Firstly, it is with regret that the Board have recently had to accept the resignation of Regional Director for Scotland, Darren Boothroyd. Darren has now left the trade as a shop owner but is staying in the industry.

As one door shuts another door opens, and we are delighted to welcome Colin Cromar to the Board as newly appointed Regional Director for Scotland. Colin has great industry knowledge and has achieved a lot in his time in the industry. I’m sure you, the NFFF member, will join me in welcoming Colin to the Board and look forward to seeing him at the various functions. This month also saw the NFFF travel to Peterborough for the excellent Friars Pride FRY IT exhibition. It was a pleasure, as usual, to speak to so many fellow friers with the feeling captured being one of positivity around our industry.

I also visited the House of Lords as part of my involvement with the British Takeaway Campaign alongside Just Eats Head of Communications, Joanna De Koning, and Newington’s Steven Grainger, to meet with Baroness Garden of Frognal and Lord Addington. The meeting was organised to learn if the food takeaway sector has the support it needs to continue to deliver jobs and growth, and its importance to social and cultural benefits. We are working hard on providing an apprenticeship and shaping the Catering and Hospitality T-level to include the fish and chip sectors requirements. Members will be kept up to date with all future developments.

MEMBERSHIP PORTAL New NFFF Regional Director for Scotland Changes to General Data Protection Regulations (GDPR)

The NFFF are delighted to announce that Colin Cromar of The Fish Hoose has been co-opted onto the NFFF Board as Regional Director for Scotland. Colin, owner of The Fish Hoose, became involved with the industry in 1984 when he started a summer job in Anstruther. After 20 years working alongside, and becoming partner with Ian and Ann Whyte, the original owners of the world famous Anstruther Fish Bar, he then owned the Frying Scotsman in Kinghorn before moving to Leith to open Tail End with a business partner. Colin then went on to open the award winning Cromars in St Andrews alongside his business partner, they secured the regional title for Scotland in the Independent Takeaway category at the 2016 National Fish and Chip awards. Colin and his wife Trish Cromar opened The Fish Hoose in 2017 and have since gained MSC certification together with achieving the NFFF Quality Award.

From the 25th May 2018 the rules on General Data Protection Regulation will be changing. How will this affect you? Any company, big or small, will have to comply with new regulations regarding the secure collection, storage and usage of personal information. Working with NFFF Associate Members Morrish Solicitors and ARAG (the FREE legal helpline which comes with your membership) we will be sending our members an e-newsletter explaining further.

TRAINING ACADEMY PORTAL Don’t be satisfied standing still on your parade… Down in a Bingley suburb of Cottingley, on a busy shopping parade former NFFF student Rob Starbuck has started his first venture into the world of fish and chips, Parade Fisheries. As a newcomer to the fish and chip industry, Rob viewed attending the NFFF Three-Day Training Course as the first logical step in setting up his shop. Rob said “I took over a shop which had a terrible reputation and had been closed for six months. I could see the potential and the footfall on the parade. I have followed the procedures I was given when on the course and the results speak for themselves. More Fish & Chip shops Are Turning to Vito For Their Oil Management The VITO oil filtration system works by maintaining & prolonging the life of your oil to the highest standard by filtering the oil at cooking temperature when the oil is at its thinnest. QUALITY AWARD PORTAL Q the catch up with Katie’s Traditional Fish and Chips – A year on This time last year the start of the next generation of the Barker family in the fish and chip industry had begun, Katie Barker was embarking on her own shop Katie’s Traditional Fish and Chips and one of her first objects was to gain the NFFF Quality Award. The shop unduly passed and a year on from our feature on Katies’s Traditional Fish and Chips we have called back to see how the business adventure is going and how the NFFF Quality Award has assisted.

YOUR NFFF

Q) You’re just over your first year within your shop, how have you found it? I’ve really enjoyed it! We’ve learnt a lot more about the shop and its location so have been able to adapt to the busy and quieter times. It’s been a lot of hard work but it’s great to look back and be able to see the difference that all the changes have made. We now have a happier workforce, a more functional and attractive shop and have significantly increased turnover. It’s been lovely to see customers coming back week after week and build relationships in the local area.

Q) What type or initiatives/ marketing have you undertaken? Last Christmas we started to produce Christmas Tree shaped chips! With this we promote the idea via our social media channels and it was an instant hit. We would place a tree in certain meals and if the customer found one we asked them to ‘check in’ on Facebook at the shop with a picture or post the picture on our page to win! This Easter are now running Easter Bunnies chips! Q) Any changes you would of made if you restarting again today? We are all very happy with how the shop has gone and make it a rule to improve something (even if it’s something small!) every single day. This has meant lots has changed and quite quickly. If I was to restart again today, I would get involved with more awards than we have as I know how much of a positive impact it can have on trade and also on our staff. Its brilliant motivation to see the hard work that we all do is recognised and helps to keep standards consistently high.

