PRESIDENT’S NOTES As another year begins things are starting to get busy again at NFFF HQ. We are due to launch our new website, NFFF.co.uk, which is mobile responsive making it easier to read the latest news and information wherever you are. The new website will also have a members only area that will eventually contain lots of useful documentation and extended news items etc. It’s been a year in the making and we are very excited to get it out there. We have a couple of other projects we are working on too which will continue the changes we are making to the organisation so watch this space!

2019 is likely to throw a few challenges our way: commodities are high and there is a bit of uncertainty in the economy, to say the least, but I have always advised owners to trade at the quality end of the industry as that’s where your skill and passion will come into its own. Service is also something that can make you stand out. The fish and chip shop can be the heart of the community and the one place people can call in and get talking to their neighbours. The fish and chip industry is going to change, it has to if it’s going to survive, but we have so many things in our favour that it will remain the nations favourite. It is a good time to look at your operation and see what changes you can make. The NFFF are going to be running courses designed to minimise your waste and maximise your profits. BRITISH TAKEAWAY CAMPAIGN LAUNCHES... ...toolkit to support takeaways to provide healthier choices British Takeaway Campaign launches toolkit to support takeaways to provide healthier choices

Launched on Friday 25th January the takeaway sector launched an online toolkit designed to help takeaways across the UK respond to consumer demand for healthier options.

He added: “Most takeaway restaurants are small, independent businesses who face a confusing array of complex guidance and are unsure about where to start. Meanwhile, 42% see increased demand for healthier menu options being a key challenge over the next two years1. Supporting these businesses, especially at a time when they face real financial pressures, such as rising rents, business rates and skills shortages, will ensure they can continue to thrive whilst doing their bit to promote healthy eating.”

The NFFF has been working closely with the BTC to produce the toolkit which is based on best practice in the takeaway sector and consists of four simple and practical steps that most takeaways can implement. The measures include: • Offering smaller portion sizes • Making sure water and low-sugar drinks are available • Not adding salt after cooking • Using healthier cooking methods and ingredients. Commenting on the launch, British Takeaway Campaign (BTC) Chair Ibrahim Dogus said: “The BTC is launching the Takeaway Toolkit to support restaurants who want to respond to consumer demand for healthier options. We know many takeaway businesses have already made real progress and providing this

ALWAYS LEARNING AT ALMA PARK FISH BAR Written by Grace Garner I entered the industry in February 2018, when myself and my family opened our first shop. I was previously working in health care so the fish and chip world was a completely new one to me. After opening we quickly realised there was so much more to the industry than we initially thought. We discovered the Quality Award scheme, The National Fish and Chip Awards and all the wonderful events that happen throughout the year. We decided to get as involved with everything as we possibly could. My Grandad had his own shop and taught me the frying basics, but after seeing a course at the NFFF I decided to attend. Honestly, before attending the course I was really nervous, I was expecting an intimidating room packed with industry experts and was fully expecting to be left embarrassed by my lack of experience. I planned to hide at the back of the crowd and just absorb as much from the course as I could. No such luck! After being greeted warmly by Helen, I quickly twigged that I wouldn’t be able to hide at the back because it was a 1-1 course with David. Hiding at the back on this course was not an option! After a cup of tea we got into the training and within minutes all my nerves had evaporated. There was no area of the business which was not covered and most importantly there was no question too stupid…

Alice has been with the business since before we bought it and after 2 years of serving, she was keen to move onto frying. Alice really enjoyed the day and came back motivated and full of ideas. Of course, we did our own in-house training prior to Alice attending the course, but independent training ensures we are updated on our changes in the industry quickly as well as giving staff member the opportunity to network. For anyone out there who is looking to attend a course with the NFFF I would say ‘go for it’. There is no problem or challenge you have faced that the team hasn’t seen before and business is sure to benefit.

