3RD ANNUAL 5K4Q & FUN RUN In April 2008, Queena was brutally raped, beaten, and left to die outside of the Bloomingdale Library. Equipped with an incredible will to survive, she did not die that night, and has spent the last few years working hard to recover from the brutal attack. Although she has been making tremendous progress, Queena still requires aroundthe-clock care and attends daily physical, occupational, and experimental therapies to aid in her recovery. Nearly $70,000 is required annually for Queena’s therapy and several community fundraisers and donations have made her progress possible. he 2nd Annual Community Service Forum was a huge success! More than 30 non-profit groups and 300 high school, home school, charter school and private school students attended the two-hour event hosted at Newsome High School on April 23, 2014. Many parents and educators came as well.

Community service requires students to address a social issue faced by society today (i.e. poverty, abuse, elderly needs, homelessness, etc.) These non-school hours require pre-approval, specific documentation, and follow-up reflection on approved forms. Fundraising efforts may count only if all funds are donated to address a community social issue and Service-Learning projects may count only if pre-approved by the Community Service Designee.

The Community Roundtable’s recently upgraded website is a great student resource because all Roundtable member non-profits have the ability to post their events, which will allow students to search one site instead of researching each of the numerous area charities.

T

he historic James McCabe Theater is being renovated for a big celebration in 2015—100 years of community service. The Brandon community’s very active theater group, the Village Players, needs our help with renovations on the building constructed originally in 1915 to house the Valrico Civic Club. Today its the only remaining commercial structure from Valrico’s own small turn-of-the-century land boom. Renovations are underway, but community support is critical in order to complete the work. Local businesses, charitable foundations and individual patrons are invited to make tax deductible donations to the 501(c)3 non-profit organization. Your donations will help preserve a historical site and promote the Arts and teaching of the Arts locally. Much progress has already been made. The AC system was increased to a 10-ton and for the first time, heat will be available. Ceiling fans, a window, bathrooms and kitchen flooring, and stage curtains have all been replaced. The storage loft was also rebuilt and the dressing area carpeted. A few finishing touches are very do-able with volunteer help—replacing a bathroom ceiling, replacing a stairwell, adding exterior steps, and painting touch-ups. The remaining major work requires more expert attention: tongue and grooved planks

on the main floor, along with brick masonry work and 20’ high ceilings. Paul Palmer, a Village Players past-president and Hillsborough Community College professor of Contracting, serves as project advisor. Several renovation contractors have offered suggestions and reasonable quotes for the work that must meet the parameters for historic building preservation.

Make plans now to bring friends, family and your appetite to the 26th annual Brandon Business Expo & “Taste of Brandon™” on Thursday, May 15 from 3:30 - 8:00 p.m. The venue hosted by the Greater Brandon Chamber of Commerce takes place inside the Charles M. Davis Special Events Center at the Florida State Fairgrounds. This well-attended event enables residents an opportunity to meet with local business owners and learn about new ventures in the community. Year after year, local enterprises continue their participation because this key outreach can expose their products and services to other potential customers, vendors and residents of the region. Each May, approximately 1,500 to 2,000 visitors enjoy a wide variety of culinary treats from many of the area’s most popular eateries. As they eat, they can also browse area business displays, which showcase those companies’ newest and best products and services. “The Expo is a fantastic family event with a huge local impact,” said Ryan Cabrera, Executive VP of Precision Payments and the Chamber’s co-chair for the event. “The restaurants put their heart and soul into the tastes that families will sample, and of course, those establishments each hope to be voted best. “I’ve always been passionate about food and strive for top-notch quality,” he explained. “I love to prepare it and hear people comment about the flavors.”

