We are currently in Exhibition Season and the NFFF are always on hand to meet members and have a chat about everything fish and chips. If you are at one of the exhibitions, then please feel free to visit our stand and say hello. It is also time to start looking at the awards again. These are a great tool to promote your business and to have something for your entire team to work towards. There is no cost to enter and they really do make a difference… what have you got to lose? There are lots of categories to choose from so if you want any advice then contact your local NFFF Regional Director or speak to either the NFFF or Seafish at one of the exhibitions. On the 1st of April the first NFFF area meeting in Scotland for many years will take place. Colin Cromar, NFFF Regional Director for Scotland, will be in the chair supported by NFFF President Andrew Crook. This meeting will take place in Peterhead but there are already plans for a meeting further south in Scotland and in other parts of the UK. We have a great network online but it’s even better to be in the same room as other fish friers. We hope to see as many shops there as possible, Members and Non-Members. On the 7th of June we will all be celebrating National Fish and Chip Day. Again, this is a great tool to encourage the general public to think about fish and chips and hopefully drive sales across the country. You don’t need to run an offer, all we ask is that you take part and celebrate our great dish! Its not just about your shop, it’s about working together to raise the profile of fish and chips and get as much attention as possible, so if your shop is busy its even more reason to take part and join in the celebration! Don’t forget the New NFFF website NFFF.co.uk is now live with our new Members Area… this will grow over time and provide members with useful documents and information. TRAINING PORTAL What I was doing was good, but it could still be better! Written by Sukhwinder Singh When I took over my business, I was trained by the existing staff, although this was good for a new beginner it also meant I was taught the bad habits of my teachers! In 2018 and 2019 we achieved top 60 placing at the National Fish and Chip Awards. Being named one of the top 60 shops in the country is an honour, but we are always looking to improve and look to gain the NFFF Quality Award and try reach the top 10 finals of the award. To improve and be able to fulfil our ambitions I knew I would have to go learn from the best at the NFFF. After nearly 8 years in the trade I was ready to brush up on my skills, go back to basics and learn areas where I could improve my business. As a business we had been concerned by our turnover and had over looked our margins. My wife and I attended the one day course knowing we were running a successful business but with an open mind to learn. I personally didn’t think we were doing much wrong but how wrong I was! Our tutor on the day was Cem Oktem and the wealth of knowledge he was able to pass on was unbelievable. We are doing many things right, but there are areas we can improve to make our systems better. This was one area which stood out, in your shop you may be good in all areas but there is always room to improve. The most valuable lesson I personally took away from the session was portion control, using our current portions and moving towards the portions we should be doing we will make a saving of £200 – £250 a week. That’s without the savings on the fish cakes we will now produce with the off
cuts of our fish which were being wasted before. I wouldn’t hesitate for a second before recommending the course to anyone who has not been, we are rebranding our packaging and re-portioning our fish and chips. We are also re-training all our staff and using tried and tested methods which will get us ready for the Quality Award assessment. We are into week 2 of a 6 week transformation in which we are also trailing different sizes of fish to see which works best for us. Once staff training is complete, we hope to apply for the NFFF Quality Award and maybe look at opening a 2nd branch in the next 24 months. Thank you for the help and keep up the good work NFFF!

NFFF QUALITY AWARD PORTAL Make sure you’re listed in the ‘Official Guide to the UK’s Quality Fish and Chip Shops’? No design costs, no print costs - The NFFF produces this consumer guide annually as a marketing and promotional tool for the fish and chip shops in the NFFF Fish & Chip Quality Award scheme. The guide is a handy size for a handbag or car glove box and a great reference guide for the travelling fish and chip lover. Shops in the scheme receive as many as they need (subject to postage costs) to distribute to their customers and through local libraries, camping and caravanning sites, hotels, B & Bs and guesthouses, local tourist attractions and venues. Every shop in the scheme at the copy deadline gets a free single line listing, plus the opportunity to upgrade to a double line or a box entry for a nominal fee. Over 40,000 copies of the next guide will be published on Monday 17th June in time for the holiday period.
I’m an NFFF Quality Award holder, what do I need to do? If you are an NFFF Quality Award holding shop at 7th June 2019, you will be entitled to a free single -line listing within the guide. However, in the next few weeks you will receive correspondence from the NFFF offering you the opportunity to upgrade to a two-line or a box listing to make sure that your shop really stands out from the crowd.

