The Argentine cuisine can best be described as an international blend of all the flavors of Europe’s best, taken to the next level... Argentine style. For example, what they do with beef is incredibly delicious. While Italy is known for its pasta, France for savory sauces and Spain for paella, Argentina’s claim to fame is the asado, the Argentine barbecue, with such unique and delicious flavors! While Patagonia, the second part of the restaurant’s name, makes reference to the freshest fish and seafood found in that part of Argentina, the steak and sausage are prepared to perfection. The zest and pride of Argentine life, culture and dance transcends into the food. In other words, Argentina is the birthplace of the tango, and the spice in that dance has made its way into the cuisine. Being that it was our first experience, we relied upon the excellent staff to help guide us in the selection process. We started our experience with the delicious pickled eggplant ($3.90), followed by grilled
provolone with tomato and ham ($10.90), seasoned to perfection and very tasty. The Traditional Argentinian Grill for Two ($47.99) includes short ribs, flank steak, chicken breast, sweetbreads, blood sausage, Argentine sausage and chitterlinds. The unique taste comes from the charcoal, so this dish is without a doubt the best way to appreciate what Argentina is all about! Other menu selections include the international cuisine. Pasta from Italy; fajitas, enchiladas and chimichanga from Mexico; as well as American favorites, so there is something for everyone. Asador Patagonia is owned and operated by Juan and Natalia Ayala and Osvaldo and Viviana Oneca, from Argentina. The Next Generation Of Young Equestrian Riders
The love of equestrian sports is heating up with young people all across the nation, and Wellington is home to many who have made it their passion. This month, we feature several up-and-coming young equestrian riders across multiple disciplines. Some of their names may be familiar, as many are following in the footsteps of their equestrian parents. Matt Coppola, the next generation in one of Wellington’s well-known polo families, is featured on this month’s cover. This 21-year-old future star is holding his own against some of the top players in the world at the International Polo Club Palm Beach. Bobby Kraut, son of Olympian Laura Kraut, is making a name for himself based on his own accomplishments and doing a great job turning heads in the junior jumpers with his newest mount, Carmen. Many riders dream of making it onto a U.S. team and representing their country, but for Charlie Jacobs Jr., that dream became a reality when he was part of the U.S. gold medal Children’s Nations Cup team at just 14 years old. Spencer Smith is not settling on attaining the 2014 USEF Hunter Seat Medal and becoming a member of the impressive Young Rider team that took home gold at the 2015 Nations Cup, but he continues to pursue new ventures in 2016. Nicole Bellissimo, listed as one of the top 35 riders in the Under 25 jumper division of the United States Equestrian Federation, explained that it is about dedication, passion and a great support system when we sat down with the young rider. Meanwhile, teen rider Katrina Sadis recently moved to Wellington to pursue her dreams of success in the sport of dressage. Included in this issue is our Young Rider Style fashion feature spotlighting Sami Senft, who has not only come a long way in her riding technique, but she is dressed in the latest equestrian styles and making a name for herself in the show ring as a rising young professional. Kicking off April is the return of the annual International Gay Polo Week, now in its seventh year and attracting a global audience to Wellington. By moving the tournament to the International Polo Club Palm Beach, founder Chip McKenney expanded the event, bringing a more diverse polo crowd to the community, as he explains in this month’s issue. Also featured is Marysue Jacobs, a fixture in Wellington for more than 20 years. The Challenge Of The Americas Supports Breast Cancer Research

World-class dressage and show jumping riders took the field Friday, March 11 at the International Polo Club Palm Beach for the 2016 Challenge of the Americas, an annual event that raises money to support breast cancer research. Show jumpers displayed their speed and athleticism in a gambler’s choice competition before the spotlight shifted to Grand Prix dressage quadrille teams, who performed their intricate musical routines after months of preparation. The competition came down to the wire, and at the end of the evening, Team Back on Track’s Star Wars-themed quadrille earned them the top marks. Since its inception in 2002, the event has raised more than $3 million for the Breast Cancer Research Foundation.

Matt Coppola Scores Big With Family Polo Tradition By Lauren Baker
In the tightly knit Wellington polo community, it is almost impossible not to cross paths with the Coppola family. For two generations, the Coppolas have been a mainstay in the equestrian world. The Tackeria, the tack shop the family founded in 1975, has been a hallmark of Wellington’s equestrian community ever since. The family’s stamp on the polo world began with Tony Coppola, a former polo player and an internationally known high-goal tournament announcer. Today, his son Matt Coppola is recognized as an up-and-coming talent on the high-goal polo scene. This season, the 21-year-old held his own against the top players in the world during the 20-goal Ylvisaker Cup at the International Polo Club Palm Beach. He played with a new team, 5 Star Builders/Horseware/Tackeria, two months

after returning from the ride of his life: playing 18-goal polo on the All Pro Polo League in Argentina, an opportunity few Americans have had. The experience of competing with the world’s top 25-and-under players was special, said Coppola, who is rated at 4 goals. “We haven’t seen this in the United States,” said Coppola, underscoring his excitement that the next edition of the All Pro Polo League will take place here in Wellington. “I would love to be a part of it and help Americans get into that
kind of polo. It’s a different style of play. It’s hit-and-run, and it’s fast. You have to be aggressive. There’s a difference between playing on a team with a sponsor and playing on a team with four young professionals. It’s lot quicker, and you have to think faster and play a lot tougher.” As he has done for the past several years, Coppola spent the last two months of 2015 in the polo hotspot of Argentina, learning from the best players and coaches in the world. Competing during that time on the All Pro Polo League was an important part of developing his skills, he said, particularly because it gets young players in the mindset of “open polo,” the classic, flowing way that the game was traditionally played.