Q) What made you decide to apply for the NFFF Quality Award? My family had been holders of the award at our previous shop and with coming into the industry on my own I saw it as the benchmark to how I should set up my shop alongside it I had seen how it had positively affected trade in the past. Q) How did you find the assessment process on the day? It was helpful, the check list sent out prior to assessment flagged up one or two small issues prior to the assessment and my EHO inspections which followed up shortly after. Q) Since achieving the NFFF Quality Award how has your business benefited? We can now confidently say we are now an award winning business, we had lots of customers coming in saying they saw the news of our success in the local paper and via the promotions which we have run about gaining the award.

I became involved with my local football team, Fleetwood Town, and today the team is doing extremely well and are in League 1, but my involvement started when they were in the non-league.

After I finalised the purchase the next step towards my career in the industry was to attend an NFFF Three Day Course, in any industry or journey you wish to travel undertaking training is essential. One thing which I am seeing more and more of is people within our trade asking for advice for some of the simplest tasks, which may be

...PIE MANUFACTURER, QUESTIONS ANSWERED BY PUKKA PIES Q) How do you ensure you provide a consistent product? A. At Pukka Pies we take the greatest of care in making great tasting and great quality pies. For us, providing consistent products starts with choosing the right suppliers that meet our exacting and high standards of food quality and safety. During the baking process we closely monitor our products all the way from inspecting beef and tasting sauces to measuring pastry lift and even X-raying our pies. Ultimately, at Pukka, it’s our mission to ensure that all our customers get the best tasting, best quality Pukka Pies and that we continue to bring pie shaped hearty comfort and happiness to a nation of pie lovers.

Q) With traceability being important for a fish and chip shop to showcase where all our products come from, is this available from a pie manufacture to a shop?

A. Our ability at Pukka Pies to trace product is tested via a 3rd party auditor called BRC, and we are very proud to have recently been awarded the top AA rating which means that we have excellent ability to trace our product. In fact, we can tell exactly which farms our meat have come from for every single pie that we sell.

Q) From when the first Pukka Pie was created, how much has the recipe changed to the modern day pie? A. As an independent family business we value our heritage and history which is why

our recipes have changed very little over the years. As an example, our recipe for our bestselling Chicken & Mushroom is very much based on the original recipe created by Valerie Storer in 1964.

Q) What is the decision process of creating a new pie, having seen that you have just launched a Veggie Tikka Masala pie? A. We have a dedicated innovation and marketing team that are looking at loads of food trends and consumer needs to influence our pie developments. In our innovation kitchen our Product Development team create new recipes based on these trends and needs which we then test in front of consumers to get their feedback. We’ve had some fantastic response on our recent launch of Veggie Tikka Masala, being a flavour of choice not only for vegetarians but also for our meat eaters and are now excited to work on what’s next.

Q) In my shop we saw an increase in our pie sales during British Pie Week, how was it from Pukka point of view? A. This Pie Week we launched a nationwide poll on pie-week.com to settle the much debated topic – whether Brits prefer their pie with mash or chips. In an incredibly close result, the final poll showed chips only just pip mash to the post, with 56% of pie eating voters naming it their accompaniment of choice. With over 10,000 people voting in the online poll, it’s clear pie truly is a British favourite! Our campaign’s aim was to amplify the UK’s love of Pukka Pies even further – and we’re thrilled to say we managed to do just that. With sales of 1.3 million Pukka Pies during British Pie Week, it’s evident that our Great Pie Debate had a huge influence on pastry fans across the nation

work with many other different organisations and as we get more effective at what we do, the workload seems to increase. We are getting increasingly involved with government departments to help keep legislation sensible. In the early part of the week we often conduct Skype meetings at 9am for the subcommittees we now have to help run the NFFF. These meetings are usually monthly and are kept quite short to keep them productive. By using technology it not only reduces the cost for holding meetings but also lessens the impact it has on the attendees own businesses. 10.30 – 13.30 I then go to my day job, the majority of the board have their own fish and chip shops to run, it helps ensure we are current and that we understand pressure the industry faces as we face them ourselves. Between 14.00 and 15.30 I usually spend time catching up on office work for both the NFFF and my own shop. There is always something to do when you run a business as you know!

