The Drywite Young Fish Frier of the Year Competition has not only changed people’s careers for the better but also created friendships that will last a lifetime. I personally have met many of my closest friends through my involvement in the competition. Briar helped to create a culture where everyone supports and encourages each other, while competing against each other; something that has found its way into the wider industry.

The NFFF and the fish and chip industry was deeply saddened to learn of the passing of Briar Wilkinson. Briar was a leading figure in the industry and the difference she has made is immeasurable, many would not be where they are today without her desire to develop the skills of the young people in this industry.
Many say the fish and chip industry is like one big family, we have sadly lost one important member, but Briars influence will continue to make a difference for many years to come. She will always be remembered and loved. Moving to a topic close to Briars heart, the 2018 National Fish and Chip Awards took place on the 25th January in which Millers Fish and Chip in Haxby were named Independent Takeaway Fish and Chip Shop of the Year. It’s a huge achievement and I know Millers will be great ambassadors for the industry and once again push our industry forward over the coming year.

THE IMPORTANCE OF CARD PAYMENTS FOR SMALL BUSINESSES In 2017 there were more than 5.7 million private businesses in existence, 10,500 of these were specialist fish and chip shops. Small businesses truly are the backbone of our economy here in the UK. The Darwin £10 note is almost extinct – Are you ready? The Bank of England will withdraw legal tender status of the paper £10 note featuring Charles Darwin at 23:59 on Thursday 1 March 2018. All businesses that handle cash need to plan and prepare for the change. QUALITY AWARD PORTAL Gain the NFFF Quality Award and move into the fast lane! Lanes Fish And Chips After years in the trade, Mark Piper, owner of Lanes Fish and Chips on Lady Balk Lane, Pontefract decided to embark on his quest to gain the NFFF Quality Award. This was the first industry award Mark looked at achieving, he explains “Over the years, as an industry we have seen competition increase, the high street is becoming more and more competitive and the need to stand out alongside producing a high quality food is ever increasing. I love the industry and over the years I have seen shops gain the NFFF Quality Award. I have always
been interested in achieving this myself but never fully committed. Towards the end of 2017 I decided I must commit to help aid my business. The day came for my inspection and it was over in a flash. I’m delighted to say I have passed my inspection. It was a great reward for my staff to know that an industry assessor came into our shop and reaffirmed my belief that we were producing a top quality meal. We can now say we are only one of 225 shops in the UK to hold the award out of 10,500, and let it give my business a huge lift!” NFFF Assessor Mark Drummond said, “Mark has been in the industry for many years and has always run excellent shops but had never
entered any awards or previously applied for the Quality Award at any of his shops. His shop is compact but busy, well laid out and well run, with family members working alongside him and a couple of other staff. He had read though the Quality Award guide in advance of my visit, so he knew what to expect and had ensured he was complying with all the requirements. I made a few small suggestions in my report that I felt could help improve his already great business further but he passed the Quality Award, exceeding the required standard, so giving him and his staff both a great sense of achievement and a marketing tool to help him stand out from his competition.”

LAUNCH OF THE LATEST GRANIT FISHING VESSEL IS A MILESTONE FOR THE NORWEGIAN FLEET AND HERALDS IN A NEW ERA FOR FISH FRIERS.

For the past 20 years “Granit” has been the byword for top quality Norwegian frozen at sea cod and haddock, distributed in the UK by Unique Seafood. Last September, a new generation Granit vessel was handed-over and named at a ceremony in Norway.
The new Granit is the largest, most technologically advanced, Norwegian fishing vessel afloat and represents a milestone for Norway’s fleet: A magnificent example of engineering, with hygienic state-of-the-art facilities for high volume catching of MSC certified source cod, haddock and prawns, rapid processing, freezing and storing at sea as well as separate forward storage for fish oil and fishmeal. The Pacific Cod quota has been reduced and that increases demand for Barents Sea cod, as the US market

worst conditions that can occur in the Barents Sea and North Atlantic fishing grounds. Each fishing trip is more productive, from catching, to processing, to on-board freezer storage capacity, ensuring continuous and consistent top quality Norwegian seafood supplies synonymous with the Granit name. The new Granit is 81.2 metres long x 16.6 metres wide and has a gross 4427 tonnage. Her cargo hold accommodates 775 tonnes of fillets and 61,000 litres of fish oil. All on-board processing uses the very latest de-heading, filleting, skinning, cutting, portioning, weighing and freezing technologies, saving fish friers labour, reducing waste and controlling costs. To the designs of Norwegian ship designers Skipsteknisk, Tersan Shipyard carried out the newbuild at their Yalova city shipyard
in Turkey, which is one of the biggest, most modern and efficient shipyards in Europe. The company was commissioned because of their wealth of expertise in fishing vessel construction and met the required new-build timetable, handing over Granit ready for the naming ceremony in Norway. Speaking at the naming event at the Bekkjarvik quayside before an invited audience, Mr Asle Halstensen, part of the Halstensen team and Captain of one of the vessels in the fleet said, “We are delighted with the design and build quality of the new generation Granit vessel and look forward to the future, continuing as key suppliers of top quality Norwegian seafish with our next generation Granit.”