“I think it will be fairly easy to incorporate those skills here,” said Coppola, noting that polo in the United States developed into a slower style of play over the years, punctuated with more stopand-go plays. With the style he learned in Argentina, “you have to think ahead because you’re going faster and things happen more quickly,” he explained. Coppola has been on the fast track to professional polo for just about as long as he can remember. Born and raised in Wellington by polo parents, he was immediately immersed in the sport and began swinging a mallet from atop a horse from the time he could walk. His polo career has always been a family venture. “My parents just put me on the horse,” Coppola said. “When you grow up in Wellington, all your friends ride, so it’s normal.” This season, his father, whose polo team color was always blue, chose a distinctive shade of turquoise for the jerseys Coppola’s team wore in the Ylvi-
saker Cup. Jesse Coppola, his mother, added a touch of pink to the jerseys because his favorite color is pink. A roughand-tumble polo player in pink? Yes — from sweaters to T-shirts to just about anything. Perhaps it says something about Matt Coppola’s self-confidence. When he was 16, Coppola played four out of six games in the U.S. Open Polo Championship, the most prestigious tournament in the country, as a substitute for Victor Vargas of the Lechuza Caracas team. The talented young player continued to improve from there until, at age 18, Coppola knew that he wanted to make polo his full-time career and eventually join the rare fraternity of 10-goal players. “Everybody wants to make that happen, and that’s my goal,” Coppola said. “I want to be [rated at] 10 goals. Something just clicked, and I started to really enjoy polo and being around horses. It’s something that I can’t go a day without now. There’s a lot that goes into it. You have put your time in.”

That means being at the barn every day and taking care of your horses, practicing plays and working out to stay in top physical condition. Coppola’s polo career continues to reach new heights as he trains and works his 20 athletic polo ponies, which his mother enjoys exercising for him every morning. He began focusing on
building a string of made horses three years ago. He and his father continue to purchase mounts from top industry names, including one the legendary Memo Gracida, Martín Astrada, Juan Martín Nero and Sebastián Merlos rode. Matt and Tony Coppola also breed polo horses — some with a special fam-
ily touch. “All the mares we’ve been breeding are ones my dad used to play,” said the younger Coppola. “I played them as well, and I think it’s really cool for my dad. We have a new generation of horses from the ones that he used to play, and I’m riding the babies now.” And so, the Coppola family tradition continues.

Many riders dream of making it onto a U.S. team and representing their country, but only a few can say that they had the opportunity when they were just 14 years old. In 2015, Charlie Jacobs Jr. was a part of the gold medal Children’s Nations Cup team for the United States at the Winter Equestrian Festival here in Wellington. With a taste of national success in the show jumping ring, the young rider has new drive and dedication for a sport that is close to his family’s heart. “Having a Nations Cup for the children’s riders is really special because you get a feel for what it is like when you do a legitimate Nations Cup,” Charlie Jr. said. “You learn the technique and the strategy. It’s different than riding in any other kind of class because there is more pressure on you to do well so that you don’t put added pressure on your teammates.”
U.S. Show Jumping Young Rider Chef d’Equipe DiAnn Langer agrees that the Children’s National Cup class is important. “The younger that we start with developing riders on these younger teams to get the experience and get that exposure is the only way to get them oriented in what it’s like to come together as a team,” Langer said. Hunters, while his younger brother Will has taken up polo. With aunts, uncles and cousins all involved with the sport, it is easy to see that Charlie Jr.’s dedication to the sport also comes with family support and camaraderie. Earlier this year, the family opened up their home for the inaugural Wellington Masters. With two new horses in his arsenal and valuable experience at prestigious venues such as Spruce Meadows, Lake Placid and Old Salem, Charlie Jr. is ready to continue progressing in his career. He has been showing at the 1.30m level. “The technicality of the course gets more difficult, and you need to be more focused,” he said about moving up a division. “For me, the height of the jumps doesn’t worry me, but I always want to make sure that my horse has a perfect distance.” With his success continuing in the ring, Charlie Jr. has made big goals for

the coming years. “I want to jump a big 1.45m, 1.50m class by the end of 2016,” he said. “I think I can get there, but you never know what comes up.” Charlie Jr. knows that it takes a lot of hard work to move up, as well as attention to detail, but he is prepared to go the extra mile to accomplish his goals. He has been working closely with trainer Linda Smith Faver of Happy Endings Farm in Wellington. “I am working on keeping a rhythm throughout the course,” he explained. “Sometimes I get caught up in half halts and lead swaps, so I am trying to focus on keeping one rhythm through the whole course and not worrying about what’s coming up next, just focusing on what is happening.” Charlie Jr. has worked hard to find the right balance as he has moved up from the pony hunters to the children’s hunters and jumpers, and now on to the junior jumpers. the ranks, he is glad to offer advice. “Even though you really want to rush it and do it now, don’t. That was one of my biggest mistakes going from the children’s to the juniors,” he said. “I rushed it and had to go back down to the children’s. Take your time and focus on what you’re good at!”
With his eye on the top of the podium for eventual world championship events, Charlie Jr. knows it will take a lot of hard work, but he is prepared to face the many ups and downs of the sport with the support of his family and friends, and his incredible equine partners.