I have to say that the role I perform for the NFFF does mean that no two days are the same. As a board member you need to have great depth of knowledge on almost every subject that could have an impact on the fish and chip industry, and quite often we have to deal with the media. It is important we know what we are talking about so we represent the industry to the best of our ability. y My day usually starts at aro ound 7am by checking if any news storiess have broken over night. The NFFF usually getts contacted to contribute to stories, or in m many cases once we have explained the factss, stories never make it to publication, but on o occasion there are stories that by pass us. I also usually check social media to see w what’s going on out there. At 8.30 I usually have a catcch up with Karen in the Office over the phone. The NFFF iss a busy place as the organisation has many different arms, alll of which need managing. W We

16.00 until 21.00 I am back in the shop most days. 21.00 its usually wine o’clock and quite often there are a few messages flying around with industry friends and colleague. CHOOSING A FRYING RANGE

Then you move on to the MANUFACTURER, who should I choose and why

Having bought many frying ranges in my time, yes, I can advise, can’t decide for you but can certainly give you a fair few pointers to get you there.

• Is the design of the range what you would like to see in your shop?

• How busy is my shop? Could my shop get busier? • How many pans do I need, frying pans and chip pans? • Do I have the gas supply or need to stick to electric? • Do I prefer to cook my chips in a pan or in baskets? • For cooking my chips, do I want timers (great for consistency) • Having I considered a gluten free pan? • Would I like to include a grill for fish or burgers etc (great idea under the same extraction)? • Do I need shelves within my design for keeping flour and utensils etc?

• How many hot boxes do I need?

In our business choosing a frying range can be a daunting challenge. What if I spend all that money and get it wrong. Which one should I choose? How many pans do I need? Do I need baskets, a grill? Questions, Questions, Questions!!!

• First, they need to be able to supply you with what you want? (checklist above)

• What guarantees do they offer on the range? In our industry we get very annoyed because a pan bursts. Unfortunately, because we work these poor little devils to the bone, sometimes for more than 12 hours every single day, this may occur. You need to know, firstly how long a pan is guaranteed for and more importantly what is the cost of a replacement pan. • You need to know what the service plan for the range is and what sort of service is on offer in your area? This is very important because no point committing to a company who have an engineer based 400 miles away. • Speak to fellow operators regarding experiences with

manufacturers. We now have quite a few social media networks on the go where fellow operators will freely give you advice and experiences. This can be very useful. Finally comes the most important part. How much? Or” foo muckle much” as we say up here in Scotland. Of course, the price is very important, and you should ensure you are getting the best price possible. Remember, that range needs to fit your criteria, you need to be confident that the backup service will meet your needs. One last point to consider is that cheapest is not always the best, neither is the dearest perhaps necessary. BBC DJ GREG JAMES MAKES A THREE PEAKS PIT STOP AT TOP HIGHLAND FISH AND CHIP SHOP

As part of his Sport Relief Three Peaks Challenge BBC Radio 1 presenter Greg James yesterday made a pit stop at The Real Food Café, Tyndrum, Stirlingshire to refuel on their award winning fish and chips. The broadcaster, who is undertaking the challenge affectionately known as the #Gregathlon for Sport Relief, had to abandon his previous attempt at the end of February as the country suffered the extreme weather conditions of the Beast from the East. However James vowed he would complete the challenge, and on Thursday cycled from Abington to Fort William ready to scale Ben Nevis on Friday 15th March.

The BBC’s broadcast team was stationed en-route at The Real Food Café, a popular refuelling point, on the A82, for participants of the Three Peaks Challenge and welcomed him to the café around teatime along with a jubilant crowd of local supporters. The DJ and his cycling team sat down to enjoy one of the café’s renowned fish suppers before speaking to some of the supporters who had turned out, as well as café owner Sarah Heward. Sarah said of the visit: “The café team has been following Greg’s journey since he started at the end of February and were sorry to hear that the weather had seemingly put a kibosh on his attempt. We were therefore delighted to hear that Greg will be completing the

challenge, but also that he was stopping by the café on his way to Fort William. The café is always a popular re-fuelling destination for people taking the Three Peaks Challenge so we are very pleased that he decided to join us too. We do a lot of fundraising ourselves so it’s been wonderful to be involved with the Sport Relief event. The community always backs us with our charitable endeavours, and I was really pleased to see that a large number of them came out to send Greg on the next leg of his journey.” Radio 1 DJ Greg James gave himself an additional obstacle for his Sport Relief challenge, cycling the 462 mile route between the mountains, which ascend over a total of 3,000 feet between them. The #Gregathlon took five nonconsecutive days to complete and has raised over £800k for Sport Relief so far.

