roaster.. Submitted by Rick Martin – Fowler, CA


Chrissy’s Individual Christmas puddings Ingredients: 3oz Sultanas 3oz Chopped dates 3oz Currents 3oz Dried cranberries 1 ¾oz Glace cherries – halved 3 fl oz Rum or Brandy * ½ teaspoon margarine 3 ½ oz Grated Carrots 2 ¾ oz Fresh white breadcrumbs Finely grated zest and juice of 1 small orange I teaspoon ground mixed spice 1 ¾ oz Unrefined light or dark muscovado sugar 1 beaten egg        

Cover the fruit with boiling water and soak for ten minutes. And then drain well. Add the rum or brandy, cover and soak for 24 hours. Grease 8 individual (small) pudding basins with margarine. Add the remaining ingredients to the fruit mixture, and stir well. Spoon the pudding mixture into the basins, level the surfaces and cover with circles of greaseproof paper. Secure pieces of foil over each basin. Steam the puddings for I hour making sure that the steamer is topped up with extra boiling water as required. Cool the puddings when cooked and replace the pieces of foil with fresh ones. Store in a cool dark place. When ready to eat, steam the puddings for one hour or place in a microwave oven on high for 30 seconds per pudding and leave standing for two minutes before serving. Peanut Butter Luster Pies 2 PIE CRUSTS....OR ONE DEEP DISH PIE CRUST Step 1. Brown Crusts Step 2. 1st Layer: Melt the following on low heat. 1/2 C. Semi Sweet Chocolate Chip 1 Tab. Butter 2-3 Tab. Water 1/2 C. Powdered Sugar Pour over crusts spreading up over sides as far as possible by tipping the crust every which way till most is covered. REFRIGERATE\ Step 3. Melt Together over medium-low heat: 1 Cup Butter 1 Cup Brown Sugar 1 Cup Peanut Butter Take off the heat when the sugar has melted. Stir until it’s room Temperature. Fold In 2 8oz. Cool Whips. Pour into Pie Crusts. Step 4. Melt together: 1/2 C. Semi Sweet Chocolate Chips 1 Tab. Butter 2-3 Teas. Milk 1 1/2 Tea. Corn Syrup Drissel over Pies. Refrigerate. Oreo Cookie Dessert Ingredients 1 Package Double Stuff Oreo Cookies ½ Gallon Vanilla Ice Cream 16 oz Hershey’s Chocolate Syrup (or your own homemade) 1 Can Eagle Brand Milk ½ Stick of Butter Cool Whip Step 1: Crush Oreos (You can use a blender) Put Oreos in a 9X13 inch pan. Press Oreos down. The double stuff will help them stay together. Step 2: Spread slightly thawed ice cream on cookies. Put this in the freezer and let the ice cream freeze. Step 3: Combine Chocolate Syrup, Eagle Brand Milk, and butter in a sauce pan and bring to a full boil. Be sure to stir constantly, so that it does not burn. Completely cool mixture. Pour mixture over ice cream. Freeze again, until completely frozen. Step 4: After completely frozen, add Whip Cream and nuts. To pre-prepare, have cool whip thawed and ice cream slightly thawed. You can even make your own chocolate syrup and mixture and have ready. This is really good, but it is rich and fattening…but hey, IT’S CHRISTMAS!!!

No Bakes with variations The version I grew up with had coconut for added chewiness, but not everyone cares for it. I’ll get back to that. Into a 3 quart saucepan place: 1 stick butter, 4 cups white sugar ¼ C milk and about ¼ Cup Cocoa. Note: If you use Hershey’s style Cocoa, you may add more, depending on your chocolate craving system! If you used Dutch processed Cocoa, which is much richer, you may need less. Bring to a boil, stirring constantly, I always use a wooden spoon; not sure why except it “feels” old fashioned! Some recipes say bring to a soft ball stage. I watch the bubbles. The smaller they get, the more likely the mixture is ready. Have a small bowl of ice water handy. Allow the drips from the soup to fall in that water. If it forms a soft ball, you’re done. Take it off the heat. Add: 1 t Vanilla. It might bubble up and “carry on” for a few seconds because of the temperature change. Add: 1 Cup Peanut Butter. Smooth or crunchy, your choice. Stir. Add: about 3 Cups ONE MINUTE oats. Do not use old fashioned oats; they won’t soak up the candy. And don’t use instant oats, they aren’t strong enough to set up. Quickly, using a scoop with a release handle, place the cookies on a cool, smooth surface. Do not press down on them; they will stay pretty and shiny. Tradition; YOU MUST “taste test,” so take the cookie you laid down first. Yup, that’s it. Perfection! Variations: (See next page)


Peanut Butter no bakes Leave out the Cocoa.

