LAMPLighters to Host 22nd Annual Christmas Silver Coffee LAMPLighters will host their 22nd annual Christmas Silver Coffee on Friday, December 2, 11:00 a.m. – 1:00 p.m. at the historic Beach Park home of John and Tracy Bales. Guests will enjoy delicious homemade holiday fare and elegant holiday décor. The children’s choir from Metropolitan Ministries will entertain with a selection of delightful Christmas carols. The LAMPLighters Christmas Silver Coffee is an annual fundraiser with proceeds to benefit the children of Metropolitan Ministries. Charlene Bleakley and Linda Mills, co-chairs of the event, hope to raise over $10,000. The minimum suggested donation is $25.00 LAMPLighters have been involved with homeless children in our community for over 25 years through outreach programs at Metropolitan Ministries and Joshua House. In addition to fundraising activities to support the needs of homeless children, LAMPLighters host popular seasonal parties for the children residing at Metropolitan Ministries and Joshua House. They also have an ongoing “Bear and Blankie” project which provides each child with personal items for their care and comfort.

Letter From The Editor

The Holiday season is quickly approaching – it will be here and gone before we know it. Commercials are airing, the mall is decorated and the stores are definitely marketing to gain my attention and sucker me out of my money! Regardless of the commercialization of the holidays, this is my favorite time of year. Almost universally, Americans use this time to recognize all of the wonderful things in their life and be thankful for what they have and who they are. Granted, we should be thankful every day, but in the hustle and bustle, it’s easy to forget.

This year I’m thankful for so much. I’ve survived almost a whole year of marriage! I attended a Monday night football game and walked on the field during practice; I flew to Hawaii, settled into a new house and made it a home. I rappelled off a building in Downtown Tampa to benefit Heartbeat International and have seen the success of an organization we featured in our magazine such a short time ago. And, just recently, I embarked on my newest adventure…expanding my little family. With a PUPPY!! No kids, we’re not quite ready for that. But after the first night with a new puppy, I’m thinking there might not be much difference between a baby and a puppy. But right now, she’s sitting on my legs asleep and loving all over me! We’ve named our new little family member Willow. So far, she seems to fit her name – strong, graceful, and easy-going. The benefit of a column like this is I get to express my joys, my little personal victories and favorite articles in the magazine. This month, I am extremely excited to bring you our cover story with Tampa Bay Buccaneer Davin Joseph and his great work in the community, our business profiles on local businesses doing what they can to stimulate our economy, and the Athlete of the Month excelling in both athletics and academics and doing his part to grow in the community.

Local» Focus in the form of employment opportunities, affordable housing, independent living, advocacy, and health.” Gloria Hollingsworth, a representative from the Foundation, views the intense need to provide these services to the disabled members of the Tampa Bay community. “Our goal is to help people become independent. We help all people with disabilities”, says Hollingsworth. Among their outreach services, the Abilities Foundation provides career counseling, job development, and workplace accommodation to increase employment accessibility. Furthermore, the Foundation uses HUD grants and charitable contributions to renovate single family homes to rent to people with disabilities. With the primary focus of resources directed towards disabled veterans this year, their Veteran’s Employment and Outreach Program provides job placement services who are returning from active duty in Iraq and Afghanistan.

eterans Day is a time to give thanks and praise to the men and women serving our country at home and abroad.

Their selfless sacrifice is a testament to the American spirit and bravado. While harm is unfortunately synonymous with conflict, there exist many organizations lending their helping hands to individuals with disabilities. To my particular amazement, there is no

lack of imitative, outreach, and charity to help our nation’s soldiers. As these brave warriors return home, scarred by the physical and mental ailments of war, many groups provide resources which aid in personal and community development. One charity in particular, The Abilities Foundation, has dedicated their entire year to help and support our men and women in uniform. Founded in 1983 to provide various developmental and physical resources, the Abilities Foundations is a 501(c)(3) support

organization. According to their website, their internal management structure is governed by an all-volunteer board of trustees and revenue is generated from individuals, corporations, grants, planned giving, and special events. The Foundation’s mission is to ensure that people with physical and mental disability have equal opportunity to partake in the community and everything it has to offer. As their website states, “resources are provided

The Foundation’s upcoming “Abilities Guild Holiday Gala” is an annual blacktie event at the Carlouel Yacht Club on Clearwater Beach. The gala itself began ten years ago, originally as an event to thank those individuals who contributed to the Foundation. According to Hollingsworth, “the gala has since then become a fundraiser to continue our support of people with disabilities.” Drawing an average crowd of 120 gift givers in years past, the Foundation anticipates equal attendance this year. All proceeds from the event will be allocated to retuning disabled veterans.

