This year has already been an exceptionally exciting one; with the National Fish and Chip Awards 2017 taking place on the 26th January at the Park Plaza Westminster, London. The event was once again a huge success and congratulations to everyone who was involved, especially to the winners of each category who will represent our industry for the coming year. Seafish deserve a huge amount of credit, they are growing year on year and the commitment and support to our industry encourages more to eat fish.

Winners of the main award, Kingfisher Fish and Chips, have been an outstanding shop for many years now and finished runner up of the Independent Takeaway Fish and Chip Shop of the Year Award only last year. The 26th January 2017 was their night. I know the outstanding work Craig and Nikki already do with the help of their Kingfisher team will stand them in good stead for all the exciting opportunities and challenges which lie in front of them. Craig is a Regional Director for the NFFF and the whole Board have seen first-hand the amount of work he has undertaken for the industry already and it will no doubt continue.

On the 26th January we also announced our next NFFF Fish and Chip Quality Award Champion Award and I’m thrilled to announce Fochaber Fish Bar as our champions. In Fochaber Fish Bar we have a Quality Award holding shop who is holding our award with pride and do their utmost to raise awareness in the industry and to the public just what the Quality Award logo stands for and I must congratulate them on achieving the prestigious award. We have already witnessed the outstanding work they have done to promote the NFFF Quality Award and no doubt will continue to do so. I would like to thank Seafish Chief Executive, Marcus Coleman for his kind words towards the NFFF Training Academy, we are strong believers that training is essential to all areas in the business and many are seeing this. So far this year we have already fully ‘sold out’ places on the January & February Three Day course resulting in additional courses being held. We were delighted to welcome two great award winning guest friers, Quayside, Whitby Stuart Fusco and Towngate Fisheries, Mark Drummond. Training is a vital part of running a successful business and we at the NFFF are delighted to be able to call upon such successful fish friers to become involved and train the next generation. We will be looking forward to welcoming lots more guest friers to attend our training courses to provide added experience to our already excellent training staff.

2017 has seen yet another successful and glitzy day at the National Fish and Chip Awards at the Park Plaza Westminster on January 26th. The event saw yet another group of zealous entrepreneurs crowned winners, beginning with a champagne reception, filled with glee and chatter about all things fish and chips. The event itself was hosted once again by the excellent BBC Radio 2 resident cook Nigel Barden. Marcus Coleman, Seafish Chief Executive started the awards off with a warm welcome. Now in their 29th year, the National Fish & Chip Awards continue to be the world’s

best event for everyone involved in sourcing, producing and selling fish and chips. Having started in 1988 in order to raise standards within the industry and generate positive publicity on its behalf, the awards are now recognised by the participants, consumers and media alike, as the ultimate event for the fish and chip industry. The ‘Oscars’ of the fish and chip world! Over the years, past award winners have seen businesses expand, staff recruitment and employment grow and turnover increase, all as a direct result of being crowned an award-winning business – just some of the reasons that Seafish continues to invest in the sector through these awards.

Kingfisher Fish and Chips in Plympton, Plymouth has been crowned the best fish and chip shop in the UK on the 26 January after frying out on top at the 2017 National Fish & Chip Awards, organised by Seafish. The shop scooped the ultimate title -Independent Takeaway Fish and Chip Shop of the Year – at the awards ceremony held at the Park Plaza Westminster Bridge Hotel in London – an event widely regarded as the ‘Oscars’ of the fish frying industry. To secure the top spot, Kingfisher Fish and Chips had to progress through a rigorous, multi-stage judging process over a seven month period; encompassing several mystery shopping assessments and in-depth audits by industry experts, reviewing everything from responsible sourcing policies to menu diversification – and of course, customer service levels and the quality of fish and chips being served.

Ben Bartlett, Master Craftsman of the Craft Guild of Chefs, and a member of this year’s final judging panel, commented: "This year was definitely Kingfisher’s year – they stood out immediately for their extensive knowledge and experience, robust sourcing policies, forwardthinking approach, and continual business growth.

"With inspiring passion, they are consistently looking to improve their offering and strive for perfection – making them extremely worthy winners and the perfect ambassadors for the fish and chip industry.” Marcus Coleman, Chief Executive at Seafish, added: "The aim of the National Fish & Chip Awards has always been to showcase the very best fish and chip businesses and individuals in the UK while setting incredibly high standards for the industry.

