Q-Thanks so much for sitting down with us! I know you’re super busy and have been traveling. Where have you recently been?

Q-New York’s coffee scene has evolved so much in the past few years where do you think it ranks now compared to other US cities?

I had four trips in four weeks: Norway, California, El Salvador, California again. I go to Pairs in two weeks, and I might need to to go back to France again soon after. My frequent flyer accounts like all this travel; my lower back doesn’t.

New York was a small, sleepy scene as late as 2008; there was tremendous excitement and growth for a couple of years, but then it leveled off. Now it’s picking up again, and in Midtown of all places. It’s revolutionary. For the most part, the best coffee spots were in the neighborhoods were the foodists live and eat - lower Manhattan, Williamsburg - but now they’re popping up where the grown-ups work, where millions of grown-ups work. Cutting-edge coffee is getting a whole new constituency. How does New York compare to other cities? It’s the country’s most energetic scene. It might not have the focus of San Francisco, or the earnestness of Portland, but it’s reaching the largest audience in the United States, and New Yorkers aren’t afraid to pay for quality. If it’s good, we’re in. Although the city to watch is Los Angeles - there’s a lot happening out there.

Q-If I wanted to take an educational coffee tour, where would you suggest I go and in what particular order? Domestic and International travel. Graduate seminar level? Oslo to experience the exceptional quality and art; Tokyo to bend your mind; and Los Angeles or Paris to see what a scene looks like when it’s ascendant. Then go to your local shop - now there’s one in every region in America - to check out how it all plays out in the cup. 13

Q-I and many other people follow you on Twitter. I love that you reply to requests for coffee suggestions. Do you ever get tired responding?

It’s easy to make fun of it because it’s easy to identify, but I think it’s fantastic that Never. Q- Brooklyn vs. Manhattan. You’re a fan of the eateries in Brooklyn though you live in Manhattan. Do you think you and your appetite will ever make the move across the bridge? Real estate might make me move to Brooklyn. I lived in beautiful brownstone in Carroll Gardens when I moved to New York in 1997, then I moved into to a tiny, fantastic studio in the Lower East Side in 2001; now I’m in the West Village. I like the energy of Manhattan, and the convenience of it, but I don’t like the hyperactive rents and mercenary new developments. It makes me sad to see all these chain stores pushing out small businesses, but a massive drug store with underpaid employees or a major bank with ridiculous checking account fees can swing the rent that would sink an independent shop that pays its employees a living wage. There’s a butcher around the corner from where I live that’s important to my spiritual balance. When Florence Meat Market is priced out of the neighborhood, I’ll know it’s time to leave.

Q- You wrote a great article about the fact that a number of Michelin starred restaurants serve coffee from pods. This has always bothered me. Have you noticed any changes since the article has been published? Statistically, I have no idea. I bet there many more restaurants are now using capsules and pods. But anecdotally, I see that a number of great restaurants are putting serious thought into their coffee programs. I was just at the Restaurant at Meadowood in St. Helena, a three-star restaurant since 2010, and the chef, Christopher Kostow, recently completely rebooted the coffee program: good beans, amazing machines, custom-made ceramic coffee drippers that look like they were made by some small-town Swedish potter in the 1950s. From a business perspective, Kostow doesn’t need to to do any of that, but he’s driven by his art. Will his customers notice? Maybe. But he notices, as does his staff, as do a few kaffenerds. Q-Do you think of coffee as a social ritual. I’ve always wondered why there weren’t coffee parties. Because the bad decisions you make after a few drinks are more intimate than the bad decisions you make after a few coffees. Although you should go to Four Barrel on Valencia in San Francisco. It’s so alive. It feels like a really good day at a really good bar, with that sort of loud, generous socializing you get when you’re in a room full of people who are laughing. 15

Q- Tell us more about your upcoming book? Now that it’s closer to the publishing date has the tone or content changed? The book is still in progress. It’s changed enormously over the last year as I figured out that it can’t be tied to the news cycle, which is what you always do with journalism. There’s so much innovation, what’s worth exploring in June might be outdated by December. So the book is more about the whys and hows than the toys and trivia. I’m trying to tackle some cosmic questions: What is taste? How does a movement form? What force of personality does it take to convince people to change how they start every morning of their adult lives? There’s been a fundamental shift in how coffee is grown, traded, roasted and prepared, and the ones taking on the challenge are doing it with the expectation, or maybe hope, that customers will get it. Which is crazy. Usually, you market something to people’s tastes, not develop a challenging new taste profile and try to get people to figure it out, but the most interesting people in coffee are making coffee for themselves and their peers. They’re following their bliss. It’s up to us to get it, too. Some tell me that I’m writing about the obscure ones, the small-time players, the fringe, and they’re right. Those are the ones who are out there ahead of the curve.