I left the course feeling more confident and motivated and with practical advice which was quickly implemented within my shop. Everything from working with suppliers right through to serving up the perfect fish was discussed and being able to spend a day experimenting with different types of batter, cutting fish and cooking methods was really useful. This definitely made us a better shop but also allowed us to save money in areas we hadn’t previously considered. The support from the NFFF was ongoing if I got home and needed more information the team had no problem answering my questions or pointing me in the right direction. This year I decided to send my most experienced staff member onto the course as well. We are a small operation, having a multi skilled team is important. We find that training for our staff helps them feel more empowered and more likely to view the fish and chip industry as a place to forge a career. We found that training really helps to reduce staff turnover and the more competent and confident the staff are the more smoothly the shop runs. It means all the staff are on the same page and working to the same standard.

WELCOME BACK TO THE EAST COAST! Written by Carlo & Katia Crolla Today we catch up with Carlo and Katia Crolla from East Coast Musselburgh. We follow their journey as they have open the doors for the first time.

East Coast Restaurant & Takeaway in Musselburgh is now open, how does it feel and is everything going well? It feels absolutely amazing to have East Coast finally up and running! It took us a while to get here and we have honestly enjoyed every step of the way. All the difficulties we had during each stage have been worth it, you enjoy overcoming hurdles more when things are a bit more difficult. It is a really proud moment for us both to be running the business of our dreams.

When we originally spoke, you mentioned ‘consumers are now looking to have a great experience when dining out’ do you think the new East Coast Restaurant and Takeaway offers this and how have you been able to achieve this? We believe that we are offering our customers a great dining experience not only in our restaurant but also in our takeaway. The restaurant has a very stylish interior, friendly staff and stunning food, customers are often blown away by how beautiful the interiors are and the quality of products we use. We feel we have created a very unique setting with Fish & Chips being dressed up to a very high standard. In our takeaway you still have the hustle and bustle of a traditional fish & chip shop but again the surroundings make you realise your not in a standard fish & chip shop. While people wait on their cooked to order food, takeaway customers can visually see and hear what’s going on in our open plan restaurant/ takeaway kitchen and our Kiremko range plays a massive part of that kitchen. “Check on! You undertook your research looking at your menu options, the local market etc. Have you found that your research paid off? I don’t think that any amount of training, research or preparation can ever prepare you for running a business in the hospitality sector however it does give you a starting point. Had we researched the local market and discovered that what we had planned for East Coast did not in fact tick the boxes for a good percentage of the Musselburgh population (and surrounding areas) then we wouldn’t have a business, no matter how good our product or experience was. It is so important to make sure your market audience is there. At this early stage it’s clear to see we have managed to capture the market we intended, that market is people that just want to have really high quality, fresh fish and chips. It’s been such a breath of fresh air to have customers approach us and say “Thank you so much for bringing East Coast to Musselburgh” or “The best Fish & Chips I have ever had in my life!” Its also been amazing to watch our takeaway customers engage in the article from Fish Friers Review that was published in September 2018 (we have it framed and hung on our history wall). We feel by having this on display it gives the customers who perhaps didn’t know us personally a chance to see why we decided to change things. We understood from the very beginning that we were never going to tick the boxes of every single person who wanted a ‘chippy’ – we get that!

What are your plans for 2019? 2019 will be all about making sure we maintain the high quality and standard of service that have set the bar with. We have such a wonderful team here at East Coast and we are so grateful for all the hard work they put in on a daily basis. We plan to work closely with our team in generating great Daily Specials using as much locally sourced products as possible for both the restaurant and our takeaway and ensuring out customers continue to have a wonderful experience with us.

Looking back is there anything you would change? We can honestly put our hands on our hearts and say we are 100% happy with everything we have decided to do. I don’t think we picked an easy concept with the shared kitchen and I am sure we will have many hurdles ahead but we are very excited about the future.

Looking back at the full project, what advice could you pass on someone looking to embark on a similar project? Find out exactly who you are, what you want to do and stick to it. If you are 100% sure of your concept and your business plan go with it and DO NOT let any negativity or fear change your thought process. We experienced a lot of negativity about the concept, we experienced lots of negativity about most things we decided on and that just gave us more drive to succeed. We feel so lucky to have such an amazing family who have supported and helped us every step of the way.

