PRESIDENT’S NOTES Well we are almost halfway through the calendar year… and on the home stretch when it comes to the potato season. As you will know prices have been strong, better weather at the end of autumn last year helped get yields up a bit and helped limit the prices. Let’s hope this year the weather is a bit kinder to us. It was great to see so many shops taking part in National Fish and Chip Day again this year. This is a great initiative and a lot of work is put in behind the scenes to organise this event by NEODA. It really is a great day, a celebration of our fantastic iconic dish and above all it raises the profile of fish and chips. I attended the first ever Fish and Ships Festival in Whitby. This event was organised by Discover Yorkshire and several of the local fish and chip shops, fishermen and related businesses. The two- day festival comprised of cookery demonstrations by local chefs and restaurant owners, fish filleting demonstrations, fishermen demonstrating net making and even an angling competition. There were also some demonstrations by celebrity chefs Brian Turner and Jean Christophe Novelli. This was a fantastic event and I am sure it will grow year on year. Well done to all involved in organising it and to Seafish for supporting it, great advertising for brand fish and chips! As we go into the summer period it highlights one of the big issues we have in the industry… skills shortage. We seem to struggle to attract people into fish and chips and I think seasonal shops in tourist areas find it harder than most. We have all worked hard to smarten up the image of the industry, investing in our shops and professionalising our operations which has helped but we need be able to demonstrate to young people that fish and chips can be a great career and can be a fantastic place to gain experience which can lead onto other jobs in catering and hospitality. The NFFF’s work on T-Levels could hopefully help with this in the future. Here at the NFFF we are once again busy planning our annual event…the NFFF Ball. Tickets are available now and we would love to see you there. Look out for information further on in this issue.

NFFF QUALITY AWARD PORTAL We’ve gone from being a good to now being a great! Written by Ted Cupples, Molloy’s Fish and Chips Before applying for the Quality Award, I thought we had a great shop, so when we failed first time around, after our original inspection, it was a timely wake up call. I then realised that a lot of things we took for granted just weren’t good enough, especially if we wanted to be amongst the elite fish and chip shops who had achieved the award before us. I am especially grateful to Alan for his robustness and integrity when carrying out the assessment. Having been initially trained by Alan at the NFFF Training Hub in Northern Ireland some years ago, and being fully aware of Alan’s own standards in his shop, the award means a lot to us, knowing we were good enough to get it judged by him. Going for the award, failing, making the improvements and then achieving it, has been one of the most important and beneficial things we have done for our business. We’ve gone from being a good shop to now actually being a great shop. Even staff morale has lifted, with staff themselves proudly telling others the difference the award has made. We’ve also had so much support and good wishes from customers, which of course is also good for business. I just wanted to say thank you to all the staff at the NFFF for helping me prepare for the QA and of course the excellent press release. The press release itself brought a nice boost to our turnover this week and hopefully this will continue as the summer arrives. I would highly recommend the QA to any fish and chip shop who want to raise their game, their profile and their turnover.

NFFF AGM – SUNDAY 29TH SEPTEMBER 2019 Taking place at the Crowne Plaza, Stephenson Quarter, Forth Street, Newcastle Upon Tyne, NE1 3SA, the AGM offers the opportunity for members to vote on decisions concerning the NFFF. Registration for the meeting will commence at 2.00pm, where delegate packs containing voting cards and any relevant paperwork will be issued to those attending. The meeting will commence at 2.30pm. Refreshments will be available. The first AGM mailing will be circulated to members in early July. This will contain information about the AGM including further details on those who are standing for the positions of Officials and Regional Directors. Nomination forms will be enclosed which should be completed and returned to Head Office to indicate who you wish to represent the NFFF. You will also receive a delegate form which should be completed and returned to Head Office so the office can prepare a delegate pack for you.

The NFFF Board consists of: • Three Officials; National President, Vice President and Treasurer. • Four representatives for England, and one each for Northern Ireland, Scotland and Wales. Andrew has been involved in the Fish and Chip Industry for 20 over years and has owned several shops in the North West of England. His involvement with the NFFF spans some ten years now, firstly becoming Area 2 President and then taking a place on the Board. In 2011 he became NFFF Treasurer, a position he held for five years before moving on to become Vice President. In 2017 he was elected as National President.

