TERNATIONAL EQUESTRIAN CENTER THE STADIUM AGDF The Adequan® Global Dressage Festival (AGDF, January 14-Apri 2, 2016) is one of the world’s largest international and national dressage circuits featuring seven CDI events. Included are four FEI World Cup qualifiers, one 4* and one 5*, the only FEI Nations’ Cup Series CDIO in the Western Hemisphere, and two U.S. National Events. The AGDF is offering more than $650,000 in prize money for the seven international competitions, making it one of the richest circuits in the world. In addition to the facility being home to world-class dressage, it will also host exciting jumper derbies and grand prix events, horse exhibitions, and equestrian clinics. The Stadium at PBIEC also houses the Palm Beach Riding Academy.

With nearly every top player in the world competing in this year’s tournaments, the International Polo Club Palm Beach will be kicking off its “Lucky 13” season and once again be home to the world’s best polo action. As we do every year, Wellington The Magazine highlights just a few of the many elite players who will gallantly lead their steeds down the fields in pursuit of eternal glory in Faces of Polo 2016. It’s going to be a season to remember, and in this polo-themed issue, you can find all you need to know to plan your winter. Learn all about the new seating options at IPC, get tips for the perfect tailgate and take a peek at “haute to trot” fans of polo fashion. Getting all of this together and running smoothly takes a great team. With all the pageantry front and center, it takes a village to manage all the behind-the-scenes aspects of the winter polo season. We take an intimate look at some of the key players on the IPC management team. Of course, polo in Wellington is far more than just IPC. Helping the Wellington polo community grow by leaps and bounds is the Grand Champions Polo Club, also featured this month, where owners Marc and Melissa Ganzi have been working to extend the polo season year round. On our cover is polo star Jeff Hall. Wellington The Magazine caught up with Hall to get a look into the daily life of top polo ponies. Creating the perfect polo pairing requires a unique symbiosis created between two breeds of athletes: the human mallet-swingers and their equine mounts. What does it take to make that happen? Hall offers his unique insight. We also preview two very important events. On Friday, Jan. 22, supporters of the United States Equestrian Team will gather in Wellington for “Rockin’ Rio,” an Olympic and Paralympic Games benefit led by Honorary Chairs Patti Scialfa and Bruce Springsteen. Hosted by the USET Foundation, this fundraising event will be one of the main sources of financing for the team’s trip to Rio de Janeiro. Meanwhile, coming in February, the World Cup of Wellington will take place at Deeridge Farm, opening up that lovely private facility to the outside world. Other features include a look at the unique partnership between Misha Rodzianko of the Moscow Polo Club and Joey Casey of Palm City Polo. Rodzianko seeks to build the sport of polo in his native Russia, and that requires him spending winters here in the Wellington area. Chayse Wachtel has more than a decade of child care experience. Paired with her lifetime love of horses, she has merged her passions to create Saddle Sitters, a new Wellington-based company providing concierge child care to the equestrian industry. You can learn more in this issue. Each new year brings new adventures. In 2016, we are proud to include two new monthly department features for our readers. Our Wellington Education series will profile some of the many educators who are expanding the minds of today’s students and tomorrow’s leaders. We kick off with a profile of Daleen Torres of Palm Beach Central High School, who shares her love of the Spanish language with her students. Also new for 2016 is the Wellington Table Signature Dish series, which will focus on the signature dishes at our area’s many fine dining establishments. The 32nd annual Wellington Holiday Parade rolled down Forest Hill Blvd. on Sunday, Dec. 13. The event, produced by the Central Palm Beach County Chamber of Commerce and the Village of Wellington, featured more than 100 parade entries with close to 3,000 participants. There were more than 20 large floats. Florida Lt. Gov. Carlos Lopez-Cantera participated in the parade, and the Wellington Wild 13U softball team and the Wellington All-Stars 13U baseball team served as grand marshals in honor of their amazing seasons.

The Grand Champions Polo Club hosted two big matches Saturday, Nov. 28. The day led off with the Carlos Gracida Memorial Legends of Polo Tournament, with eight members of the Gracida family taking the field. The team of Meghan Gracida, J.J. Celis, Memo Gracida and Julio Gracida led Les Diables Bleus to a 4-3 victory over Tramontana’s Weston Gracida, Alejandro Gonzalez Gracida, Rubén Gracida and Carlitos Gracida. Next up was the 24-goal USPA International Cup, featuring South African players Selby Williams, Chris MacKenzie, Gareth Evans and Tom de Bruin against Marc Ganzi, Jeff Hall, Nic Roldan and Julio Arellano of Team USA. Large crowds were on hand as the Wellington Chamber of Commerce presented its Winterfest 2015 on Saturday, Nov. 28 at the Palm Beach International Equestrian Center. The evening included a Grand Prix show jumping competition, along with entertainment by superstar Vanilla Ice, Michaela Paige from The Voice and others. There was also winter-themed fun, an ice skating rink, parachutists, a food and wine expo, and drawings to determine 26 of the charities that will take part in the 2016 Great Charity Challenge.

Instead of using ‘pharmacy’ (or ‘green pharmacy’ of vitamins and hormones) to cover up your symptoms, I prefer a Functional Medicine approach to make your body work properly, the way it did in your 20’s.” “Just up to a few years ago, I was able to eat great tasting food without running to the bathroom, drink champagne at charity events, and still be able to play tennis the next day. Now I’m just spent.” “I’ve seen all this before, and I’m confident we can get you back to optimum health. Let’s finish off our assessment. Besides my history and physical exam, there are some tests I need. Even though you have a concierge physician who did a screening panel, I need to look in depth at your adrenals, thyroid, and other hormones. Food allergies and dysbiosis (bad bacteria in your gut) can cause that bloating, and vitamin insufficiencies are common enough that we have to test for those as well.” “Anything we can start off now?” “Yes! I’ve been practicing this way for over a dozen years, and based upon what I know now, we can start with a little of everything: behavior changes, diet, exercise, supplements, stuff like that.” I continued, “You