Hi, My name is Ian Robson. I own the Magpie Cafe in Whitby. I have 2 Kiremko frying ranges and 1 Martyn Edwards Omega range. I fry in beef dripping but

My first job in the morning is to see that the tanks are cleaned an the filters changed, I know then that I am set up for the day. Top Tips from the Fryers Fresh Crisp Days of Spring As the fresh shoots of spring emerge, and our customers brave the evening air to come and buy their favourite take away, it’s a good time to think of ways you can help your food quality and your pocket. At Frymax, we want to help wherever we can, so why not check through this list of tips from the Frymax fryers and see how you can make the most of your oil, and also help you save costs.

Keeping it fresh… If Spring makes you think of spring cleaning, that’s also something you can do to help your oil last longer. No customer likes to see specs of dark or blackened crumbs coating their food. But it doesn’t have to get to that stage before particles of older food can start having a negative effect on your oil and your fried food flavour and quality. If you have an inbuilt filter system on your fryers, make sure it is used frequently and always, but safely, filter your oil when shutting down. Every time you fry a batch of food, especially anything sweet or salty like onion rings or battered items, be very careful to remove all possible crumbs, as these rapidly increase the rate your oil goes off. A good skimming tool and instructions to all your staff to use it often can really help extend the life and quality of your oil.

Keeping it clean... But also be wary when you are doing a full clean down. After cleaning fryers with detergent or degreasing agents and even when wiping down surfaces, make absolutely sure none of the detergent gets into your oil or is left in the system. Rinsing and drying are critical to removing the detergent which is another enemy to your oil’s life, and can cause safety issues when it promotes foaming. BRITISH TAKEAWAY CAMPAIGN BTC Meeting with Baroness Garden Written by Andrew Crook, NFFF President I was joined at the meeting by Jo de Koning, the head of communications at Just Eat, and Steven Graining, who works for Newington Communications who perform the role of secretariat for the British Takeaway Campaign. We entered the House of Lords via the Peers Entrance and were Greeted by Baroness Garden in the foyer. After passing through a security check we followed the Baroness through the corridors, past the chamber of the House of Lords, to the Pugin Room where we sat down for coffee. We gave the Baroness a brief overview of the BTC and what we are trying to do, I explained that although the BTC was in its infancy, NFFF have a 104 year history and are very keen to work with the other takeaway cuisines as we feel it gives us all much more of a voice. I also explained I had been involved in the Livery Companies apprenticeship scheme a couple of years back, the Baroness was involved with City and Guilds so knows the livery companies well. We explained the BTC’s position on Apprenticeships, and how the fish frying sector discovered the two standards and brought them to the BTC. We also explained

how currently an employer needs to fund 10% of the overall apprenticeship (currently £500) and this could be a barrier to shops taking on an apprentice. The BTC proposal is that the immigration skills levy be used to pay this £500 on behalf of the business. The Immigration Skills Levy is a pot of money collected annually when a business employs someone from outside of the EU. Large companies pay £1000 a year per employee and small businesses £354. The idea is to discourage companies hiring abroad and to recruit from our own population. By using this money it does make sense that whilst employing an immigrant you are also funding a UK citizen to get them to work also. The Baroness seemed very keen to support this. We were then joined by Lord Addington who was keen to champion the inclusion of students with dyslexia by offering technology to apprentices that cannot sit exams. As 10% of the population suffer from dyslexia or similar, and that 10% is likely to be found leaning towards the more practical side of employment, we need to be aware.

As the election was brought forward the decision was brought forward on the T-level Bill and they didn’t get chance to “Ping Pong”, the process where they bounce it to and fro with the House of Commons. The meeting was very positive, and The Baroness was keen to support us further. She suggested we may be called back to speak to the All Party Parliamentary Group on Apprenticeships. We were then treated to a bit of a tour of the building by the Baroness, including the Royal Gallery and the back of the door the Queen enters the building through and the room where the Monarch changes to enter the Chamber. We were then taken into the House of Lords to Witness a discussion taking place. I have to say it was an honour to attend this meeting and very informative as to how the government works. I am sure our involvement with the BTC will get us more high profile meetings and it certainly sends the right message to the wider industry.