Pumpkin No bakes Same general idea: 1 ½ Cups White Sugar .5 Cups Brown Sugar 1 Stick Butter ¼ Cup Milk Cook, as the original recipe. Remove from heat at the appropriate time. Add 1 box UNPREPARED pumpkin pudding (if you cannot find it, use French vanilla), 1 tsp pumpkin pie spice, and 1 tsp vanilla. Add 3-3 ½ Cups Oats, as above and lay out on smooth cool surface. Unbelievable! I’m thinking of all the possibilities for this last variation with different spices and puddings…. Oh yes, the coconut. I never actually noticed a coconut taste, because the chocolate itself is so strong, but some people do. If you choose to use a cup, stir it in ahead of the oat meal, and cut back the oat meal by a cup unless the mixture looks like it isn’t going to set up; add the oatmeal in by 1/3 cups to a good consistency.

Perfect No Fail Anyone Can Do It To Die For Rolls: Melt 1 stick of Butter into 2 Cups tap water hot water. Set aside. IF you have a mixer that has a dough hook, that’s best, but not necessary. Place in your mixing bowl the following ingredients: 2 Cups Flour 1/3 c Dry Milk 2 T or envelopes yeast ½ Cup Sugar 1 Tablespoon Salt  Start the mixer on slow until blended.  Add the water/butter mixture. You will smell the yeast immediately.  Mix until smooth, than add, alternately, 4 more Cups of Flour and either 2 large, or 3 small, eggs.  When the dough starts bogging down the mixer, you’ll have to switch either to your dough hook, or by hand, depending on your situation.  You may need a bit more flour depending on the humidity you’re working it, but your final dough should kind of pull away from the side of the bowl, yet still be sticky.  Cover it with a towel or plastic wrap and let it rise 20 minutes. Punch down.  Grease (I use oil spray because it’s so much easier) a portion of your table and dump the dough on to it.  Grease your hands. Have a knife or something similar to cut the dough into pieces about 1 ½-2 inches around.  Roll and shape them into balls. Continued…


Lay them loosely but touching on a jelly roll pan. There are usually 24. There are variations on this step I’ll come back to. Spray the tops of the rolls with the oil spray, and either lay a towel gently on them or plastic wrap. Let them rise just a bit; they won’t need much because when you place them in the oven (375), they’ll do just fine!  About 20 minutes. Check the CENTER rolls. If they thump hollow and the tops are a pretty golden, you should be good. After you remove them from the oven, take a pastry brush and give their tops 2 coats of a raw egg mixed with a teaspoon of water. That makes them so shiny and pretty! Variations on the rolls Take the amount you are using for 1 roll and divide it either into halves or thirds; your choice. Place them side by side in the bottom of a greased muffin tin and watch the pretty happen!

Biscuits and Scones and Short Cake, Oh My! It takes love to make a good biscuit. I couldn’t make good biscuits for anything until God brought my perfect husband. Then Suddenly… 4 Cups Flour 1 t Salt 4 t FRESH Baking Powder. 1/3 C sugar (no, they won’t taste sweet; it just adds something to them) 1 Cup Shortening, lard, butter, preferably chilled, your choice. Don’t use margarine. It has too much water content! We’re not looking healthy here. Oh, the butter version……….. Blend the first 4 ingredients. Cut in the grease till the mixture has pea-sized pieces. A pastry cutter is best, a wide tined fork will do. You can do it with your fingers, but must work quickly and lightly to avoid making the dough tough. It will also warm up the grease and we really don’t want that. Now add enough butter milk (either real or homemade) to make a soft, semi sticky dough. Turn onto a heavily floured board or cloth. Add enough flour on top to press the dough out slightly, then knead, from top to bottom and side to side, about 20 times. That helps the flakiness. Work quickly and lightly. Press to HALF the thickness you want your biscuit to be. My granny made them mile high by pressing them to an inch. My Favorite Aunt Gladys loved crunchy biscuits so hers were MUCH shorter. I love the tall ones! Gently shake the excess flour off and lay them, barely touching, in a greased pan. Brush the tops with butter. Make this recipe into scones like this: Increase the sugar content to ž Cup. Incorporate your favorite dried fruit, or even a combination, nuts also, if you wish. Increase the milk so that the mixture in the bowl can be scooped out onto the cookie sheet like a cookie. Bake 10-12 minutes and check center for doneness. These are awesome with tea.