Craig managed high volume restaurants in Sheffield before he entered into the Fish & Chip industry in 1998 to develop and operate a small group of fish & chips shops. He has owned Kingfisher Fish & Chips since September 2012. Craig is Chairman of the NFFF associate members meetings.

Alan founded Pit-Stop in Kilkeel 28 years ago and has been a member of the NFFF for the past 18 years. He has been the NFFF Regional Director for Northern Ireland for the past 7 years and has held the position of NFFF Treasurer for the past 2 years.

NFFF AGM – SUNDAY 29TH SEPTEMBER 2019 Regional Directors for England: Craig Buckley has indicated his willingness to re-stand for this position. Craig has 12 years’ experience of owning his own shop. Craig won the Drywite Young Fish Frier of the Year Competition in 2011 and this was followed by him becoming involved with the NFFF as a guest frier in the training academy. Craig went on to become Head of Training and he then joined the ranks as a Regional Director. Caroline Murphy has indicated her willingness to re-stand for this position. Caroline has been involved in every aspect of the fish and chip trade during more than 30 years in the industry, helping her father run the family’s original shop at just 12-yearsold. During her time studying for an Economics and Accountancy Degree at Newcastle University, she was still working part time to help make Wetherby Whaler a success. Since acquiring the original Wetherby Whaler in 1989, she has worked alongside her family to grow the Group to 6 shops.

Regional Directors for Scotland: Unfortunately, due to business commitments, Colin Cromar is unable to re-stand for the position of Regional Director for Scotland. This position is available for nominations. Please remember, if you are nominating someone, make sure they are happy to stand.

Regional Director for Wales: John Penaluna has indicated his willingness to re-stand for this position. As part owner of Penalunas in Hirwaun, John works part time now that he has retired from the building industry after 44 years. Penalunas were Wales Regional Winners in The National Fish & Chip Awards Independent Fish and Chip Shop 2018 & 2015. John assisted in Penalunas achievement of winning Staff Development and Training. Penalunas is a Quality Award holding Shop and also MSC CoC certified.

Regional Director for Northern Ireland: Together with his role of Treasurer, Alan Hanna has indicated his willingness to re-stand for this position.

Lesley Graves has indicated her willingness to re-stand for this position. Lesley is co-owner of Burton Road Chippy which has received numerous awards under her ownership. She has been in the fish and chip industry for over 30 years. Lesley has opened and run several Fish and Chip shops in and around Lincoln of various sizes and states of repair.

David Miller has indicated his willingness to re-stand for this position. David has been involved in the Fish and Chip industry and has managed and run his family shop Millers Fish & Chips, Haxby, Near York, for over 30 years. He has been a member of the NFFF for 33 years and has held the Quality Award continuously since its beginning in 1997. He has been a trainer at the NFFF training academy for over 3 years and in 2018 I was elected to the NFFF board as a Regional Director.

FISH AND SHIPS! Fish and Ships were on the menu in Whitby as the seaside town hosted its first festival to celebrate its maritime heritage.

The two-day event in May took place all across the town and saw live cookery demonstrations, workshops, street entertainment and lots more. The festival was organised by Discover Yorkshire Coast and a number of local businesses including NFFF members Quayside, in association with Seafish. The Festival Kitchen & Fish Market The festival kitchen was set up to inspire and showcase the local produce on offer from Whitby together to help encourage more fish consumption within our daily lives. The chefs demonstrated how to prepare and cook the daily NFFF President Andrew Crook said When people think of fish and chips they instantly think of Whitby as it’s spiritual home so I couldn’t think of a better place to host the inaugural Fish and Ships Festival. It was great to see the whole town getting involved, from local residents through to local businesses which included the many fish and chip shops who serve the town 7 days a week. The festival will no doubt grow year on year and the NFFF will look forward to supporting the event.