The Lord then had to leave to attend a debate. We then talked to the Baroness about T-Levels, the

We produced a fun survey that was completed by nearly 1,700 people – we will be re-producing the survey visual this year for shops to share on their own social media streams. We want to help fish & chip shops across the UK benefit from this awareness day and can offer advice on decorating your shops, running special promotions and competitions and generally creating a huge buzz about fish & chips. We are updating our information pack with guidance on how to get the most from social media and your local and regional

THE RISING TIDE OF MSC-CERTIFIED CHIPPIES

Brits still love a fish and chip supper; in fact, more than 167 million servings are enjoyed from chip shops every year. Doused in salt and vinegar, smothered with mushy peas or dipped in tartar sauce… however you enjoy your chips, more consumers than ever are demanding that they are served with a side of sustainable fish.

Taking place over seven months, the judging process was rigorous with menu choices, customer service and quality all being taken into account, but it’s clear that the winners were also recognised for their responsible sourcing and efforts to educate and inform customers on the sustainability credentials of their seafood.

According to research carried out by YouGov on behalf of the Marine Stewardship Council (MSC), 80% of fish and chip fans believe that all of the UK’s 10,500 fish and chip shops should serve certified sustainable fish – with 39% saying they would happily travel further to buy it.

Millers Fish & Chips in Haxby, York became the sixth MSC certified shop in a row to be named Fish and Chip Shop of the Year.

So, it was no coincidence that at the recent National Fish & Chip Awards in London, the ‘Oscars’ of the frying world, 75% of the winners are MSC certified.

We are elated to have this recognition from our industry partners. We do believe the MSC certification is one of the main elements which supported us to win this year. “More members of the public are becoming aware of the importance of sustainability and pro protecting our oceans. Certified since 2015, Cornish hake is enjoying increasing popularity in the UK. Previously sent overseas, the UK market for hake is expanding and can increasingly be found on UK chip shop menus in shops such as South London chippy, Olley’s Fish Experience, who first served it in 2016.

XXXXXXXXXXXXXXXXXXX CELEBRATING A CENTURY! Fish and Chip Queen of Birmingham!! Artemis Pili, mother of NFFF member Michael Pili, celebrated her 100th birthday on the 19th February while becoming one of the oldest Greek-Cypriot ladies in the country. Born in 1918, during the final year of the First World War, Artemis grew up in the village of Trachypedoula in Cyrpus. In 1938, at the age of 20, a young Artemis decided to leave for England. She first settled in London, working as a nanny for a doctor and his family. Artemis fell in love with a young Greek-Cypriot man called Louis, who was serving in the RAF. The couple married in 1941 and lived in Hanson Street, Marylebone, before moving to

Birmingham in 1943. Artemis and Louis first worked in a cousin’s café and chip shop and this was the start of Artemis’s long career in the industry, setting up their first business in Nechells. This was bombed-out in an air raid but, undeterred, the couple moved to another fish shop in Great Russell Street, Newtown. Michael, who followed in his parents footsteps running chip shops and Greek restaurants in Birmingham, explains: “Life was difficult without all the mod-cons of today. Living conditions and the shop itself were very basic. There were coal fired wall ranges for cooking, no extractor fans and you had to peel the potatoes and ‘skin and bone’ the fish all by hand.

I remember my mother getting one of the first flatbed electric chip choppers in the city. Unfortunately, when she was cleaning the machine she accidently sliced-off the top of her thumb.” It was always busy in the shop and Artemis’s daughter Margaret said: “My parents shop in Gerrard Street was on the number 8 (inner circle) bus route. The bus drivers would stop at the shop for their fish and chips, the drivers would jump out of their cabs and come into the shop, while all the passengers were sitting on the bus. We would ask the people in the queue if we could serve the drivers first, as they were in a rush. More often than not, the conductor would also follow, coming into the shop to get their fish and chips followed by passengers on the bus, who saw the driver getting his and thought they should get theirs, too.” Even after the shop in Gerrard Street closed, being compulsory purchased as part of the rebuilding of Lozells and Newton, Artemis continued to work hard, helping her son Michael in his chip shops and restaurants. That’s what you call dedication. Happy 100th birthday, Artemis!

6. Describe your perfect weekend. My perfect weekend would be going out for dinner and drinks on Friday evening, having a massive fry up to nurse my hangover Saturday morning, and then a take away Saturday night with a good film and then stay in my PJs all Sunday and have a roast dinner.

My dream holiday destination in the UK is Ireland. I have never been before and I would absolutely love to go. Abroad, I would love to go to Barbados or Hawaii.

My favourite sport to play is tennis and my favourite sport to watch is show jumping. My least favourite sport is golf.

10. What is your prediction for the fish and potato industries? I think there will always be ups and downs in any industry but I think the fish and potato industries will always flourish as there will always be great demand for both. 48