Harbour Lights in Falmouth, Cornwall, has been crowned the best fish and chip restaurant in the UK after frying out on top at the 2017 National Fish & Chip Awards, organised by Seafish. The restaurant scooped the ultimate title - Independent Fish and Chip Restaurant of the Year –during a prestigious awards ceremony, which is widely considered as the ‘Oscars’ of the fish frying industry, held at the Park Plaza Westminster Bridge Hotel in London.. To secure the top spot, Harbour Lights had to fry at the top of their game while progressing through a rigorous, multi-stage judging process which focused on their responsible sourcing policies, menu diversification, restaurant facilities and appearance, staff training and development practices, and marketing and promotional activity. They also underwent an in depth audit to assess both the front and back-of-house operational aspects of the business, along with mystery dining assessments to ascertain customer service levels and the quality of fish and chips on offer to customers. George Papadamou of Papa’s Fish and Chips in Hull, East Yorkshire, has come out on top at the 2017 National Fish & Chip Awards, organised by Seafish, after being crowned Drywite Young Fish Frier of the Year. To earn his spot at the top, George had to showcase his talents during a rigorous, multi-stage judging process; encompassing exam questionnaires and in-depth telephone interviews conducted by senior industry experts. He was subjected to further appraisal as he received a skills based assessment and underwent a personal interview during a comprehensive judging day at the National Federation of Fish Friers (NFFF) Training Academy in Leeds, West Yorkshire. George also received a mystery judging visit at his respective workplace to test his skills and knowledge whilst in his own working environment. Commenting on his award, George, who co-owns Papa’s Fish and Chips with his brother Dino, said: “This award has been the cherry on top of what has been a great year!

“I live and breathe fish and chips – it’s something that came so naturally to me in the beginning, and now being named the Drywrite Young Fish Frier of the Year, I almost feel like I’ve been inducted into the ‘fish and chips hall of fame’! December 2016 saw the Drywite Young Fish Frier of the Year finalists for 2017 heading to Hull to embark on three factory tours to help them understand further how product used on a daily basis are sourced, manufactured and distributed throughout the UK. The two days organised by Drywite Limited and Kerry Foodservices saw them visit AAK Oil Refinery, Smales Fish Merchants and Kerry Foodservices, Gainsborough milling factory.

Day 1 started at AAK. Set on the docks of the Humber in Hull, AAK process and refine frying oil for the fish and chip industry and for the foodservice and wider sectors. During the tour there was a demonstration on how the oil is decanted from large ocean tankers onto the site and then both the refining and deodorising stages through to quality control which employees test and sample the various stages, ensuring the highest level of quality is maintained. Once the oils and fats have been through these processes it is then on to packaging ready for distribution.

Across the two days the knowledge which was gained by the Young Friers will set them up to improve their own knowledge, which can then be passed on to their consumer and staff and will in no doubt improve their business operations.

Much like AAK and Smales Fish Merchants, Kerry Foodservice pays a huge amount of attention to quality control from the initial delivery to final stages of packaging the product for distribution. The Drywite Young Fish Friers were then invited to sample the various batter brands Kerry produce from Goldensheaf Gold to A1.

Once the tour of the facilities was over the final part of the visit was spent learning about the make-up of different types of fats and oil and the work which goes into making the products fish and chip shop owners use to be as healthy as possible. In the afternoon the Drywite Young Fish Frier finalists headed over to Smales Fish Merchants who are one of the leading suppliers of frozen at sea fish to fish and chip shops throughout the UK. Upon arrival Bobby Joyce Smales National Sales Manager / Purchasing Manager, informed the Young Friers about the proud history of Smales and the plans they have put into place to safe guard the industry with the new Ramoen Trawler in which they catch most of the frozen at sea fish they sell to the industry. The Drywite Young Fish Friers were then invited to visit the cold stores in which the products are kept before distribution to shops across the UK. Day 2 the Drywite Young Fish Friers travelled to Gainsborough to visit Kerry Foodservice flour mill where they learnt about the history of Kerry, its products, its employees and details on the process Kerry Foodservice undertake to source the wheat which is used within the batter mix every fish and chip shop will use. The flour mill is set upon a huge site and the main milling plant is housed in a building stories high. During the tour the Young Friers saw the different stages carried out at each level and

