GUACAMOLE By: Carolina Villalon
The fresh taste of Mexico in just one condiment. Nothing is more delicious and healthy then guacamole. You can throw this healthy fat on anything and everything you eat, from breakfast to dinner, never skipping lunch. Serves: 4 - 8 Prep Time: 15 minutes Ingredients ⅔ cup white onion ¼ cup red onion ¼ cup red bell pepper, seeded 1 jalapeño pepper, seeded (you may also use powdered) 1 medium garlic clove 2 tablespoons fresh lime juice ½ cup fresh cilantro leaves Salt and black pepper, to taste 4 small avocados, peeled and pitted Preparation 1. In a food processor, add all ingredients except avocado and pulse until coarsely chopped. 2. Add avocado and pulse a few more times until desired consistency. *Note: you can also prepare guacamole in a mortar with pestle for a more rustic taste by adding coarsely chopped ingredients into the mortar and slowly breaking them down into your desired consistency.

Describe your first modeling shoot. Oh my gaaaahh!! I was so nervous. It was actually with one of my favorite photographers Joe Damaso. He is such a talented individual with an amazing eye!! He gives awesome direction and I did NOT want to look like a complete amateur lol. I was stiff and had this deer in the headlight look on my face. But once I got comfortable, I was a natural and we killed it together!

What’s the craziest thing that happened to you while on set? We’ve all shot on the beach I’m sure and of course we get super sandy!! I had sand in places that nobody would want there, so I went into the water to rinse off. Not paying attention to anything swimming around, I came out with a mini fish in my bottoms!! I freaked out and I didn’t think twice about dropping my suit right where i stood. And OF COURSE it was during tourists season, so they definitely had a sight to see!!
