Courtesy of the French Chamber of Commerce in Singapore and its retails members, this lifestyle guide in its 2nd edition showcases French shopping and dining in Singapore through luxurious French Maisons, new stylish names, and offthe-beaten-track brands.

The “Singapour, Je t’aime!” Gala dinner organised by the French institutions on March 7th, 2015 and the Voilah!, French Festival Singapore are some of the major events that illustrate this celebration.

s the Ambassador of France to Singapore, I am honoured to introduce the second edition of “So Chic”, the guide to French shopping and dining in Singapore.

Building on the success of its first edition, in 2014, the French Chamber of Commerce in Singapore celebrates with elegance the wealth and diversity of French know-how and art de vivre. It is said that shopping and dining are the national sport in Singapore. May I say that, in this contest, France has a handful of talented players, from the most famous luxury brands to intimate restaurants you will be thrilled to discover.

This is also why we decided, building upon a previous FCCS initiative and in close partnership with them, to relaunch “Voilah! French Festival Singapore” in MayJune 2015, which will be an annual rendezvous with French culture, science, education, sports and gastronomy. The promotion of our cultural industries will be one of the objectives of “Voilah!” and French brands and boutiques are welcome to participate to the festivities.

espite its diminutive size, Singapore is a foodie’s haven and a shopaholic’s playground. This is possible through the concerted efforts of local and international companies who offer a plethora of culinary and retail options to suit every preference and budget, delivering a unique consumer experience to one and all.

In addition, Singapore became the first location outside of Paris to host a Louis Vuitton High Jewellery collection in 2014. Guests stayed at the Fullerton Bay Hotel and were ferried across Marina Bay aboard a Chris-Craft Launch 28 boat to the Louis Vuitton Island Maison, where they discovered the art decoinspired pieces that made up the Acte V collection.

French lifestyle brands have consistently added colour and diversity to Singapore’s dining and shopping scene. Well known F&B brands such as Ladurée and PAUL have brought the flavours of France to our sunny shores and enabled locals and foreign visitors alike to savour their popular recipes.

While these examples beautifully illustrate how French dining and retail offerings have enhanced the dining and retail scenes in Singapore, they are but a sample of the unique experiences featured in this Guide to French Shopping and Dining in Singapore.

French cuisine has continued to remain popular in Singapore, with a number of local and French chefs setting up restaurants serving quality French fare at affordable prices. These include Saveur at Purvis Street and Far East Plaza and, more recently, Immanuel French Kitchen by Chef Immanuel Tee in Bukit Merah.

oilah!, French Festival Singapore, is coming back in May and June 2015. The festival wants to be firmly anchored in the Singaporean landscape and promote French creativity and innovation in culture, science, education, and gastronomy.

Voilah! aims to be a meeting point between French and Singaporean communities, and is, above all, a celebration of a strong relationship built over the years with our Singaporean partners, institutions, and cultural and scientific centres. In 2015, the festival will be a contribution to the celebrations of 50 years of Singapore and diplomatic relations between our two countries. The programme will include a range of musical events, 14

visuals arts happenings, gastronomy experiences, fashion affairs, dance performances, scientific conferences, street art escapades, cinema, and multimedia shows. In 2015, year of a critical international summit in Paris, a particular emphasis will be put on sustainable development and on Antoine de SaintExupÊry, French pilot and award-winning author, who also defended this cause in his literary work. n the early 1990s, French designer Bruno Belamich concluded his studies at a Parisian industrial design school with a thesis entitled “Launching a watch brand specialised in manufacturing utility watches for professional use.” This premise and a common passion for watches led to the birth of Bell & Ross, which Bruno co-founded in 1992 with childhood friend Carlos Rosillo. n February 12th 1947, 30 avenue Montaigne became an emblematic address for the entire world as Monsieur Dior presented his first collection. The collection, quickly termed “The New Look” was his claim to fame as he broke away from the traditional silhouette and replaced it with the famous bar jacket and large skirts. Introduced just shortly after World War II, it was revolutionary for its time and, while it shocked some, it was adored by many. Monsieur Dior’s first collection radically changed the codes of elegance all over the world. He continued to stun and inspire the world with his elegant designs for the next 10 years until his death in 1957. HORS D’OEUVRES

CHEESE PLATTER

Hors d’oeuvres translates to “out of works,” “works” referring to the main course. These are basic appetizers, meant to stimulate the appetite. They are traditionally served first, sometimes with a small cocktail called an apéritif.

