Adam Townsley The executive chef at Bistro Pierre on how contemporary French cooking can combine classic influences and modern techniques.

Meet the Experts

Can you tell us a bit about your role at Bistrot Pierre? My role as executive chef is to work on the development, production and rollout of new menus across all restaurants in the Bistrot Pierre family. When we work on developing a new seasonal menu we approach it from a range of angles. Our client base is always at the heart of what we do, so we take

time to consider what they want from a visit to Bistrot Pierre. This includes consulting feedback from customers through our FeeditBack software and Mon Pierre app. From this we then set clear objectives on where we want to take each menu, based on that feedback and the current food trends – and of course the season.


What is your favourite dish on the menu?

I worked in France for almost five years, and I am also very familiar with the flavours of South East Asia as I used to live there. My personal experience combined with the reasons people eat out - has had a heavy influence on the menus I work on.

Our hearty meat dishes are always the most popular with diners across all bistrots. Our much-loved Boeuf Bourguignon Maison is a delicious braised beef stew with shallots, red wine, mushrooms and bacon. It’s stayed on the menu for years, even through the summer months, it’s that popular. I have to say this is one of my favourites too.

What makes French cooking and French produce so special? At Bistrot Pierre we are passionate about bringing our customers simple and delicious French cooking and our spring menu does that with a mix of modern techniques and some French colonial influences. By introducing Vietnamese and Moroccan flavours to traditional French dishes – such as Japanese radish - we are adding more freshness, textures and flavours to dishes. Whilst we have introduced these changes to our menu, it doesn’t take away from the fact that we are at heart a French bistrot. We have focussed on taking the traditional French dishes that people enjoy eating, and introducing new flavours to ensure our customers enjoy their dining experience with us every time.

What are your thoughts on the food and drink scene in Harrogate at the moment and how do you see Bistrot Pierre fitting into that? Bistrot Pierre Harrogate is firmly engrained in the vibrant food and drink scene in the town. The restaurant industry is constantly changing and, as an established restaurant, it’s important that we’re able to adapt and ensure that our offering is relevant and suitable for the modern market. Bistrot Pierre is celebrating its eighth birthday this year and we’re looking forward to the next best part of a decade in Harrogate, continuing to welcome our loyal diners back to try something new from our exciting seasonal menus.

How did the idea for Starling come about? With a solid background of 20 years in the licensed trade, I set out on my own for the first time to create a relaxed cafe bar with equal emphasis on amazing craft beer and stunning specialist coffee, alongside simple but great quality homemade food. The challenge was always going to be achieving all this in

the same place. Hunting out high quality artisan food and drink partners with provenance and a shared ethos has been a key foundation of our offer. Then it’s up to us to make sure we deliver those awesome products/ingredients consistently at their very best every time.

What does your average day in charge of Starling involve? It’s really varied. With a single site you’ve got to be a jack of all trades – be just as happy to jump in the kitchen, behind the bar or perfecting the latte art as barista on the La Marzocco. Sometimes I even have to stick my accounts hat on or my PR game face if we’re hosting a networking group. It’s a balance of getting stuck in with the guys whilst trying to keep a good handle on the overview stuff and direction of the business too.

You work with lots of local breweries and other suppliers, do you have any personal favorites? It depends on the mood I’m in. In terms of beer sometimes it’s a rich silky dark beer like the Hazelnut Salted Caramel Imperial Stout that we have on at the moment from the 5 Barrel Project. If I’m feeling like something more refreshing and sessionable then maybe a Pilsner Urquell or Hawkshead Windermere Pale. If I need a hop hit it’s hard to look past Roosters Baby Faced Assasin.

It’s all about quality over quantity and doing the basics right. We’ve got sound routines and practises to keep everything scrupulously clean and in tip top condition from delivery to dispense. And that goes for glassware and equipment as well as the liquid itself. Ultimately it comes down to having a passion for decent beer and taking pride in making sure it’s the best pint it can be.

If you’ve seen a murmuration of Starlings in person or on the TV then you know how magical it is and it’s all about community and teamwork. Those values are the backbone of our vision and goals too. We put a lot of time and effort into recruiting like-minded, passionate individuals to join the flock.