Fish and Chip Shop Portion Scoop Award winning Lincolnshire chippy Burton Road approached Hopkins to develop a chip scoop after they realised they were losing £300 every week by serving portions with too many chips. The bespoke chip scoop provides standard portion sizes to customers so increasing margins and reducing waste. Owners Lesley Graves and Des Anastasiou said "We’ve been developing our chip scoop for a number of years to give our customers and staff a visual guide to our portion sizes. The scoop has also helped us improve our margins. We know that we can now serve 44 portions of chips out of one bag of potatoes, and we can give customers exactly the right portion for their appetite.” Recent research carried out by Seafish and AHDB Potatoes reveals that 15% of consumers think that chip portions are too big, and 44% often throw some of their chips in the bin. We wanted to expand our business but didn’t want to open up a new shop as we didn’t want to compromise what we have spent a lot of blood sweat and tears building up. Our expansion plans were to include a mobile fish and chip van to take Kingfisher Fish & Chips Mobile, it also gave us flexibility within our business. It also seemed like a natural progression, to take our award winning fish and chips to events, corporate events and festivals etc. So our search began! We had looked at second hand units but, quite frankly what we saw was not up to the standard that we were trying to achieve. We would have

spent as much money buying second hand and gutting it as we would have buying our own bespoke van. In October 2016 we went to a trade show in Donnington to take a look at some Mobile vans which we knew were going to be there. We had in our minds a preconceived idea of what we were looking for. It had to be modern and fresh looking, with the build and operation standards replicating our shop. It also had to look like our shop, basically an extension of our existing successful business. We wanted people to see our van and understand our shop and vice versa, a symbiotic relationship. Late December 2016 we received delivery of our brand new Fish & Chip van – Kingfisher on the Go… In early January our van was put immediately to great use, as our shop was having an additional frying range installed and had to close. So we traded from our van in front of our shop – brilliant. One customer shook my hand and simply said, congratulations I love to see local shop doing well. We received a lot of attention and a lot of enquiries during this period. I have a feeling Kingfisher on the Go is going to be kept on the go.

‘Going Mobile’ The Flipping and Frying workable using their brand of equipment. We then relaunched in December 2015 with the aim of providing the consistently best mobile Fish & Chips as part of a reliable service. The model we had developed proved very popular and we were receiving a lot of demand for our services; thus we soon found ourselves expanding to two vehicles with Bridie taking over the second having been taught to fry by myself. We didn’t want this success to lead to complacency so decided to take the newly formed wider team on an NFFF training course. Whilst the course was mainly focused within the shop environment it gave us a clear insight on how to achieve the high standards that sustainable success in industry demands.

I’d left the Royal Navy in 2015 due to injury after 4 1/2 years as a Warfare Officer spending my final time in Officer recruitment. I had moved to a very rural area in Nottinghamshire and we constantly remarked how far away it was to the nearest Fish & Chip shop. Having worked in a Fish and Chip shop prior to joining the service it was something I had always fancied going back into as I really enjoyed it. I wanted to get back on my feet and had tried a few things that I really hadn’t enjoyed so thought well why not try providing a mobile Fish & Chip service in the area and get back on my feet? The fingers went to work and having trawled eBay we found a Fish & Chip van. It would be fair to say that the learning curve that was ahead would be steep. I soon discovered Frying Mobile was a whole different ball game to what I had known in a shop. The variables and environment require careful management in order to just make sure you can open at the times you say you will be and keep customers happy – before you even start worrying about the Frying! The range worked differently and I had to essentially pick up my shop (well the front of - as unlike a shop I couldn’t take a back room prep area with me) and take it to wherever I was going. Success and popularity would now become my major challenge. I simply didn’t have the right kit and the right knowhow to answer the demand that service had generated. I therefore sat down with my, then, girlfriend Bridie and we had a major brainstorm. Instead of her working the 9-5 we decided to take this part time business full time together and knew we needed relaunch with a more solid model using more reliable equipment that has been purpose built for mobile frying. We discovered ‘Pro Fry (Ltd)’ a specialist mobile Fish & Chip vehicle manufacturer. We worked together and took heed of their experience to ensure our vehicle would be suitably designed for it’s unique purpose; a relationship we have continued to develop in order to ensure successful development within this sector of the industry. We looked around and identified what successful elements of award winning shops we could emulate within the tight spaces of the mobile environment and combined this with the knowledge ‘Pro Fry (Ltd)’ had with regard to what would be