Help, the holidays are coming! Can I enjoy myself

T

he short answer to this question is, YES. It is that time of year again when we get together with family and friends and the drinks, dips and desserts come right along for the ride. Below are some strategies to help you eat, drink, and be merry during the holidays and win the battle against the goodies.

1. Stick to your exercise and eating routine (as much as you can) The holidays are a busy time, but keep up with physical activity and smart eating. Make sure to stick with your exercise and nutrition regimen as much as possible in between the holiday shuffle and festivities.

5. Provide Healthy Alternatives If you are the host of the party, prepare healthier options and/or encourage guests to bring healthier options to the party. Try low fat healthier versions of your recipes by reducing mayonnaise, oil, and butter. Use low calorie sweeteners instead of granulated sugar. Consider high protein food sources and high fiber foods.

2. Slow Down and Enjoy Take time to enjoy the great tasting food you are eating. Eat slowly, savor the goodness, and enjoy the hard work you or others have put forth in that scrumptious recipe. Eating slowly will allow your body to naturally feel fuller and you will consume smaller portions.

3. Avoid Buffet Piling Take a smaller plate to the buffet line to avoid piling on too much food. Peruse the buffet selection to decide ahead of time what you want to try. Remember to eat slowly, and enjoy portions that make you feel good, not guilty. Also, eating smaller portions may keep you away from the heaps of food, and reduce your chances of overeating. 4. Say Yes to the Special Holiday Dish Go ahead and have your Aunt’s famous

Antifreeze Your Game D on’t hang up your clubs and put away your shoes! Keep the frost off of your game this winter and play your best golf when the season starts next spring. These tips, compiled by GolfTEC Director of Instruction Don Costanzo, will help you stay sharp and fit while continuing to improve your swing this winter. 1. 360 coaching only at GolfTEC. Now is the time to make both major and minor changes in all three aspects of your game: swing change, game change and bag change. Working with your Coach over the winter months with a GAME PLAN which sets goals and measures improvement in all three areas will give you the best opportunity for success. 2. Swing Practice vs. Game Practice at GolfTEC Swing Change Practice - “Lessons won’t

make you better, proper practice of the lessons will make you better” The only way to practice in the winter (or summer for that fact), is indoor video practice. Proper Swing Practice requires these following factors:

Game Change Practice – • Simulate real play to increase on-course confidence and consistency • Focus on ball flight, not the swing • 1-2 swing thoughts at a time – MAX • Use pre-shot routine on every shot • Then pick a target and hit 2-3 reps BIGGEST MISTAKE: Making lots of hits without targeting and simulating play

3. Stay fit and flexible at GolfTEC. Coaches who have been certified in fitness through the Titleist Performance Institute tell golfers that if they’re going to do one beneficial thing for their golf fitness without • One change at a time using video feedback changing anything else, they should get for every swing regular massages. • Focus on the swing, NOT ball flight • Use the pre-assigned drills from your coach • Make lots of proper repetitions to condition the body to the new movement • It will probably feel unconformable at first, you are unlearning thousands of reps that you did the wrong way • Ball flight may vary considerably at first, this is just part of the learning process

In the article “Kinks from the Links”, massage therapist Iris Casteen said she often sees golfers who haven’t played for months come in for a massage because they are sore and stiff after a round. Monthly massages could have helped prevent the soreness or even the accompanying bad round by relieving pressure points and “knots” to allow more fluid motion and prevent bad habits that result from playing with stiff muscles. In addition, doing regular yoga during the off-season keeps joints and muscles limber and flexible. These are steps you can take year-round, but giving extra focus to stretching during the off-season will ensure you can keep practicing indoors all winter.

hidden history» Focus to serve as something more valuable to the community. Today, the Ritz serves as a prime venue location for a variety of events. The Ritz hosts parties, fashion shows, select concerts, company events, and small get-togethers; sure to remove the title of a nightclub from its description. The Ritz has been preserved in many aspects. The main theater room holds much of its former glory, changed in its open floor. However, the stage presented in front has been re-mastered to its original beauty. The Ritz houses four open bars, private party rooms and the main hall mostly opened for concert series. While The Ritz is mainly rented out for small events it is also a popular venue for concerts. Many of the concerts from Tampa natives, but also performers that rival those at Orlando’s House Of Blues. The concerts draw in a much younger crowd into the venue. The Ritz has kept a strong resemblance to what it was nearly a century ago, however has taken on a modern purpose. The venue allows for business events and parties to be housed in a structure deemed historic. This building is still functional even in its history, which makes for a new history all in itself. The Ritz gives kids an opportunity to watch their favorite bands perform in the same theater their grandparents watched some of the earliest films. An opportunity to relive that history is a chance the city of Tampa won’t have to miss out on. History is at our fingertips.