For Nicole Bellissimo, It’s About Dedication, Passion And An Amazing Support System By Julie Unger
Being a successful show-jumping equestrian is not an easy feat. Neither is being a student at Harvard University. Nicole Bellissimo is excelling as a student and as a rider through her dedication, passion and drive. She is now listed as one of the top 35 riders Under 25 jumper division of the United States Equestrian Federation. “It has been a very good year,” the 22-year-old Wellington resident said. The Under 25 Ranking, Nicole explained, is helping to develop younger riders in the sport. “It really gives us a base to try to develop and compete more against our peers,” she said. In equestrian sports, males and females compete together, and riders of all ages compete against one another as well. “You can be 18 competing against someone who is 70,” she said. “I think it’s nice when it is a little bit separated sometimes, so we can come into our own, but it’s also nice to get the experience of competing against Olympians.” Nicole’s current mount, Harley David, is beginning his seventh year; she has had him for two years. “It has been
a great experience trying to bring him up,” she said of her Dutch warmblood. When Nicole made the decision a few years ago to become a professional rider, she decided to take the approach of raising her own horses, learning the steps it takes to bring a horse to the Grand Prix level, and joining her horses during the journey. “I think it’s a lot more rewarding, and hopefully will pay off in the long run,” she said. “It can be frustrating at times, but unbelievably rewarding when you’re stepping a young horse up and they’re doing well.” It takes more time, though, because you cannot immediately take a new horse into the ring to win. But hard work together does help build an irreplaceable relationship between the

horse and rider, Nicole said. Nicole is splitting her time between studying history at Harvard and competing, which would not be possible without her extensive support system. “It’s a very incredible thing that I’m
able to do both, that my parents are supporting me to do that, and I have a really good team of people taking care of my horses, so I know that I can just fly in from school and not have to worry about that,” she said. “When I’m at

school, I can just focus on school.” All those involved — from the people taking care of the horses, her trainer and barn manager, as well as her family — provide the assistance that has helped Nicole become successful.
She spends half of her week at school and the other half with her horses. She is mindful of staying fit when she isn’t studying, often playing recreational basketball with a group of young riders. One of the great things about being an equestrian is that it is a family affair. Her sister Paige and mother Katherine are also riders, and her father, Mark Bellissimo is the CEO of Equestrian Sport Productions and the managing partner of Wellington Equestrian Partners, owners of the Palm Beach International Equestrian Center. Nicole began riding at age 2, attending camp with Paige, who was 4 at the time. “We got hooked on it from there,” Nicole said. “We got started at a summer camp in New Hampshire.” Soon after, they were taking lessons, and their mother would drive the girls to and from their lessons on an 80-minute round trip. “We really got serious about it when we moved here to Florida,” Nicole said. The family was already traveling fre-
quently to compete when the decision was made to move the family of six — the girls have two brothers, Michael and Matthew — to Florida to live fulltime. “My father saw a project he could do and got really into it, and that’s how we are where we are today,” Nicole said. “It was really great. It makes it easier having him involved and being there.” Her family’s deep involvement in the equestrian lifestyle has been a great source of support for Nicole as she rises through the ranks. “It’s an unbelievable life, but you’re traveling a ton and you need that great support team to have that family feeling, and that’s the biggest part of it,” she said. In 2014, with mount VDL Bellefleur, Nicole won the $25,000 Artisan Farms Young Rider Grand Prix semifinal during the Winter Equestrian Festival. In 2015, she won the $25,000 Under 25 Grand Prix at the Rolex Central Park Horse Show with Harley David. For 2016, Nicole has set her sight on competing in the main Grand Prix at the
Rolex Central Park Horse Show with VDL Bellefleur. She has been working with Harley David and VDL Bellefleur since they were young horses, learning and developing a special relationship with them. “The fact that they will jump these enormous obstacles for us, purely on their desire to want to better their relationship with us, it is such an unbelievable feeling,” Nicole said. “It’s such a relationship between the horse and the rider, and I think that’s just an unbelievable thing to have in life. In a lot of other sports, you don’t get something like that.” Nicole suggested that anyone interested in learning about equestrian sports should come to see what it is all about. “It’s the most unbelievable thing that these horses do for us,” she said. “It’s a lot of trust from not only the rider trusting the horse, but the horse trusting the rider. It can be like poetry when its going well.”

Spencer Smith Pursuing New Ventures In 2016 By Jenna Sudol
From attaining the 2014 USEF Hunter Seat Medal to being a member of the impressive Young Rider team that took home gold at the 2015 Nations Cup, up-and-coming competitor Spencer Smith continues to show in Wellington while keeping his options open as he contemplates his future in the sport horse industry. Most recently, Smith has played a more active role in the training process of young horses at his parents’ Ashland Farms. He has found that although frustrating at times, making a breakthrough with a young horse has proven quite rewarding. “I have a couple of younger ones and green prospects I’m working with now that just came in this summer,” he said. “We’ll see how they progress. It’s fun to see them learn and develop.” Working with young horses certainly requires a different mindset and riding style than some of the seasoned veteran
mounts that Smith has been fortunate enough to compete with. “Luckily, I’ve ridden under a lot of great riders, and I think that has influenced my training style,” he said regarding his training approaches and mentality. “My dad (Ken Smith of Ashland Farm) still helps me a great deal. He knows so much about working with young horses. He has been doing it for so long. I think, for the horses, it’s really important that every ride is confident and leaves them feeling like a superstar.” In addition to becoming more in-

volved in training horses, Smith has just recently begun coaching New Zealand equestrian Claudia Hay in the Winter Equestrian Festival’s schooling ring. When asked whether he could see himself coaching as a career down the road, he responded, “In place of riding at the top of the sport? No. But I would love to do it while pursuing my own career. It’s an important part of the industry, and it’s something that I enjoy. I’m lucky enough to have had some great riders and trainers help me along the way, so I look to do the same thing in the future.” Long term, Smith is adamant about reaching the highest level of the sport. “I want everything,” he said. “I would love to be in the Olympics one day and compete for all the championships and medals, as well as some big Grand Prix events.” wellington the magazine | april 2016

