Letter From The Publisher Like many of our readers and advertisers, DeDe and I are small business owners. We know firsthand what it’s like to work hard and sacrifice in order to offer our best product to customers and to provide for the families of our employees. We also know the benefits of networking and building relationships in our community so that we can ALL build a better future for our children. We believe in the commerce community. This month we were inspired by the stories of three Agriculture teachers honored by Polk County and of musician Michael McArthur. We read thoughts and quotes from people not much different than you or us who still believe in the American dream of following their passions and succeeding in business. We were inspired by what inspired them and could relate with their desires to be contributors to our nation’s great society. As always, we encourage you to support our local merchants and service providers. Shopping and buying local definitely does make our community stronger. With the holidays upon us, it’s also time to reflect on the importance of family and friends. We especially hope that this busy time of the year will include some down time for fun and relaxation - for making memories and capturing moments that make life worthwhile. Here’s to a wonderful Thanksgiving respite. We look forward to making your life in the Lakeland area a little more meaningful by sharing your stories and celebrating your successes. Warmest Regards, Mike and DeDe Floyd

Underground At The Polk U nderground at the Polk returned once more to the Polk Theatre on October 8, 2011. The event first appeared in 2004 after Leslie Sikora, President and CEO of the Polk Theatre, and Brian Macke, the theatre’s technical director at the time, were inspired to create an event that showcases local bands without the presence of competition. Underground at the Polk occurred annually until 2007 and returned in 2009 in a different format involving a combination of arts, film, music, and performing arts as well as the participation of college students during the planning process. It was then resurrected earlier this year to provide the residents of Lakeland with an engaging musical experience right in their backyard. Christina Wellman, a member of the Polk Theatre’s Board of Trustees, of GenX Media Group, LLC explained that the purpose of Underground at the Polk is “to foster a relationship with a new generation and restore relationships with those who may have experienced events at the theatre at a younger age (such as children’s films, dance productions, etc.). There is a lot of love for the Polk

6

Theatre and we all have fond memories of growing up in the Lakeland area and seeing our favorite films, ballets, holiday events, etc… It is such an amazing venue with a lot of wonderful history. I want people to think of the Polk as a place to check out on the weekends. Not just for classic films or Performing Arts Series events.”

This year, over 150 rock fans gathered together at this legendary event to celebrate and enjoy the talent of Break the Hero and Revel InThe View, as well as the swamp rock sounds of TUG, and the mix of metal, rock, jazz, and electro beats that make up Magnificent Applesauce. Tickets were sold for $5 when the doors opened at 8 p.m. to those who are 18 and older. Wings from Natalie’s Sports Bar, sliders from Fat Maggie’s, as well as $2 beer and wine was sold. Magnificent Applesauce launched their latest EP, “Mass Of A Million Suns.” Not only is Chad Kostella in charge of synth, vocals, and rhythm guitar for Magnificent Applesauce, but he is also a designer at Muse Inspired Design, which fulfilled all of the event’s graphic design needs.

When asked what Underground at the Polk means to him, TUG’s drummer, Tony Hutchison, commented: “I see this as fantastic opportunity to showcase some great local talent in a place where all are welcome. I love and respect all the venues that allow us perform but it’s nice to be able perform in this historical building. This is a place where legends have performed and it’s great to be a part of that in any way!”

This year’s sponsors included Lakeland Local, Muse Inspired Design, and Kreative Kartel, the special events division of GenX Media Group, LLC. You can catch the next Underground at the Polk this December. More details will be available soon at www.polktheatre.org

Museum Brings Music to the Arts 10th Annual Red, White and Blues is a Hit

Precious things for precious little people! 105 West Oak Drive (Oak Plaza) • Lakeland 863-682-7722

Written By: Brian West | photos By: Polk Museum of Art

T

he Polk Museum of Art is one of the jewels of downtown Lakeland. The museum has so much to offer to the community through its programs and events. From time to time, the museum staff puts together some great fundraising events. On October 21st, the Polk Museum hosted its 10th Annual Red, White and Blues event. This fundraiser brings two popular elements together - wine tasting and music - specifically, the blues, in an incredibly relaxing evening. Approximately 200 patrons spent an evening in the beautiful museum setting with great background music and enjoyed friends, artwork, food and drink. Food was provided by the Texas Cattle Company with heavy hors d’ oeuvres. The $75 tickets entitled patrons this year to music by featured blues artists, Joe Louis Walker and Selwyn Birchwood. Birchwood and his band performed as an opening act, which was a first for the event. Just a few weeks earlier, Birchwood and his band won