MAKING TAX DIGITAL Find out more about Making Tax Digital (MTD) for VAT From 1 April 2019 VAT-registered businesses with a taxable turnover above the VAT registration threshold (£85,000) will need to keep digital VAT records and submit their VAT return to HMRC using MTD-compatible software. This is mandatory for VAT return periods that start on or after 1 April 2019. Taxable turnover includes standard, reduced and zero rated, but does not include exempt supplies or income outside the scope of VAT.

What is Making Tax Digital? MTD is a key part of the government’s plans to make it easier for businesses to get their tax right and keep on top of their tax affairs. HMRC’s ambition is to be one of the most digitally-advanced tax administrations in the world, modernising the tax system to make it more effective, more efficient and easier for customers to comply.

They should also include information about the business, including business name and principle business address as well as your VAT Registration Number and details of any VAT accounting schemes you use. Customers who currently record daily totals can continue to do so, but they have to be captured digitally.

Can I still use spreadsheets for my business records? Spreadsheets may be used to record and store business transactions digitally. However, those spreadsheets must be able to submit the required data to HMRC digitally, for example, using bridging software or an API enabled spreadsheet that can integrate directly with HMRC systems. The bridging software must be capable of extracting or receiving the information from the spreadsheet digitally and then sending it to HMRC systems.

Businesses need to keep digital records and use compatible software to send their VAT returns or Income Tax updates to HMRC, and receive information.

The summary information must not be physically re-typed into another software package.

Keeping digital records and providing updates to HMRC directly through MTD-compatible software will help reduce errors, cost, uncertainty and worry. This streamlined digital experience will integrate tax into dayto-day business record-keeping, so that businesses can view their tax position in-year and be confident that they have got their taxes right.

Bridging software is how HMRC describes the digital tool that can take information from other applications, for example, a spreadsheet or an in-house record keeping system and then lets the user send the required information digitally to HMRC in the correct format.

What do businesses need to do to be ready to sign up for MTD?

You can find out more about which software products are already compatible with MTD for VAT on www.gov.uk/ guidance/software-for-sending-income-tax-updates

You must start keeping your business records digitally before you can sign up for MTD. If you already use software to keep your business records, check with your software provider what their plans are. If you don’t use software just now, or your software won’t be MTDcompatible then you’ll need to consider what software, or bridging software, is most suitable for you. There’s more information about how businesses can join MTD for VAT on GOV.UK (www.gov.uk/guidance/usesoftware-to-submit-your-vat-returns).

What records do I need to keep digitally for MTD? For VAT MTD does not require you to keep additional records for VAT, but to record them digitally. Your digital records should include, for each supply, the time of supply (tax point), the value of the supply (net excluding VAT) and the rate of VAT charged.

WELCOME TO THE NATIONAL FISH AND CHIP AWARDS 2019

2019 has seen yet another successful and glitzy day at the National Fish and Chip Awards at the Royal Lancaster London on January 24th. The event saw yet another group of zealous entrepreneurs crowned winners, beginning with a champagne reception, filled with glee and chatter about all things fish and chips. The event itself was hosted by the excellent TV Chef Phil Vickery. The National Fish & Chip Awards has been celebrating the nation’s favourite dish for 31 years, recognising and rewarding the people and businesses who provide us with the best fish and chips across the UK, both in terms of food and service. Recognised as one of the most prominent and respected food industry events and widely considered as the ‘Oscars’ of the fish and chip industry, the awards have given us some fantastic winners and memories over the years. They have helped to raise standards and enhance the reputation of this fish and chip industry that you all hold dear to your heart. Over the years, past award winners have seen businesses expand, staff recruitment and employment grow and turnover increase, all as a direct result of being crowned an award-winning business – just a few of the reasons why we continue to invest in these awards. It was a pleasure to see that so many of you could join us today – the independent shops and restaurants, the multiple operators, fishermen, processors and suppliers to trade, both national and international.