Young Gun Bobby Kraut Focuses On Creating His Own Path To Success By Rebecca Walton
When your mother is an Olympian, it can be hard to be recognized for your own skills, but that is the goal for Bobby Kraut, son of Laura Kraut. Trying to make a name for himself based on his own accomplishments, Bobby has been turning heads in the junior jumpers with his newest mount, Carmen. “I didn’t really start moving up too much until last year when I got my new mare, Carmen,” he explained. “She’s very talented. She’s got a really nice jump, and she’s quite fast, so I think she will be one to win the speed with later this year.” At 16 years old, and with college looming in the forefront, Bobby is trying to accomplish as much as possible in his last few junior years. He will not
be short on experience, though, traveling the globe with his mother and competing in Europe at world-class competitions like Hickstead, Chantilly, Mannheim and Megeve. “I have been very lucky to compete over in Europe with my mom,” he said. “It’s a very different sport over there. I’ve learned a lot about the sport and the roots of the sport. I think that really helps. They focus on developing a
relationship with the horse a lot more over there.” When he is in the United States, Bobby trains with his mother, as well as Geoff Teall, and is continuing to build his partnership with Carmen. “Geoff helps me develop my position and focus on the fundamentals of riding, and my mom works with me a lot on the jumping,” he explained. “I try to find a balance between the two, which is actually more work than people would think, finding a balance between getting back to the basics and jumping.” Just because your mother is one of the top U.S. riders does not mean you will have an easy time in the ring. “If I am bad, she definitely tells me,” Bobby

laughed. “I always know what I am getting; it’s never sugar-coated, but that’s a good thing. I always know if she says I did a good job, then I really did a good job.” In a sport that can often be thought of as the great equalizer, in which you can win a class one day and have 16 faults the next, Bobby wants to be known for more than just his last name, despite the added pressure that he might feel. “I try not to let it affect me,” he said. “I am on an even playing field just like everyone else. I show up and do my best. I want to move up, start jumping some bigger classes and get recognized as a competitor. I want people to look at me for my accomplishments in the ring and not just my name.” With top finishes already in the books in 2016, Bobby Kraut is showcasing his skills in the ring and proving to his rivals that he will be fierce competitor, making his own name for himself along the way.

Rising Dressage Star Katrina Sadis Gains Knowledge And Experience In Wellington By Annan Hepner
At just 17 years old, Katrina Sadis is pursuing her dreams of success in the sport of dressage with tenacity and maturity beyond her years. The talented athlete has previously spent the winter in Wellington for the community’s competitive opportunities. This year, she made the leap to move here full time, on her own, as a working student for Marcus Fyffe Dressage. Sadis, a Michigan native, grew up galloping her Quarter Horse through pastures and riding in her local 4-H program. She stumbled upon dressage when she was 10 and was immediately hooked. “I think the relationship you have with your horse really made dressage stand out for me,” she said. “I have always loved the beauty of the sport and the amount of dedication you must have to be successful. The training never really stops. You can always keep improving.”

She soon became involved in Lendon Gray’s youth dressage programs. For two seasons, she participated in the Winter Intensive Training Program, a boot camp for young dressage riders held in Wellington. Sadis had the opportunity to lease Poldy, a pony, through the Dressage4Kids program, and the pair developed a remarkable partnership in the FEI Pony division, culminating in a national championship in 2014. to the Junior division. She purchased Zepelim, a Lusitano gelding, with the help of her trainer Nicholas Fyffe, an international Grand Prix rider who competes for Australia. The pair competed at the 2015 FEI North American Junior and Young Rider Championships in Kentucky. “She has nerves of steel in competition, yet she marries that with such an empathy in her riding,” Fyffe said of Sadis. “It’s a really rare combination to see, and it will be very exciting to see what she does in the future.” Sadis chose Marcus Fyffe Dressage, operated by Fyffe and his partner, Canadian Olympian David Marcus, as the ideal place to expand her dressage expertise through hands-on experience and intensive learning. Both Marcus and Fyffe work hard to provide the highest level of care for horses and clients. Though they were initially concerned about her young age, the duo decided that Sadis’ dedication and drive to work hard would make her a valuable asset to their team. “We wanted to support her because she is very talented, and she has really become an important part of our team,” Marcus said. “I am impressed by the amount of maturity that she has in her understanding of the sport.”

Sadis begins her day at 6 a.m., and she drives her two roommates, who are participating in Gray’s program, to their barn before arriving at Stillpoint Farm, the year-round base of Marcus Fyffe Dressage. After feeding the horses and mucking out stalls, she begins grooming them and tacking up. Sadis has daily riding lessons, and when she leaves the barn, she has to complete her homework for her online high school. Though her schedule is packed, she is thrilled with the opportunity to watch Grand Prix riders every day and learn about care for international-quality horses. She attributes her positive experience as a working student to the entire Marcus Fyffe Dressage team. “Being a working student is hard work, but everyone is very supportive and the barn has a really great energy,” Sadis said. Sadis has been competing Zepelim in the international Young Rider division at the Adequan Global Dressage Festival this season and hopes to represent the United States as an Under 25 Grand Prix rider next year. “She has everything it takes to rise to the occasion and be a top international rider,” Marcus said. “She is placing herself strategically where she can thrive in Wellington.”