Real live shortcake: Again, increase the sugar and milk content. Do not add the fruit. Spread into a 9x 13 cake pan or a jelly roll pan. Bake 20-25 minutes; check center. This shortcake is far superior to those little round disks they sell you at the store!

“Our” Christmas Cake With Icing Actually this is the classic Red Velvet Cake, Or Waldorf Cake, with a couple of variations. Our family had this cake twice a year: for the family reunions, cousin Opal made it. For Christmas, my Mother made it, and that’s where the changes took place. Too often this cake is made with a delicious, but way-too-heavy-for-it cream cheese frosting. I suggest you try the frosting in this recipe. You will be delighted! And it is the original frosting that came with this cake. Mom said this MUST be done in this order! Cream ½ Cup Shortening and 1 ½ Cup Sugar To that add 2 Eggs, 1 liquid oz red food coloring, refill the bottle with 1 oz water and add it, 2 T Cocoa, 1 Cup Buttermilk, (can substitute 1 C milk and 1 t cider vinegar) Beat on low speed until smooth. Mix 1 t Vinegar with 1t Baking Soda and FOLD into batter. This is what gives the cake that fine grained texture it’s known for. We always use 2 9 inch cake pans, in the center of the oven, 350 degrees, for about 30 minutes. Remember, ovens vary, so keep an eye on it. Meanwhile, about that frosting…

Icing for Christmas Cake Into a double boiler place 3 T slightly rounded Flour and 1 Cup Milk. Cook, stirring constantly, until the mixture forms custard like consistency. Remove from heat. Place a piece of plastic wrap directly on the surface of the mixture so it doesn’t form a “skin”. Place it in the fridge and let it cool ALL THE WAY DOWN. (I learned the hard way, if you follow these directions, you’ll have perfect frosting. If not, there is no way to fix it. And YES, it’s worth the effort!) By now the cakes are cooling on the racks. Take the milk/flour custard out and put it in a deep bowl (ok, I admit it, I have a Kitchenaid!). To it, add: 1 Cup Sugar, 1Cup Butter, and 1 tsp Vanilla. Beat until smooth. While it is beating, because this is a Christmas cake, add a few drops of green food coloring till you like the tint. And by the way yes, that odd texture is how it should look! Spread on your cake and get ready for the final touch. You will need both red and green maraschino cherries. This, and the color of the frosting, is how it’s “Our” cake. Mom cut the cherries into quarters and arranged them on top of the frosted cake in a poinsettia pattern. Be sure you dry them as possible before placing on the cake because your frosting is slightly delicate I have never seen a dinner this cake has gone to that it wasn’t the hit of the dessert table. The best Beef Roast Brown your favorite cut of roast Place in an oven safe pan (I have a cast iron deep well pan with a lid-tradtional at our house). Use seasoned salt across the top, than add a couple of bay leaves. That’s the key right there. Quarter an onion and lay on top. Add potatoes and carrots as your little heart desires. Add ½ water, cover, and put it in the oven at 350 degrees for about 2 ½ to 3 hours…depending on the size of your roast.

The Best Pork Roast Get the Boston Butt; it’s juicier. You can use garlic powder, but I like to cut a fresh garlic clove in half, and rub it all over that roast. It will smell strong, but not for long. Then seasoned salt and pepper. Pop in the oven with potatoes. Variation: IF you are a sauerkraut fan, add a couple of cans. The kraut and the pork are MADE for each other! Better yet, do all of the above, then add 1 cup of your favorite BBQ sauce. Don’t knock it till you’ve tried it!. Kentucky Butter Cake 3 cups all-purpose flour 2 cups granulated sugar – room temperature 1 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda 1 cup buttermilk or sour milk 1 cup butter – room temperature 2 teaspoons vanilla 4 large eggs Sauce: 3/4 cup sugar 2/3 cup butter 3 tablespoons water 2 teaspoons vanilla Preparation: Preheat oven to 325 degrees F. Grease and flour a 12-cup Bundt pan or 10-inch tube pan. In a large bowl, combine all cake ingredients; beat on low speed until moistened. Beat for about 3 minutes at medium speed. Pour batter into prepared pan. Bake at 325 degrees for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean. In a small saucepan over low heat, combine sauce ingredients; cook just until butter melts, stirring occasionally. Do not bring to a boil. Pierce the cake all over with a fork then pour the hot sauce over the warm cake. Let stand 5 minutes, or until sauce is absorbed.