KEEPING IT REAL With clever marketing and a solid business strategy, The Real Food Café has overcome tragedy, fraud and vandalism to emerge as one of Scotland’s most successful roadside diners – famed for its award-winning fish and chips Sarah Heward was approaching her 40th birthday when she decided it was time to start her own business. Based in London as managing director of Corney & Barrow Wine Bars Ltd, she thought about opening a pub in the city, but when she came across a disused former Little Chef building in Loch Lomond & The Trossachs National Park in Scotland, not far from her holiday home, her plans suddenly changed. “Starting our business in a derelict building on the A82 certainly hadn’t been the original plan, but when the bank manager told us that if we opened a fish and chip shop in Tyndrum we ‘wouldn’t go wrong’, it seemed like advice we couldn’t ignore!” The Real Food Café opened in 2005 and today Sarah understands what the bank manager was talking about. Located at the gateway to some of Scotland’s most popular hiking destinations, the diner has become a bustling hotspot for locals, tourists, outdoor enthusiasts and dog walkers looking to refuel. Serving up home-baked treats and hearty, award-winning fish and chips, as well as a range of gluten-free options, the diner is now a mainstay of the area, welcoming 200,000 customers a year. But success didn’t come easy for Sarah, who was struck by tragedy soon after The Real Food Café opened its doors. “When my husband Steve died suddenly, it was a devastating blow to me,” she says. “Not only did I lose a trusted friend, but I also lost my business partner.”
And the bad luck didn’t stop there. The Real Food Café was then hit by a spate of vandalism and before long, Sarah discovered she was being defrauded by a trusted employee and ended up in a lengthy tribunal dispute with another. “At that point, I just didn’t know if I could continue with the business – it felt like too much responsibility. Then I hit rock bottom and realised I had to ask for help.” Sarah’s fortunes began to turn when she met her nowhusband Alan McColm who supported her emotionally and with the business. “Alan has become my mentor and has helped me to develop a solid team who we both trust in. In hindsight, what doesn’t kill you makes you stronger and I’m glad I’ve managed to fight through adversity to create the successful business we’re known for today.” Sarah and Alan owe much of the business’s success to its cornerstone value of quality, which runs through every aspect of the operation, from food sourcing to recruitment and the premises itself. Testament to the team’s commitment to this core value is their achievement of an NFFF Quality Award. Sarah comments: “Going for an NFFF Quality Award can involve a rigorous process that goes right the way through your business, and that alone can be invaluable in helping you raise and maintain standards and avoid complacency.” Sarah and Alan have continually invested in the business, adding a 55-cover extension, a ‘Grab & Go’ kiosk and a specially-made and fitted out food production kitchen, while also focusing on staff development. “We place a

huge emphasis on recruitment and people development, focusing on attracting candidates who have the right attitude and personal qualities, rather than skills and experience,” says Alan, who is a certified business coach. “We believe we can train the right people to develop the required skills and provide them with experience, but not vice versa. We set realistic expectations from the first discussion with a recruiter, in our adverts and at interview. We want the wrong people to choose not to apply!” Staff also have the opportunity to undergo Modern Apprenticeships, NFFF courses and Pittman Management Training among other qualifications and Alan carriess out performance reviews and development planning to foster a positive culture and support personal and team gro owth. Each staff member earns the Real Living Wage as a minimum and a bonus scheme ensures they are rew warded for exceptional contribution. “Although pay is importtant, we now know that the team value personal growth and development and a safe and respectful working environment even more highly,” says Alan. The team also take part in a number of fish-and-chip psrelated industry events, reaping the benefits of the marketing and PR opportunities and the collective po ower of the industry. “Getting out into the industry is not only educational but it’s motivational, fun and inspiring,” says Sarah. “Being backed by industry bodies gives you far more leverage than any one of us could mana age on our own.”
For example, having driven innovation in gluten-free fish and chips 10 years ago – well before it was a trend – The Real Food Café has established itself as a leader in this field and holds an A-Grade as an Accredited Caterer from Coeliac UK and won two Gold Awards in 2018 in the FreeFrom Eating Out Awards. Demand for its gluten-free fish and chips continues to increase, with 2,953 portions sold last year compared to just one or two a month in 2009. Of the 533 fish and chip shops listed on Coeliac UK’s Venue Guide, The Real Food Café is one of just 34 glutenfree accredited venues, setting it apart from the rest. Continued on page 10

Differentiating themselves from their competitors has been another important part of the strategy and The Real Food Café has done an impressive job of engaging with international visitors, disabled customers and those with specialist dietary requirements. Sarah explains: “We have targeted our marketing to specialist user groups very successfully with an ‘inch wide, mile deep’ approach rather than a ‘scatter gun’ approach and in doing so we’ve maximised our return on investment.”