When Sami Senft first started riding in Wellington with trainer Alan Korotkin of Castlewood Farm, she was a 4-year-old who Senft jokes fell off of her pony nearly as often as she stayed on. “Alan will tell you to this day, I was the loosest child he has ever seen,” Senft smiled. “He kept saying, ‘Is she ever going to get tight? Is she ever going to stop flopping around on top of the pony?’” Today, more than 20 years later, Senft has not only come a long way from flopping around on ponies, she is dressed in the latest equestrian styles and making a name for herself in the show ring
as a rising young professional. With Korotkin’s tutelage and guidance, Senft has ridden to great success, including team gold and individual silver at the North American Junior and Young Rider Championships, among numerous other accomplishments. As a professional, Senft rides for Castlewood Farm, as well as running her own S&S Farm and competing her
8-year-old Belgian Warmblood gelding, Azzaro Z. “I’m so lucky. It’s my dream to have a barn in my backyard, and Alan has made this even more possible by giving me horses, entrusting me with his horses and believing in me,” Senft said. “I’ve worked my entire life for this. It’s kind of surreal that it’s happening. I’m extremely appreciative to Alan and to my parents, as well as to my grandpa.” When it comes to clothes, Senft, like most young up-and-coming riders, needs durable breeches and shirts, suitable for riding numerous horses a day, that simultaneously look good for the show ring and don’t break the bank with their price tag. “I am not the type of person who goes out and buys $300, $400, $900 breeches. I can’t afford it; I show almost every weekend,” Senft said. “And for me, it’s not like I show up perfectly clean, get on my horse, show and go home. I show up; I ride six or seven horses on top of showing. I’m helping tack horses up; I’m setting jumps. I get really dirty. I can’t justify spending that amount of money on pants that I’m going to get dirty in, but I still want high-quality breeches. Marysue Jacobs Enjoys Helping Children, Horses & Homeowners By Kendall Bierer
Marysue Jacobs has been a fixture in Wellington for more than 20 years. With her love of animals and children, she is forging a path for success and positivity in the local community. Most recently, Jacobs has shown her support for Wellington through her work with actor Quinton Aaron and the Vinceremos Therapeutic Riding Center. Drawn to Aaron’s anti-bullying message, Jacobs has donated time and money to further the goals of the Quinton Aaron Foundation, including an all-new riding camp for at-risk children. In her day job, Jacobs is one of the region’s most sought-after real estate professionals as the broker at Destiny International Properties. For Jacobs, her passion for children, founded in her love for her daughter and her desire to help create a better future, is what guided her to the equestrian mecca of Wellington two decades ago. In the early 1990s, Palm Beach Polo & Country Club was thriving in Wellington with such celebrities as Prince Charles, Princess Diana and Zsa Zsa Gábor making it a regular stop on their polo tours. Jacobs was hired to put on an event called the Da Vinci Horse Project during the Rolex Cup, and at that time, she fell in love with the world of Wellington, making the decision to move here from Maryland. “We were able to bring all these different people together, and it was great,” Jacobs smiled. “I fell in love with Wellington, and I stayed. I realized that I could be so effective here with the multitude of people I could get in front of to help charities.” Channeling her passion for nonprofits, and combining it with her love for all things equestrian, Jacobs opened her own marketing company in 1994. It was such a success that it stemmed into a national magazine, The Horseman, and two television shows, The Florida Horseman and Real Angels, which ran back-to-back on a local ABC station. Such celebrities as Tommy Lee Jones, Julianne Hough, Dr. Ben Carson, Gregg Allman, the band Sister Hazel, Disney star Cody Linley and Amber Marshall of the hit Canadian televi-
sion show Heartland have worked with Jacobs to promote charities and continue her mission to teach and encourage children that success is a result of hard work and honesty. “We did this to encourage kids that good behavior can get good results, and that fame is not instant and neither is wealth — if you work hard for it, it comes,” Jacob said. She lives by the practice she preaches. “I love what I do in real estate, and I enjoy having a company that prides itself on 24-hour service,” Jacobs said. “You don’t get my assistant, you don’t get a voicemail, you get me. I like the fact that my clients become my friends, and that my business thrives on referrals.” Jacobs has more than 30 years of experience buying and selling equestrian farms, luxury estate homes, land development, new construction, investment properties and foreclosures. With her skilled team, they have been in the top one percent of the nation in sales for nine consecutive years. She has accrued more than $900 million in sales since the company’s inception. Destiny International Properties has donated time and money to many local organizations, including her work with Aaron, an acclaimed actor most notably known for his leading role in the 2009 film The Blind Side. He came to Wellington in November for Horses Healing Hearts’ inaugural Cowboy Up for a Cause event, as well as to visit local schools to share uplifting and inspiring speeches to children affected by bullying. At Cowboy Up for a Cause, which Jacobs sponsored, the introduction was made between Aaron and Jacobs. It was Jacobs’ passion for the children, and her own understanding as a loving mother and generous supporter of Wellingtonarea nonprofits, that she made a connection with Aaron and began formulating the concept with Ruth Menor of Vinceremos for an all-new riding camp for at-risk children. wellington the magazine | april 2016

It was Aaron’s affiliation with helping children that led to him to launch the Quinton Aaron Foundation, an anti-bullying and childhood obesity prevention program that promotes positivity and teaches coping skills to children who are negatively targeted by their peers. He has helped numerous children overcome the struggles of bullying, depression and low self-worth through his talks and the time he takes to correspond and make special visits that can change the course of their lives. With the help of Aaron and his foun-
dation, Jacobs teamed up as a sponsor with Vinceremos to host the first-ever “Taking the Reins” summer camp for at-risk youth. It will be held for three days during the summer of 2016, and Aaron will interact with the kids as a role model for them to be able to identify and relate to. For Jacobs, lending a helping hand to both people and animals whenever she can is simply a part of who she is. More than 200 rescue animals call her farm their home, including dogs, cats, horses, donkeys, rabbits, turtles, tortoises, peacocks and 10 different variet-