the 2011 Suncoast Blues Challenge held in Tampa. So they’re making a name for themselves. At about 6:30 p.m., Birchwood and his band began entertaining the crowd as a warm up for Walker. Walker is a long time blues artist who grew up in the San Francisco Bay area. Throughout his career, he has played with artists such as B.B. King, Thelonius Monk and even Jimi Hendrix. How many people can put that on a resume? Walker’s 2009 album, Between a Rock and the Blues, was designated the Album of the Year at the Blues Music Awards. Walker took the stage at about 9:00 p.m. and turned in a great performance. If this sounds like the type of event you’d like to attend, contact the Polk Museum of Art. Become a member. You don’t have to, but you and your family will have an opportunity to enjoy the museum all year round. In addition, you’ll be included in the mailing list and be notified of each of their fundraising opportunities, including their annual Red, White and Blues. To learn more, visit www. Polk County Farm Bureau Honors Three Polk County Agriculture Teachers T

Written By: Cheryl Johnston

he Polk County Farm Bureau recently recognized three Polk County School District agriculture teachers for their outstanding work. The organization’s 69th annual membership meeting in September in Bartow seemed the perfect opportunity to showcase excellence in education.

Kathleen High School teachers Keitha Hall and Kyle Carlton were honored as recipients of the PCFB “Agriculture Program of the Year” for 2011. The program founded in 1937 now involves 300 students in its courses in forestry, horticulture, animal science, aquaculture, agriculture mechanics, and agriculture communications. Keitha Hall belonged to the Haines City FFA Chapter before graduating from the University of Florida. She has taught agriculture since 1999 and directs the Ag

8

Communications, Aquaculture and Ag Foundations classes this year. Hall said, “I really like all the classes I teach. I especially like working with our speakers, the parliamentary procedure team and the citrus team.” She appreciates the opportunity to work with Carlton, too, and added, “Kyle and I work very well together and do a great job motivating our students. He teaches the Animal Science, Ag Mechanics, and the Horticulture and Forestry class. We make a good team.”

Since 2000, the University of South Florida graduate Carlton has taught agriculture at Kathleen, following nine previous years of teaching in Polk. His experience as an 8th grade FFA student affected his current course. Carlton explained, “The advisor would not let me drive the tractor, so I took a science class as an elective instead of taking Ag again. Today, I would teach Ag mechanics and forestry all day if that was an option.”

november 2011 focuslakeland.com

Of the recognition, the husband of Tammy and father of three said, “It was an enjoyable experience to attend the Farm Bureau meeting and receive the award for the work our FFA members have done over the past year.” He also enjoys also giving credit where credit is due. Carlton observed, “I enjoy teaching and working with the students. The excitement they exhibit when they understand a new concept, learn to identify a new specimen, or become proficient in a new skill is rewarding. Ms. Hall and the students really went above and beyond, raising the bar to a new high that will be difficult to surpass. Also, the agriculture teacher of the year, Jenna Barefoot, is a Kathleen alumnus. I was very proud of her and the job she has done in our county.” Tenoroc High School teacher Jenna Barefoot was presented with the “Agriculture Teacher of the Year Award” for 2011. The University of Florida 2008 graduate helped to open the school that fall after

working as a permanent sub and paraprofessional in Kathleen’s Ag program, where she was an active FFA member in middle and high school, serving as chapter president her senior year. The Tenoroc FFA program features a state of the art shop, greenhouse, hydroponic systems, and 13 acres of pasture. Regarding her teaching preferences, she said, “Animals are my favorite part of agriculture. I also enjoy teaching Agri-science Foundations because I get to teach a little bit of everything.” This might explain why Barefoot’s students have excelled at livestock judging competitions. Teneroc now has 180 students receiving practical Ag education. Of her surprise at the announcement, Barefoot said, “I feel there’s a lot more worthy Ag teachers in the county, so I was shocked!” Humility and teamwork are obviously principles these three teachers embrace. Congratulations and thanks for modeling those to our Polk County children.

Great Family Fun Story by Cheryl Johnston | Photos courtesy of LEGOLAND® Florida

The wildly twisting track of the LEGO® TECHNIC™ Test Track Coaster provides thrill-a-minute practice at acceleration, braking and maneuverability.