The French eat more cheese than anyone else in the world. After dinner, they appreciate a selection served on a board, with assorted cut fruit. This signals the end of a casual, family-style meal.

FISH COURSE A fish course garnished with vegetables sometimes comes between the starter and the meat course, usually followed by a small dish of lemon or lime sorbet to cleanse the palate and refresh the senses.

SWEET DESSERT Special occasions call for a treat. French desserts are indulgent, rich, and beautifully decorated. A small cup of freshly brewed café usually helps exalt the taste of the dessert... a fantastic way to end a meal!

A kiss on the cheek? If you are meeting people for the first time, you may shake their hands. The French greeting with kissing on the cheek is reserved for family or friends – two kisses are common but some people give three or more kisses!

What presents for your hosts? Tchin-tchin! Very often, the hostess or host will propose a toast. Each person raises his glass and clinks with the other guests saying tchin-tchin (“cheers”). The guests must look each other in the eye at the moment the glasses touch (gently) and make sure to avoid crossing glasses. These days, the rules are less strict and one can even toast with a non-alcoholic drink.

Your dinner guest brings a bottle of wine. Do you open and serve immediately or do you save it for later? There are no established rules when it comes to this matter. Whether or not you open the bottle depends on the type of dishes and wine you have prepared for the dinner and how well they match with your friend’s wine. In the case of a good fit, you can open the bottle and let it breathe in advance. If the wine is well-aged, it is acceptable to save it for another occasion. For champagne or wines that must be served cold, serve before the dinner if the bottle is already chilled or let it cool in the refrigerator for after the meal.

What is the ideal drinking temperature for different wines? Drinking and serving temperature varies depending on the type of wine.

Corks and screw caps. Is there a difference in quality? There are different opinions on whether there is a difference in quality or not, but the leading opinion is that there isn't. The screw cap has gained popularity because it is a lot simpler and comfortable to use. That said, many people still value the tradition of using a cork. Who should do the wine tasting in a business meal? It is customary for the person that ordered the wine to do the tasting. First, he should check the label of the wine and make sure it matches the one he ordered, and then he should taste it. In case the person tasting the wine thinks the quality is bad, he can ask the other person to taste it as well. You can also ask to chill the wine for a bit if it is too warm.

When to use a decanter? There are two reasons to pour a great wine into a decanter. The first is that it allows the separation of the sediment that can develop at the bottom of a bottle if it is an older wine. The second reason is that certain wines develop their aromas when exposed to air. If you are not a wine aficionado, consult your wine merchant to see if your wine needs decanting. SC

To respect the crescendo of flavours, a platter is usually made up of each cheese family, with three to five varieties of cheese. • Goat cheese (Rocamadour, Chabichou, Valençay, Chevrotin, Ste Maure...); • Bloomy rind soft cheese (Brie de Meaux, Camembert, Coulommiers, Brie de Melun, Feuille de Dreux...); • Pressed cheese, both cooked and uncooked (Comté, Beaufort, Ossau, Cantal, St-Nectaire...); • Washed rind soft cheese (Munster, Livarot, Rollot, Maroilles, Epoisses...); • Blue cheese (Fourme d’Ambert, Bleu des Causses, Roquefort, Bleu de Gex...).

Help yourself to tasting-sized amounts of cheese using the serving knife. With your own knife, cut off the rind of hard cheeses that cannot be eaten. Break off a piece of bread with your hands and place a small piece of cheese on it. Start with the mildest cheeses and work your way to the strongest. Do not spread your cheese onto the bread! Red wine goes along best with cheese although white wine or sweet white highlights the flavours of the cheese. The hostess may serve a salad with the cheese. Note that salad leaves should not be cut with a knife but folded with your utensils. The rule dates back to an era when the wealthy used silver cutlery: the acidity of the vinaigrette tarnished the cutlery so it was preferable to tear the salad leaves before serving them. SC

Restaurants that apply to get the certification choose to engage in a dynamic process through which they agree, as professionals,