Seventh Annual International Gay Polo Week Attracts A Global Audience To Wellington Story by Jamie Saults | Photos by Liz Lamont
By moving the annual International Gay Polo Tournament to the International Polo Club Palm Beach two years ago, founder Chip McKenney expanded Wellington’s global reach beyond the polo mecca of Argentina, which has made the community its seasonal base for many years. As the popularity of the tournament and social event-packed Gay Polo Week grew, word spread to regions of the world not normally associated with polo. Recent participants have come from Russia (including the president of the Moscow Polo Club), France (including the top-rated female pro), Canada, Algeria and Australia, as well as from
more than a dozen states spanning California to Maine. The allure of the seventh annual International Gay Polo Tournament, presented by Discover the Palm Beaches and the Palm Beach County Sports Commission is its uniqueness. The week, which takes place from March 31 through April 3, melds a serious high-
intensity sport with lighthearted fanfare — a combo not frequently seen. “For me, the most fun thing was being able to play polo with different people with a fresh perspective,” said professional polo player Nic Roldan, who competed in the tournament for five years. “It’s as much fun on the field as off it. How often do you get to play a game and find yourself surrounded by drag queens at halftime?” Organized and produced by the Gay Polo League, which celebrates its 10th anniversary this year, the annual tournament and social events attract a widely diverse group from the lesbian, gay,

bisexual and transgender polo community and friends. The GPL began with one member in one city and now represents a worldwide network of players. It was created as a vehicle for the gay community to enjoy the challenging sport of polo. Representing a wide range of ages, backgrounds and skill levels, the GPL community shares a love for adventure, travel and fun, complemented by a passion for sport. The league is noted for its camaraderie and creating a fun and exciting environment for LGBT community members and their friends to experience the sport of polo. “When I founded the Gay Polo League 10 years ago, I believed polo had all the ingredients to become a great sport for LBGT people to participate in,” McKenney said. “It is so exciting to be celebrating our 10th anniversary, plus I am confident we have so much more coming up in the next decade. Plans are underway for creating and producing international gay polo tournaments in other countries. In fact, we are currently planning a GPL tournament in Argentina.” Gay Polo Week has become one of the most sensational events in Wellington. In addition to a world-class polo tournament, the event features an extraordinary tailgate competition with elaborately decorated tailgates that are months in the making.
In 2015, the Best in Show winner was “Gert’s Salon” with “Gert,” a well-known social event personality in Los Angeles, plus a bevy of “hair stylists” working their magic on customers. In previous years, there was a Titanic tailgate with a string quartet, which included the exact brunch served on the ill-fated ship the day it sank. Another winner was a local wild animal conservation organization showcasing a jungle-themed tailgate booth with a live cheetah. This year, the tournament offers spectators the opportunity to enjoy the Cherry Knoll Farm VIP tent, which is located field side at midfield, offering an open bar and delectable gourmet selections from the official caterer, Aaron’s Catering of the Palm Beaches. The events kick off Friday evening, April 1, with the Polotini Party, hosted by Patricia Quick at the Mallet Grille at IPC; moving on the tournament itself on Saturday, April 2; and wrapping up with the GPL Brunch on Sunday afternoon, April 3, also at the Mallet Grille. Patrons who attend the brunch have a premier location from which to watch the action of the 2016 U.S. Open Polo Championships. Teaching The Next Generation Never Gets Old For Discovery Key’s Julia Janczyk Story by Chris Felker • Photos by Abner Pedraza
For Julia Janczyk, almost 20 years into a career of doing what she loves, it still never gets old observing her favorite thing about education: seeing life and learning through her students’ eyes. Teaching is something that Janczyk, one of the original faculty members at Discovery Key Elementary School, always wanted to do. “I started in 1996. My first school was Starlight Cove Elementary School,” she recalled. “I was only there for a year… and then Janice Andrews, who’s now up in the district office, hired me at Liberty Park Elementary School. It was where I did my student teaching, and it was where I really wanted to go.” After about four years, she began feeling the itch for new surroundings. “I actually had a little girl in my class, and I didn’t know that her father was a principal and he was opening up Discovery Key,” Janczyk said. Coincidentally, the school was seeking teachers, and she had looked into the opportunity. “They were accepting new teachers, and I wanted to be part of the adventure of starting a new school,” she said. “I was his last interview for the day, and he said, ‘So, I can’t go home unless I hire you. Do you want to come to Discovery Key?’” It was an offer she was quick to accept. “The minute I arrived, I knew I was home,” Janczyk said. “I love it. It’s just a wonderful school.” She has been at the school as long as it has been open — 15 years. She has been teaching at her preferred secondgrade level for just a few years. “Most of my career was in fourth grade, but I al-