I

n recent times we have seen historic venues turn into modern scenes. We have explored the historic assets of places like the Tampa Bay Hotel which has turned into the Henry B. Plant Museum and The University of Tampa. And of course, the beauty of the Tampa Theater, each being a site brought to its former glory with some reconstruction, but with much preservation. However, we have yet to see a site like that of The Ritz Ybor. The Ritz Ybor has taken on a vastly different appearance from what it was upon its opening in 1917. Housed on the streets of a historic town itself, The Ritz appears to be

a vintage theater, but instead holds modern events straight through the doors. Upon The Ritz’s opening in 1917, a movie ticket cost close to 15 cents. Imagine the rush to the box office. As The Ritz served as a theater well into the ‘70’s, it made its way into The Register of Historic Places, taking its residence with many of the other historic aspects of the Tampa Bay area. The Ritz served as a theater for over half a century before the appearance was changed and it began to draw in a new crowd. Once the theater was purchased by the Capitano family, The Ritz became a prime night hot

spot known as Masquerade Nightclub. The scene ended in 2006, where the historic theater changed its appearance once again

Roumy Desir

T

he name is Roumy Desir. I was born April 19, 1994 to Haitian immigrant parents Reanne and Robert in Hollywood, Florida. I’m very fluent in speaking Creole, and am now learning to speak Spanish. Since the early age of five years old I’ve been in love with the sport of football, I nearly cried when my mother didn’t first sign me up. Early into my senior year season I suffered a life changing experience and began thinking, “what am I good at besides football?” It was a sunny summer afternoon, and the offense and defense were preparing for the daily 7 on 7 match up. The game became very intense and every play counted. It was fourth and long and I remember just jumping extremely high to reach for the football, only to collide knees with my fellow teammate in mid air. It was after this incident that I began noticing something was wrong with my knee. I later went on to have an MRI where I was presented the shocking news that I tore the Lateral Meniscus in my right knee, and had to undergo surgery. He also informed me that to even consider getting back mid-season I had to do massive therapy. Astonished by the news I had dark thoughts about my football career and constantly thought about my life. This is when I began taking school more seriously than I ever have.

Being very ambitious I took on an Advanced Placement course, plenty of honors courses, and doubled up on my major - computer technology. I’ve managed to maintain my GPA over a 3.0, and overcame my therapy due to time and dedication from both me and my trainer Derrick. I participate in Graphic Design because it keeps me active and challenged. Manipulating pictures in Photoshop, creating a movie parody, or even drafting flyers for upcoming events in my school are exciting to me. I also want to go further into learning about computers after I graduate such as creating websites, Apps, or even my own software. Graphic Design

is basically a start to a technology career that I’m interested in. The whole experience changed the way I think of both football and school. I’ve matured in knowing what I want to do with my life and don’t rely on just one thing. Now I just want to pursue a degree in the medical field or Computer Engineering, so I can have a great job and help my mother because she has played both the mother/father role in my whole life. Simply Perfect Serendipity

J

ust as you cross the bridge onto Davis Island, there is a long strip of coffee shops, small businesses and eateries. Situated in the middle of these little shops is the most eclectic, interesting business down there, Serendipity Accents & Gifts. Current owner Liz Wessel purchased the shop in June and has tried to put her spin on a modern, classy gift shop that can draw anyone in. Wessel has a Science degree and worked at Moffitt for awhile before flipping to the retail industry in all facets of the business. When the opportunity to purchase the small business presented herself, she and her husband agreed it was a worthwhile adventure and set out to make the store her own. When I first entered the store, I was struck by the variety of items – each gift in the store is the perfect host/ hostess gift for any of your upcoming Holiday parties. All of the products and items are arranged by genre or theme so everything is easy to find and the shop is a bit easier to navigate making it a little more open from what long-time customers may remember. There truly is a gift for anyone. The Cocktail section holds beautiful wine glasses, Thirsty Stone Coasters, cocktail napkins and even stickers you place on your drink glass as a conversation starter to take the place of the wine charm. On another shelf are historic Tampa t-shirts, postcards and paintings. In the kids section, there is a bin of little “trinket” type gifts where a child can search for their perfect inexpensive prize while Mom or Dad get what they need for their party. Wessel has also stocked the store with educational toys, items for bathtub fun, her favorite childhood book. My personal favorite is the “Food Face” dinner plate for kids who are prone to playing with their food rather than eating it. They can use the gravy for a beard, or spaghetti for hair!