On the course with The NFFF we had been introduced to the Quality award. We identified that in order to consolidate our success we needed to prove that our whole scope of business operations was being carried out to a high standard. Our vans were built to the ‘Rolls Royce’ standard of mobile frying outfitting therefore we wanted to prove the other moving parts of our business complied with that of the Quality scheme. We had to interpret somewhat how we could comply with the requirements of the scheme within our specific environment and went about a belt and braces approach to ensure we could achieve it. We were overjoyed to have achieved the award and have since received increased interest in our catering services as it is widely recognised as an independent assurance award therefore customers know they can book us with confidence for their event and rely upon us to provide top quality Fish & Chips. It’s been a busy 12 months for us we have moved from operating a second hand van to operating two high quality high output outlets from a purpose designed business premises under the Quality banner. So what now for Flipping and Frying? We have busy year ahead and the privilege of carrying the Quality award forward with us in our journey through the Mobile Frying sector. At time of press we will have launched our ‘Salt & Veterans’ franchise initiative offering franchise opportunities to ex service personnel. (and Bridie and I need to now find time to get Married after becoming engaged…)

Moving ahead with Mobile MSC fish and chips! Many of the UK’s leading fish and chip shops are Marine Stewardship Council (MSC) certified businesses with a wide, loyal and growing number of customers. Here are examples of MSC chippies who have taken their successful businesses one step further; extending their commitment to sustainable fish and chip dishes via mobile vans and supplying new event customers with sustainable fish for all to enjoy and helping to protect fish stocks.

The Bay on the Road is an MSC certified mobile business developed from MSC certified The Bay Fish & Chip, owned by Calum Richardson in Stonehaven, Scotland.

Adrian Fusco, Manager of the Whitby Fish and Chip Company, describes their mobile and it’s success at events. “Our trailer is best suited to large-scale field events, it really does perform brilliantly when there is a big queue, the staff get into a rhythm and we seem to work our way through it in no time. The pitches at festivals are expensive but there is every opportunity to make money if you have the right equipment with a good product, coupled with an efficient team with the right attitude.” “The blue MSC logo always draws interest, it is an easy way to strike up conversation with customers; some people know exactly what the MSC is all about and commend us on it, and others come to us to discover more. Often they recognise the logo from the supermarket and want to know more about the MSC and the sustainable fish served.”

Their distinctive blue van offers only MSC certified sustainable fish. Calum explains; “My customers don’t get another option… and it’s always received very well…it would be more noticeable if I stopped selling it… MSC certified fish has always been on The Bay on the Road’s menu and it’s been on our chip shop’s menu for so long now that my customers expect to see it.”

“I like our unit to look professional - appearance is everything when you are in field with a hundred other caterers. The trailer is wrapped in a blue vinyl with a background picture of Whitby harbour. The name ‘The Whitby Fish & Chips Company’ is prominent but next is the MSC logo, which is directly at the customer’s level. Customers can’t miss it and it carries the message that we care about our sourcing and the sustainability of our product.”

“Our mobile presentation has worked really well for us. We’ve always found that the big talking point is where the MSC certified fish comes from, both in the shop and the mobile van. The interest in MSC fish is growing year-on-year, as the public notice the ever-growing number of blue eco-labeled seafood products available in supermarket retailers.”

“The mobile van has been serving MSC fish and chips at the Liverpool Mersey River Festival, a local party for the Queen’s Birthday, VFestival, the Yorkshire Post Classic car Rally, Liverpool International Music Festival, the VW Festival, Leeds Festival, the UK Tech Festival, some steam rallies and local weddings.”

“We have the ecolabel clearly displayed on the menu, literature and on the packaging, to show customers the fish we source is MSC certified sustainable and traceable to the boat that caught it…For me, the MSC ecolabel sticker works very well with our customers because it’s so visible on our packaging. It prompts my customers to ask about the ecolabel and then we’ll explain – it’s all part of our customer service to educate about certified sustainable fish!”

“Being MSC certified certainly helps us pick up new work – as a mobile caterer you have to sell yourself to an event organiser and not just the consumer. I recently applied for a pitch for the van at Glastonbury and discovered a tick box for MSC on the application form… I felt very proud to be able to tick it! Next year I am hoping to do more music festivals and large field events, this suits our set up and I like the challenge.”

The Bay on the Road mobile is hired for private parties, weddings, corporate events and festivals – with beer festivals being the most successful.