Obviously, “in-house and from scratch, handmade food” and “great team, attentive and dedicated to caring for guests” make an attractive combination. And the extensive, impressive variety of menu items keeps diners coming back for more. Chris Deck, with more than 20 years’ experience in the food service/ catering industry, oversees the Brandon operation as General Manager and also serves as Director of Food for Q’s Restaurant Group, LLC and 3 C’s Catering. The youngest of three children, Georgia-born Deck moved to New Orleans at age eight and lived there 18 years. The bachelor is now “seriously involved in a great relationship” with a girlfriend who cooks for him, and enjoys being uncle to five nephews and one niece. In his spare time, he “eats out a lot,” rides motorcycles, works out at the gym, loves outdoor sports, plays softball and drums, and even skydives! His foundational cooking standards were established during his eight-year Marine Corps Reserve term, which included Operation Desert Storm deployment in 1991. At age 26 he trained at the famous Chef John Folse Culinary Institute in New Orleans. “I was in the Reserve and had been a server for years. This business just came natural to me and I was always advancing quickly, from line cook at Houston’s Restaurant in New Orleans to Copeland’s Restaurant in 1992. There I trained servers, tended bar, advanced to management and opened many new locations, including Orlando.” “I really loved the Florida lifestyle— the beach, golf, weather, etc. After 13 years with Copeland’s and six years in Atlanta near

A typical workday for Deck begins at 6:00 a.m. when he creates the day’s prep sheets, the written bases of the café’s product mix. “We have eight different prep stations and all our product is made fresh daily.” “After the daily inventory, then comes a thorough HACCP check on health department standards and temperature controls, which takes at least 90 minutes. Next, we prepare for the lunch business and do quality checks. Because coaching and training employees is a constant at Cheddar’s, I’m always observing the workflow in the kitchen and dining area, and communicating with customers. In the afternoon, I interview employment candidates before wrapping up paperwork and office details between 4:30 and 6:00 p.m.” In addition to those 12+hour normal workdays, Deck is Director of Food for 3 C’s Catering. Company president Andy Dennis calls Deck’s commitment to food quality and presentation “unmatched in the catering field,” explaining, “He personally oversees the many chefs who work on food preparation and strives to ensure the quality and presentation for every event meet each client’s personalized needs.” From the Cheddar’s menu, Deck has some personal favorites. “Our Ribs are the best I’ve had. They’re smoked and slow-cooked five hours, then finished with BBQ sauce carmelized on a charbroil grill.” The Sante Fe Spinach Dip he describes as “the best around with a generous blend of five cheese and fresh tortilla chips.” He knows the “phenomenal Buffalo Wrap and Dijon Chicken and Mushrooms” are definite crowd pleasers, too. As to his own cooking for friends and family, Deck offered, “I love to make sauces—my Alfredo is one all-time favorite. I can also twist it up with sundried tomatoes, pesto or simply some fresh basil. I make a great lobster sauce and love cooking Cajun and Creole, too—a killer Gumbo and seafood pastas.” From his “Taste of Brandon” experiences, Deck said, “I really enjoy cooking onsite and having a very fresh product for the patrons. I love to hear people describe how amazing the food is. Come enjoy our ribs and spinach dish at the Expo this year.” What he hopes new customers will appreciate on their way to becoming Cheddar’s regulars is: “Since 1979, our core values have remained the same. Square 1 Burgers and Bar desires to be “the premier gourmet burger restaurant in the world,” by providing an engaging environment and awesome dining experience for their primary focus—satisfied customers. The dream began “Once upon a time (1964) in Norman, Oklahoma, when Bill Shumate opened his first restaurant, a burger joint called “Across the Street” (located across the street from the University of Oklahoma). Many years and restaurants later, he yearned to return to his restaurant roots: burgers. In 2008, he and his partner, Joanie Corneil, who also have owned and operated Bella’s Italian Cafe in Tampa’s Hyde Park for 25+ years, opened the first Square 1 on Henderson Boulevard. Thus the name, because the Florida Restaurant and Lodging Association’s Hall of Fame member and 2014 Restaurateur of the Year, Bill Shumate, is back to Square 1. Today the company operates six locations in Florida, with more in the planning stages. And the public appreciates the fact Square 1 does catering as well. Offering more than just it’s featured burgers, the popular gathering spot serves up salads, slider, shakes and bar selections with some special surprises. Company owners Shumate, Corneil and Ray Leich place the responsibility for its Brandon operation’s successes in the capable hands of restaurant manager Angel Campos, a Le Cordon Bleu® trained chef who joined the company two years ago. The Campos family moved to Florida from Hato Rey, Puerto Rico when Angel was two to open a malta brewery with distribution to the Caribbean Islands. Today, he lives in Hillsborough County with his wife Tina and two-year-old daughter Evie. The couple expects their second child later this year. “Spending time with family” is a priority for Angel. Recently they enjoyed the day at their first Blueberry Festival in Plant City and of course, sampled many of the food truck specialties. Because the spouses have opposing schedules, they split the cooking duties at home. “Tina just made the most amazing spaghetti squash lasagna. She has helped me to eat more healthy and it’s nice that she shares the cooking.” His father watched food prep shows and grilled out often, so by age 12, Angel was cooking special foods. Since the family kitchen had “tons of cookbooks and a well-stocked pantry,” he began creating his own middle-school lunch specialties like chicken with pasta. Auburndale High School did not offer culinary classes, so upon graduation Campos registered at Le Cordon Bleu® College of Culinary Arts in Orlando to earn his certifications. He trained in