Reviews From the building of its boats to its multi award-winning fish restaurants, Whitby is one of the few places left in Britain where you can still experience the seafarer’s way of life from sea to shore, as it’s been for hundreds of years,” explains Janet Deacon, the festival organiser and Tourism and Corporate marketing manager for Scarborough Borough Council and area director for Welcome To Yorkshire. “Whitby was once an international maritime centre and visitors will be able to explore first-hand how today’s seafarers are building on tradition to put top quality seafood on Britain’s plates, in their own unique and sustainable way. Across the weekend, there’s also plenty of top-notch entertainment, including live music, madcap street theatre, inspired artworks, and a grand firework display.

20 YEARS AND COUNTING! Quayside, owned by Fusco’s of Whitby, marked 20 years in business at the Fish and Ships festival. To celebrate the shop set up a special ‘exhibition-style’ display showcasing the highlights of its past two decades in its restaurant on Pier Road. Quayside also sponsored the festival’s angling competition and donated a £1,000 prize which was awarded to the person that landed the heaviest single fish during a tense six hour open event. The winner, Malc Skelton, was presented the prize fund by special guest and Celebrity Chef Jean-Christophe Novelli,

customers and community, as way of thanks for their loyalty over the years. Sponsoring the angling festival and offering a fun competition for customers to take part in as a family was the ideal way for us to do just that.” The company, which marked 50 years in business in May 2018, is managed by two generations of the Fusco family, with Carol working alongside her three sons, Adrian, Stuart and Raymond and daughter, Maria.

Stuart adds: “As a family business we feel it is important to give something back to our suppliers, partners,

SUSTAINABILITY ON THE MENU AT FISH AND SHIPS When you think of Whitby, you might think of the 199 steps that lead up to the infamous Whitby Abbey, or even the Whitby Whale Bones on the West cliff. Perhaps you’ll remember the dainty cobbled streets and its magnificent maritime culture, with charming boats docked up in the harbour. One thing you’ll certainly never forget in Whitby is the fish and chip that you’ll be sure to have. Whitby has been famous for its delicious fish and chips for many years now, with some claiming that they’re the best fish and chips in England. To celebrate everything that’s special about the Yorkshire Coast’s magnificent maritime culture (including the fish and chips) Whitby hosted its first ever Fish and Ships festival in May. Yes, you heard it right! Not just fish and chips, but fish and ships. Throughout the town, live entertainment and street theatre were on show and visitors were able to enjoy cooking demonstrations with chefs while tucking into delicious food. A key theme underlying the weekend was sustainability. After all, without fish there’s no fish and chips. During the fish and ships festival, Fish Box in Whitby teamed up with the Marine Stewardship Council to celebrate all things sustainability. Fish Box who are MSC certified, is part of the Fusco family business, an ‘express style’ fish and chip shop, with takeaway seating inside and out. It feels very appropriate to celebrate the two key things that put Whitby on the historical map.” Fish Box decided to get involved in the festival in their own way, championing MSC and engaging with the Fish Box customers on where their fish supper really comes from. A display was put up inside the shop with information, posters and leaflets about the work of the MSC. Goodie bags were given to those attending the workshop and a children’s ship themed competition was running in-house for the children. Adrian said: “In a festival that celebrates fishing, it feels only right that we celebrate the future of the industry and

for us, the focus has to be sustainability. We don’t offer gluten free every day, we still stick to running just one gluten free day a week, but on this day we offer the full menu as gluten free. In the past products such as gluten free batter weren’t the best, but this is something which has now improved down to the hard work of the suppliers such as Ceres. I personally prefer our gluten free fish and chips compared to our regular fish and chips, and would move on to the batter permanently if the costings were more affordable. However, I do understand the costings incurred in producing this batter, and wholly support this. CELEBRATE NATIONAL FISH AND CHIP DAY