I have a ‘detox diet’ handout that mentions safe foods to eat, but if you just think ‘protein and colorful vegetables and fruits’, you’ll do okay. Before you leave, I’ll teach you a stretch that decreases that ‘pouch’ at your beltline, and there are a few vitamins that are so obvious for you to start with (but safe to take too).” “But what about that IV therapy that Jena told me about?” “When patients are really sick, or are trying to get the most optimal results yesterday, I do offer injections of vitamins, minerals, glutathione, and other nutrients. For example, iron injections rapidly help hair growth, brittle nails, fatigue, memory/concentration, and muscle cramps (restless legs).” Celeste’s testing did show causes for all her symptoms and on her second visit, a plan specific to her was put in place. Three months later, she was glowing and her visits were now spaced out to where she only had to be seen once every six months. “Next week you get to see both my husband and daughter. ‘Rockin’ Rio’ Will Provide Crucial Support For The United States Equestrian Team By Rebecca Walton
This summer, the United States will send four teams of athletes to the 2016 Olympic and Paralympic Games in Rio de Janeiro, Brazil, in hopes of reaching the top of the podium. To achieve this goal, the athletes, horses and support teams must not only train and prepare, but also be away from home for three weeks in a foreign country. With no government support, this goal is made possible only by the help and support of the United States Equestrian Team (USET) Foundation. On Friday, Jan. 22, supporters of the team will gather in Wellington for “Rockin’ Rio,” an Olympic and Paralympic Games benefit event led by Honorary Chairs Patti Scialfa and Bruce Springsteen. Hosted by the USET Foundation, this fundraising event will be one of the main sources of financing for the trip to Rio de Janeiro. Serving as the benefit chairs for each discipline are: Dressage Chair Elizabeth Juliano and Vice Chairs Akiko Yamazaki and Kimberly Boyer; Eventing Chair Jacqueline B. Mars and Vice Chair Gloria Callen; Para-Dressage Chair Margaret Duprey and Vice Chair Rebecca Reno; and Jumping Chair Elizabeth Johnson and Vice Chairs Robin Parsky and Jeannie Tisbo. Scialfa, a USET Foundation trustee,
and her husband, legendary musician Bruce Springsteen, are the parents of Jessica Springsteen, who has successfully competed at the highest levels of show jumping and represented the United States on winning Nations Cup teams internationally. The family believes strongly in supporting United States athletes in their goal to bring home medals. “We are proud and excited to help bring awareness and much-needed funds for our team in this Olympic and Paralympic year,” Scialfa said. “We all know how hard our riders train and the many years of experience it takes to reach this pinnacle. ‘Rockin’ Rio’ will be a fabulous and fun party and a wonderful opportunity to honor and celebrate the United States Equestrian
Team with an unprecedented night of support.” In addition to cocktails, dinner and dancing, guests will participate in an exciting live auction. A few of the auction items will include a VIP experience at the Kentucky Derby, a custom animal portrait by Sharon Lynn Campbell and a week on Martha’s Vineyard in Edgartown at one of the island’s most coveted summer homes. There are enormous costs associated with the 2016 Rio Olympics and Paralympics for American equestrians, including hotels and transportation for the athletes and horses. The budget for the 2016 games is $1.8 million. The money raised during the Jan. 22 event in Wellington will be crucial to the teams’ success in Rio. wellington the magazine | january 2016

port and backing and also having the financial support allows us as athletes to focus on our job, which is doing the best ride possible and hopefully bringing home a medal. With the support of the USET Foundation, I think it allows athletes to feel that solidarity going into a major competition.” Equestrian sport at the global level is becoming more and more competitive, and without the financial support of the USET Foundation and its contributors, the United States could not match up. Having the financial resources allows the sport in the U.S. to remain competitive by increasing the number and intensity of the programs that are necessary to make standing on the podium a reality. “Events like ‘Rockin’ Rio’ are very important and a key to our success, not only as fundraisers, but to raise interest and enthusiasm, which helps the team bring back medals,” three-time Olympian McLain Ward said. USET Foundation Executive Director Bonnie Jenkins expects an amazing evening. “It’s going to be an incredible
evening, and we are definitely expecting a sellout,” she said. “The night will feature a fabulous live auction, a phenomenal band and, of course, Patti and Bruce as our honorary chairs want to help make this event a record-setting fundraiser for our teams.” Make sure to mark your calendars for this event, which will start at 6 p.m. at Louisburg Farm in Wellington. The India Grill + Bar is the home of the best Indian food in the Palm Beaches! If you’ve never tried Indian food, you don’t know what you have been missing. I became a fan of Indian food in the early 1980s at a Christmas party hosted by an Indian doctor in Philadelphia, and I’ve been addicted ever since to the wonderful flavors of India. Let me make it very simple for first timers. I would highly recommend the following. For starters, try the Onion Bhajee ($5.95), the spicy Indian version of the blooming onion, but far better, along with the Garlic Naan Bread ($3.95). For an entree, I would recommend either Chicken Tikka Masala ($16.95), or the incredible Mixed Grill Platter ($25.95), an assortment of Tandoori grilled shrimp, lamb chops, chicken Tikka and Malai lamb, or any delicious curry dish ($11.95 to $18.95). They are simply amazing and large enough to share. Next to curry, naan bread is as Indian as it gets, and the garlic naan at India Grill + Bar is a must — then again, any and all of their curry dishes are my favorites and will soon become yours. I travel around the world and always seek out an Indian restaurant while on vacation. My travels include New York City, where you will find some of the best Indian restaurants in America, and my travels to England. There are 2,100 McDonald’s restaurants in England and 2,200 Indian restaurants, where you will find some of the best in the world. Fortunately, you and I only have to travel to Royal Palm Beach to experience the wonderful flavors of India! India Grill+ Bar is vegetarian/vegan friendly. Enjoy their eight popular Vegetarian