Chicken and Biscuit Bakes This Chicken and Biscuit Bake is, basically, a cross between Chicken and Dumplings and a Pot Pie. In any case, it’s fabulously good and comes together in a convenient casserole! Ingredients: 3 Cups (approx.) of Cooked, Shredded Chicken (I use 2 breasts for this). 1 ½ Cups Chicken Stock or Broth ¼ Cup (half of a stick) butter, melted 2 Cups Bisquick 1 ½ Cups Milk 1 Can Cream of Chicken Soup 1 ½ Cups Frozen mixed Veggies (allow to thaw for about 30 minutes before adding to recipe). 3 Chicken Bouillon Cubes Pepper

Directions Preheat Oven to 350 Degrees. Warm Chicken stock in a small sauce pan and add in the bouillon cubes to dissolve. Keep warm until ready to use. Lightly coat with non-stick spray a 9x13 casserole dish or large round casserole dish. Pour in the melted butter. Layer the shredded chicken on top of the butter. Sprinkle on the veggies. In a small mixing bowl, combine the milk and Bisquick. (It’s ok if there are a few lumps remaining.) Pour over the chicken and vegetables. DO NOT MIX! Sprinkle on a little black pepper, if desired. Combine the cream of chicken soup with the warmed stock in a small mixing bowl. Once blended, slowly pour over the Biscuit layer. Again, DO NOT MIX! (Yes, it’ll look like a big soupy mess. Trust me…this is what it’’s supposed to look like.) If using a 9x13 pan, bake for 40-45 minutes or until casserole is set and top is brown and bubbly. If using a large round dish (mine was 12”), bake for 50-55 minutes or until casserole is set and top is brown and bubbly. Remove from oven and allow to rest for 5 minutes. Serve and enjoy!

Glen's Peanut Butter Fudge 2 cups sugar 1 cup milk 1 stick butter 1 18 oz. jar peanut butter Combine sugar, butter and milk, stirring on medium heat till butter is melted and sugar is dissolved. Bring to a boil and cook to a soft ball stage (when a small amount of syrup dropped into cold water forms a soft ball). When it reaches the soft ball stage, remove it from the heat and stir in the peanut butter. Don't over stir or it will granulate. Pour into a pie pan and let cool. You can use crunchy peanut butter if you wish to have nuts in the fudge.

Broccoli and Rice Casserole Ingredients: ¾ Cup Milk 1-1/2 Cup Minute Rice - uncooked 1-1/2 Cup Chopped Celery 2 Bunches Broccoli – cooked Salt Pepper 8 Slices Bacon – Cooked Crisp ¾ Cup Chopped Onion 1 Can Cream of Celery 1 Medium Jar Cheese Whiz or Velveeta chopped (I use Velveeta) Instructions: Fry bacon and drain Sauté onion and celery in bacon grease until tender Mix all together and bake in 350o oven 40 minutes or until done Submitted by: Sarah Lewis – St. James, MO


Amish Friendship Bread Starter Part 1 INGREDIENTS: 1 (.25 ounce) package active dry yeast 1/4 cup warm water (110 degrees F/45 degrees C) 3 cups all-purpose flour, divided 3 cups white sugar, divided 3 cups milk DIRECTIONS:  In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.  On days 2 thru 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 thru 9; stir only. Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

Amish Bread Starter Part 2: I wish I could take credit for this fun project; but I can’t. The first year this was passed to me, my husband and I had a ball making all the variations. Follow the directions EXACTLY! *DO NOT USE ANY TYPE OF METAL BOWL OR SPOON FOR MIXING. *DO NOT REFRIGERATE. *IF AIR GETS INTO THE BAG, LET IT OUT. *IT IS NORMAL FOR BATTER TO RISE, BUBBLE, AND FERMENT. The following is how you grow your starter. Quick Tip: we kept our bag in a bowl on the kitchen table so we wouldn’t forget to “mush” it. DAY 1-Do nothing, this is the day you receive the batter or the day the batter was “started”. DAY 2- Mush the bag DAY 3-Mush the bag DAY 4-Mush the bag DAY 5-Mush the bag DAY 6-Add to the bag – 1c. flour, 1c. milk, 1c. sugar then mush the bag ( it’s best to do this in the sink) DAY 7-Mush the bag DAY 8-Mush the bag DAY 9-Mush the bag DAY 10- Pour entire contents from the bag into a non-metal bowl *Add 1 ½ c. flour, 1 ½ c. sugar ( you can use just 3/4 c. sugar if you like) and 1 1/2 c. milk *Mix with a non-metal spoon. *Measure out 4 separate starter batters of 1 cup each into large baggies. Keep a starter for yourself (if you want to keep making it) and give the other 3 to friends along with a copy of this recipe. If you DON’T pass it to a friend on the 1st day, be certain to tell your friends which day the bag is at when you present it to them. It is helpful to mark the bags with the date the batter was started. Continued….