My favorite items in the store were the Romero Britto teapots (the only items in the store priced over $100) and the Glass Fusion plates, cups, clocks and ornaments hanging throughout the store. They have just the right amount of artsy in them to catch my attention, but still maintain an elegant feel for my home. Each wall, shelf and bin has something you would love to place in a little gift bag because you’re sure it will bring just the right amount of joy to the party! As Wessel says, she likes to purchase things that aren’t necessarily “her”, but items she knows customers will be excited to give as a gift. “The best gift to give is the one you’re happiest about,” said Wessel. One of the staples of the store is Lucy, the Serendipity cat who stayed with the store when Wessel purchased it. She has her own chair in the middle of the store, comes and goes around the island as she pleases and her tags can be heard clanking throughout the shop. Just another reason to stop in. Wessel says the residents on the Island are already loyal to the store. However, her long term goal is to build the business a bit more by being exclusive in the items she sells. “I’m trying to be exclusive with the things I carry so people have to come to the Island to purchase those things,” said Wessel. I’m sure a holiday party is in your near future over the next month or so and if you’re looking for the perfect Host/Hostess gift, drive onto Davis Island for a look around Serendipity. Trust me, you can’t leave empty handed…I purchased two things on my interview!

etired USAF Lt. Colonel Dick Koch remains active recruiting supporters for the noble cause of Honor Flight West Central Florida. The former military journalist presents this new mission through an informative talk and powerful video to civic groups in Hillsborough, Pinellas, Pasco, Polk, Manatee and Sarasota counties. Honor Flight purposes to fly willing WWII Veterans to see the magnificent memorials built in their honor on the National Mall in Washington, D.C. According to Koch, these brave protectors “changed the course of world history and never asked for anything in return.” HFWCF, a 501(c)(3) not-for-profit organization, was established in late 2010 as an official Regional Hub of the National Honor Flight Network and one of 100 chapters in the U.S. Last year the groups rallied and raised funds to send 63,000 Veterans on the all-expense paid pilgrimage to see America’s tribute to their service. As part of the Network, HFWCF provides “Honor Tours” for WWII Veterans in the Tampa Bay area. Approximately $50,000$60,000 per flight is needed to cover air transportation, motorcoaches, food and beverages, wheelchairs and other materials. National and local sponsors include Allegiant, American, and Southwest Airlines, Arby’s, Bright House Networks, Chick-fil-A (4th St. N., St.Petersburg), Hilton Hotels Corporation, McDonald’s, TECO, and United Parcel Service. With their support and other generous individuals and groups, the local chapter has been very busy in 2011: Mission 1 flew 25 Veterans on May 3; Mission 2 on June 28 flew 71 Veterans; Mission 3 flew 72 Veterans on September 20; and Mission 4 for on October 29 flew 72 more, including 100-year-old Ann Left who served in the Women’s Army Corp. Each daylong trip concludes with public “Welcome Home” celebrations for the returning Veterans. Don’t miss the inspirational photos and comments on the organization’s Facebook page. The mission is urgent because according to the Veterans Administration, the number of WWII Veterans is dwindling. At WWII’s end, 16-million Veterans survived. Today, only 1.87 million are alive. Florida, with 321,000 survivors, is second only to San Antonio, Texas. Of those, 32,000 reside in

the West Central Florida district. The waiting list of more than 400 identifies many with disabling or life-threatening health issues. Time is running out because WWII Veterans are dying nationally at the rate of 1,000/day. Although first priority for Honor Flight trips is given presently to the most senior warriors and those with terminal illnesses, future missions will include Veterans who served in the Korean War, the Vietnam War, and all other wars in chronological order.

More Than Just an Athlete Buccaneer Davin Joseph shares his thoughts on football, family and giving back to the community Story by: Christina Musial

W

hen I think of a Professional Athlete, an Offensive Lineman who makes a career of blocking hits on a Quarterback and weighing 313 pounds and standing 6’3” I don’t imagine he’ll be a very nice guy. In fact, I expect a growling man like the one on the cover of this magazine. However, what I got when I first met

Davin Joseph, Guard for the Tampa Bay Buccaneers, was a man so soft spoken I had to lean in to hear what he was saying. Joseph was born and raised in Hallandale, Florida, just outside of Fort Lauderdale. “It’s just one exit. If you pass it, you miss it,” Joseph said. “But it’s a close-knit community.”