Monterey before returning to help his dad, and next worked as sous chef of a German restaurant in Lakeland. Last year he became lead line cook at Square 1 Burgers and now manages the restaurant. A typical workday for Campos begins at 9 a.m. when he “goes through notes from the day before, looks at the prep list and tends to management items.” Next, he makes the floor plan to assign servers to particular tables and might even make some of the specialty food items. “Basically, I’m running the floor and talking to every single customer to make certain they have a good experience with us.” Whenever possible on Mondays and Wednesdays, he cooks at lunchtime to allow the other kitchen help to leave a little early. One of his personal Square 1 favorites is the “South of the Border” burger with black bean salsa, pepper jack cheese, pickled jalapeño, avocado, frito chips, and “Sooner” chipotle ranch sauce. He’s also a big fan of the best-selling “Juicy Lucy” half-pound Angus patty, stuffed with cheddar cheese, topped with carmelized onions, lettuce, tomato and dijonaise on a brioche bun. This one’s described on the menu as “a knife and fork, extra napkin burger.” At home, he enjoys preparing BBQ baby back ribs and pasta dishes with his own red sauce, topped with chicken or fish. A ribeye steak grilled with cracked sea salt and fresh pepper is another favorite. To other home pros, Campos advises they try spices like cumin, fresh cracked sea salt and smoked sea salt for flavor enhancement. Campos looks forward to his second Taste of Brandon event as a “showcase of what we really do at Square 1.” He’s anxious to hear attendee responses to the Pablanopeno Sliders prepared with fresh jalapeno and topped with roasted pablano peppers, swiss cheese, lettuce, tomato, onion and creamy cilantro lime dressing. As for professional advice to local diners, he suggests: “If you ever have the urge for a burger and want to amp up to another level, try something new at Square 1 Burgers! We promise you’ll be impressed.”

t one time, John Bella thought construction was the right career for him, but it was always apparent he was born to be a baker. In fact, it was in his blood. Not only did he have experience running a full line Syracuse (New York) bakery with his father, but Bella’s grandfather and great-grandfather’s lives both revolved around crafting cakes and other delicious sweet treats.

“I’ve tried to go out on my own and do my own thing, but I always gravitated back to the bakery,” said the fourthgeneration master baker. “It’s my life.”

The Singing Baker began when one of Bella Bakery’s suppliers asked if Bella could hand-deliver a cake to a friend while singing. So he did, and when Bella returned to the bakery and told everyone what happened, The Singing Baker was officially born.