Preheat the oven to 325* *Add to the remaining batter in the bowl: *3 eggs *1 c. oil ( or ½ c. oil and ½ c. applesauce) * ½ c. milk *½ c. sugar * 2 tsp. cinnamon *½ vanilla * 1 ½ tsp. baking powder *½ tsp. baking soda * ½ tsp. salt *2c. flour * 1 large box instant vanilla pudding ( or 2 small boxes) * You may add nuts if you like Instructions: Grease 2 large loaf pans and mix additional ½ c sugar and 1 ½ tsp. cinnamon. Dust the pans with half of the mixture. Pour batter evenly into the pans and sprinkle the remaining sugar/cinnamon mixture over the top. Bake 1 hour. Cool until bread loosens from the pan evenly (about 10 minutes). Turn out onto a serving dish. Serve warm or cold. Remember: If you keep a starter for yourself, you will be baking every 10 days. The bread is very good and makes a great gift. Only the Amish know how to create a starter, so if you give them ALL away, you will have to wait until a friend will give you one back. Enjoy!

Amish Bread Variations Part 3 (Using starter recipe that calls for pudding)

Lemon Poppy Seed Bread Lemon Amish Friendship Bread Use 2 sm. boxes of instant lemon pudding instead on the vanilla pudding, replace poppy seeds for the cinnamon, & use lemon peel instead of the vanilla. Bake for about 1 1/2 hrs. Very Good!

Banana Nut Bread Use banana cream pie pudding and one or two mashed bananas. I have also added 1/4 cup of chocolate chip to this on occasion. I use the small bundt pans and bake for about 40 - 50 minutes.

Zucchini Bread Add 1 cup of grated zucchini. Make sure you squeeze out the excess liquid. bake for about 75 minutes but start checking after 50 minutes.


Cranberry Bread A cup of dried Cranberries A tsp of orange Zest A cup of Chopped Nuts

Gingerbread Substitute 2 tablespoons molasses for equal amount of sugar Add spices to make gingerbread.

Date Nut Bread 1 Box of Chopped Dates 1 Cup of Chopped Pecans Bake it in a Bundt pan.

Orange Bread 1 small box of Orange Jello 1 cup of drained Mandarin Oranges


Cherry Chesecake Use Cheesecake Pudding instead of Vanilla Pudding Add chopped Maraschino Cherries (about 6 with some juice)

Fruitcake Standard recipe for cake with the vanilla pudding, Cinnamon Add glazed fruit with walnuts and almonds Use ½ Cup Oil and ½ Cup Unsweetened Applesauce Instead of 1 Cup of Oil. Use Sugar-Free Pudding

Chocolate Chip Cappuccino Bread Use Cappuccino Pudding ½ Cup Chocolate Chips ½ Cup Nuts – Your Choice

Whole Wheat Bread with Variation Use two Cups Whole Wheat Flour instead of White Substitute 1/3 Cup Unsweetened Applesauce and 1/3 Cup Oil for the 2/3 Cup of Oil, and Up the Cinnamon to 2 Teaspoons Add 1 Chopped Granny Smith Apples and 1 Cup Nut/Dried Fruit Mix You can replace half of the sugar with Splenda

Well, I'll tell you what it means. You may think that it's about the gifts, the food, Santa Clause even. It's not. It's about showing love towards others and spending time with your family and celebrating the birth of Jesus! It's not about how many presents you get or if you brother got more food than you! It's about being thankful for what you have and what you will get in the future. Christmas is not a day to worry! If you don't get the gift you want, then be thankful for the things that you do get. What Christmas means to me is showing love and care to others. Do to others as you would have them do to you!