Located in Winter Haven on a tract fronting Lake Eloise, the park is 45 minutes east of downtown Tampa and 45 minutes southwest of the Orlando. Fifth and largest in the LEGOLAND franchise, the interactive Florida destination is designed for families with children from ages 2 to 12, and of course, for all who are young at heart. More than 50 family rides, “hands on” activities and shows to provide education, adventure and fun will entertain millions in this second park of its kind in the United States. Four other LEGOLAND Parks in the world combine in this international venture. The Winter Haven location is the second in the U.S. after the Carlsbad, California park opened in 1999. The others include: LEGOLAND Billund in Denmark (1968), LEGOLAND Windsor outside of London (1996; awarded top honor for excellence in academic programs), LEGOLAND California in the U.S. (1999) and LEGOLAND Deutschland near Günzburg, Bavaria Germany (2002). An additional LEGOLAND Park project has been announced in Malaysia, and is scheduled to open in 2012.

COMPANY HISTORY In 1932, Ole Kirk Christiansen started making wooden toys in his Billund, Denmark workshop. Two years later, he named his toys and workshop - LEGO®, which is a contraction of the Danish words ‘leg godt,’ meaning ‘play well.’ Coincidentally, later he realized that LEGO in Latin means “I put together” or “I assemble.” The company bought its first plastics injection-molding machine in 1947, and introduced in 1949 its “Automatic Binding Bricks, the forerunner to the LEGO brick. The development of inner tubes on the bricks in 1958 significantly increased the number of possible building combinations. Preschool children thrilled to the larger DUPLO® bricks introduced in 1967, while older children enjoyed the LEGO® TECHNIC™ debut in 1977. Now known as The Educational Division, LEGO DACTA®, appeared in 1980. Increasing interest in the fantastic LEGO masterpieces displayed at the factories triggered Godtfred Kirk Christiansen’s idea of exhibiting the models outside. He originally envisioned just a little garden, for the display of various LEGO models and figures, but the idea expanded to become much larger in scope. In June 1968, LEGOLAND® Billund opened for the first time on a 9-acre site. and exceeded everyon’e expectations. In 2005, LEGOLAND theme parks became part of Merlin Entertainments Group, the second-largest theme park operator in the world and the leading name in location-based, family entertainment. Europe’s Number 1 and the world’s second-largest visitor attraction operator, Merlin now operates over 74 attractions, six hotels/two holiday villages in 17 countries and across four continents. The company aims to deliver memorable and rewarding experiences to its 43.6 million visitors worldwide, through its iconic global and local brands, and the commitment and passion of its managers and more than 15,000 employees.

The Dragon, an indoor/outdoor steel roller coaster, features a hilarious, behind-the-scenes view of life within the enchanted LEGOLAND Castle.

SERIOUS FAMILY FUN Imagine 50 million bricks assembled with one goal in mind: enjoyment. Inspired by America’s love affair with all things LEGO® and a desire to create a family vacation for even the youngest at heart, LEGOLAND has redefined the theme park experience. With its unique focus on young guests and a great variety of thrill rides, the company has it all covered. More than 50 family rides, shows, and interactive attractions, restaurants, shopping and beautiful botanical gardens will keep everyone entertained for a full day’s visit and more. Ten zones of fun range from medieval thrills featuring knights, princesses and dragons to a highenergy, swashbuckling adventure starring jet-skiing pirates. What sets LEGOLAND Florida apart from the Tampa and Orlando competitors are the “pink-knuckle attractions.” Four junior roller coasters among the 50 rides offer the perfect combination of speed and thrill for the entire family to enjoy together. LEGOLAND® Florida General Manager Adrian Jones encourages the public to visit right away, saying, “The entire LEGOLAND experience is designed for kids ages 2 to 12, so there’s no longer any reason to delay the decision to take that first family theme park vacation.” He continues, “Our highly immersive rides and experiences are great fun for younger children, allow mom and dad to play along, and are perfect for creating cherished memories for every member of the family.”

VACATION PLANNING SIMPLIFIED The company’s user-friendly website simplifies the entire process for booking tickets, accommodations, airlines and rental cars. The “Bed & Brick” program features 13 preferred “family friendly” hotels in Central Florida officially endorsed by the park to accommodate different tastes and budgets. Each offers special rates and ticket/room packages. Convenience is key. Parents can book the essentials and print from home.