It was being raised in this small town that makes his success on the football field such an amazing accomplishment. “Hallandale is a place where they say nothing ever comes from Hallandale and nothing can be done in Hallandale. That’s probably where I get most of my inspiration from. To come from a place where you know nothing can happen,” Joseph said. Joseph has definitely done everything in his power to show that great things do come from Hallandale, Florida. While at Hallandale High School, he played four years of varsity football setting a record of 532 plays, took All State for 100 tackles & 24 sacks and took two State Championships and one National Championship as a wrestler in the Heavy Weight Division. He went on to play four years as a University of Oklahoma Sooner before being drafted to Tampa as a first round pick in 2006. His career in Tampa has been successful to say

the least. He was voted to the Pro Bowl in 2008. Although his football career is successful, Joseph is much more than a Buccaneer; he’s a father, and a great one at that. He is a single parent to seven year-old Ali who he raises with a little bit of help and support from his Mom during football season (she takes Monday Night Football and travel game babysitting duty) and he’s also Daddy to three year-old Eli who lives in Oklahoma and who he sees often. Just like any good parent, Joseph only wants good things for his children and doesn’t want to pressure them into anything, including a career in football. “I’m not the Dad to say ‘If you’re going to play football, you have to do it my way, or go to this school because they always win’. I just want them to have variety and exposure to different things to see what they like. It might be soccer or baseball,


spotlight » Davin Joseph football is not the only way to make you happy, or make me happy,” Joseph said. Whatever his children decide to pursue, Joseph says he will be happy with it, even if it leads them down a non-sports related path. “They have some really creative personalities…maybe music or arts are their calling. I just want them to feel like they can express themselves, enjoy and be successful at something. I just want them to be able to have access to it.” Knowing that he can provide great opportunities to his children is something Joseph is proud of and he hopes, through his newest endeavor, a non-profit foundation he can provide new opportunities to other kids who attend inner city schools and may be lacking the resources to succeed. With the help of his Executive Director Angel Williams, the Davin Joseph Events for a Cause Foundation was incorporated on May 5, 2011. The mission of the Events for a Cause Foundation: “to enhance the quality of opportunities available to our youth by strengthening athletics and performing arts programs in public schools, community based non-profits and clubs throughout America”. The Foundation is doing just that in South Tampa’s Middleton and Blake High Schools. One of the big, underlying missions of the Events for a Cause Foundation is to get kids involved in something in their schools and communities that will keep them busy after school and hopefully keep them out of trouble and provide them with avenues to success. However, the key to getting them involved is to make the programs exciting and ensure they have the proper resources.

“You can’t really fault the kids for not participating when you walk the kids to place that looks like a dump. The overall goal is to give some of these inner city schools, public schools, community based clubs, the backing and support they need. Whether it’s through giving financially to go to a band camp or football camp, or giving them some equipment so they can have a nice weight room or newer equipment on the football field, it’s important to support them,” said Joseph. In September at Blake High School’s Homecoming Pep Rally, Davin Joseph and the Events for a Cause Foundation gave a donation of $10,000.00 to help refurbish the weight room used by the students and staff at the high school. His donation was coupled with a matching gift from the NFL Youth Fund in the amount of $5,000.00. The Foundation has three initiatives they are currently focusing on at Blake, Middleton and Hallandale High Schools – “Academics through Athletics”, Arts through Athletics” and “Proper Nutrition Before Performance”. The purpose of “Academics through Athletics” is to encourage academic success in students with an athletic/sports-centered focus. The Foundation will reward students who excel in the classroom and in sports. “We have too many talented kids that cannot participate in sports due to low GPA’s and we want to break the cycle by placing a strong emphasis on education while participating in sports,” said Events for a Cause Executive Director Angel Williams. “Arts through Athletics” is an initiative to encourage students to get involved in both performing arts and athletics, that they don’t have to be restricted to just one. “We want to encourage and promote both programs so students feel like they can be involved

in both and be accepted. We are hoping to partner with art, drama, and theatre programs to enhance performance levels and decrease student fees associated with participation,” Williams said. Their largest initiative and the one they are currently promoting and funding in all three high schools is “Proper Nutrition Before Performance”. In this program, the Foundation provides pre-game meals which are heavy on carbs, sports drinks, snacks and post-game recovery drinks. Currently, Middleton and Blake receive pre-game meals for girls basketball. The Foundation also provided pre-game meals for the entire football season at all 3 schools and will continue to work with programs throughout the school year. “Nutrition is the most important factor in an athlete’s preparation regimen. “I know what it’s like to play sports all day on an empty stomach and I am committed to assisting athletic programs to enhance student athletes’ health,” Davin says. “We’re informing students of the importance of hydrating and eating well to prevent injuries. Most schools don’t have the funds to provide these resources. We want to fill that void and provide them with the necessities for good performance,” Williams said. Even before starting his foundation, Joseph has had a place in his heart for giving back to the community. For the past five years Joseph has given away Thanksgiving dinners to 75 family members in the Hallandale community. They’ve always given away 75 dinners to coordinate with the number Joseph wears on the field. However, in honor of the fifth year, they have doubled the number and give away 150 meals. Also, Joseph has partnered with fellow