...INSURER, QUESTIONS ANSWERED BY THORNHILL INSURANCE Q. Do you regard the fish and chip industry as high risk and if so, what can we do to help reduce the risk? Q. What should fish and chip shops look for when choosing an insurer?
ASK THE...
A. Make sure you choose an Insurance Broker or Agent who has an established scheme specifically designed for the fish and chip industry, as they will have already negotiated highly enhanced cover and discounted premiums for you – and will probably know what insurance cover you need, better than you will yourself. As with all insurance policies, never consider going direct to an insurance company, as your insurance broker or agent is a good friend to you in business, for all sorts of reasons, and you will need them to fight your corner in the event of a problem. You may be tempted to try and save money by cutting out the middleman, but trust me, you will cut them out at your peril.

A. Until someone invents a way of frying fish and chips without heat, I am afraid as the industry will always be considered as high risk. Oil, fat and heat are not good bed fellows. To reduce the risk of fire, always follow the range manufacturers instructions to the letter, clean fat traps as often as you can, change your oil or fat regularly and have the range serviced as set down by guidelines both in the ranges operating instruction and as set out in your insurance policy. Finally, ensure that the extraction system is similarly cleaned and serviced, as fat/ oil build up in extraction ducting is the primary cause of most fish and chip shop fires.
Q. What is classed as safe disposal of scrumps/ scraps / batter bits, and if using bins, where should these be sited? A. These waste batter scraps can spontaneously combust even in cold weather and even several hours after frying, so, to be safe, ensure that they are removed entirely from the building and preferably in to an air tight metal container situated at the end of your car park or at the bottom of your yard, away from anything that can catch fire if they do combust. This is always an insurance policy condition – so be careful.

When the owner of the Wetherby Whaler Group, Mr. Philip Murphy, a very experienced Restaurant & Take-away owner, spotted a gap in the market to create an individual, family friendly coffee shop in the empty lower ground floor area of the Wetherby Whaler at White Cross, Guiseley, he decided to pursue this opportunity.

Elite shop-fitters had previously worked with the Wetherby Whaler Group on several successful projects, and as such Mr. Murphy had no hesitation in employing Elite Shop-fitters to turn his vision into reality.

The existing series of under used store-rooms and W.C. area’s were completely gutted and stripped back to the original structure and then the space was opened up with a network of steelwork columns and beams. (These have been carefully incorporated into the design of the interior to maximise the impact of the structural columns). A new servery with Prep.. Kitchen & wash-up was created, with the rest of the area’s forming an open plan customer space, together with disabled W.C. facilities.
The whole lower ground floor was re-plastered, re-wired, newly decorated, new floor-coverings and the installation of a new powder coated shop-front c/w bi-folding doors leading to the new outdoor seating area. The new signage to the frontage was incorporated into the building, with a strong graphic identity. The interior boasts a selective palette of materials, including feature ceramic / porcelain tiling, faux leather seating, specialist brick cladding to the walls, reclaimed timber furniture which gives a eclectic ambience to the interior.
A combination of loose tables & chairs, high stools, comfy sofa’s and fixed banquet seating offer a variety of options to the customer. As such the completed project has a sophisticated, yet inviting feel, different to the usual coffee house and one which oozes quality. Once again Elite Shop-fitters have created a stunning environment which combines quality of workmanship and innovative design to fulfill the Clients vision.

BRIAR WILKINSON, A SPECIAL LADY In January it was with very sad hearts that the industry received the news of the passing of Briar Wilkinson of Drywite Ltd. Briar joined Drywite in 1960 and became sales director in 1980. She gave so much to the fish and chip industry and will be remembered fondly in many ways, although arguably her biggest contribution was the Drywite Young Fish Frier of the Year competition which she launched with her brother Kelvin Lee in memory of their father Malcolm Lee. Since it began in 1995, the competition has helped to launch the career of 22 youngsters who have won the accolade as well as many more who benefited from taking part. So many wished to share their thoughts that we couldn’t include them all, please see a selection of these below:

Her support for the NFFF and the industry has been unrivalled. Lynda Simmons Secretary General NEODA “One word alone sums up Briar: Legend. There never has been and never will be another Briar Wilkinson. Briar was a wonderful woman, with a heart of gold, and we will all miss her dearly. Her smile and presence lit up a room and you couldn’t help but feel loved and cherished in her company. Drywite joined NEODA in 1989 and Briar attended her first meeting in Warwick on 6th October 1989. Briar became the Honorary Secretary of the Foodservice Division of NEODA in 1991, a role she excelled in and treasured and a position she proudly held until the end. Her
In 1997, Briar was awarded the coveted NEODA Bob Boad trophy in honour of her services to NEODA – she was humbled and so very grateful to receive it. Briar attended almost every NEODA meeting and dinner since becoming a member – and kept every menu for every dinner too, such was her passion and love for the industry. Briar also wrote me a personal letter every year congratulating me on a successful event – she never ever forgot to write and her admiration was greatly appreciated. On a personal note, Briar was one of the few women within NEODA and came to be thought of as a very special person to me. She remembered my birthday and indeed my children’s birthdays every year since they were born. Her warm nature made everyone feel included and I always had a friend in Briar. God bless you Briar – the oils and fats industry and particularly the fish & chip industry, has lost a very special lady and you will be truly missed by so many. May she Rest in Peace.”