There are more than 70 authentic offerings from which to choose, so if you are a connoisseur of Indian food, then all you need to do is either try something you have never heard of (I do this all the time) or close your eyes and point. Either way, you are in for an incredible treat. As good as the dinner is, dessert is something else entirely. Here, I would order Mango Kulfi, a traditional Indian mango ice cream... Try it, and welcome to India. Over the years, I have become accustomed to the best Indian restaurants, and India Grill + Bar is one of the best. I will be going back very soon, very often! In addition to the main dining room, there is much more than meets the eye, including a private dining area and bar that accommodates up to 90 guests for holiday parties, banquets, business meetings and even weddings. The bar area is a great place to host a social event for upward of 50 guests. My favorite is the private cozy dining room — this well-appointed area is top notch for a VIP party that will impress up to 18 of your guests! The 2016 winter polo season at the International Polo Club Palm Beach thunders in for four months starting in January — and club officials are calling it the “Lucky 13” season in honor of IPC’s 13th year hosting the world’s best high-goal polo action. But by all accounts, creating 17 weeks of the highest-goal polo played anywhere in the world is hardly due to luck — it takes months of strategic planning and hard work. fortunate in growing not only the sport of polo in Wellington, but also developing an ever-growing spectator base,” President of Club Operations John Wash said. “It’s really a combination of luck, talent and hard work that will drive the success of the Lucky 13 polo season, as well as creating an environment that will continue to grow the sport.” Luck or not, no one can argue with the success of the past 12 years at IPC,

The club hosts four 20-goal tournaments and three 26-goal tournaments over a 17-week period, from January through April every year, with polo played almost every day of the week on one of several fields. Three of the most prestigious 26goal U.S. polo tournaments have been awarded to the club by the United States Polo Association: the C.V. Whitney Cup (since 2002), the USPA Gold
Cup (since 2007) and the top crown of American polo, the U.S. Open Polo Championship (since 2004). IPC attracts the most elite polo players to ever play the game, and seven of the world’s eight 10-goalers will compete in Wellington this season. Meanwhile, IPC has grown an enthusiastic spectator base that has increased attendance by 185 percent over the past three seasons, attracting local residents and statewide fans, as well as jet-setters

Tailgating is one of the oldest and most traditional ways to view the excitement of a polo match in a festive and social manner. Before grandstands and tents were set up, players and spectators often parked their cars on the sidelines and let down their tailgates for sitting or setting up food stations and bars. Fast-forward a few decades and you’ll find that tailgates have been elevated to an upscale art form at Sunday polo matches. The International Polo Club Palm Beach features 50 white tents lining the emerald-green field. Servers set up elaborate spreads under the shade, champagne is chilled in silver buckets, fresh flowers adorn linen-covered tables, and guests often enjoy the match in color-coordinated, monogrammed director’s chairs. It’s the perfect way to spend a Sunday afternoon outdoors watching the exciting and heated competition on the field. Here’s the inside scoop on throwing the ultimate tailgate party from a few passionate polo enthusiasts who set the pace every Sunday during the season. Palm Beach attorney Don Dufresne is not only an expert in all legal matters concerning the equestrian industry, he is also a former polo player and a consummate Sunday tailgater, with eight seasons under his belt. Dufresne starts procuring his supplies months prior to opening day and has created a savvy system to make the most of every match. “My law practice keeps me busy during the week, so I’ve learned to minimize the amount of time spent planning during the week to be ready for Sunday,” Dufresne said. He has dedicated shelves in his garage with different colored bins that hold his supplies — from the copper

bucket for champagne and wine to the silver ice bucket. For his upscale setup, he loads his Suburban with two tables; 12 director’s chairs of varying heights; two coolers; two bins that hold liquor, wine and champagne; and one bin for plates, glasses, linens and utensils. His signature statement is two flagpoles with hurricane flags waving in the wind, as a tip of the hat to his law school alma mater, the University of Miami. What is his mix of guests? “I entertain clients, friends, elected officials, a few neighbors and business colleagues,” Dufresne said. “It’s a great way to catch up with folks, and it’s the perfect way for me to entertain and enjoy a day outdoors. My tailgate neighbors are former polo players, so we visit back and forth, and guests are always welcome to stop by.” You can usually catch an NFL football player at his well-stocked bar, a polo player or two, and maybe a couple of MLB players. George DuPont, executive director of the Museum of Polo, and his wife, Brenda, call themselves “seasoned tailgaters,” since they have been on the scene at IPC since opening day 13 years ago. Brenda DuPont loves the relaxed atmosphere for entertaining, as it suits the novice spectator as well as the avid polo fan. Her system kicks into gear on Wednesday, when she starts cooking

and preparing for the Sunday match. “I craft every dish from scratch,” DuPont said. “We don’t pull out bags of chips, or platters from the deli. Everything is a culinary statement, and I mix it up from week to week.” Look for caviar pie, mini quiches, beef tenderloin, shrimp cocktail, and fruit and cheese platters, as well as DuPont’s key lime cheesecake and kitchen sink cookies. Toni May and her husband, Tim Garman, love introducing the thrill of a polo match to friends, business associates and potential clients. “People are mesmerized at the field action. The ground moves under your feet when the horses are thundering down the field,” May said. “Other than front-row seats at an NBA basketball game, there is no other sport where you are so close. You can actually see the facial expressions of players and feel the emotion.” May loves to theme every Sunday, adding décor touches to match the se-

Polo is a quintessential experience, complete with high-stepping fashion, celebrities, posh guests, magnificent athleticism and clinking glasses. With all the pageantry front and center on the field and throughout the property, it takes a village to manage all the behindthe-scenes aspects of this equestrian undertaking. Here’s an intimate look at some of the key players on the management team at the International Polo Club Palm Beach. With polo being the sport of kings, John Wash, president of club operations, acts as sultan of the Sunday scene. Heading up this equine adventure, Wash greets guests and members and welcomes VIPs with a warm handshake and a familiar smile every Sunday of the polo season. Wash brings a wealth of experience to all aspects of golf, resort and country club service. After graduation from the Culinary Institute of America in Hyde Park, N.Y., he transitioned to being a general manager and successfully headed up some of America’s finest private country clubs. At IPC since 2007, Wash has seen growth and excitement not only for the club, but also for the sport of polo. Wash is first and foremost a ubiquitous master of ceremonies, opening up the competition with the coin toss and happily mingling with guests on the field or in the club.

