FOREWORD Singapore is a vibrant lifestyle hub that continues to offer diverse local and international leisure offerings in line with its cosmopolitan identity. French lifestyle brands have consistently contributed to Singapore’s reputation as a world-class shopping and dining paradise.

In 2015, not only did Singapore welcome premium French brands Maje and Moncler to its suite of shopping offerings, but we also welcomed luxury brand Cartier, which opened up its full collection of jewellery to the public for the first time at the Étourdissant Cartier, to commemorate Singapore’s Golden Jubilee. Louis Vuitton also brought the celebrated travelling Series 3 Exhibition to Singapore for the first time, while Hermès brought not one, but two exhibitions – Hermès’ Leather Forever exhibition and Little Room of Wanders – to Singapore shores.

French eateries have also contributed to the diversity of Singapore’s F&B offerings in recent years. Aside from housing restaurants by top French chefs such as Joël Robuchon and a stable of casual brasseries and cafes like Balzac Brasserie and Angelina, Singapore has also seen the rise in innovative French-inspired fine dining restaurants like Corner House and Odette as well as French eateries within local coffee shops such as Immanuel French Kitchen. As a testament to the quality of our dining scene, Singapore will also be hosting the prestigious Bocuse d’Or Asia Pacific gastronomic competition in 2016 and welcoming its own Michelin guide, due for release later in the year. We are also looking forward to welcoming the speciallyconceptualised Jean-Georges Vongerichten restaurant and bar at Dempsey in 2016. French lifestyle brands have enlivened our leisure offerings and enhanced Singapore’s attractiveness as a place to visit. We hope they will continue to invest in Singapore in the coming years.

“Transboundary Rivers� by Franck VOGEL

In an effort to increase awareness of global water issues, photographer Franck Vogel has created a multifaceted photography project focusing on seven major rivers, each with their own specific set of problems. This exhibition will feature 50 photos and 10 monumental pictures of the Brahmaputra, the Colorado and the Nile rivers.

Documenting over 100 years of history, Van Cleef & Arpels: The Art and Science of Gems is the largest heritage exhibition of Van Cleef & Arpels, in collaboration with the French National Museum of Natural History at L’École Van Cleef & Arpels’ invitation.

Co-curated with ArtScience Museum, over 400 stunning creations from Van Cleef & Arpels and 250 minerals from the French National Museum of Natural History Collection will be on display. The first-of-its-kind exhibition will feature two complementing routes to showcase the intersection between the science of

mineralogy and the art of jewellery making. One route unearths the evolution of minerals from the deep Earth to its surface; the other route presents the transformation of these minerals into precious works of art in the hands of the Maison’s best craftsmen, known as the “Mains d’Or™”.

The exhibition follows a series of seven defining themes: Couture, Abstractions, Influences, Precious objects, Nature, Ballerinas and fairies, and Icons. The pieces of the exhibition are from the Maison’s archive collection, and also include pieces on loan from private collectors globally.

The iconic Première was the first CHANEL watch to be created in 1987. Identifiable on first glance, the watch is homage to CHANEL. The Première watch collection draws its identity from an articulated bracelet formed by graphic interlocking links, its rectangular shape with cut corners reflecting mademoiselle Chanel’s tastes for simplicity. The proportions echo the stopper of N°5 and are reminiscent of the Place Vendôme, where the couturier once lived and where the CHANEL fine jewellery flagship store now stands.

CHANEL A declaration of style at every hour of the day

Chanel said “I know women. Give them chains. Women adore chains.” Growing up in an orphanage in Aubazine, the designer would marvel at caretakers who’d prevent soiling their skirts with floor wax by having those raised using chains. Chanel later translated this fascination as essential elements in her work, from bracelets and necklaces to belts. Chains remain a huge part of the brand’s present-day collections.

CHRISTIAN DIOR A name that evokes high fashion, elegance, and refinement

On February 12th 1947, 30 avenue Montaigne became an emblematic address for the entire world as Monsieur Dior presented his first collection.

The collection, quickly termed “The New Look” was his claim to fame as he broke away from the traditional silhouette and replaced it with the famous bar jacket

and large skirts. Introduced just shortly after World War II, it was revolutionary for its time and, while it shocked some, it was adored by many. Monsieur Dior’s first collection radically changed the codes of elegance all over the world. He continued to stun and inspire the world with his elegant designs for the next 10

years until his death in 1957. Since its beginnings and to this day, Dior has remained popular with the Hollywood jet set, glamorous stars, and the world’s most stylish women, including Ava Gardner, Marlene Dietrich, Rita Hayworth, Madonna, the Duchess of Windsor, and the late Princess Diana.

