Seasonal recipe PUMPKIN & ALMOND CAKE
Taken from new book Canned by Theo Michaels (£18.99, Ryland Peters & Small), this delicious dessert makes the most of your tinned and store cupboard ingredients… 1. Cream 220g caster or granulated sugar and 150g butter together in a bowl, then add 4 whisked eggs and tbsp ground cinnamon, 1 tsp ground cloves and1 tsp vanilla extract, mixing until smooth. 2. 425g tin of unsweetened pumpkin puree, then mix in 100g ground almonds. 3. Once fully combined, pour the cake mixture into a 20cm round parchment-lined cake tin and bake in a preheated oven at 200°C/400°F/Gas mark 6 for 1 hour. 4. Leave to cool in the tin on a wire rack, before serving with whipped cream and a light dusting of cinnamon.