President of Club Operations As director of polo operations, Jimmy Newman is a 40-year veteran of the sport. Since his first part-time job with the Royal Palm Polo Club, Newman has been around horses — from working as a groom and learning to ride and understand polo to owning horses and playing in tournaments. The global scope of high-goal polo has provided Newman with a world of experiences and travel. Newman arrived at IPC in 2003 with an impressive history in polo administration. In addition to managing the polo at IPC during the winter months, he also directs the polo at other clubs across the country during the summer. He has seen the polo stars of today grow up and achieve success through the international ranks. Newman’s career highlights include managing five decades of U.S. Open Polo Championships and the legendary 1980 Cup of the Americas. Together, Newman and Tony Coppola, the voice behind Sunday polo, deliver enthusiasm, spot-on play-by-play commentary and witty banter for every polo match. wellington the magazine | january 2016

The heart of any club experience is the food. “Food should be great company,” Executive Chef William Sellner explained. For the past eight seasons, Sellner has been cooking delicious dishes for the club members and 25,000 grandstand guests attending polo matches. From running all the restaurants and preparing sandwiches and snacks for the spectators, to masterminding the member Sunday brunches and dinners and Friday night lobster buffets, Sellner is a culinary tour de force. Despite his quiet and calm demeanor, his food speaks volumes to the discriminating members and guests. On Sundays, everyone is welcome, and the club takes on a neighborhood feel. The other six days of the week, Pickens creates a private haven for members, their families and friends. Pickens is a gracious ambassador for IPC, along with her entire food and beverage team, who have worked together for more than 10 years.
Farish Ensenat has served as the club’s special events manager for the past nine years. After graduating from Cornell University in 2001, Ensenat worked at the White House doing advance work and events, including campaign and inauguration details for First Lady Laura Bush. At IPC, Ensenat is the stage manager for Sunday Polo. She outlines Sunday match timelines and writes a script for the announcer listing VIPs and special guests. She coordinates logistics for the singing of the national anthem and pregame festivities, autograph sessions, team tent setups, the parking of horse trailers and the unloading of ponies. Ensenat also makes sure that the tournament trophies are polished, displayed and ready for the awards ceremony. Special events hosted at IPC also fall under her purview, including the International Gay Polo Tournament, equestrian shows and national sporting events during the summer and fall months. “Putting the puzzle pieces together is what I do,” Ensenat said. 87

As box office manager, Maria Feola wears many hats. Her work schedule of 60-plus hours a week during season has her at the office from 6 a.m. to 10 p.m. daily. It’s almost ironic that her schedule parallels the protocol of a professional polo pony. A veteran of the club since its inception in 2003, Feola handles all logistics of box-office ticketing (both public and private member transactions), group sales, valet, parking, police details and permitting, web site instructions and managing a staff of up to 100. On game day, Feola is in constant motion. Not only does she control the tickets for 8,000 to 10,000 guests and members each week, she and her team stand guard over the stadium, assuring that all guests are in their correct seats. A native of Venezuela, Feola is instrumental in making sure the Sunday polo matches run as smoothly as possible behind the scenes.

At the club since 2012, Matthew Tarantino manages the IPC’s community philanthropy and catering sales for all social events up to 250 guests. Tarantino is gregarious, making him a natural for working with discerning clients. His savvy guest service skills were developed from years of being a personal assistant, real estate agent, tour guide and educator. Tarantino cultivates events and good will for IPC. Creating A Top Horse And Rider Pairing Requires Hard Work And Discipline By Christine DiRocco
U
nlike most sports, polo depends on the symbiosis created between two breeds of athletes: the human mallet-swingers and their equine mounts — majestic steeds that carry them to glory during the high-goal polo season in Wellington. What does it take to make that happen? Wellington The Magazine caught up with polo star Jeff Hall to get a look into the daily life of top polo ponies. Like every professional sport, it’s a high-stakes, intense and extremely competitive athletic endeavor. The international schedule — and rivalry — requires diligent training to sustain 96

stamina and prowess. These select athletes train hard, practice regularly, live a healthy lifestyle, work with trainers and specialists, and maintain their nutrition and diet to perform like machines for each and every match. As competitors, polo ponies are elite athletes as much as any human player on the field. The horses are referred to as “ponies” even though they are full-sized horses, ranging from 14.2 to 16 hands high at the withers, and weighing 900 to 1,100 pounds. Most are Thoroughbreds or Thoroughbred crosses, and are considered “hot-blooded” horses, known for agility, speed and spirit.
Polo is a team sport, a partnership not only between players on the team, but also a special relationship between the players and their mounts. It is a synergy based on trust, strength, laser focus and preparation. Polo ponies are exemplary team players, and as such, are key to any polo team’s winning achievements. Hall, a top American polo player, sports a 7-goal handicap. He has been playing professionally since age 12, and as a seasoned player and horseman, Hall provided keen insight into the daily lives of polo ponies. Hall owns approximately 100 horses, most living at his ranch in Houston.