2018 has seen yet another successful and glitzy day at the National Fish and Chip Awards at the Royal Lancaster London on January 25th. The event saw yet another group of zealous entrepreneurs crowned winners, beginning with a champagne reception, filled with glee and chatter about all things fish and chips. The event itself was hosted once again by the excellent BBC Radio 2 resident cook Nigel Barden. Celebrating their 30th anniversary, the National Fish & Chip Awards continue to be the world’s best event for everyone involved in sourcing, producing and selling fish and chips.

The shop scooped the ultimate title – Fish and Chip Shop of the Year Award. To secure the ultimate accolade, Millers Fish & Chips had to fry at the top of their game while progressing through a rigorous, multistage judging process over a seven-month period; encompassing several mystery shopping assessments and in-depth audits by industry experts, reviewing everything from responsible sourcing policies to menu diversification – and of course, customer service and the quality of the fish and chips being served. The final stage of judging, held the day before the awards ceremony, put the shop’s presentation skills to the test. They faced a 15-strong specialist industry judging panel and ‘battered’ it out against nine other regional finalists*. The shops were quizzed on a range of industry related topics, and asked to demonstrate how they successfully run a profitable business and plan for future development.

The shop has been crowned the UK’s best fish and chip restaurant and a leader in promoting Seafood Week. To secure the top spot and become the Drywite Young Fish Frier of the Year, Peter has faced a rigorous, multi-stage judging process, undergoing exam questionnaires and in-depth telephone interviews conducted by senior industry experts. He also received a skills based assessment and personal interview during a comprehensive judging day at the National Federation of Fish Friers (NFFF) Training Academy in Leeds, West Yorkshire, as well as receiving a mystery judging visit at his respective workplace to test his skills and knowledge while in his own working environment. To secure the National Federation of Fish Friers (NFFF) Quality Award ‘Champion’ Award, Mark’s business, Towngate Fisheries, had to fry at the top of their game and were assessed against the NFFF’s quality benchmark which includes assessment of the overall quality of premises, working practices, key ingredients, cooked products, hygiene standards and staff training. Most importantly, the judging criteria also focused on how Towngate Fisheries promotes the importance and benefits of this quality mark to its customers.

ANDREW MARRIOTT NEODA PRESIDENT 1. What would you do with £500,000? Firstly, I would ensure that my three sons have enough to fully enjoy university and graduate without any debt at the end. Secondly, I would have a long family holiday of a lifetime. Any money left I would use to pay off as much of my mortgage as possible. 2. What is your dream holiday destination in the UK, and also abroad? In terms of the UK I have always fancied a walking holiday in the Lake District including Scafell and Helvellyn with evenings in different small family hotels with great food and log fires.

In terms of abroad it has to be two or three weeks in Egypt to fully explore the Giza Pyramids, The Sphinx, The Egyptian Museum of Antiquities, Cairo itself and a cruise along the Nile with a visit to the Valley of the Kings. 3. What is your favourite sport, and which is your least favourite? I have two favourite sports Football and Cricket and my least favourite/s are wrestling, (if that is sport?) and watching Baseball (playing fine though).

If I could have one superhero power it would be the ability to Teleport from place to place as it would save so much time and make travel so much simpler. 5. Which three people, dead or alive, would comprise your perfect dinner date? My dinner party guest list would be as follows Bono (lead singer of U2,) to talk to him about being for over 40 years the front man of the greatest band ever, the incredible songs the band have written, his fund raising and all the causes he has been involved in. Neil Armstrong (first man on the moon), to talk to him about being part of the 1960’s Space Race with the Russians , what it was like to travel in space, be the first man on the moon and to say those famous words “That’s one small step for man, one giant leap for mankind.”

My perfect weekend is spending quality time with my family, with good meals together, good conversation and doing fun things together. 7. What is your favourite drink? I do not really have a favourite drink, at the weekend I like the odd Pale Ale with Spitfire Gold being the current favourite. 8. Do you prefer cod or haddock? Both are very good but I come down on the side of cod. 9. What is your first memory of fish and chips? My first memory is from when I was about 6/7 years old and the fantastic smell of Fish and Chips and then the great taste of Fish and Chips out of paper walking along Hastings Seafront where my parents had a holiday home at that time. 10. What is your prediction for the fish and potato industries? There will always be a place in British psyche for traditional Fish and Chips because it is an integral part of the fabric of UK, but it must avoid becoming niche over time. The industry has the opportunity to hopefully return to something like it’s heyday in the 1950’s and 60’s. However to achieve this the industry must pay close attention to the UK’s changing eating habits and social dynamics; in terms of its menu offer, portion sizes, calorific content as well as the whole meal occasion experie ence for both takeaways and resstaurant eating. To standstill and not positive ely embrace these factors and others will have a detrimental d effect on the industry i whereas to evolvve and innovative the futu ure will indeed be very excciting.
