1 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon crushed Ghost Chili pepper flakes
1/8 teaspoon salt
1/4 garlic clove, minced, or use dried garlic powder
1 tablespoon canola oil
2 boneless rib-eye steaks, about 1 1/2 inches thick
Serves: 2
Cooking Time: 16 min
Directions: 1. Mix together the Trinidad Scorpion chili powder, black pepper, paprika, Ghost Chili pepper flakes, salt, and garlic.
2. Rub the steaks with the canola oil. Then rub in about 1 teaspoon of the dry rub on each. Set aside at room temperature for about 20 minutes.
3. Meanwhile, prepare a grill .Have your grill very Hot. Cook the steaks for about 8 minutes a side for medium. Let them rest for about 5 minutes before diving in.

1 egg yolk 1 Tbls. Creamy mayonnaise 1/2 Tbls. minced onion 1/2 Tbls. diced celery 1/2 tsp. Dijon mustard 1 tsp Ghost Pepper Chili Powder 1/4 tsp. minced garlic 1 dash salt 1 dash black pepper 1/4 cup dry bread crumbs - divided 1/2 lb. crab meat 1 Tbls. vegetable oil
Directions 1. Combine all ingredients, except crab meat, bread crumbs, and oil. 2. Gently fold in crab meat and 1/8 cup bread crumbs with your hands. 3. Spread remaining bread crumbs on a plate. 4. Divide crab mixture into 4 equal parts, roll into balls, and press to a 1/2" thickness on the bread crumbs. 5. In a large skillet, fry one side of crab cakes in oil for 3 minutes. 6. Lower the heat, flip crab cakes, and cook an additional 7 minutes.

Directions 1. Brown beef/lamb with onion; drain all liquid 2. Stir green beans, Ghost Chili Pepper pods and powder and tomato soup into meat; add a small amount of water if desired; heat through. 3. Spoon mixture into a greased casserole dish; spoon mashed potatoes evenly over top. 5. Bake in a 375 degree oven for 30 minutes, or until top is golden brown

Butch T Asian Chili Chicken with Peanut Butter Sauce Recipe If you're looking for a change of pace from beef, this Butch T chili recipe is a sweet tasting alternative with a spicy flair.
Ingredients
2 chicken breasts
1 Trinidad Scorpion dried Butch T pepper, diced
3 tablespoons peanut butter
1 cup chicken broth
4 ounces fettuccini noodles, or serve with rice
black pepper to taste
oil spray
Serves: 2
Cooking Time: 20 mins
Directions 1.
Slice the chicken into thin slices and season to taste with pepper.
2.
Sear chicken in a lightly oiled pan about 3-4 minutes per side.

Directions 1.In a shallow dish, combine flour, salt, paprika, garlic powder, and peppers. 2. Coat chicken entirely in the flour mixture; refrigerate coated wings for 1 hour; coat chicken again with remaining flour mixture. 3. In a 2-quart saucepan, heat butter and hot sauce just until butter melts; turn heat to low and keep warm on stove top. 4. Deep-fry chicken, 8 - 10 pieces at a time, in very hot oil (vegetable oil, canola oil, or peanut oil) for 13 minutes, turning once or twice. 5. Drain chicken on a wire cooling rack for 30 seconds, then immediately toss fried chicken in buffalo sauce mixture and remove with a slotted spoon. 6. Repeat with remaining chicken.

1 package wooden skewers
SATAY MARINADE:
1/4 cup minced lemongrass fresh or frozen
2 shallots OR 1 small onion, sliced
3 cloves garlic
2-3 tsp. Ghost Chili pepper powder, to taste
1 thumb-size piece galangal OR ginger, thinly sliced
1 tsp. minced fresh turmeric OR 1/2 tsp. dried turmeric
2 Tbsp. ground coriander
2 tsp. cumin
3 Tbsp. dark soy sauce (available at Asian food stores)
4 Tbsp. fish sauce
5-6 Tbsp. brown sugar
2 Tbsp. vegetable oil
Dipping Sauce
Serves: 6
Cooking Time: 45 mins
Preparation:
1. If using wooden skewers, soak them in water while you prepare the meat (to prevent burning). 2. Cut chicken into thin strips and place in a bowl. 3. Place all marinade ingredients in a food processor or chopper. Process well. 4. Taste-test the marinade - you will taste sweet, spicy, and salty. The strongest tastes should be SWEET and SALTY in order for the finished satay to taste its best. Add more sugar or more fish sauce (in place of salt) to adjust the taste. 5. Pour the marinade over the meat and stir well to combine. Allow at least 1 hour for marinating, or longer (up to 24 hours). 6. When ready to cook, thread meat onto the skewers. 7. Grill the satay on your BBQ, basting the first time you time it with a little of the leftover marinade from the bottom of the bowl. Heating element and turn the meat every 5 minutes until cooked (be sure to soak your wooden satay sticks in water before skewering). Depending on how thin your meat is, the satay should cook in 10 to 20 minutes. 8. Serve with jasmine rice and Satay Peanut Sauce for dipping.