team-mates to host “Turkey Time with the O-Line” and have given away Christmas gifts to under-privileged and deserving mothers in the Tampa community. He also established “Davin’s Dream Team”, a ticket program with the Bucs that reserves 24 seats at each of the nine home games for organizations selected by Davin. The attendees receive tickets, shirts, food vouchers and a meet & greet with Davin after the game. Both Middleton and Blake have taken advantage of the program and Hallandale will benefit at the last home game of the season. “Through my five years here in Tampa, you always have that “Want” to give back. So, for the first five years I basically gave out of my pocket. Whether it was paying for an AAU Basketball team or doing a Christmas thing with my teammates, I’m always willing to help where I can. We established a Turkey Time with the O-line, a Thanksgiving meal giveaway in Hallandale. But, I never really had a main mission or objective,” Joseph said. Much of his passion for giving back comes from the fact that he has the ability and the platform to give and raise awareness. “I really believe it’s my duty, my job from the platform I have of being a Professional athlete and being able to make a great living. I think a lot of athletes don’t understand how influential they can be. And, by no means am I a superstar, but I can say that I mean something to Tampa. So, it’s my duty to give back and make other people feel good. If through my journey, I only help one kid, it’s worth it. One program, it’s worth it,” Joseph said. As Joseph mentioned in his interview, often those on the outside hear the negative side of athletics and don’t see that there are athletes out there with a desire to do well in the

Joseph, who at the beginning of his career strived for perfection and tried to do everything right, has come to the conclusion that he can’t do it all, but what he can do is give his all. “Everything is so competitive, you just want to be perfect, but there’s no such thing as perfect. Whatever you put in is what you’re going to get out,” said Joseph. Davin Joseph and his Events for a Cause Foundation has a bright future in the Tampa Bay Community and they are striving to make a difference in the lives of students by providing the tools for excellence. This Tampa Bay Buccaneer has a heart for the community and it shows by their current success!

Some guys don’t like to spend money, so volunteer. If you don’t’ like to volunteer, give. If not that, just support someone else. I believe with our platform of Professional athletes and being admired by youth, and even adults, you have to use that in a positive way because we already know how much of a negative spin athletes can get, and sometimes rightfully so. But, they have to use that platform for something positive. I really think this is what I want to do,” Joseph said. The concept of starting a Foundation is one Joseph has been toying with for quite a

while. However, in the beginning of an NFL career, there’s little time for anything other than establishing your career and trying to fit into the league and the team. Joseph says he feels he’s entered the second phase of his career that allows him to do a bit more in the community. A lot of credit goes to my Director, I really believe that she understands my mission and goals. She has established it the right way from the ground up” said Joseph.

Using his platform as a successful professional athlete known in the community and his down-to-earth view of giving back, Joseph is committed to finding success through his Foundation. “One thing I want people to know is that I’m committed to what I said I would do for my Foundation. Going Exotic with Red Blends Story By: Jodi Lokay

A

nother Sunday night crept upon me, feeling overwhelmed by my busy weekend of “home improvement”, I was ready to wind down for wine time. After sanding and staining tables all Sunday and making more friends at Home Depot than I have in my personal life, I decided it was time for my sanctuary: Publix Greenwise, South Tampa. Arriving in their collection of varietal wines, a black and ruby red gothic style label caught my eye from nearly 2 aisles away. “Apothic Red Save $1.00” the end cap basically pointed at me. Turning the Apothic Red: WineMaker’s Blend 2009 bottle around in my hand the label read, “Inspired by an ‘Apotheca’ a mysterious place where wine was blended and stored in 13th century Europe, Apothic Red offers a truly unique wine experience.” Not that I am hard to convince when it comes to wine, but I was sold. It sounded so intriguing and almost dangerous that I couldn’t wait to taste it. I was so excited that I didn’t even check the type of wine it was until it was in my cart. “A masterful blend of Rich Zinfandel, Flavorful Syrah and Smooth Merlot,” the label read. Recently, I have been buying more red wine blends, so I wasn’t surprised by my subconscious decision. Now the real question is: What cheese perfectly pairs with such a variety of different types of grapes? Hopping over to the cheese smorgasbord next to the wine I quickly pulled up my bookmarked wine and cheese pairing chart on my BlackBerry. I tried to pick a cheese that can cross at least two of the grape’s companions. My cheese chart read: Zinfandel: Asiago, Dry Jack, or Gouda Syrah: Blue, Aged Cheddar, Dry Jack, Slightly Aged Goat, Gruyere, or Manchego Merlot: Asiago, Mild Blue, Cantal, Aged Cheddar, Gouda, Gruyere, Manchego Scanning the commonality, I selected a