After operating Bella Bakery for over 20 years in Syracuse, Bella decided to sell the business and move to Florida in September 2013. Although he currently works part time at a local Publix bakery, Bella has brought a part of Bella Bakery to Hillsborough C o u n t y. . . T h e Singing Baker.

The Singing Baker quickly grew in popularity, especially after Bella delivered a cake and song at a hospital. A local television crew happened to be filming at the hospital at the same time, and they enjoyed the show so much they offered to produce a commercial for him which aired on a community business channel.

Starting at just $45, Bella offers his customers the opportunity to surprise their friends, family members, and co-workers with cake, delivery, and a song. Whether your celebration will occur at the office, a restaurant, or your front porch, Bella will create a fun-filled, customized singing routine guaranteed to put a smile on your loved one’s face on his or her special day.

“I’m working to create memories people can’t forget. I want to cheer people up. It only takes a few minutes for me to do, and then I’m gone,” said Bella. “Who wouldn’t want to do that?”

“I’ve had people hide me in closets, behind filing cabinets, you name it,” said Bella. “I was even put in an airplane cockpit and came out to surprise a passenger before takeoff.” Available cakes range from an 8-inch chocolate, vanilla or marble cake with white or chocolate butter cream frosting

Customers can also select Bella’s signature Shadow Cake which features a layer of chocolate cake and a layer of yellow cake covered with butter cream frosting and topped with fudge. Coconut raspberry, lemon, and strawberry cakes are also on the menu. Add a single rose, a mixed bouquet, or other flower options from The Singing Baker partner Oops A Daisy for an additional charge.

“We started doing about 40 to 50 deliveries a week in Syracuse,” said Bella, “so many deliveries that it was hard for the bakery to keep up with the demand.” As a result, Bella started his own independent entity and partnered with a couple other local bakeries that provided the cakes. Today, Bella makes his own cakes for his new Florida customers and is looking to run his own full line bakery in the future. However, right now he’s focused on growing The Singing Baker name.

The Singing Baker is available Monday through Friday from 9 a.m. to 5 p.m. throughout Hillsborough County. Yet he’s also willing to make night and weekend deliveries for an additional $20. Whether he’s scheduled in Apollo Beach or Plant City, Bella strives to be right on time every time. BLAKE GUERRERO

A

s you are already aware, I hold my criteria for Athlete of the Month quite high. I always search for that Athlete who holds true to the meaning of the “dedicated, goal driven, and all around balanced” individual. I have definitely found that in Blake Guerrero. A freshman at Bloomingdale High School, Blake has already lettered on the swim team and earned the “Rookie of The Year” award for all his hard work and dedication. His accomplishments didn’t just appear overnight. Blake has been competing in swim meets since 2008 when he was in the fourth grade. His skills shined then and have only improved throughout the years. He was on the Vincenza Mako Sharks team while living in Italy when he first began his swimming career. In 2011, Guerrero joined the TYS Stingrays at the YMCA in Brandon. Since 2012, he has been swimming on the Brandon Sports and Aquatics Swim Team as a senior swimmer. Guerrero says he has had six coaches to help him in his swimming career. “They have helped me develop from a moderate swimmer to a very advanced swimmer who was able to make it to championships four years in a row,” he said.

Swimming takes up a huge part of his life as he practices five days a week, two hours each day. He practices to compete in the once a month meets to show his hard work and skills. Time management is critical in completing his homework, along with all the practice times; however, he has learned to manage well through his dedication. With high grades, he proves he can balance his sport and education equally and with great success. Guerrero’s biggest obstacle was this past December when he injured a leg, which kept him out of the pool for a month. Once the healing was finished, he was able to get back in the action. When asked about his feeling for swimming, Guerrero says, “Swimming has helped me develop many friendships. The motivation from my team and family helps me believe in myself to push farther in the sport.” Guerrero is definitely a great athlete with high academic achievements. We wish him the best of luck as he continues his swimming career throughout high school and works toward his goal of achieving scholarships and making it to the Olympic trials. We will definitely be watching for his future successes.