WHAT TO EXPECT The park is comprised of the following 10 “zones,” plus the botanical gardens. The Beginning hosts the park entry, ticket and pass sales, the Market Restaurant and The Big Shop, one of the largest retail stores for LEGO merchandise in the world. Guests can also enjoy a 360° view of LEGOLAND® Florida from the Island in the Sky, a 150-foot rotating platform ride. Fun Town helps guests sense they have truly entered a LEGO village. A firsthand look Factory Tour demonstrates how LEGO bricks are made from factory to finish. Here also is the 700-sear Wells Fargo Fun Town 4D Theater, where three different 4-D movies are shown throughout the day. For eats, enjoy LEGOLAND’s signature dessert, the original Granny’s Apple Fries – warm Granny Smith apple fries, dusted with cinnamon and sugar and served with a vanilla cream dipping sauce! The Fun Town Pizza Pasta Buffet is a buffet-style restaurant featuring a wide range of pizza and pasta dishes. LEGO Studios is the place families can pick up all their favorite LEGO licensed products, such as Clutch Powers, SpongeBob™, Indiana Jones™, Star Wars™ and Batman™.

Miniland USA, the heart of every LEGOLAND Park, will be home to seven specifically themed areas: Florida encompasses the entire state from Mallory Square in Key West to Bok Tower in Central Florida and antebellum mansions in the Panhandle. Miniland Florida also includes an expanded area for Kennedy Space Center and an interactive Daytona International Speedway® racing experience where guests can race LEGO brick cars. Las Vegas features the world-famous Strip including the Luxor Las Vegas, New York, New York Hotel and Casino, Excalibur, Mirage, Treasure Island, Tropicana, MGM Grand, Venetian, Stratosphere tower and two iconic structures of Paris Las Vegas: the balloon sign and Eiffel Tower. “The Strip” at LEGOLAND also features a miniature wedding chapel, monorails and real-life sounds recorded in Las Vegas. Washington, D.C. sports faithful re-creations of the White House (including the first family and “first dog”), the U.S. Capitol building, Smithsonian, Washington and Jefferson monuments and parts of Georgetown. An animated marching band parades in front of the Capitol and tiny cherry trees blossom every spring. New York City features tiny jets of water shooting up from the fountain in Rockefeller Plaza, while an army of animated yellow taxicabs prowls the streets of Times Square. The Statue of Liberty, a cutaway view of Grand Central Station, The Empire State Building, the Guggenheim Museum and the Bronx Zoo are just a few of the iconic landmarks. A Pirate-themed section hosts a full-on swashbuckling pirate adventure as two opposing pirate ships and their “mates” battle it out upon the high seas. DUPLO® Village is ideal for toddlers and their imaginations. Youngsters can fly a plane, drive a car or explore Duplo Playtown, a whole town designed with their height in mind. The little guys call all the shots here on Big Rig Rally, Granny’s Jalopies and the Junior Fire Brigade where tots become voluntary firemen and work together to extinguish “flames.” These rides have a minimum rider height of 36” and those below 48” must be accompanied by a responsible adult 48” or taller. The Village also features DUPLO Farm, where children can slide, climb and crawl through and around a whole host of friendly farm animals. LEGO® Kingdoms takes kids back to medieval times with the LEGOLAND Castle where spells are cast and many knights, damsels and dragons are found. Rides & Attractions in the Kingdom area include: The Dragon, an indoor/outdoor steel roller coaster, features a hilarious, behind-the-scenes view of life within the enchanted LEGOLAND Castle. At the Royal Joust, kids ride LEGO-themed horses through a number of medieval scenes and encounter other riders in a simulated joust. Climb aboard the mysterious wooden train powered by the wizard’s magic at Merlin’s Challenge. The Forestmen’s Hideout is a multi-level tree and rope climb adventure. Some minimum height requirements apply. Enjoy the Castle Burger meals in the Kingdoms and invest in your little girls’ dreams come true transformation at Princess Palace, which will include a special photo to mark the day. LEGO® TECHNIC™ is the most “intense” zone in the park. Here courageous youngsters and daring adults will brave the LEGO® TECHNIC™ Test Track Coaster to harness the power of acceleration, braking and maneuverability as they race a life-size LEGO TECHNIC vehicle along a wildly twisting track. This area is also home to AQUAZONE® Wave Racers, which lets riders zip in and out of waves as they dodge kid-powered water blasters on their own LEGO jet skis. The Technicycle is a zany pedal-powered spinning machine that shoots riders into the air. Some minimum height requirements apply here also. Enjoy the fresh sandwiches, wraps and salads made fresh throughout the day at the Lakeside Sandwich Co. To satisfy the sweet tooth, visit Robot Pit Stop for funnel cakes available with an assortment of toppings. Imagination Zone, the most hands-on section of the park, emphasizes exploration and creation, while showcasing seven of the most visually exciting LEGO models in the world, including a replica of Albert Einstein’s head. In this zone guests will enjoy Hero Factory, an immersive interactive play area based on LEGO’s popular Hero Factory line. They can build a LEGO car and test it against the competition on the digitally timed track at Build & Test or build and program cutting-edge, computerized LEGO MINDSTORMS™ robots. For a great view of the entire park and Lake Eloise, kids and parents can hoist themselves up to the top of Kid Power Towers, and then enjoy a fun “free-fall” to the bottom. Pirates’ Cove, along the shores of Lake Eloise, has been taken over by swashbuckling LEGO “mini-fig” pirates in a live-action, water-stunt spectacular that brings families face-to-face with the action. Following the show, try Florida’s own 100% beef hamburgers and cheeseburgers with delicious fries at Cap’n Brickbeard’s Burger. This zone is also the site of the Botanical Gardens, a great place to cool off at the end of a day filled with high-energy adventure, and where families will find backdrops perfect for photos guaranteed to create Facebook envy. Land of Adventure entices adventurers of all ages to explore hidden tombs and hunt for treasure. Major attractions in this fun-filled zone include Coastersaurus, a wooden coaster that curves and dips in and around a lifesized LEGO brick dinosaur; Lost Kingdom Adventure, a spectacular, Egyptian-themed dark ride that lets guests fire laser blasters and navigate an ancient ruined temple in all-terrain roadsters; Pharoah’s Revenge, an outdoor attraction lets children and parents fire soft