President’s Message Written by Andrew Crook Having just returned from the National Fish and Chip Awards I think it is important to recognise the hard work and professionalism of all the finalists. The level of thought that goes in to create initiatives in these fish and chip businesses is, in most cases, beyond what we see from multinational organisations! I think all the finalists should be very, very, proud! There can only be one winner and Tim and Kelly at Krispies will have a great year, and I know they will be championing the nations favourite dish! By raising the profile of fish and chips we all benefit. Congratulations also must go to Lauren Kellaway, Drywite

Young Fish Frier 2019. This competition is very close to my heart and really does enthuse and educate young people in the fish and chip industry. I wish I had the knowledge, the skills and the contacts that the entrants in this competition have at their age. Congratulations to Trenchers on winning the Best Restaurant Category. There is some very stiff competition for this title! It was a pleasure to present the Quality Award Champion Award to Black’s Finest Fish and Chips. These guys have been through NFFF training and are a great example of how the QA can help to keep your standards high and push you on to the next level. The owner also sports the coolest name in fish and chips, Matt Black! Fish and Chips at Weston Grove scooped the Best Newcomer Title. Richard and Josette Foster have made the transition from potato wholesale into fish and chips and have embraced the industry. Well done to Pete Fraser for walking away with The Good Catch – Sustainable Seafood Award. I must also congratulate my nearest neighbours Nana Jan’s, they are located just two miles from my shop. It was the first time I have met them as last year was a very busy year for me in the NFFF role but it was a pleasure to catch up finally. Lovely couple and I am sure there will be more awards to come. Papa’s Fish and Chips and Harbourside Fish and Chip must also take great credit in gaining the respective awards they won. We need to encourage more new shops to enter the awards as you really have nothing to lose and everything to gain.

National Fish and Chip Awards 2020 Next year’s awards irrespective of how far you get in the awards, taking part can be excellent for business performance. Participating businesses have seen up to 100% increase in sales on the back of publicity just by reaching the regional finals stage of the Fish and Chip Shop of the Year Award. Krispies Fish & Chips from Exmouth, Devon are frying high as they celebrate netting the enviable title of the UK’s best fish and chip shop at the National Fish & Chip Awards 2019, organised by Seafish. Owned and operated by husband and wife team Kelly and Tim Barnes, Krispies beat off competition from nine other finalist shops to clinch the title, which has led to previous champions doubling their turnover in the twelve months following the announcement. Krispies were also successful in the Staff Training and Development Award category. Entrants are judged on far more than just the fish and chips they cook and serve. Sustainability, menu innovation, catering for special dietary requirements, customer service and marketing activity are all part of the package of what makes an award winning fish and chip shop. Krispies consistently excelled in all of these areas throughout an intensive eight month judging period, which included multiple mystery shop visits and a final presentation to a panel of industry experts. Lauren Kellaway from Kellaway’s Fish and Chips in Truro, Cornwall, has been crowned the UK’s best young fish frier at the 2019 National Fish & Chip Awards. Lauren, 24, battled it out against five other finalist candidates to win the prestigious title. Organised by Seafish, The National Fish & Chip Awards is a UK-wide competition celebrating true excellence in the fish and chip industry. In order to win the ‘Drywite Young Fish Frier of the Year Competition’, Lauren underwent an intensive skills based assessment – which included chipping potatoes, making batter and frying fish – followed by a personal interview during a comprehensive judging day at the headquarters of the National Federation of Fish Friers (NFFF) Training Academy in Leeds, West Yorkshire. Lauren was also tested on her presentation and marketing skills, with previous winners Leigh Foster, Craig Buckley and 2018 title holder Peter Calvert all on the judging panel. The final stage of the competition was the mystery shop visit where Lauren was judged on her practical skills within her working environment.