Gruyere soft cheese seeing it paired nicely with the Syrah and Merlot wines. Also, truth be told, I love it and it was on sale. I love Gruyere because it is typically a sweet and salty cheese but will develop and change depending on the ageing process. More specifically, it starts with a nutty taste when it is young and becomes more assertive and complex with age. The Gruyere texture starts with a creamy texture and develops into a harder cheese with holes and can be slightly grainy. I chose a younger, creamier Gruyere because it is easier to cook with. Arriving at home and only cashing in at Publix for roughly $18.00 I was thrilled to experiment my new found choices. Studying my cookbooks, I selected my favorite purchased in Santander, Spain: The best 100 tapas. I marked a page that instantly caught my eye (and happened to use the Gruyere cheese I just bought). “Canutillos de jamon y queso” otherwise known as Ham and Cheese rolls. I think I prefer the Castellano Spanish translation, a little more exotic than a meat and cheese roll, right? First I started by making a cheese puree to coat the Ham roll-ups. By pouring a dollop of cream, adding a few tablespoons of cream cheese, 4 tablespoons of butter and some added heat, it melted down into a creamy consistency. On a secondary plate, I laid out thin slices of black forest Boars Head Ham and covered with slices of Gruyere cheese and a small dash of hot cream puree. Trying to encase the hot liquid filling I quickly rolled up the deli meat and stabbed it with a tooth pick. Once the puree cooled down and it was safe to touch again, I coated the roll ups with a mixture of beaten eggs and bread crumbs and fried in olive oil. I pulled the beauties off and let them cool after a minute or so. While I was letting my Gruyere tapas rest, I uncorked the bottle of Apothic Red to

unleash itself. Before tasting, as most wine drinkers, I twirled the glass in my hand, creating a small spiral. Since I was using a stem-less glass I had to be a little bit more careful with my whirl. The wine has a rich blackish red color which led me to believe it would be potent and complex. Immediately I smelled the vanilla and brown spice aromas from the swirl of my glass and thought,” I might be wrong about this one.” My immediate impression was the distinct sweetness from the Zinfandel component of the blend. Normally, I dislike Merlot renditions however I liked how the Merlot

balanced the sweet Zinfandel for an “easy to drink wine”. Taking a few more pulls, the vanilla re-introduced itself as a very smooth and distinct flavor. I could also taste the dark ripe red fruits including black cherries with hints of mocha to balance the sweetness. I was happy I explored a new blend with the Apothic Red: Winemakers Blend 2009 as it was stated on the bottle…a very unique experience. The surprisingly full-bodied wine was a great balance for my salty fried Gruyere and Black Forest Ham tapa dinner and my relaxing Sunday evening.

The Stacked Burger T Story & Photos By: Michael Musial

he Hamburger has become as American as Apple Pie, Hot Dogs, and Baseball; so it’s no small surprise that places now are working to promote a “Gourmet” burger experience. Just like the offerings of “gourmet” Pizza or Cupcakes, this trend seems to be on the rise. One of the newest places on the block is Stacked Burger, located on Platt Street. But Stacked isn’t just offering a great burger at a great price, they are at work making a fun and relaxing environment to sit back watch sports and eat great food. I had the privilege of visiting the Stacked Burger with two friends of mine this past Thursday. We had visited the website and gotten a pretty good idea of what to expect. Seemed like it would be a Hooters meets Five Guys, laid out like a Tijuana flats. When we arrived we found a very open and inviting atmosphere. The restaurant is laid out with the bar in the center in front the main wall and kitchen, with booths and tables spread out leaving a decent amount of room to maneuver. TV’s line just about every wall, with Sports, News, and other 24 hour programming on display. The staff was dressed in rather subtle attire, clothing that I imagine the ladies would be comfortable wearing out to a ball game or the mall. The bar serves both beer and hard liquor. Being there for lunch we weren’t able to take advantage of any of their more mature offerings. On the non-alcoholic side they had Coke products, lemonade, and both sweet and unsweetened iced tea. We were invited to sit where ever we would like and take a look at the rather inclusive menu. While Stacked burger focuses on Burgers, they do have Salads, Hot Dogs, Wings, and their take on the Sloppy Joe, the Sloppy Joanne. It’s also hard not to notice in the center of their menu bracketed by red lines is their challenge, the Double D Burger - 4 patties, 1 pound of meat, several toppings and 2 sides. If consumed in 2 minutes you get a free meal. As of my visit, only one person has completed the challenge and I was in no way tempted to try it myself. We started off with an order of their zucchini fries, which seemed unique to their menu. We then each decided on a different burger. Kevin got the Texas BBQ burger, Dave ordered the Stacked Burger, and I went for their challenge burger, with no intention ofcompeting, I just had to see what this monstrosity would look