foam balls at enemies and explore the complex maze of Pharoah’s kingdom; Beetle Bounce invites the willing to launch 15-feet upwards toward intricate, brightly jeweled LEGO scarab beetles perched atop tow monumental obelisks; and Safari Trek which explores the wilds of Africa and features amazingly life-like LEGO animals. Certain minimum height requirements apply. LEGO City is the perfect place for youngsters to live out their dreams in a scaled-down town created just for them. At Driving School, children ages 6-13 (and its counterpart Jr. Driving School, ages 3-5), youngsters get to drive their own car, navigate roads and earn a commemorative driver’s license. Other major attractions include Boating School, a ride that allows kids to captain their own mini-vessels; Flight School, a suspended steel rollercoaster that simulates the thrill of flight; and the LEGO City Rescue Academy, where families compete with one Children can let their another in fire and police vehicles to be imaginations run wild the first to put out a simulated “blaze” at Legoland Florida. and save the day. The Big Test is an interactive show that uses acrobatics, music and playful fun to teach fire safety as the zany crew of Fun Town Fire Department attempts to conquer the “Big Test” to become official firefighters. All-beef hot dogs and chips satisfy the need to feed at the City Stage Snack Bar.

BOTANICAL GARDENS In addition to the 10 zones, nature enthusiasts will be pleased to discover that LEGOLAND® Florida has taken great care to preserve the historic gardens established on the grounds of its Cypress Gardens predecessor more than 75 years ago. The setting has been restored to its pristine condition, with a collection of native plants, combined with a range of exotic species to create a horticultural masterpiece. Still standing sentinel in the garden is the vast Banyan tree planted as a seedling in 1939. Creative Kickstart to a Career/Dream

Local Musician, Michael McArthur, finds a unique way to achieve his dream Interview by Brian West

When it comes to artists, it seems like there are only two kinds - those thriving and those struggling. The thriving artists have connected their talent and passion to generate income as well. Some may still need that big break, but their on their way to success. The struggling artists can be people who think they have a talent, but they’re just not in touch with reality, and worse yet, their own friends won’t tell them that they should pursue another interest. You know, these are the “artists” everyone tunes in to see in the first few episodes of American Idol auditions. Lakeland’s Michael McArthur is the very talented artist we interviewed this month. Photo By: Dan Austin Photography

Focus: Tell me about your connection with the Black and Brew. McArthur: My brother and I opened the coffee shop in 2006. It was great. It was what consumed all of my time, and I loved it. But it came to a point, sort of a crossroads, where I was going to have to decide if I was going to run a restaurant and doing that whole thing or pursue something I was passionate about. I’ve always been passionate about music and it’s the one thing I always come back to, so I decided to take that route. To leave Black and Brew and sell my ownership to my brother was probably the toughest decision I’ve ever made. At that point, I knew that if I did something that dramatic and that big, I’d have no choice but to pursue my passion.