225g unsalted butter, softened
100g caster sugar
175g dark muscovado sugar
2 tsp vanilla extract
2 eggs, beaten
300g plain flour
50g cocoa powder
1 tsp baking powder
2 tsp Trinidad Scorpion Brain Strain Chili Pepper Powder
100g bar dark chilli chocolate, roughly chopped
100g bar white chocolate, roughly chopped
100g bar dark chocolate, roughly chopped
vanilla ice cream
Cooking Time: 30 mins
Directions 1. Beat the butter and sugars together, then gradually mix in the vanilla and eggs. In another bowl, combine the flour, cocoa, a pinch of salt, baking powder and TS Brain Strain Chili pepper Powder, then mix these into the butter and fold in all the chocolate. 2. Heat oven to 180C/160C fan/gas 4. Place walnut-sized spoonfuls of the mixture on baking sheets lined with baking parchment, leaving enough space between so they don’t melt together. Bake in batches, for 10-12 mins, depending on how gooey you like your cookies. Allow to cool on the baking sheets for 1 min before removing to a plate to cool completely. 2 onions minced 2 cloves of garlic minced 1 cup of barbeque sauce 1 cup of ketchup 1-1/2 teaspoons Firehousechilli ghost chili powder 1/2 teaspoons ground cumin 1/4 teaspoon salt 2/3 cup of your favourite Beer ¼ cup of honey 2 tablespoons of lemon juice 1 Firehousechilli dried Ghost Chili pepper, crushed 2 tablespoons of red wine vinegar 2 tablespoons of Dijon mustard 1 tablespoon of Worcestershire sauce ½ tablespoon of black pepper
Directions 1. Combine all ingredients, mix well. Cover your meat for at least 2 hours or overnight for a more intense flavour 2. Remove meat from marinade, and set aside. 3. Place marinade in a saucepan, bring to boil, reduce heat to a simmer for 10 minutes, or until thickened. Use as a sauce or baste your meat while cooking

Chili peppers go great with any type of food and you can highlight them in so many ways. Recently, a trend is to infuse alcoholic drinks with chili peppers, which is a trend we greatly enjoy. You can do this at home. The process is very similar to infusing vinegar with chili pepper heat and flavor. In general, always choose the freshest chili peppers for your infusions. Dried chili peppers also work great. Wash the peppers and slit them lengthwise so they do not float. You can also chop them into smaller pieces for a stronger infusion. Trinidad Scorpion Chili Pods are ideal for infusions as they pack a great deal of heat and flavour, but you can realistically use any type of chili pepper, like the fabulous Ghost Chili pepper or the smoky 7 Pod Chocolate Douglah Pod.
Infusing Alcohol with Chili Peppers Slice the chili peppers and drop them down the neck of the bottle you wish to infuse. You may need to make a bit of room. Your choices of alcohol are limitless, but popular choices are tequila, vodka, and even wine. The amount of chili peppers will depend on your preference, though you can use anywhere from 1 chili peppers for a milder infusion to a dozen for a real HEAT blast.
2 to 3 peppers are typical. The chili peppers will eventually sink and your infused alcohol will be ready for consumption in 3 to 4 weeks. Trinidad Scorpion Chili Pancakes Trinidad Scorpion pancakes goes well with your Chili Jam
Ingredients
2 tablespoons Trinidad Scorpion chili powder
½ cup olive oil
1 cup milk
1-1/3 cup flour
2 eggs, separated
½ teaspoon salt
½ teaspoon sugar
2 teaspoons baking powder
Serves: 4
Cooking Time: 10 mins
Directions 1.
Beat egg whites until still and set aside.
2.
In a large mixing bowl, beat egg yolks with sugar and salt.
3.
Add baking powder and mix.

Add flour, milk, oil, and chili powder. Beat until well mixed but still slightly lumpy. Feel free to add in more chili powder if desired to taste.
5.
Add egg whites and fold in gently.
6.
Heat a large pan to medium heat and add a couple of teaspoons with a bit of olive oil to pan per pancake.
7.
Cook about 2-3 minutes, or until sides are bubbling. Flip and cook another 30-60 seconds, or until pancake is cooked through.
8. Finish the remainder of the pancakes and serve!

6 1/2 cups sugar
1 1/2 cups white vinegar
6 ounces liquid pectin
dash of salt to taste
Directions:
In a saucepan, add minced Trinidad Scorpion Butch T, sugar, vinegar, and salt.
Simmer for 10 minutes.
Add liquid pectin and bring to a boil, stirring frequently. Pour mixture into sterilized jars.

Making your own meat rubs Salt and Sugar Salts and sugar will form the base of each spice rub, and the ratio of each should vary based on the meat.