DAUM Artful crystal creations A 100% French brand, Daum is a crystal studio based in Nancy founded in 1878 by Jean Daum. Its translucent mineral or frosted finish and subtle harmonies peculiar to its p창te de cristal are secrets of a traditional creative process, handed down from generation to generation.

Although the p창te de verre technique has existed since Egyptian times, Daum rediscovered it in 1968 and the best master glassmakers still employ it today. Casting a piece using this lost-wax process ensures the perfect regularity of contour, which would be impossible to obtain using traditional crystal or glassblowing methods.

HAVILAND Precious porcelain dining ware shaped by ancestral know-how In 1765, David Haviland travelled extensively from the United States before reaching Limoges, where he built a factory to create French porcelain in accordance with his own aesthetic ideals, with American shapes and decorations.

When having a French meal, one of the most vexing decisions is often having to choose an appropriate wine. The vast and confusing wine lists are enough to make anyone nervous. But fret not: here are some of the basics.

tYpEs Of WinE

Understanding wine starts with knowing the different types of wine. The most basic difference is the colour. There is red wine, white wine, and rosé. The reason for the difference in colour has to do with the fermentation process as well as the type of grape. Clear grape juice is used to make white wine, while dark-skinned grapes are used for red wine. Rosé is made with red-skinned grapes. The final colour of the wine is determined by the length of time that the grape juice and the grape skins are in contact.

roSé Rosé is fermented in much the same way as red wine. The only difference being that the juice is exposed to the skin for a shorter length of time. When making rosé, the winemaker needs to remove the skin before the wine starts fermenting. Because the grape juice and skins are in contact for only a short amount of time, just a small amount of the colour from the skins is broken down into the juice, thus making rosé a pale red.

reD Red wine, on the other hand, involves a process in which the grapes are pressed into juice, and then the grape juice and skins are placed together into vats for fermentation. In the fermentation process, the colour from the skins is broken down, and the wine becomes a dark red or brown.

whiTe In the vinification of white wine, the grape skins are immediately filtered, leaving only the juice for fermentation. That’s why white wine, even after fermentation, remains very similar in colour to the pale gold of grape juice.


Gastronomy tASting WinE: ORdER aNd BaLaNcE Some say that appreciating a wine is the work of all the senses: it should be feasted on by the eyes, nose, and mouth. But for beginners, the most important thing to pay attention to is taste. Most wines are made to be paired with food. That is why there are so many different varieties of wines today. Although there are no hard and

fast rules for which wines go with which foods, a good pairing elevates the flavours of both the wine and the food. First, one must understand the order in which wines should be tasted. Light wines should be enjoyed before heavier wines. That’s why Champagne is typically only served as a pre-meal drink. White wines should be enjoyed before reds,

and spirits (such as Cognac) are generally only served on their own after a meal. One must also keep in mind the importance of balance in pairing. For example, savoury foods should pair with tart wines (wines with high level of acidity), while tart foods should pair with bitter wines, and spicy foods should pair with bolder wines, and so on.

1 Place the fillets flat, salted and peppered. 2 Cook the peas, Romanesco broccoli and broad beans separately in boiling salted water. 3 Cut the mango into 2.5cm x 2.5cm cubes. the sauce: sweat the onion, add finely chopped lemongrass, add ginger and pumpkin. 4 Prepare Add coconut milk and spices and cook gently for 1 hour, mix in a blender and strain. the sole fillets in a frying pan to obtain attractive colour on each side, finish by baking in 5 Sear the oven at 100°C. 1. Cut meat into cubes (30–40g). 2. Saute in foamy butter and oil for colour. 3. Sprinkle flour on top of the lamb. 4. Remove the meat form the pan. 5. Sweat the chopped onion and thyme on the same pan. 6. Add chopped garlic and continue cooking it. 7. Add fresh chopped tomato and tomato paste. 8. Put the meat back on top of the garnish. 9. Cover the meat with chicken stock or water. 10. Cover with cooking paper and foil, and braise in oven at 170˚C until soft. 11. Once cooked, remove meat from the sauce and reduce sauce till correct consistency, season it and add it to the meat. 12. Just before serving, reheat the meat in the sauce for 5 minutes.
