ZUCCHINI AND BACON BITES

SUPER-FOOD DATE BALLS

Stuff You Need

Makes 20-30 •2 medium zucchinis grated (with paper towel squeeze out excess juice) •1 finely chopped onion •2 rashers of bacon diced •2 eggs lightly beaten •1/4 cup of coconut flour •1/2 tsp dill (or your favourite herb) •1 tsp paprika.

Now What

Makes 16 •15 medjool dates, pitted and soaked in boiling water for 10 minutes •2 tbs. raw cacao powder (super food #1) •2 tbs. chia seeds (super food #2) •2 tbs. cinnamon (super food # 3) •2 tbs. unsweetened shredded coconut (super food #4) •1/2 cup of raw pumpkin seeds •1 tbs. unsweetened shredded coconut (to roll the balls in).

1. Preheat your oven to 200 degrees

2. Mix the zucchini, onion and bacon

in a bowl. Add the eggs and mix until combined. Sift the coconut flour into the mix and stir. Add your herbs + spices and mix it all up.

3. Take spoonfuls of the mixture and mould into bite size balls. Place the bites on a lined baking tray and into the oven for 25 minutes or until golden brown. Enjoy hot or cold.

1. Food process the dates until they become a sticky paste.

2. Add all other ingredients and food

process until combined (the mixture may look a little crumbly – that’s ok!)

3. Roll the mixture into 16 small balls. Place the extra coconut into a small plate and roll each ball in the coconut.

4. Refrigerate in an air tight container until it’s snack time.

MEXICAN MEATZA

Stuff You Need Serves 4 For the Base •500 grams grass fed beef mince •1 finely diced brown onion •1 tsp chilli powder •3 tsp paprika + half a tsp salt. For the Top •3/4 cup of your fave salsa •1 diced avocado •1/2 cup of shredded bacon •1 diced tomato •1/2 cup of sliced mushrooms •a handful of stuffed olives •1/2 a bunch of chopped coriander •The juice of a lime (to finish).

4. Bake the base for ten minutes or until brown.

5. Now for the fun! Layer the topping ingredients in the order listed above.

6. Bake for a further ten minutes. Remove

from the oven and finish with a squeeze of fresh lime. Cut into squares and YUM YUM!

Now What 1. Pre heat your oven to 180 degrees

celsius. Line a 30cm square dish with baking paper.

2. Mix the mince, onion, spices and salt until combined.

3. Roll the mix into a ball and press evenly into the prepared dish.