ways wanted to get into second grade,” Janczyk said. After a brief stop at third grade, she got that wish. “It’s just that after that period of time, you need a little change,” she explained. Janczyk has lived in South Florida for 45 of her 51 years and graduated from local institutions: John I. Leonard High School, Palm Beach Community College (now Palm Beach State College) and Florida Atlantic University, where she earned her degree in education in 1995. Now divorced, she is happy to devote all her time to her career. “I have a niece and nephew I adore,” she said. “But when people ask me if I have kids, I always say, ‘I have 19 of them, between the ages of 7 and 8,’ so yes, I do!” She fills a few other roles at Discovery Key, too. As the faculty sponsor of the safety patrols, she still gets to work with older children, and that responsibility also lets her in on one perk of teaching that she loves. “I’ve taken the safety patrols to Washington, D.C., for 18 years,” Janczyk said. “I like having them in second grade, and then I can still see them mature, and I get to have that wonderful experience with them for a whole year, being their safety patrol sponsor, in fifth grade.” The annual field trip is very special. “It’s a really great trip. You get to see life through their eyes, and you
see them explore things,” Janczyk explained. “Every time we go, someone sees something different. It’s a lot more than just a Washington, D.C., trip now. It’s the kids growing; it has become a life experience. That time that they’re on the train, they just grow so much. I can’t even put it into words.” It’s just a brief, Thursday-throughMonday voyage. “But for most kids who go, this is the first time they’ve ever been away from their parents, so it’s a huge thing,” she said. “It makes me happy that the parents trust me with their kids.” Going on trips with students is always an exciting experience, Janczyk said. “With my little second-graders, we just go on small field trips,” she said. “We might do the same trip year after year, but you still can see it through their eyes, and to know that you’re a part of that learning, it’s just a very neat thing.” Janczyk is also the school’s liaison to the PTA. “I go to the board meetings and I share different points of view of the teachers,” she said. “The parents quite often want to know how the teacher feels and to share their own ideas. That helps make our PTA as strong as it is. We get a lot of ideas from parents.” Other contributions she is glad to provide include coordinating contributions from all the classes and teachers for the Dolphin Digest, a newsletter that Discovery Key students take to their parents to keep them informed on events, fundraisers and school news. Janczyk started it herself about 10 years ago. She is part of the school district’s

wellington | education Math Cadre program, acting as an intermediary at periodic training sessions with fellow teachers who are implementing the new Common Core standards, and bringing back to her colleagues all the latest teaching strategies and methods in helping students advance. An especially fulfilling part of her job is guiding up-and-coming educators of the next generation into a rewarding career. “I’m a mentor through FAU, mentoring in their student teacher program. I get a student teacher every semester, and I just finished with one who did her student teaching experience in my class,” Janczyk said. “I love that, because my mentoring teacher was such a strong, positive role model for me.” She would love to, someday, teach a student at Discover Key, who later works as a student under her tutelage and then becomes a teacher working alongside her. “I’m hoping that that will happen at some point,” she said, before pausing. “Actually, our after-care director at school, I had her in my class, and whenever we go to Washington, she brings out pictures of her and me when we went to Washington, D.C., together. So I didn’t mentor her, but we work together all the time now. She’s just a great girl, and I keep trying to talk her into getting her teaching license.”