Of those, about 20 horses make up his preferred string for polo matches and travel with him to Wellington, as well as tournaments across the country and the globe. Hall understands his horses’ skills and trusts them to be worthy allies on the field. Of those 20 horses, eight high performers will accompany him regularly onto the playing field. As with any accomplished sportsman, the key to success is preparation and training. These horses are so well-conditioned, they can stop and turn on a dime to accommodate the dynamic play of the game. Horse and player become a competi-
tive force of speed, fluidity in motion, strength and maneuverability. The average age of a seasoned polo pony is 6 to 13 years. Younger horses, starting at about age 3, have to play polo to get better, and won’t play steadily until, according to Hall, they are “ready for the fire of the game.” As horses mature into formidable teammates, the pressure and intensity of play increases with greater levels of accomplishment. “The horse shows you when they are ready for more action,” Hall said, explaining that until then, rookie horses play less stressful, earlyseason matches, often third chukker
time frames for 4 to 5 minutes. The entire string has a superlative care and wellness protocol. They are creatures of habit, and routine is paramount to their well-being and potential. “The horses are pampered and cared for better than 95 percent of the human population,” Hall said. The grooms rise before daybreak to feed the horses. Each horse has its own specific feed preferences — a variation of grain, bran mash, corn, barley or sweet feed, plus vitamin supplements. trils gently rubbed with oil. For game days, grooming and preparation begins three hours before the match and includes a “manicure” of hoof dressing for glossy, black hooves. With safety as a priority, tails are braided and manes closely cropped. Housekeeping of the stalls is equally important, and the barn and stall areas are cleaned out and refreshed several times a day. The impeccable appearance of the horses is of paramount im-
portance and a point of pride for the groom and the player. “Not an ounce of dirt or shavings will be left behind,” Hall stressed. Game days and practice days are vigorous workouts for the team. Play hard and work hard are one in the same to a polo pony. A typical week comprises a practice day and two game days, with ample rest time in between. Practice days include a light walk in the morning and “on set” polo play of 8 or 9 chukkers

in the afternoon, followed by a light snack of hay. When outfitted with a saddle, bridle and other gear, the horses are ready to go. They are high-performance animals and know that when they are saddled up, the game is on. There is a heightened sense of energy, and they are expected to do their jobs. Leaving the field throughout the game or practice sessions, the horses are rinsed off, brushed and hot walked
until their bodies cool down. Once the match is over, the horses are again pampered with rubdowns by hand or machine. Achy muscles and bumps and bruises are treated, while fluids and vitamin supplements are replenished, then they are bathed and stalled for the night. Some players even provide chiropractic services and equine massages for their string of horses. As horses thunder down the field at top speeds of 35 to 40 mph, chasing a
ball hit at 110 miles per hour, polo is recognized as an inherently risky sport, second only to race-car driving. As a result, teams have a private veterinarian on staff who makes the rounds every day, especially after games, to ensure that the horses are in top physical condition, treating any injuries or other issues that may arise. By 7 p.m., the horses are fed and stalled, cleaned, blanketed and sometimes muzzled to prevent nibbling on
barn shavings. At 10 p.m., grooms conduct final stall checks to make sure that the horses have finished dinner and are doing well. The horses will often lay down for a hard sleep. However, they can also rest while standing. The grooms have the closest relationship to the ponies. They are handson all day. Off Southfields Road, near the corner of Lake Worth Road and South Shore Blvd., lies the Grand Champions Polo Club, with its five sprawling emerald fields. It is a polo venue that often hosts toptier, professional human and equine athletes, as they thunder down the grassy fields, taking aim at the goal. Owned and operated by Marc and Melissa Ganzi, the club is beautiful and elegant, and what happens there is truly special. Unlike other venues, at Grand Champions, polo is played yearround. “That’s what sets us apart from other clubs,” Melissa said. “There’s high season for the horse show and for polo in Wellington, yet Grand Champions extends that season, which is great for the community and all of the local players.” 100

Professional players, amateurs, those taking lessons and everyone in between are able to play at Grand Champions, where the Ganzis take pride in teaching and sharing the “sport of kings” with anyone interested. Centrally located in Wellington, Grand Champions is a polo oasis that doesn’t close up shop when “the season” ends. “It’s great for our young American up-and-coming players, as well as our
young professional players, to have Wellington be a strong base for polo both in the season, as well as the off-season,” Melissa said. “We pride ourselves with having polo always be in season in Florida. That’s an important distinction for our club.” Polo at Grand Champions features a distinct fall season, followed by a December/January through June season, with a more relaxed schedule during the sweltering summer heat. The fall season, full of high-goal tournaments, ends with the USPA International Cup and the Carlos Gracida Memorial Legends of Polo tournament. When the polo community lost Gracida in February 2014, the Ganzis acted
quickly to memorialize their friend and fellow player by naming the tournament after him. In 2015, the legends tournament featured Gracida’s family members playing on both teams. “It was amazing to have that memorial honoring Carlos in that way, to have all of his family members play,” Melissa said. “I think it was really touching, and it added something that words can’t describe.” Grand Champions has a true family feel. Even the Ganzi teens, Grant and Riley, are in on the game. Being able to play all year long has changed their game, as well as that of others who play at the club. “It’s wonderful and really rewarding to see all the young polo players and the progress that they make every year — even my children, from when they played lead line to what they’re doing now in polo,” Melissa said. “There’s a huge sense of pride and accomplishment in that. It’s rewarding to see it
make a difference in the lives of our polo players.” In order to maximize the enjoyment for players, families and spectators, the Ganzis carefully orchestrated their season schedule. Final tournament games are always on Saturday at 3 p.m. “That’s our signature polo day, because other clubs use Sunday at 3 p.m.,” she explained. Grand Champions coordinates with other clubs to allow everyone to enjoy the finals, avoiding conflicts, and maintaining relationships with organizations such as the Port Mayaca Polo Club and the Sarasota Polo Club. Grand Champions is already in its ninth year, proving that there is a need for such a club in Wellington. Two features of the club, the Polo School at Grand Champions and ChukkerTV, add to the experience. The school runs throughout the year, and ChukkerTV is always available online to catch the action.
“We live-stream all of our games. ChukkerTV is constantly running live content and live polo games,” Melissa said. “When you play at Grand Champions, you can watch yourself — we have a video library, it’s also available on Roku and AppleTV. If you have a family member or friend who can’t make it… they can watch it live in real time. I think something that sets our Grand Champions club apart from other clubs is the ChukkerTV broadcasting partner.” She hopes to build the consistency that Grand Champions has had in hosting and running historic tournaments. They’ve worked to bring children from England and New Zealand to experience polo in the United States and play against American children. “That is something that is really important and dear to me, personally,” Melissa said. “I’m on the board of the Polo Training Foundation, and it’s also something that’s one of the missions of Player Brandon Phillips takes control of the ball. Deeridge Farms