You were voted Harrogate CAMRA Pub of the Year for 2018 - what are the key rules for serving good beer?

Harrogate is rightfully proud to have a strong community of independent food and drink venues - what does it mean for you to be part of that and how important is it for the town? I’m very proud to be part of it and I’m certainly one of many. There are various indie networks, groups and initiatives being led by passionate individuals within the indie Harrogate scene. I believe this is a vital for Harrogate both in terms of draw as a tourist destination and as a regular haunt for people from the local area, rather than hopping on the train to York or Leeds.

Tom Wilkinson CAU’s general manager discusses the perfect steak and the importance of quality ingredients What is your role at CAU and what challenges does that involve?

As general manager, my passion is to make sure we create fabulous experiences here at CAU and that our guests keep coming back. There are 16 colleagues in our restaurant and a key part of my leadership involves making sure we share our knowledge and provide great training to deliver on being the best place for steak in Harrogate.

After that, it’s personal preference as to whether a guest prefers a leaner steak with a soft, delicate texture such as a medium rare rump, or a more full-flavoured steak like ribeye, where the marbling of the meat is broken down with a higher cooking temperature and slightly longer cooking time locking in those lovely juices and keeping the cut as tender as possible.

What makes the perfect steak? What a great question for a steak restaurant and it doesn’t have a short answer! It starts with fantastic quality of meat. All our beef comes from the Pampa region of Argentina where cattle rearing is taken as seriously as religion. Our dedicated beef herds are Aberdeen Angus which have a natural, free roaming life and are 100% grass fed. This results in some of the most flavoursome and tender meat, which is well marbled and as natural as we can find. The cuts are wet-aged in transit meaning we receive a perfectly aged and ready to use product, which remains beautifully tender and juicy after grilling. The care and attention doesn’t stop there as our beef is cut to order in the restaurant and then beautifully seasoned, basted in beef dripping and seared in our own coal

What’s the best you’ve ever had (apart from at CAU?) The best steak I had was in a speciality steak house in London. Not only was the steak excellent quality, it was prepared using a Josper grill which brings out the flavour of the meat and cooks it to perfection. Superbly matched with some fabulous wine, the experience was exceptional. This is one of the reasons I wanted to work with CAU as our core value is excellence in quality matching delicious steak with mouth-watering Malbec. How important is provenance to what you do at CAU? Well, as I’ve said, meat quality is paramount and care in handling, preparation and cooking is where we stand out. Our beef is reared and supplied exclusively to us, so

Do you think the Harrogate food and drink scene is in a good place at the moment? Market conditions here, like everywhere, make the food and drink scene both competitive and challenging. Local changes here in Harrogate underline the fact, but diners here are lucky to have so much choice with a wide array of world cuisines and local favourites. For us, that means we have to be on top form for every guest and bring new dishes with our Argentinian twist to the market so there is always something different to try at CAU.

Do you think it’s important to have a mix of indies and franchises to drive quality? Variety is the spice of life that brings it all its flavour. Personally, I love being able to eat different cuisines from all over the globe without leaving the town centre. Although there are 22 CAU restaurants, we approach our ingredients and preparation like any restaurant focused on quality and not just profit - it’s what our customers want and enjoy.

How important is it to support local producers?

We’re specialists when it comes to anything dairy. From milks to cheeses we’ve got you covered - we’ve also got you covered for everything in-between too! We have a Ripon hub which is our fresh fruit and vegetable site.

Supporting local producers is something that we’re extremely passionate about. Not only does it mean that your food is fresher, it also has a huge reduction in food miles meaning it’s greener for the environment. It keeps us in touch with the seasons and we believe it’s purer given that it isn’t tampered with or contaminated before it gets to your kitchen!

What makes a good cheese? I suppose this really depends on what you’re using it for - personally I love a bit of Olde York by Shepherds Purse with crackers. It’s a delightly creamy cheese made from ewes’ milk and the best part is - it’s made locally in Thirsk! However if you want to do something a little different try adding Harrogate Blue to your mashed potato - it’s divine!