What an absolutely amazing celebration of the nation’s favourite dish on Friday 7th June! Where do we start?! What an absolutely amazing celebration of the nation’s favourite dish on Friday 7th June! Shops the length and breadth of the country joined in by decorating their shops, some ran competitions and special offers, while others just had lots of fun in their shops on the day as existing and new customers poured through their doors after hearing or seeing or reading something about National Fish and Chip Day. Thank you to each and every shop that joined in the celebrations – the purpose of National Fish and Chip Day is to shout about brand fish and chips… and we certainly did that! NEODA organised 7 Roadshows across the country in London, Cardiff, Bournemouth, Chester, Belfast, Aberdeen and Exmouth. Huge thanks to Kingfisher on the Go, Penalunas, Bennett’s, Fish and Chips @ Weston Grove, The Dolphin Takeaway, Pitstop Fast Food, The Bay and Krispies for serving up steaming hot fish and chips despite some rather lively weather in places! There was some excellent media coverage including an appearance on ITV local news from Krispies. Thanks must also go to Seafish and the suppliers who provided finance, product, manpower and enthusiasm – FASFA, Middleton Foods, VA Whitley, Henry Colbeck, Drywite, Kerry, Friars Pride, T Quality, AAK, Frymax, KFE, Chippy Chat, Duncrue, JJ Foodservice, Harrisons, Fry and BD Signs. The Roadshows were a huge success and we hope to run more of them in 2020. Media coverage got off to a terrific start with NFFF President, Andrew Crook delivering fish and chips to the Zoe Ball Breakfast Show on Radio 2 – Andrew was interviewed alongside the Friends Round Friday guests, including Liam Gallagher and Craig David who all tucked in to fish and chips!

The National Fish and Chip Day hashtag started working its way up the rankings and was Number 1 earlier than previous years and stayed there until early evening – something we haven’t seen before. There was an incredible response to the day on all social media streams with thousands of photos appearing on Instagram and likes and shares and conversations on Facebook. But on Twitter, in particular, we noticed a marked change with many companies who have no association with fish and chips joining in – #nationalfishandchipday was THE hashtag get involved with! In London, Kingfisher on the Go were giving away free fish and chips to commuters and tourists from 8am. They received a visit from London Cabbie, Jamie Brown, who was the face of National Fish and Chip Day 2017 and was the centre of the social media search to find him earlier in the year! When they’d finished serving, they hot-footed it over to BBC Broadcasting House to prepare for their national TV appearance on The One Show. Craig and Nikki did the industry proud. There was more coverage on Saturday morning with a lovely film piece on Saturday Kitchen. Thanks to Harbourside in Plymouth for getting involved with this. Fish and Chips at Weston Grove is a traditional fish and chip shop with a forward looking approach to business. What would you do with £500,000?

Describe your perfect weekend.

I wouldn’t work as hard and would like to tick off the places on my bucket list.

Perfect weekend would be sunshine, a nice walk with child and partner, then food and drinks with friends.

2. What is your dream holiday destination in the UK, and also abroad?

My dream holiday in the U.K. would have to be the Lake District. The people are friendly and the views are beautiful. Abroad would have to be the island of Kuredu in the Maldives - simply paradise.

What is your favourite drink?

My favourite drink is a cask beer, being weaned on Tetley’s. But do enjoy a refreshing cider or lager when the temperature is warm or after a long hot shift.

Do you prefer cod or haddock?

Haddock is my choice, it’s in the taste.

9. What is your first memory of fish and chips? My first memory was ‘laying in’ my first fish at the age of 13 (40 years ago!!) I was very nervous, but then, it just felt right, I loved it. It was me, the downside to that was after frying a busy Friday tea your dad doesn’t wash the fish trays! All five were in the sink just waiting for me.

3. What is your favourite sport, and which is your least favourite? My favourite sport has to be cricket, having my first game at the age of 13 I was hooked, my playing days are over now but I’m a level 2 coach and put a bit back into my childhood club Shadwell cc by coaching the under 9s and under 11s. Least favourite sport would be basketball.

4. If you could be granted one superhero power, what would it be and why? My superhero power would have to be to fly, what a rush that would be.

5. Which three people, dead or alive, would comprise your perfect dinner date? My three dinner date friends would have to be Winston Churchill, Eric Morecambe and Richard Branson. What a combination that would be.