The Whitby Fish & Chip Company was developed following the success of The Fusco family’s three other MSC certified and award-winning fish and chip shops in Whitby. The mobile shop was launched in 2015, and was the very first MSC certified fish and chips van, following their three other certified chippies and Quayside’s award for the UK’s Best Fish and Chip Shop in 2014.

Olley’s Fish Experience, an award-winning MSC certified chippie in Herne Hill, London, also has its own MSC mobile. Harry Niazi, owner of both businesses, reports that customers are delighted when they see the blue ecolabel on the menu and discover the commitment and traceable journey of their MSC certified fish. He is pleased to announce he will be serving (with thanks to Southbank Fresh Fish), – a first in the UK – MSC redfish. Fire risks in Fish and Chip Shops Fish and chip shops can present a significant risk of fire, and the effects on people and property can be devastating. In 2014 the Deep Blue chain of fish and chip restaurants suffered not one, but three fires. The chain’s CEO, James Low, shares a shocking story of inappropriate cover, inefficiency, and complacency from insurance providers.

Let down by insurance James, like any business owner, expected cooperation and support from his insurers to help restore his businesses and assist with temporary loss of income. Sadly, this was not the case. Although the insurance company accepted liability for the Reading shop six weeks after the incident, the claim was not settled until almost eight months after the fire. James said: “It was clear that the insurance policy was ill equipped to deal with the day to day working practices of fish and chip shop operators. The insurers looked for reasons to decline the claims, turning to clauses within the insurance policy to justify this, one being that the staff were not ‘in attendance’ of the frying range at the time of the fires. Staff were actually doing their morning preparation no more than a few feet away.”

How Technology is shaking up the Fish and Chip Industry Over the last few years, the UK fish and chips industry has experienced a revival with appetite for the British staple currently on the rise. As the price of a fish and chip supper is often less expensive than other takeaway options and given the tough current economic climate, it comes as no surprise that one in four of us visit a chippy once every week and the industry is currently worth £1.2 billion pounds per year. At a time when online ordering platforms allow hungry customers to have almost any meal delivered to their door, the fish and chips industry should embrace the digital world to ensure they don’t get overshadowed by their rivals in the takeaway industry who are making the most of the digital ordering facilities. However, despite the need to keep up with advances in the industry, fish and chips restaurant owners, who don’t have the time to set up and maintain their own websites, need to consider the benefits that an online ordering system can provide to both them and their customers.

restaurants increase, eventually the price rises will be passed on to consumers who will have no choice but to pay more for their takeaways and will take away the appeal of fish and chips as a budget-friendly family meal. The focus on their own branding, which is effectively paid for by the restaurants through the commission fees they pay, means that customer loyalty to restaurants is being diminished because by ordering via the large online platforms, the restaurants lose the ability to build personal relationships with their customers, which is something that the fish and chip industry has always excelled at. There is a need for a platform which doesn’t only allow fish and chip restaurants to offer their customers an easily accessible, reliable and fast online ordering system but also allows them to grow their business, increase turnover and maintain customer loyalty. We believe that the industry as it exists is long overdue a shakeup which will benefit fish and chip shops and consumers alike.

Online ordering platforms like Just Eat and Hungryhouse launched under the premise of saving restaurants money by providing them with a reliable ordering platform, supporting them by taking away the need for them to invest in their own website and marketing materials and making it easier and more convenient for consumers to order and to ensure good service. While in theory, this approach should benefit everyone, in reality, it has led to restaurants feeling that they have to sign up in order not to miss out. Just Eat offers restaurants incentives for joining but once they sign up, they essentially become captives of the platform, having to pay high commissions on each order, squeezing the profits. Ultimately, this means that they are working harder for less profit. It comes as no surprise that according to Just Eat’s published year results in 2015, 91% of its profits came from commission paid by the takeaway restaurants. The recent acquisition of Hungryhouse by Just Eat is further proof that the fish and chips industry needs to act smarter when choosing an online ordering platform. When you consider that many restaurants are signed up to Just Eat and Hungryhouse because they have limited budgets for websites and online ordering facilities, it becomes clear that those platforms are impacting negatively on small restaurants whose profit margins are already squeezed. There are also concerns for consumers, whose choices will be restricted. At first the acquisition might sound like a good deal for fans of takeaways as in time there’ll be a single app which will give them access to a larger number of restaurants, but with Just Eat and Hungryhouse under one roof, should commission for