Q- There’s something romantic about coffee shops. Where would you suggest a first date in Manhattan and/or Brooklyn? Well, I’m not sure that coffee is the right conversational lubricant. I love coffee with all my heart, but it doesn’t give you the best breath - you don’t necessarily want to lock lips with somebody who had a cappuccino thirty minutes ago. That said, go to Propeller in Greenpoint, pull two seats together in the back room, share a pastry - touching fingers, so sweet. Just order an herbal tea if you want to nuzzle later. Q-Baristas have become rock stars on the dating scene. Any tips on snagging a date with one? What a meat market, right? All that eye contact, and when they ask you for your name you think it’s so they can tell you when your drink is ready. Not to be too GQ about it, but: Be direct. If you want to go out with a barista, let that barista know - confidence is attractive. Or: Be clever - there’s a famous story in coffee about a hotshot barista who was picked up by a woman who left her number in the tip jar. They’re married now. One thing to remember is that baristas love to have a beer or drink something harder at then end of a shift. They need some chemical balance after sampling coffee throughout the day. Eljay Aguillo. I am married to a beautiful woman and expecting a child which is the most exciting thing in the world. I’ve grown closer to my parents (Pennsylvania) and my brother (California) ever since I moved out from home in 2006. They’ve always supported me at everything I did throughout my life even though I wasn’t reciprocating. That’s the one thing about my family I would take with me for the rest of my life: They give and just want to make others happy. I still miss my dog who passed away in 2011 and still carry lottery tickets I bought the day he passed. Up to today, I still haven’t checked the numbers. I could me a millionaire, but who knows.

What

My current project started in July 2012 when Instagram just started to become popular. I’ve had this loving obsession to New York City for a long time, maybe since I was in high school. However, I never really understood why until I left New York City for a job not too far away. That same day, I looked at my wife, looked at what I have, looked at the hardships I went through to become happy. I learned who I was and who I could be in New York City. So as I was coming up with the Instagram page, I decided to make it into a page that describes my “Thank You” and/or dedication to New York City for letting me live the way I had to, learning from all my mistakes, learning from people who have done me good and wrong, and posting the specific reasons why I love New York City. And that’s what the page is called, “@WhyILoveNewYorkCity”. Every post/reason tells a story, and that’s the way I’ve wanted to share it. Even though I’ve lived in the city for a total of 3 years, I’ve understood more of my life and that things I’ve done than the 22 years prior. In other words, I grew up. Why I Love New York City is probably my most favorite project I’ve ever done. Even though everything I do for it comes out of my own expenses, I wouldn’t trade it for the world. I love sharing

stories of my wife, sharing stories of my pitfalls, and sharing stories of other people I’ve encountered that I haven’t seen in a long time. New York does that to you, It never lets you forget, but it always let’s you experience just to inspire others. This project actually started out just naming my few favorite things about New York City (autumn, late night shows, certain celebrities, broadway), but when I started to state more so quotes that I come up with, it started to attract people that want to be new Yorkers, and of course, New Yorkers that experience the same thing. I’m still trying to lure New Yorkers that haven’t experience what I’m experienced, but that’s a challenge my page is currently facing right now: is to be able to cater to everyone because all of my quotes I post has to do with something so specific to a New York Moment. So, this new concept I’m changing to will be geared towards getting to know New Yorkers in a deeper level. When I first thought about the change, I asked myself “How do I give this Instagram page to New Yorkers, and people who come visit New York City?”. So after giving it long thought, I’ve come up with this concept that gives me freedom to be able to ask people in the NYC streets why they love New York City. I take their picture, take their quote, and then deliver it to my Instagram page. Instead of me sharing my reason, it’s now the people’s turn to be able to send their own message. I’m not really much of a fashion trendsetter. I just love to wear GAP and Banana Republic because I don’t like to wear logos (besides Nike). I only have 3 types of styles:

Eljay’s (1) T-shirt, Jeans, and sandles. That’s what I’m known for. Winter, Spring, Summer, and Fall, people aren’t surprised anymore that it’s what I wear. No matter what, if it’s Banana Republic, I would wear it.

(2) Plaid shirt and sweatpants. It’s comfortable. I have no other words for this but that’s basically it for that.
