Arriving in Paris Orly, I negotiate the cavernous, elegant and efficient metro, navigating through tiled tunnels and Victorian latticed bridges, into the throbbing city centre around La Motte-Picquet Grenelle station. A couple of minutes down Rue du Commerce and Rue Fondary and I reach my abode for the night, Hotel Wallace.

Nestled in the 15th arrondissement, the Wallace is a modern boutique hotel modelled on the style of the Italian Riviera. My room is compact, but the bed is big, and the mix of wooden panelling and metallic fixtures delivers a traditional feel with a modern aesthetic. From the beautiful glossy lacquered wood headboards and fringed sconces to the terrazzo bathroom, the décor is beguiling, inviting me to take a few moments to rest my travel-weary bones. I suspect, however, that if I lie on the bed I’ll not be getting up again – the Hotel Wallace has always been an open house for travellers in search of new discoveries, so discover I must. It’s time to explore the city.

Paris is in full flow this morning and I’m in the centre of it. The Eiffel Tower is just around the corner, but the stunning view from Place Joffre is obscured by the modernism of the Grand Palais Ephemere, the home of judo and wrestling for the Olympics. The five rings are everywhere, and masses of temporary seating lines the Seine, waiting for

the elite rowers to take to the water and fight the currents of the powerful river. Grand seating at the Trocadero gives stunning views for the road racing – both foot and wheeled – but the Eiffel Tower provides what must be the greatest view for a spectator in the history of the event.

After a day of taking in the pre-Olympic atmosphere of central Paris, I sink into a chair at one of Wallace’s two bars. The Tuco Rooftop Bar offers views of the Eiffel Tower, but I’ve opted instead to sit outside on the Tuco Terrace, where I sip on a crisp glass of white. The sky is shifting from bright-blue sky to pinks and oranges, and the warm air makes the chilled wine even more refreshing. It’s the perfect place to let the day drift into evening.

The receptionist has recommended Café du Commerce for dinner. It sits just around the corner and is everything one could want in a Parisian eatery. Early 20th-century elegance is spread across three galleried floors and tables are being rapidly served by the immaculately aproned and waistcoated army of waiters. This is pure Paris, and I watch the coming and going during the short wait for a table to become free in this popular dining spot.

It may sound like sacrilege, but my eye is drawn to the Saucisse de l’Aveyron, with a jus au thym and puree maison – a Parisian version of sausages and mash. This, however, is nothing like anything you’d find in England. The slightly spiced pork saucisson is on another level and I’m quick to declare the mash the best I’ve ever had. The jus is the perfect accompaniment. The chocolate lava cake adds to the delight of the meal. The staff at the hotel clearly know all the right places.

When I finish dinner, I find the crowds are still out in force, enjoying the warm night on the Haussmanndesigned boulevards. Every table outside of every cafe, bar and restaurant is occupied by fashionable locals and mesmerised visitors. Car horns ring out, the lateevening rush hour showing no sign of abating. It feels like a busy Saturday night, rather than the lazy Sunday evening I was expecting.

After a sound night’s sleep, I make my way to breakfast, served in the Wallace’s basement Orso restaurant. Everything is unashamedly and delightfully Parisian. Cold meats, slices of cheese, fresh locally baked bread, locally roasted coffee, jam from Haute-Savoie and honey from Oise provide a perfect pairing of simple and delicious. The only question is whether to have another helping.

Departing the comfort of the hotel, I stroll the avenues and boulevards that build on Paris’ reputation for elegance. I roam the Champs-Elysees and along the banks of the Seine, stopping for some cafe-based people-watching – one of the city’s favourite pastimes. This is Paris as it should be: unhurried, cultured and ever so stylish. Much like the Hotel Wallace, it’s a delight to behold. n

The design of golf courses is evolving. We speak with Jeremy Slessor, Managing Director of European Golf Design, to learn what good golf design looks like, how it’s changing and where it can be found.

Golf course design is primarily the organisation of landscape features to make the game enjoyable for those playing a round. It’s something European Golf Design is well versed in, as the Golf Course Design Company of the European Tour Group. The company has earned a reputation for producing successful resorts, members and tournament golf courses that are consistently highly rated – three of the courses have been voted best new course in Europe and two are within the top 100 courses in the world. We chat with Jeremy Slessor, MD of European Golf Design, about the fundamentals and future of golf course design.

What are the most important considerations when designing a golf course?