In February, Deeridge Farms will be opening its gates for a brand new equestrian event in the Wellington community, the Wellington Masters. Last year, when the Fédération Équestre Internationale (FEI) launched the Longines FEI World Cup Jumping North American League, a conflict almost hindered the ability of Wellington to host a leg of the competition. Fortunately, the Jacobs family was excited to step in and host a qualifier at their 300-acre estate in the heart of the equestrian community. “When we heard that there was a strong possibility that the World Cup qualifier was at risk, we wanted to do something to ensure that it would stay here,” Lou Jacobs explained. “My family discussed how we could help, and we decided to host the event at Deeridge Farms. Now we are assured that this important Longines FEI World Cup Jumping North American League qualifier will remain in Wellington for the next three years. It is important to the community,
competitors and enthusiasts that we keep it here.” Wellington has the distinction of hosting top-tier equestrians competing at world-class levels. host an event of this magnitude, and it promises to be a stunning location for the Longines FEI World Cup Jumping North American League Qualifier, which will draw the best athletes from North America. The Jacobs family is looking to expertise from Stadium Jumping Inc., which they have hired to manage the

day, Feb. 4 through Sunday, Feb. 7. The competition will be highlighted by the $100,000 Longines CSI 3* World Cup Qualifier on Sunday, and will additionally feature the $50,000 Longines Qualifier and the $35,000 Welcome Stake. Other riders looking to participate will be able to compete in the $20,000 1.40m Open Jumper class and the $12,000 1.30m Open Jumper class. Gates will open at 11 a.m. for Sunday’s events, and spectators will be welcome with free admission and a $20 per car parking fee. A total of 14 athletes from the new Longines FEI World Cup North American League will qualify for the prestigious Longines FEI World Cup Jumping Final, which will take place March 23-28 in Gothenburg, Sweden. The top seven athletes from the U.S. East Coast and the top three from the U.S. West Coast, plus the two best-placed athletes from Canada and Mexico, will qualify for next year’s final alongside winners of 15 leagues around the world.

Moscow Polo Club Strikes International Alliance With A Local Polo Facility By Darlene Ricker
An international mecca for polo, Wellington has long drawn players from across the world, especially, of course, from polo hotspot Argentina. This season its reach is expanding to embrace another part of the planet less well-known when it comes to polo: Russia. Through the efforts of Misha Rodzianko and Joey Casey, the Moscow Polo Club has teamed up as a sister club with Palm City Polo in western Boynton Beach. For Rodzianko, who jets in regularly to train with Casey, that now means spending at least four months a year in the Wellington area. The highest-rated polo player in Russia, Rodzianko
is director of the Moscow Polo Club, the oldest and largest polo club in the country. His father, Alexis Rodzianko, the club’s president, purchased it in 2005. Misha Rodzianko adopted Palm City Polo as his U.S. home shortly after Casey opened the club in late 2014. While he found the facilities superb — which is saying a lot considering the number of top-

notch polo clubs throughout the Wellington area — the real draw for Rodzianko was Casey, a widely respected former pro player. The international handshake between the two clubs was a logical development, as they have numerous parallels. Both are a similar size in
terms of barns, fields, arenas and other facets. “Some of the horses in my barn in Moscow came from Joey in Florida,” said Rodzianko, whose father has brought his team to play in Florida for years. This summer, Casey has been invited to bring a U.S. team to play in one or two of the Moscow club’s tournaments. “For me, a sister club is a club with the same positivity about it,” Rodzianko said. “Our clubs have a very similar feel to them with a deep respect for the horses and the sport, and a very good and positive vibe between the players. For this reason, I recommend my players to play at Palm City, and I have
received players in Moscow on Joey’s recommendation.” A “huge factor” in Rodzianko’s ability to recruit new players for Moscow has been tutelage under Casey. “I learned more during two years with Joey than in 10 years playing polo before that. The most important thing I learned from Joey was his obsession with minimizing the risks and dangers of the sport, especially with new players,” he said. Rodzianko’s experience with Casey came in stark contrast to his initiation into the sport as a boy in Russia. “My first time, I was given a polo mallet and a horse, and they said, ‘Go hit the ball.’ I fell off seven times the first day, but like any competitive
14-year-old, that was something I liked about the sport. I loved it. Just loved it! There was nothing like it!” Born in the United States, Rodizanko spent a good part of his childhood in this country. But the first time he played polo here was seven years into his polo career, far from Florida. At a snow polo tournament in Aspen in 2010, he met some American players who recommended Florida to him. “I saw the opportunity to consolidate my studies while continuing my favorite hobby,” said Rodzianko, who graduated from Lynn University in Boca Raton with a double major in business administration and international business.

He believes that his polo training at Palm City was crucial in gaining the skills he would later need to transform what was basically a family polo club into the largest one in Russia. “Joey made quite an impression on me,” Rodzianko recalled. “He saw potential in me and helped me structure my game and correct my swing. Most importantly, he took me to the round pen, where I realized that I was only a confident rider and very far from a good one. Looking back, I can say with absolute certainty that I would not be the player I am today had I ended up at any other club. After spending one season with Joey, my handicap went up. Even the Argentine coaches at our
club in Moscow were amazed that in just over four months I had returned a different player.” Rodzianko’s fervent goal is grow the Moscow Polo Club to a point where the sport becomes large enough to support a true polo industry around it in Russia. Expanding the global polo market also benefits places in the world where polo is already well-established, such as here in Wellington, he noted. How might the alliance between the Moscow and Palm City clubs affect Wellington? “It is difficult to say,” Rodzianko said, “but I would not take high-goal teams with Russian patrons off the table.”