Harbourside Fish and Chips in Plymouth, Devon wins Healthy Eating ‘Fish and Chips’ Award In order to take home the Healthy Eating ‘Fish and Chips’ Award, Harbourside was assessed against a wide variety of criteria including menu diversification and innovation, staff training, knowledge of product nutrition and promotional activity around healthier options. They were also scored on how they collected feedback on their healthier dishes from customers, as well as the actions taken as a result of the comments received. Harbourside then underwent a final round of judging, where the front and back-of-house practices were also scrutinised. Adrian Delaney, Seafish Ambassador and Nutritionist

added: “Eating a healthy, wellbalanced diet means eating food from a variety of food groups to get the energy and nutrients that your body needs, this is often difficult to achieve in the purchasing of ‘takeaways’. It is great to see establishments like Harbourside Fish and Chips recognise the importance of offering healthier options, as well as including dishes for coeliac, gluten free and other dietary issues. Our winners have gone over and above to promote Healthy Eating within their shop and truly deserve the title.”

Quayside Restaurant & Fish Bar in Gourdon, Aberdeenshire wins Best Seafood Week Campaign Award This award category was open to entry from all businesses that participated in Seafood Week (5–12 October 2018), an annual event coordinated by Seafish that encourages consumers to eat more fish, more often. From fishmongers and supermarkets to restaurants and takeaways, the week provides a flexible platform for businesses and organisations to promote the fantastic variety of fish and shellfish available to consumers in the UK. To be awarded the accolade, Quayside was assessed against a wide variety of judging criteria, focusing strongly on the marketing objectives and promotional tactics of their Seafood Week campaigns. The business was also judged on their efforts to involve staff in the campaign and on how

Andrew Crook, President of the National Federation of Fish Friers was recognised for his long standing contribution to the fish and chip industry last week, receiving the Outstanding Achievement Award at the 2019 National Fish & Chip Awards, organised by Seafish. A 19 year veteran of fish and chips, Andrew has served as NFFF President since 2017. The Outstanding Achievement Award celebrates an individual who has made a significant contribution to the industry and has played an instrumental part in advancing innovation. This may not necessarily be through long service but more an individual who has made an important impact on fish and chips, either in the short or long term. Andrew’s own fish and chip shop is called Skippers of Euxton, Chorley, Lancashire. He follows in the footsteps of his late father who was also a previous President of the NFFF and a winner of the Outstanding Achievement Award at The National Fish & Chip Awards in 2010. What would you do with £500,000?

If I was given/won £500,000 I would take a year or two off and travel the world. In our working lives we don’t have the time or money to see places we would like to, so it would be a great opportunity.

2. What is your dream holiday destination in the UK, and also abroad? In the UK it would be the lakes, even though its so close to home. I love walking, and it’s such a beautiful part of the world we are lucky to have it on our door step.

6. Describe your perfect weekend. Nothing beats a music festival in the middle of the summer. Standing in a field when the sun is shining, drinking cider and listening to your favourite artist.

7. What is your favourite drink? Coffee! I literally can’t function without one in a morning. If it gets to lunch time and I haven’t had a coffee I get the shakes. Probably not a good thing!

8. Do you prefer cod or haddock? I love both, but at my shop we predominantly sell cod so I would have to choose cod.

9. What is your first memory of fish and chips? The local chippy we used as a kid, we used to get two chips wrapped in paper whilst we queued up.

3. What is your favourite sport, and which is your least favourite? Football, nothing comes close to watching or playing. My least favourite is probably American Football as it’s too stop start. I would get bored watching and playing.

4. If you could be granted one superhero power, what would it be and why?

10. What is your prediction for the fish and potato industry? Over the next few months I see the

prices increasing even further. I think for shops now it is a great time to get our prices up so they are in line with other fast food outlets. I don’t think fish and chips should be seen as a cheap takeaway as it has all the best qualities. When the prices of fish and potatoes do come down then we will benefit.

The ability to fly. You could go wherever you wanted and the views would be amazing.

5. Which three people, dead or alive, would comprise your perfect dinner date? The Rock – He was my idol growing up. Sir Alex Ferguson – Legend! He would have some great stories. Connor McGregor – Would entertain the party.