Course considerations start long before the design process. The initial phase is to understand the client’s business objectives, which is often part of a wider project including residential and/or commercial elements. This leads to the establishment of a design brief, highlighting issues such as the type of course required, the budget, schedule, target market and so on.

From that, we assess the land. It’s crucial to understand the opportunities and constraints within the land itself before design begins. In the past, the convention was to figure out the best course possible on a parcel of land and then look at the environmental implications. Now, the process is led by appraisal – you need to understand where the environmentally sensitive areas of the site are and route the course around those areas. Consideration is also given to the ground conditions and topography to determine the most efficient route around the land that will maximise the golf potential while minimising, or removing, any negative impact of the course.

How important is sustainability and what are some of the ways it is factored into design?

There are four main pillars to sustainability – economic, environmental, social and cultural. Our view is that if a new development can’t demonstrate a balance of all four elements, it should not move forward. Economic and environmental arguments are often readily apparent, but social and cultural elements are less appreciated. In simple terms, development provides employment opportunities and revenue for the locality. It’s important for the local, regional and wider community to understand this and view the development as an asset. That comes about through engagement at the earliest stages, continuing through the life of the project.

We completed a project in the Caribbean where the client challenged us on sustainability across all aspects. We were tasked with sourcing from the island as much as possible and hiring local personnel. The client also challenged us to think differently about the non-play areas of the course. Typically, this would be covered by ‘far rough’ – areas where the grass is mown maybe once or twice a year, but which provides a visual frame for the hole. He suggested we could plant crops or fruit trees instead, which could be used in the resort kitchens or consumed by golfers on the course. This resulted in planning each hole with areas for crops and developing seasonal signage around the course indicating when crops are ready to be eaten. This became one of the resort’s straplines - ‘the world’s first edible golf course’.

What barriers can crop up during a golf course design project?

While every site has different challenges, there are a few issues that regularly appear. Water is often a major issue, whether it’s finding a sustainable source for irrigation, or handling drainage. We know using municipal water supply

or ground water is not sustainable from an economic or environmental perspective. It is now more common for the irrigation supply to be a by-product of other operations –in many locations, treated sewage water (TSE) is the main source of irrigation supply. This has multiple benefits: it limits the amount of TSE getting into the aquifer; it is typically high in nutrients, reducing the amount of additional fertilisation required, and the grasses and soils act as a further filter to remove any trace elements before that water reaches the ground water.

Other common challenges include Biodiversity Net Gain, which is relatively new legislation that requires developments to demonstrate that the biodiversity of a parcel of land is increased by a minimum of 10% after the work is finished, compared to before development; environmental constraints, such as ancient woodland, wetlands, heathland and so on; services (water, electric, gas) crossing the site; financial constraints; and more.

What course is your most innovative?

Nowadays, most innovation relates to sustainability, which necessitates looking at each aspect of the development to determine where new technologies can be introduced, even if those technologies are unknown to golf development.

An example of this is a course we designed in the Netherlands, where the site was heavy peat. This needed drainage to make it playable, with the engineers estimating that the site would ‘sink’ between 3 and 7 metres from existing levels, but would not do so uniformly. This is a major problem for greens, which are designed with specific contouring to create different playing strategies. We needed to come up with a method of construction that would allow the greens to settle uniformly, without changing the fundamental design characteristics. We ended up using new technology from the construction trade called Foamcrete – it is basically concrete that is full of air bubbles – to provide a concrete raft for the greens with the strength of concrete but about 70% less weight.

Name three courses that are examples of clever course design

I like to think each of the courses we have done has been designed intelligently. Of other courses, Loch Lomond is a

great piece of work by Tom Weiskopf – some of the green complexes are sublime, and interestingly, as beautiful as the environment it sits within is, you could put it on a bland parcel of land surrounded by industrial estates and it would still be a great test of golf.

Tom Simpson is a well-known ‘Golden Age’ architect who completed many brilliant courses. One of the less well known is Golf du Lys, northeast of Paris. It is outstanding –at first glance it presents a simple challenge but after time, some of the subtlety and nuance starts to reveal itself. Even after 100 years with relatively little care and attention, it’s all still there just waiting to be rediscovered.

Finally, the course at Sunningdale Heath provides a solid blueprint for ‘everyday’ golf for the future. All the essentials are there, but on a reduced scale – the course is mainly par 3s with four or five par 4s so a full round can be enjoyed in about two hours, but if you play anywhere close to your handicap index, you’ve played some quality golf. n