It’s a safe bet that Daleen Torres won’t ever suffer from empty nest syndrome, even though her children are now grown and on their own. Torres tends a nest of young Spanish speakers daily for most of the year, as a teacher of Advanced Placement and Cambridge Program classes at Palm Beach Central High School. Torres started out as a Palm Beach County School District substitute teacher back in 1998. She later became a permanent substitute before being promoted to a full-time teaching position. Now, Torres is head of the World Languages Department at PBCHS. “I grew up in Puerto Rico and moved to the [mainland] United States when I was 27,” she recalled, noting that it was her husband Francisco Rivera’s idea. “Of course, I was a good wife. I followed him. I had gone to the University of Puerto Rico, and my career was as a social worker.” Married for just a few years at the time and with two young children, Torres began her time in Wellington as a stay-at-home mother. She soon became friends with a neighbor, who began encouraging her to find a part-time job so that she could exercise her education and get some time out of the house. “It was at a Christmas party at her house, with some other friends, and they said they were looking for substitute teachers,” Torres said. “She knew that I had a bachelor’s degree — not in education, but I have a bachelor’s, and that’s what you need to be a substitute. So I went and applied, and I got the job.” Torres started out as an elementary

school substitute, teaching a little bit of everything. “I tried to, of course, do some Spanish, and I taught math,” she said. “I worked in ESE (Exceptional Student Education) programs at an elementary school, and also at Wellington High School.” Eventually, a perfect opportunity arose. “I applied to be a permanent Spanish substitute teacher at WHS, and that’s how I actually opened my doors,” Torres said. “I decided to certify myself [to be a full-time teacher], so I was going to school and working at the same time.” Torres completed that program in 2003 and received her permanent teacher certification. In 2007, she became national board certified in world languages, and a short time later became department head, where she now oversees eight other teachers. Even as a supervisor, she is still fully hands-on. “I’m teaching five classes, but one of them is a combo, so that would give me six,” Torres said. “All my classes are college-level.” She is very proud of her work with the Cambridge Program. “It’s an international examination program, including not only world languages, but all the subjects, and we are one of the schools that offers this pro-
gram,” Torres said. “We have been very successful. The first year we offered the program, as related to world languages, we offered pre-courses getting the students ready to move on into collegecredit classes. We still offer some of the Advanced Placement courses here, and I actually also teach those courses in advanced Spanish.” And these courses are not just for juniors or seniors. “Actually, the program is open for kids that are already maturing and they’re college-bound,” Torres explained, noting that Cambridge classes are open to freshmen, and at the AP level, there are actually more 10th and 11th graders. “In one of the highest courses for Spanish, the advanced level, that includes leadership — those are more for juniors and seniors,” she said. “So it’s a combination.” But Torres aims to be far more than just a Spanish teacher to her students. She sees herself as a mentor, encouraging their potential. “I try to encourage kids where we see they have potential, but they haven’t considered themselves to be collegebound,” she said. “When we see their talent, we encourage them to participate in the program, and some of them have continued in different classes after that.” Torres tries to explain to her students how important it is to follow up on their studies in today’s fast-paced world. “Many of my students who go to college minor in Spanish while they study

nursing, business or other fields,” she said. “They understand how important it is to be bilingual right now. We are a multicultural society, particularly in Florida.” Torres recommends that her students continue their Spanish studies after high school. “You don’t learn a language in four or five years; you keep learning something new every day,” she said. “And I use myself as an example, because, of course, I have a strong accent. I’m aware of that, and sometimes I mispronounce [words in English]. I’m aware of that, but I learn new vocabulary all the time.” Asked about the greatest reward she gets out of her career, Torres cites her former students coming back to the nest as full-plumed adults on a trajectory to success. “Before Thanksgiving, I had one of my world language students come back — and this is an American student telling me he’s holding Spanish conversations through Skype,” she said. “He’s actually using the language and talking, and he came back to thank all the teachers. He was telling me how much he had gained… Those things keep you going.” Her biggest reward? “When I see my kids actually learning something that really has gained them some proficiency,” Torres said. “When they pass the test, I feel like a proud mother.”