NEWSOME HIGH SCHOOL

LACROSSE TEAM Profile by Deana Garrison

T

his year, Hillsborough County School District had Lacrosse added to the District’s sports list. In years past, youth in local high schools who wanted to play lacrosse had to play it as a club sport.

Playing as a club only enhanced Newsome High School Boys Lacrosse team. Last year, they were the Conference Champions of the Florida Gulf Coast Lacrosse League. This year playing in the District sport, Newsome proved they were top notch. With 13 wins and only 3 losses, they continued on to the District Championship competition taking the Championship title.

Head Coach, Eric Blackburn, is very proud of his team. They definitely proved they deserved the title. Playing against Wharton High School, Newsome boys gave them a good fight in the first quarter, but Wharton fought back in the second quarter, leaving Newsome in a one point lead. Coming back from half time, both teams gave their all. However, the game took a 30-minute delay when Newsome’s player, Colby Blackburn, was injured. Suffering from a dislocated knee, the team now faced the rest of the game without their goalie. According to Coach Blackburn, “This team is full of respect and teamwork. The boys knew their goalie was out, but they were not going to let

that stop them. They all pulled together and made it happen.” Before the fourth quarter could begin, lightning delayed the game a little longer. When the fourth quarter finally started, the Newsome team was all geared up and ready to bring on the heat with three goals scored right away. Everyone knew NHS was on top of their game. Not only is this team impressive on the field, they show lots of respect and pride off the field as well. These players hold high grade point averages and have plans for brighter futures. All five seniors have plans to attend college and one of them was even accepted to the US

Naval Academy. That says a lot about the team and the value they place academics as much as their skills on the field. Coach Blackburn as and assistant coach Fred Byeman emphasize to the team the importance of their academics. This team is definitely a strong, respectful group of young men. They are known for the great bond they share as a team and for their friendships outside of the sport. They seem to stick together and help one another out. These boys have definitely made lasting memories. This team proves that true “sportsmanship” is still alive and well among young athletes. The Newsome High School Lacrosse sportsman definitely show they have what it takes to be a successful team. Congratulations NHS Lacrosse for being this month’s Team Of The Month.

he Green Iguana definitely surpassed my expectations. I thought I would stop by, get a bite to eat and find out a little bit about the new establishment that recently held its grand opening in February. The Green Iguana has proven to be one of the top places to go to in Brandon. Having been around 25 years, they are not new to the business, just new to the area.

When I arrived, I thought I would see and taste the usual type of food from any bar and grill restaurant. Well, I was wrong. To begin with the presentation of the food was greater than any typical bar and grill. I was extremely impressed along with the high quality appearance of the food comes lots of culinary expertise. The chefs definitely know their food and how to make their customers keep coming back for more. Fresh food is the key to successful taste. This company is known for their fresh meats, not frozen. The Tequila Shrimp appetizer consists of adobo spiced shrimp tossed with tequila lime pico and fresh avocado, served martini style. I have to say, my favorite dish at this fine place has to be the Chicken Stacked Grill which is a large chicken

breast stacked over a medley of roasted squash, tomato, artichoke, mushrooms, onion and peppers. I cannot begin to explain the flavor. Cooked to perfection, I truly enjoyed that meal. What impressed me also was the price. The fancy presentation of the meal made me think the price would be high. I was pleased to see I was wrong. The Green Iguana is known for their famous burgers. In 2012, they won the title of the Burger Showdown Champions. They qualified for the World Champions in November, held in Vegas this month. The burgers that come out of that kitchen are not your average burger. They are eight ounce burgers full of flavor and every Monday they have a burger special. You can get an eight ounce burger for only five dollars from 6-8 p.m. When the day is complete, the night life begins, especially on the weekends. The entertainment is outstanding. The Green Iguana makes sure to cover all types of music for your liking. You will want to check what night is best for you.