The Real Food Café welcomed Radio 1 DJ Greg James on the last leg of his Gregathlon for Sport Relief in March 2018. Welcoming customers with access requirements is another focus for the team and today the café has powerchair charging points, large print menus, water bowls for assistance dogs and a lowered counter area for wheelchair users, among other disabled-friendly facilities. Each of the staff have undergone disability awareness training and some will be put through basic sign language training before the end of the summer. Sarah is also working with local stakeholders to acquire the funding and land to build a Changing Places toilet in the village. “It’s my vision to make Tyndrum the most accessible destination in Scotland,” she says. “As the UK’s population continues to age, we feel there are tangible business benefits to be had from catering to customers with access needs and we want to be open for business to everyone.” And this includes international visitors, specifically the rapidly growing Chinese tourist market. To engage better with these customers, the café is having its menu translated into Mandarin. “Since 2011, there has been a 316% increase in visitor numbers from China to Scotland according to VisitScotland, and this is an opportunity we really want to tap in to,” says Sarah.
Looking to the future, Sarah and Alan have no immediate plans to retire from the business completely but are working hard to make space for their talented leadership team. With this in mind, they are exploring the possibility of opening more units and even expanding into a retail bakery operation over the next few years. “This will allow us to capitalise on our strengths and provide more opportunities for our ambitious staff to grow and develop,” says Sarah. “We anticipate this expansion could double the size of our business and team within five to seven years.” Sarah and Alan are also looking forward to pursuing more of their personal goals – from long distance triathlons to cycling tours, foodie adventures and more travelling. “We are proud to say that our turnover today is approaching £1.5 million and we look forward to growing this further as we continue to stay closely involved with the culture, innovation, marketing and strategy of the business. We look forward to a bright future at The Real Food Café and we’ll also make sure we take some time out to enjoy ourselves and reflect on our successes!” says Sarah.

CELEBRATING 50 YEARS! For most... a journey up to the North of England is not complete without a visit to Colmans of South Shields, or the newly built Colmans Seafood Temple. This month the current custodian to the famous name in South Shields, Richard Ord Senior, celebrated 50 years behind the range. As a Federation the NFFF are delighted to be able to call on Richard as a member and a former Regional Director. NFFF President, Andrew Crook had the following to say regarding Richard’s achievement and standing within the industry: “I, along with several other NFFF board members, were delighted to be able to join around 100 other industry people for a surprise party to celebrate the 50th Anniversary of Richard Ord joining the fish and chip industry.
Richard was one of the first fish and chip shops to achieve MSC accreditation. His willingness to open the doors of his shop to others is legendary, the first ever Drywite Young Friers visit was to Colman’s. He is an inspiration to all and, whilst being softly spoken, everybody listens to Richard. He is a credit to the industry and it’s an honour to know him.” ‘Richard Ord is one of the most influential innovators in the business and has been at the top of the industry for many years. BIG HEARTED FISH AND CHIP RESTAURANTEUR RECOGNISED NFFF member John Molnar – from the Cod’s Scallops in Carrington, Bramcote and Long Eaton has been recognised for his support and great work in the local community - including fundraising and supporting local groups. His achievements include raising an amazing £60,000 for Maggie’s – over the last three years – based at the City Hospital Maggie’s offers professional support to people with cancer and their loved ones. John was presented with the Special Recognition Award, sponsored by Eden PR, at the annual Nottingham Restaurant & Bar Awards - a celebration of the food and drink industry that the city and the county has to offer. The 2019 winners and nominees in 15 categories were announced at a spectacular Awards Ceremony held at Colwick Hall Hotel attended by 300 people from across the restaurant and bar industry.
“I’ve always tried to help people less fortunate, from employing ex young offenders and drug addicts to donating hot meals for the homeless. After working with Maggie’s Cancer with collection boxes, I came up with the idea of adding £1 to everyone’s bill.“ “As well as charity work our businesses are passionate about helping the environment with a bid to use less plastic and only using sustainable produce whenever possible. We have just featured in Giles Cohen’s new book Truth, Love and Clean Cutlery which highlights businesses that serve good food in an ethical and sustainable way.” Originally from Nottingham, John has been in the trade over 30 years, starting when he used to skip school to help his Dad in the kitchen at his restaurant in Derby. After catering college, he started a Youth Training Scheme at a four-star hotel in Nottingham and has travelled everywhere from Scotland to Newcastle and even Bermuda! Kathryn Greenwood, Joint Managing Director of award sponsors Eden PR who presented the accolade added: “John is a worthy winner, we had a huge number of entries for this category and there are some amazing venues across Notts who do great work in the local community. John stood out because he gets so involved personally and is a real inspiration.”
John personally undertakes challenges to raise money – he has run the Great North Run twice for Maggie’s as well as the Robin Hood Marathon. John is also in the top 5 per cent of personal fundraisers on Just Giving for his annual Robin Hood Half Marathon efforts for Maggie’s. In addition, his venues hosting events, such as the Cods Scallops host festive events for both less fortunate families as well as with Age UK – providing a free chippy lunch. Through Tasty Tuesdays he has donated food to a homeless shelter in the city. The Cods Scallops is also in the process of launching Food Waste UK where any food left overnight is advertised on an app and collected by less fortunate people. The Cods Scallops also raises money for the other charities such as Fishermen’s Mission - the only fishermen’s charity that provides emergency support alongside practical, financial, spiritual and emotional care. John comments: “It’s really important that we do our bit. We regularly support local causes, through charitable donations, and hold charity quizzes every month each for a different local cause. Since we took over the Nelson last June, we have raised £2500, and our ambition is to raise at least £10,000.