What is the ethos behind JG Bellerby? The ethos of JG Bellerby is simple - to support the local businesses with the highest quality local produce at the right prices. One thing we believe in is customer service and anyone who is already served by us knows just how far we will go to make sure our customers are happy. Dealing so locally means that our customers get a much more intimate relationship with us than if they used a bigger foodservice wholesaler.

What are your thoughts on the food and drink scene in Harrogate? Do you have any favorites? We’ve got a great scene as far as independents are concerned, but unfortunately of late we’re seeing too many chains coming into the town. It’s such a shame - to source such good quality local produce and to compete with chain prices just isn’t possible for many. Personally I’m a sucker for William & Victoria, Cold Bath Deli which only opened recently, and I’ve been known to have a sandwich or two from Baltzersens.

Richard Sullock From humble beginnings in a Knaresborough pub, BadCo Brewery have combined a passion for craft beer with marketing and brewing expertise to create one of the fastest growing brands in the North, to create globally award winning brands and one of the fastest growing brands in the UK craft scene.

What’s the story behind BadCo? BAD Co. or Brewing and Distilling Company was conceived over a beer in a pub called Blind Jacks in Knaresborough. The landlord was a foreward thinking amateur brewer that took his inspiration from the North American craft beer scene. His passion and experience for producing great beer impressed our owner David Brown, leading to an investment. In 2014, BAD Co. was born when the brewery started production at our current site in Dishforth, North Yorkshire. The landlord became our Head of Brewing & Innovation; allowing him to continuing with his passion and drive for amazing craft beer.

What’s the secret to brewing a good beer? The secret to brewing great beer is to keep it simple. Use great quality ingredients; stay true to the recipe or style and finally be relentless about quality and consistency.

UK Statistics show that people are drinking less beer volume and drinking on fewer occasions than they ever used to. However, craft beer is in growth because it is perceived to be more interesting and exciting than the traditional big beer brands. It offers amazing aroma’s, fantastic flavours and on the whole, a great drinker experience. BAD Co. craft beers are really appealing to drinkers because the aromas and flavours are interesting but not too challenging and the range in alcohol strength means that they can be enjoyed on any occasion. The level of consumption of beer in the UK will continue to decline due to health and other social reasons; but more drinkers will choose to experiment in the craft category because it offers more than the traditional ‘big’ brands.

What sort of relationship do you have with local pubs and bars and how do you think the ale scene is performing in Harrogate at the moment? BAD Co. Beer is stocked by major supermarkets and national pub chains, but we are also very passionate about supplying our fantastic beer to the local region. We are keen to offer the best local service and we truly value all of our customers. That is why we have a dedicated sales team to visit local pubs and support their business. The real ale/craft beer scene has been through a huge surge in popularity over the past five years, why do you think that is and do you see that growth continuing?

I am also delighted to say that Harrogate is in a really good place right now. The craft scene is growing with some really good pubs and bars for all ages. Drinkers no longer have to go out of Harrogate to the urban centres of Leeds and York to find exciting bars and craft beer- they can find them right here!

Collaborations between breweries is very trendy at present. It allows a brewery to step out of their core range and experiment with different styles; keeping ranges relevant and fresh. BAD Co.’s limited edition range called ‘Off-Tempo’ will offer new and exciting beer styles!

Bistro on the Park, nominated for Team of the Year at Harrogate’s prestigious Hospitality and Tourism Awards 2017, is a contemporary restaurant run by Harrogate College’s Catering and Hospitality students under the guidance of senior chef lecturers and food service experts. The restaurant is open to the public for coffee and cakes on Wednesdays from 11am - 12.30pm and lunch on Fridays, during term times. It also hosts a monthly Thursday themed evening, which have proved extremely popular with members of the public, staff and students. At £15, the themed evening’s three course menu offer exceptional value for money for high levels of cooking, service, creative flair and seasonal produce. The restaurant offers students an outstanding opportunity to gain valuable hands on work experience, at the beginning of their careers in Harrogate’s thriving hospitality industry.