Veterinarian Dr. Kathleen Spillane Treats Local Animals In Need Around The Clock

Dr. Kathleen Spillane isn’t always sure what issue your pet may have when it first arrives at the Palms West Veterinary Hospital, but after a quick diagnosis, she is ready to take care of it. The veterinarian has treated a lot of pets needing emergency medical care, and there hasn’t been one yet that she’s shied away from. “I’d say 98 percent of the pets that we treat here at the hospital are cats and dogs,” said Spillane, 30. “We’ve had a guinea pig with a runny nose and hamsters that need their toenails trimmed. Those are the pocket pets we’ve tended to, but the majority of the pets we treat are cats and dogs.” Open 24/7/365, Palms West Veterinary Hospital is family-owned by Dr. Ira Grossman. Spillane is one of several veterinarians on board who can be at the hospital at the crack of dawn, or there late at night, even overnight. “We arrive in the morning, and the doctor who was on overnight tells us about the cases that are in the hospital that morning,” Spillane said. “If there is any follow-up that needs to be done, we tend to that immediately. The more common emergency patients arrive at night.” Spillane, who graduated from veterinary school at the University of Pennsylvania in 2012, has been working at Palms West Veterinary Hospital for almost two years, and she loves what she does. “I’m very thorough and understanding,” Spillane said. “This career gives me an opportunity to keep on learning for the rest of my life. I like the fact that when I’m helping these pets, I’m also helping their owners.” Seeing animals that are in need of immediate medical attention can be overwhelming and emotional at times. The toughest part is the euthanasia process. “We get a lot of compliments
here for getting people through that process,” Spillane said. “We make it as comfortable as we can for the animal, and that makes it comfortable for the owner.” If a scheduled anesthetic procedure, a surgery or a teeth cleaning needs to be done, the pet gets dropped off at the hospital and is tended to immediately. Sometimes there are more dramatic situations where a dog arrives in a comatose state. “You have to talk to the owner and ask, ‘Why has this happened?’” Spillane said. “The dog could be paralyzed, it could be having a seizure, or it could be severely dehydrated from a heat stroke, or a gastrointestinal upset. We make sure to get your sick dog some intravenous fluids and get it as hydrated as possible.” There are also common cat emergencies, such as when a male cat cannot urinate. Toxins can build up in the cat, and it’s being poisoned from inside, Spillane explained. “We feel the bladder, and if it’s hard, if the cat is awake, that can be painful. We have to give the cat a catheter through the urethra and into the bladder. They need IV fluids to flush out their system,” Spillane said. It’s not an easy job, but it’s a rewarding one for Spillane when things are successfully taken care of. No matter what the problem is, each veterinarian does his or her best to stabilize each animal. At least one doctor and one technician are present from 8 p.m. until 8 a.m., the emergency hours. Normal hours are from 8 a.m. to 8 p.m. every day, when two or three doctors are available. Grossman, 63, oversees the entire
practice. He runs the family-owned business with his son Glen, co-business manager with his fiancé Melissa, and Grossman’s wife, Marta, who works on Saturdays. Grossman’s other children, Neil and Andi, are currently in veterinary school. Grossman speaks highly of Spillane. “She’s my protégé,” he said. “She’s a great vet who performs internal medicine, surgery and critical care here. When two of your main interests are real estate and all things equestrian, is it any wonder that you wind up in Wellington? For Francis Hoet, a Realtor with Illustrated Properties Real Estate, the community was a natural destination, considering the life she led before arriving here. “I have double nationality, Belgian and Venezuelan, and received my bachelor’s degree in education in Caracas, Venezuela,” Hoet recalled. “My passion for real estate stems from my family. We have a long history in the real estate business in Latin America, Europe and the U.S., both as investors and owners of real estate brokerage firms. I began riding and showing in the jumper ring in 1991 in Caracas, where I met my husband, Cesar Hirsch, who is an FEI international equestrian judge and owner of Equis Boutique. David has spent the last 13 years working with a prominent Palm Beach design firm. Starting with the nuts and bolts of space planning and logistics, and moving to having regular design clients, he was also heavily involved in the firm’s participation in charitable events. David has installed multiple Red Cross Designer Show Houses, the Veranda Show House at the Greystone Mansion in Beverly Hills, the Adamsleigh Estate for the Junior League of Greensboro, N.C. (where his personal artwork was also shown), and even personally produced pet clothing and table linens for the Broward County Humane Society PAWS To Help fundraiser at DCOTA in Dania. Having a keen eye for line, balance and color, David was also the stylist for all of the firm’s photography for publication. “At the end of the day, design should be fun,” he explains. “The client needs to enjoy the process. Does Size Matter?
Does size matter? Yes, it does! I can hear your knickers twisting. We are talking about lamps and light fixtures here. The average homeowner will often ask what size fixture is needed and what height it should hang. There are a few general guidelines to follow. That being said, there is always going to be an exception to the rule. Sometimes unusual fixtures, unusual spaces or the basic design concept will result in dropping the rules to make a space the most it can be. If you are going to hang a fixture above a table or an island, the general rule is that the light should be at least 12 inches smaller than the surface below. For standard-height rooms (8 feet), the fixture should hang between 30 to 36 inches above the surface. Rule break: add 3 inches for every foot above the 8-foot height. For example, a 10-foot ceiling could have the fixture 36 to 42 inches above the surface. If you are hanging fixtures over areas that can be walked under, they need to be at least 7 feet from the floor. Also, check your local electrical and safety codes, which could require a higher measurement. Rule break: if everyone in your family is 6-foot, 5-inches tall, raise the fixtures so that your family will not feel like the sky is falling on them. If this is the case, and you have low ceilings, consider flush-mount fixtures to give you the most headroom in the space.
Lamps have their own set of rules. Table lamps in living rooms are generally 26 to 34 inches high. Rule break: table and seating heights vary. The goal is to have the bottom edge of the lampshade below eye level when seated. You will need to adjust accordingly. Buffet or console lamps average around 36 inches. Bedside lamps are good around 30 inches. Wall sconces used as general lighting, like on a staircase or in a hallway, should be about three quarters of the wall height from the floor. In these spaces, where people are walking by the fixture, make sure that it does not project more than 4 inches from the wall for safety. Rule break: again, if everyone is tall, they do not want to look down at a bare bulb, so raise the sconce. Wall sconces to flank artwork or mirrors should be installed centered with the height of the piece. See above rule break for the tall folks. For scale, remember that the closer you will be to the item being lit, the smaller the sconce should be. This means that bathroom mirror sconces should be on the smaller side because you will be standing (and leaning) directly in front of them when in use. Giuseppe’s Italian Ristorante Features Zuppa Di Pesce Dish Story and Photos by Julie Unger
Authentic, homemade Italian cooking is an art, and Giuseppe’s Italian Ristorante has been bringing its familiar meals to Wellington since 2007. The restaurant now has two locations, both offering the same delicious dishes that the community has enjoyed over the past decade. Owner Joe Cooper chose Zuppa Di Pesce as the restaurant’s signature dish. “It’s our flagship entrée,” he explained. “It covers all of the seafood that we sell, and it’s an iconic Sicilian dish.” Everything that comes out of the kitchen at Giuseppe’s is freshly made, Cooper said. “We make everything to order,” he said. “It may take a few more minutes, but you know the old saying, everything worth waiting for is worthwhile waiting. Good things come to those who wait. That’s our motto.” Zuppa Di Pesce at Giuseppe’s comes with jumbo shrimp, calamari, clams and mussels sautéed with garlic, basil and olive oil in a marinara wine sauce, served over linguine. “It usually means fish soup,” Chef Joseph Marchese said. “It was a traditional dish back in
the old days. People used to come into port — because Sicily was a port town — and basically, they would take all of the leftovers, throw it into a pot and make a soup out of it, and it became fish soup.” This would be a typical meal in Sicily, but here in Wellington, Giuseppe’s does things a little differently, while keeping the authentic flair. The meal is one of the restaurant’s most popular dishes, Marchese said, and should be one of the signature dishes at any good Italian restaurant. “The seafood combination just tastes good,” he said, pointing out that other pastas besides linguine can be used. Other entrée favorites include Pasta Giuseppe, Veal Saltimbocca, Chicken Margherita, Spaghetti alla Carbonara, Fettuccini alla Panna and Fettuccini Florentina. wellington the magazine | april 2016

“They’re all dishes I’ve made and added to our menu,” Marchese said. “Many of them are traditional, and some of them I’ve put my own little twist on.” For example, when making Pasta Giuseppe, Marchese added ingredients together to find something that worked well. “We have some traditional entrées. Zuppa Di Pesce is very traditional, and Veal Saltimbocca is very traditional,” he said. For the most part, food at Giuseppe’s is traditional Italian, “how grandma used to make it.” An example would be with the Chicken Parmigiana.

He was with the Forest Hill Blvd. location before it even became Giuseppe’s, starting in 2003. When the ownership changed, and the restaurant became Giuseppe’s, Marchese worked to revamp the menu and has been there ever since. The diverse menu, featuring appetizers, salads, soups, pasta, baked pasta, Italian dishes, specialty dishes, chicken, veal, steak and seafood, as well