A hugely popular winner, when John was announced he received a standing ovation from those attending the awards event. His latest project is a Top Floor Development launched in November 2018 and is a unique dining concept where customers can dine on the perimeter of a professional kitchen. It’s a warehouse-style private dining room that seats up to 24 and tickets are sold on an individual basis or the whole venue can be hired exclusively for bespoke events. NATIONAL FISH AND CHIP DAY National Fish and Chip Day will be taking place on Friday 7th June and as the date gets ever-closer some exciting plans are unfolding the length and breadth of the country. Shops are already organising a host of great promotions, competitions and special offers to run in the build up to, and on the day. We’d love to talk to you about how you can get involved. Our fabulous new t-shirts, available in S, M, L and XL in red, white and blue (shown below) and caps have been selling like hot….fish and chips! Visitors to our stands at What’s Cooking and Fry It Exhibitions were buying t-shirts for all their front of house staff to wear on the day and we are looking forward to giving more shops a chance to get their hands on the limited-edition merch at V A Whitley’s Innovations 2019 show in April. These t shirts are undated so can be used again and again. This year we are very excited to announce a series of Roadshows that we are putting on around the country. Each will have a different theme and will incorporate a branded marquee in which we will be giving away fish and chips throughout the day. We will be in Scotland, working closely with Seafish Authority, to promote sustainable fishing. We are hoping to work with Chester Zoo to put out strong messages about sustainable palm oil. We would like to celebrate Brand Fish and Chips in Exmouth with this year’s Fish and Chip Award winners, Krispies and we will also be setting up in Wales and Ireland. This is an exciting new development for us and we are looking forward to shouting about National Fish and Chip Day across the nation! PAIGNTON PIER CHIPPY CO. The Journey So Far……
Phew what a year! I thought I would write about my year as I think it’s important as a newbie to share our experiences with other newbies or just anyone who may be interested! So I came into the industry with no chippy background – but a love and passion for food and business.
enter? See how far we get... if nothing else the feedback will be extremely useful! So I dutifully started my entry for the Best Newcomer, then I had doubts… how could we, with no background in the industry possibly compete with some of these fantastic shops.
The opportunity arose to convert an old Café on an iconic landmark (Paignton Pier) situated right at the entrance, as there was no other chippy on the seafront it really was a no brainer! Throwing myself well & truly into this industry I joined the NFFF – an absolute must in my eyes for anyone in the industry – newbie or not. The information, support and advice I have received is invaluable & well worth the membership. I then heard about the Quality Award – well of course I had to have one of those didn’t I? so I applied, it was quite nerve racking opening your doors to someone else to go through but I really shouldn’t have worried.
Then disaster struck – the week before our big official opening with the Mayor to coincide with National Fish & Chip Day – A massive fire gutted the place! Literally everything lay in ruins... how could we recover from this? We had just spent 200k on refurbishing it? It is no secret that the fire was caused by Batter Bits... they were not disposed of correctly at the end of the night and the result was, well, devastation.
It was a really positive experience and great to get an experienced shop owners view on the things we were doing. Our assessor was Tim Barnes who is now current National Fish & Chip Shop Of the Year winner, so he must have known his stuff! We were told that his form would then go to head office to be audited and we would be told of the decision in a couple of days! Arrggghh, not another few nerve-racking days to wait. I really wanted the Quality Award, it means an awful lot.
Ok, so, what do award winners do? Well they don’t quit, that’s one thing so we gathered the troops from around the country, (the shopfitter came down from York, electrician from Hastings) and we made a decision to try and get open for the Torbay Airshow…. Only snag was it was in 5 days’ time! The shop was in ruins and needed a complete refit- again! How the hell were we going to pull this one off? Well, working 24/7 the team of leccies, chippies (the wood working kind), cleaners and decorators
To me and the team, it is a symbol of hard work, commitment and best practice in the industry. The call came through to say we had got it and I actually cried! To be given the only Quality Award in all of Torbay and only 1 of 6 in all of Devon was amazing! When I looked up the others I was in very good company! All award winners in the nationals... Mmm, the Nationals - maybe I should