Cosmetic Medicine Services To Tipsy Salonbar Locations

Dr. Bao T. Doan is a well-known interventional radiologist, but she was looking for a more gratifying practice that brought happiness for her patients through cosmetic medicine, so she entered into a partnership with Tipsy Salonbar, which has five locations, including one in Wellington. “I do intervention and surgeries through the arteries and the veins,” Doan said. “That’s my profession. I do biopsies, and basically any endovascular surgery.” She has been in practice for 12 years and is prominent in her profession, but she also finds cosmetic medicine very gratifying. “I like everything that looks beautiful, like design,” Doan said. She has taken training in cosmetic medicine over the years to pursue her interest in making people feel good about themselves through their appearance. “Mostly women, but more and more men, feeling beautiful, it’s all about aesthetic,” she explained. “I got interested in Botox, particularly, about 10 years ago, so I went back and took several classes. I wasn’t ready to leave my job as a radiologist, so it was a balance.” Doan started out with a clinic to do Botox treatments, but it was in a medical building, which was not her concept of a spa. This led to her partnership with Tipsy owner Beth Nguyen to practice cosmetic medicine in her spas. “I think it should be a one-stop,” Doan said. “It’s all about beauty. You can come here, feel good about your hair, feel good about your nails, your skin and Botox while you’re there. Botox and fillers is what I do most here.” Botox treatments, once controversial, have become more widely accepted, she said. “People spend all this time and money on makeup, which does work…
but when I do Botox, it really helps the patient feel younger and more confident,” Doan explained. “I don’t think Botox is for everybody, but for people who believe in it, I’m always happy to give that joy to them.” Doan said that the spa environment is not as intimidating as a medical environment, and patients feel at ease talking with her about beauty and things that will make them feel better. “It’s a new vision, and I think it’s unusual for a doctor to be in a salon/ spa setting, but I think that’s going to be the future, because Botox is becoming more of a commodity than a sterile surgical procedure,” she said. One of her most successful procedures is lip augmentation to give volume. “As a physician and an interventional radiologist, I know the anatomy, I know where the arteries are and know to avoid them, so I think I get good results by being very intrinsic with all the muscles of the face and how they move and mostly how the arteries and veins are, to avoid the bruising and other issues,” Doan said. “I’m very comfortable with my hands, because that’s what I do all day long.” Doan can also prescribe low-cost, pharmaceutical-quality sunscreens and anti-aging creams, and can give medical-grade chemical peels. She said that
there are many ways to treat wrinkles, and plans to expand into new cosmetic treatments, including laser, high-intensity light and minimally invasive liposuction. “There are many ways to treat wrinkles, and I want to be there for all of it,” she said. “I’m hoping to have a clinic where people can come and sit with me and talk, and together we can build a beauty plan,” Doan said. Doan received her degree from the McGill University Health Center in Montreal, and has done extensive postdoctoral training. Paul Smolchek credits his success as a Realtor with Equestrian Sotheby’s International Realty in Wellington to his military background. Behind The Equestrian Glamour If you are reading this, you likely live and/or work in the Wellington area, which is known far and wide as an equestrian community. I recently had the opportunity to work with some of the people whose lives revolve around these regal, powerful and beautiful horses. The first thing I had to learn is that the equestrian life includes some hard and dirty work. I also learned that many of these details can, and should, translate into everyone’s home and lifestyle. If you have pets or children, you can always use ways to make maintaining your home easier. Stables and paddocks are dirty places, full of stuff just waiting to be tracked into your home. The same goes for beaches, playgrounds and your yard. Many northern homes have mud rooms. It is a place for everyone’s shoes, boots, umbrellas and coats to come off so the rest of the home stays clean and neat. Most of us here in Florida do not have the square footage to dedicate a room to this. However, you can get creative with the space you do have. Stoops, porches and patios can often be used as a “mud room” here in the tropics. I recently flanked the main doors of an apartment above a stable with storage benches for shoes and boots. The tops were upholstered in Sunbrella fabric that is weather, ultraviolet and stain resistant.The backs were open for ventilation so that boots and shoes would dry naturally while out of sight. The same concept can be used for the aver-
age home as a great way to store pool tools, toys or patio cushions. We also put an old-fashioned boot scraper with a brush next to one of the benches. It was screwed down to a teak slat mat like you see in spas.This allows them to clean off their boots or shoes before stowing them in the bench, and all of the dirt falls under the mat, out of sight. Just remember to clean under the mat! The interior flooring is all tile for easy maintenance.The homeowner still wanted rugs to help soften the feel of the apartment and to help with sound control. We opted for durable synthetic indoor/outdoor rugs that can be taken outside and hosed off. This is not only convenient, but also saves a fortune in cleaning costs. They are available in a large number of patterns and colors. In discussing window treatments, we decided to keep it simple. Drapes hanging to the floor are dirt magnets. They also are an invitation for pets and children to play behind or, heaven forbid, climb. The solution was Hunter Douglas designer roller shades with bead chain controls. Chain is more durable and will not discolor from dirty hands. The fabrics just need to wiped with a damp cloth to maintain their look. The look is clean and crisp. This product allows for privacy and light control without being heavy or fussy. Think about your own home and your particular problems. There is usually a solution. Let your home work for you, not the other way around. W

Whole Roasted Branzino At The Seahorse Fashion Cuisine Story and Photos by Julie Unger
The Seahorse Fashion Cuisine is an oceanic aficionado’s dream come true. Soothing music, ocean-themed décor and a beautiful tank with brightly colored fish greet guests as they arrive for a truly fine dining experience. Chef John Sarmiento, who recently revamped the restaurant’s menu for its third season, took us on a voyage to the sea as we learned about the restaurant’s new signature dish — Whole Roasted Branzino. “The Branzino comes in from Greece,” Sarmiento said. The tender fish is butterflied, grilled, then plated with baby artichokes, sliced heirloom tomatoes, black olive chimichurri and grilled lemon. “Our heirloom tomatoes are local,” Sarmiento said. “They’re from a farmhouse in western Palm Beach County. We get them at the peak of the season.” Quality ingredients, fresh, local and unique, make all of the difference when making something seemingly simple transform into a complex medley of flavors and textures.
“Just from the best fish, to the best artichokes, to the local tomatoes, and last but not least, the homemade black olive chimichurri,” Sarmiento explained. “It’s a combination of flavors here with the nice, fresh tomatoes and the local artichokes, then you get this nice boost of cilantro, parsley and black olives, combining it all together.” The black olive chimichurri is made with cilantro, parsley, garlic shallots, lemon juice, red vinegar, salt, pepper and chopped black olives. “It gives a real bright, fresh wow to the plate,” he said. The plate is decorated with a balsamic reduction made in-house, which complements the light, refreshing dish. “It’s the combination of all of the fresh, local ingredients, using the best of the best,” wellington the magazine | january 2016

he said. “When you get good tomatoes, you need to make sure you complement them with excellent sea salt, fantastic balsamic vinegar and then artichokes. Anybody can get canned artichokes. We get them in fresh, we cook them daily. We blanch them to perfection, then toss them in a marinade before they’re grilled. Every ingredient, you enhance its own flavors, and then you complement it with a little minor ingredient, and it makes the whole plate shine on its own.” To top the dish, Sarmiento sprinkles fresh-grown sprouts, such as baby Russian kale, to add another layer of complexity and flavor to the dish. An expanded wine selection is also
available during season. Every few weeks, the menu changes, offering a fresh, new experience for Seahorse patrons. Manager and partner Buu Lam has received positive feedback on the new menu. “We wanted to change the whole concept of it. We wanted to do smaller portions so everyone could try a little bit of everything, especially a party of two or a party of four,” Lam said. “They could come in, order three, four or five items, so they could get a sense of what the appetizers and the small plates are.” The Seahorse’s menu is diverse, offering seafood, meat and chicken, as well as vegetarian offerings, which is
good for larger parties where some may not like seafood. Utilized in the menu are specialty foods such as parmigiana reggiano and miso, foods that are classified as umami — one of the five basic tastes. It features all new entrees, dinners, desserts and appetizers. The menu features a tapas theme, with small plates that are perfect for ordering rounds of plates with drinks. Previously, the menu focused on seafood. Now, more meats, proteins and salads are available. Menu highlights include the Lobster and Avocado Cocktail, Mediterranean Quinoa Salad, Truffled Snapper, Aji Amarillo, Skirt Steak and Grilled Lobster, the Curry

The ‘wow’ factor of the restaurant — from the food to the service to the décor — are some of the things that make the Seahorse special.