like. The zucchini fries had a very “fair-like” taste, the batter used was a bit sweet,and were served with horseradish sauce, which did not do much to augment the fries. Our server offered their Texas Petal Sauce, which was very similar to the dipping sauce used with a Blooming Onion or Awesome Blossom ( if you remember when Chili’s had more than chips, queso, and salsa for an appetizer). The fries with the Texas Petal Sauce was very agreeable. Everyone at the table thought so. Just nice to add a little bit of spice to go with the sweeter batter used with the zucchini fries. Not long after our burgers arrived, and my Double D was exactly the monster I thought it would be. They were well cooked and executed nicely with excellent toppings - bacon, choice of cheese, and that all of that green stuff. I got the Double D with American, Dave and Kevin, both got the Pepper Jack. Their choice of sides were Onion Danglers (onion slivers or stripes dipped in batter) and Sweet Potato Fries served with a maple syrup dipping sauce, which complimented them nicely. I stuck with the traditional waffle fries and potato salad. The general consensus was that the burgers were very good. They were juicy to the point of being perhaps a little messy. I happen to be of the opinion the messier the better. I could only eat half of my Double D, but it was one heck of a meal. The most important sign of a good meal is whether or not you would go back. All three of us agreed we would. I would like to eat something more pedestrian perhaps with some pepper jack. So if you find yourself near Stacked Burgers, and want a nice meal, reasonably priced served in a very relaxing environment, check them out, and if it’s after hours have a brew for me!

extra » al reuchel all, have you ever changed your mind about anything important? I have and I’ll bet you the same is true for you. I used to hate vegetables and changed my mind when I found out there were actually good for me. And, my grandma would slip me a quarter when I ate my peas. It’s like this. I say I am going to stand in the road because I believe it’s a cool place to be. I’m not a car, but in our neighborhood everyone walks on the streets more than they do the sidewalks. So I’m standing there and suddenly a big old truck comes roaring around the corner headed straight for me. I have two choices: I can stand my ground because I told my friends I liked standing in the street, or I can flip-flop and move out of the way and live to tell about it. Guess which option I would choose? Now I can hear your brain turning. That’s not a fair comparison because we should all know better than to stand in the street believing it’s a safe as the sidewalk. Consider this though. Suppose you supported a policy that made perfect sense at the time you supported the idea. Then someone comes along with a better idea, the scientific data to prove that it’s better, and a new policy that is genuinely better than your original idea. Who is the bigger fool or loser or most closed-minded that wouldn’t change a position if a newer, better one came around? Are we all so 100 percent certain or convinced our ideas are so superior that if another one comes along we won’t at least give it a fair hearing? Again, I’m not a politician and I just try to apply common sense. We are all a bunch of flip-floppers from time to time and nobody crucifies us for it. But if you are running for office, changing your mind is the kiss of death.

f you believe the pundits, the biggest sin for any politician is to flip-flop. If I’m reading the tea leaves properly, that means to change your mind about a previously held position. In this year’s presidential race there are plenty of flips and flops, people changing their minds. I won’t point them out because their opponents are already doing a fine job of that.

Now, I am no politician, though I do get to talk to plenty of them, so the sin of changing one’s mind has never been a litmus test for me. In fact, every time someone makes a big stink, I’m the guying asking, “So, what’s wrong with that?” Rick Perry told me the problem with flip flopping is not such a big deal when you

begin formulating your positions. But as you get older, you should have solidified your positions enough that you don’t need or shouldn’t need to change your mind. It’s a sign of weakness, I guess. So, in my unscientific way I asked a few of my colleagues and friends about flip flopping and if they felt it was such a crime. Most didn’t think it was such a big deal. After

How about we all decide on our own which ideas are the best. How about we support candidates based on the positions they currently hold, not the ones they used to hold. How about we interpret changing one’s mind for a better idea that benefits more people and improves our lives as a sign of strength, of determined leadership that puts the good of the people above the ideology of party. Maybe that’s too radical. I think I’ll flipflop and go back to having someone tell me how I should think. After all, isn’t that the American way?