made it happen! Yes, we got open! I decided if we could do this then we could do anything! I had better complete that application and see where we got to…The team and I looked at what we had achieved together, had listened and learnt from people within the industry who have been fantastic and are becoming great friends. Gaining the Quality Award certainly gave us the confidence to fill out that application. I attended the NFFF Ball last September, and met some fabulous people, and got to put some faces to names I had been chatting too over the past few months, Lesley Graves being the main one – what a credit to the industry and NFFF! what a fantastic industry, I really didn’t know there was so much help and support out there…or it could be so much fun! When I arrived home I received an email saying we had been shortlisted in the top 10 of the Best Newcomer Award at the National Fish and Chip Awards! I was absolutely stunned – wow! It was amazing to think after all we had been through we had got Final 10! All the team were thrilled, they were so proud! I had posters printed and it was splattered all over the shop – I even had a pavement sign made for the top of the steps and pride of place in the front of the pier! We had also entered the Local Awards – Herald Express Tourism & Hospitality Awards – this also involves a mystery shop. We were shortlisted to the final 4! There was a big event with a black tie ball where the announcements were made. As it was local we decided to thank the team by getting a table and treating them to a night out, and we even sponsored one of the other categories. We got Bronze! Fantastic!
had some fantastic advice for us which I have started to implement already! Finally the awards arrived! What a day – the crème de la crème of the chippy industry all under one roof! Lots of pics – lovely food and fantastic company! It was such an honour to be even at the awards, I guess it felt like being at the BAFTAs! Josette and the team from Weston Grove took 1st and well deserved too; it couldn’t have gone to a nicer person! It was also a proud moment when Tim & Kelly won 1st place with Krispies, they are our ‘neighbours’ and have become friends over the months. That’s the thing about this industry – I have never been involved with an industry which is so friendly and ready to help each other out! So, to all you newbies, or anyone who have never got involved with the industry much, if you are wondering whether you should enter the awards, I would say GO FOR IT! All in all this year has been brilliant – we have gone from strength to strength, we have now got MSC certification, we bought Tim & Kelly’s 2 pan range so we can do Gluten Free every day, we had Craig Maw from the Award Winning Kingfisher in to do in-shop training via the NFFF the other week and he said to me, ‘look at you Lorraine… you’re sounding like a proper fish & chip person now!’ that’s says it all, and do you know what? I feel like one!

Myself and the whole team were so excited, we had bronze in the locals and shortlisted to final 10 for the nationals! It didn’t get much better than this – but then we got final 3!!!! Now this is when I cried again! Wow – what ever happens on the day (I never expected to get a win, honestly) the least we could say is that we were TOP 3 BEST NEWCOMER IN THE COUNTRY!!!! Another brilliant twist on this journey is Seafish took us on an all-expenses paid trip to Billingsgate where we had a fabulous time and I met Nikki the organiser and the other finalists – Josette and Graham in my category, both great people, we were also visited by Frymax who sponsor the awards – we felt very special with all this attention! “My wife and her family have been involved with the fish and chip industry going back four generations. Initially having a financial career, I joined the company after feeling the need for a change”, explains Graeme. “We opened for business in February 1998 after converting Market Plaice into a fish and chip shop, initially just renting the ground floor unit before buying the whole unit from the landlord in 2000.” He added; “although the property is small, it proved to be a busy little shop. We expanded the business in 2013 and opened another shop in Stanhope in Weardale. We had the shop for 5 years and I was pretty much running them both. In the end this was becoming too much so we decided to sell the Stanhope shop and invest the money into our original shop, hence the full refit. The main aim for our shop fit was to create a space and a look that would be somewhere that we would want to go

and eat at ourselves. Utilising the space we have we converted the first floor into a 28 seater restaurant. The refurbishment took 9 weeks in total. Luckily we opened the takeaway a week early and were serving food the Thursday before Good Friday. The refit has generated a lot of new business, which in turn has brought us a new, younger clientele. We are now looking to expand our menu and offer more to our new customer.” Do you have any advice for anyone thinking about joining the industry Expect to be working very long hours and get used to not having many days off. Our ‘closed’ day is the traditional Monday but that’s cash and carry day. It’s red hot in the summer and freezing in the winter but the benefits far out way any negatives. To be self-employed and get such great feedback from our customers... can’t be beaten.

LOCAL CHILDREN SEE THE POWER OF POTATOES British Science Week has seen people across the country celebrating the best of British science, technology, engineering and maths and what better way to enjoy science than at your local chippy. As part of the celebrations Fish and Chips at Weston Grove held a fun Science session for a local school in the area. The pupils of Upton, WestLea Primary School learnt about the power of potatoes through fun activities which included powering a lightbulb using a potato something that Josette and Richard Foster the owners of Fish and Chips at Weston Grove are passionate about. Potatoes are really underrated and we wanted to show the local children the real power of the mighty potato and to encourage the children to think about the science that can be found in a potato, such as how they grow, the wide range of varieties, cooking methods, the nutrients and their uses. Richard Foster who was a potato merchant for over 30 years before he took over the award winning shop in October 2016 said: “ British Science Week provides an excellent opportunity for businesses to get involved and show people the working, everyday science that surrounds us all.” His wife Josette added:”By showing children the science around us it generates an interest and opens their minds to the potential job opportunities in the science sector available to them in the future. The Deputy Headteacher, Vicky Field said: “The children had a fantastic time, what a great opportunity to work with our local Fish and Chip shop. The children all learnt a lot about potatoes and enjoyed creating light using potatoes as a power source. Thank you for a fantastic opportunity.”

One Pupil commented:I really enjoyed the experiment using the sugar test strips, as I didn’t know it contains so much natural sugar. Award winning Fish and Chips at Weston Grove has been serving fresh fish and chips to the local community and visitors to Chester since October 2016. They love working with the local community on projects to raise awareness such as, plastic pollution of our oceans and sustainability of our fish. The shop is the first in Chester to gain the prestigious MSC accreditation for the fish they use, demonstrating that they only use sustainable stock, with full traceability. What would you do with £500,000?
Firstly, pay off the mortgage and then perhaps look at buying another fish and chip shop! We’ve had such a great time at Shap Chippy and our customers travel from far and wide to visit us so we would open another shop nearby I think, and if possible a holiday too!

Describe your perfect weekend.
When not at work, which won’t be for a while! It would be a bit of a late start with a nice lie in, a good breakfast to get the day going, spending time together and then taking the dogs out exploring somewhere new in Cumbria.

Do you prefer cod or haddock?
Really would say Cod as that’s pretty much all we sell in our shop, and is what all of our customers expect in our local area. It’s so nice to cook and tastes great!
9. What is your first memory of fish and chips? 2. What is your dream holiday destination in the UK, and also abroad? In the UK would be Cumbria, it’s gorgeous up here and whenever we have friends visit, they comment it’s like being in another country with the huge rolling hills and beautiful lakes. We would love to travel around China and Japan, to see the great wall of China, try all their amazing foods and experience their culture.
3. What is your favourite sport, and which is your least favourite? Honestly, we’re not into sports at all. We watch the Olympics and cheer on Team GB!
4. If you could be granted one superhero power, what would it be and why? Teleportation! You could go anywhere at any time you wanted. That would be amazing.
5. Which three people, dead or alive, would comprise your perfect dinner date? First, Joan Rivers. What an icon, legend and comedian. Second, Richard Branson. Get some tips from an absolutely amazing businessman. Lastly, JK Rowling. What an inspirational woman. She’s literally gone from rock bottom to a worldwide phenomenon through dedication and sheer grit.

10. What is your prediction for the fish and potato industry? I would expect more people to move to prepared chips. We moved over to these and it’s been the best decision we have made so far, besides buying this awesome business. I think both fish and potato prices will fluctuate but will remain on the increase, especially in our current financial climate. I would love to see more fish and chip shops join the NFFF and as an industry be more consistent across the board with sizes, standards and prices. However Fish and Chips will remain the UKs most beloved takeaway in our eyes.