Focus: How did things evolve for you from there? McArthur: I was in chorus in Kindergarten in Elementary school. So I think my signing started there, but it was always just sort of a hobby. I loved it but I didn’t know [I could sing]. I had friends and family tell me that they liked my voice, but it wasn’t anything I was interested in at the time. When I was 16, my grandfather bought me my first guitar. It wasn’t anything special, but that’s when I started playing. Focus: I understand you’re on the verge of something exciting, and you’re using kickstarter to help you get started. McArthur: I am trying. We’re about half way through the process right now. I’ve raised 61 percent of my goal, and kickstarter is a fundraising platform for creative projects; whether you’re trying to write a book or release an album or even make a movie, anything with the arts. It’s been great. It’s been a pretty cool experience. I actually just heard about kickstarter a couple of months ago, and that that would be the route I’d take. Usually, when an artist sets out to make a record, especially when you’re just starting out or not signed to a record label, you have to come up with the money. Most artists take out a loan, save the money or put it on credit cards - whatever the case may be. And it’s all in the hope of making it back by selling albums. I decided to use kickstarter, so I wouldn’t have to do that.

Focus: Where will you record the album? McArthur: I’m going to record at the Vanguard Room here in Lakeland. It’s owned by a couple of local musicians in Lakeland who have produced tons of records. They have a pretty legit recording space. Photo By: Dan Austin Photography

Focus: When did you first become interested in music? McArthur: At a very early age. The earliest memory I have of listening to music is putting on a Michael Jackson cassette. It was the only music they’d let me listen to when I was little. I can still remember dancing around in the living room to the Thriller album on cassette.

don’t count those. Everyone always says that your family will love what you’re doing, but the truth is that I wouldn’t be here today and pursuing what I love if I didn’t have my family supporting me and pushing me.

Focus: How did you learn about kickstarter? McArthur: I heard about a guy from Lakeland that used kickstarter to buy a printing press. When I saw that project was when I learned what it was all about. It prompted me to do some research. I did probably a couple of weeks worth of research where I just went through pages and pages of projects and watched the videos and read the biographies. I just tried to figure out if it was the right platform for me. Then I started telling people that I was going to do it to create some buzz before I launched the project. Then when I launched the project, it was pretty cool because I raised about $1,800.00 in the first weekend. I launched it on a Friday and by Monday it was at about $1,800.00. It’s really kind of hit a plateau right now, but my thought is that most people are procrastinators and the last week is when everyone will jump on board. Focus: How is the timeframe determined? McArthur: You can choose any amount of time between 1 and 60 days. They recommend that you choose 30 days, so I did. The kicker is that if you don’t meet your goal, you get nothing. The pledges go back to everyone. It’s like an all or nothing thing. Focus: When does your clock with kickstarter expire? McArthur: November 23rd at 5:00 p.m. Focus: Where does your goal of $5,000 come from?

McArthur: It will actually cost more than $5,000 to make the album. Studio time is really expensive, and getting the album designed and printed with professional quality will cost about $1.00 per CD. So $5,000 is a round number, but I have very calculated expenses and it will cost more than $5,000.00 to make the album. I figured if I could raise the $5,000, it would be a lot better than me trying to come up with $5,000 on my own. Focus: If all goes well and you reach your $5,000.00 goal, what’s next? McArthur: I’ll record the album in January. I’ll have to put a deposit down with the studio to reserve the time. January is when I’ll start recording. I wanted to wait until January since the holidays are coming up. I didn’t want to have any distractions from the recording process. I want to be able to go into the studio, and spend the month it will take to record it living in the studio. It will take some time for the producer to mix it and I’ll have to get it mastered and have all the CDs pressed. My plan is to have the CD released in March. Focus: A month in the studio. How many hours each day? McArthur: Probably 8-10 hours each day. It’s a lot of work, but I’m super excited for it. Focus: What kind of support are you getting from your family? McArthur: I’m getting a lot of support from my family. I kind of joke around about it, and it’s probably not fair, but all of the compliments I get from family, I

Focus: How would you describe your music? McArthur: Genres are funny because they get so descriptive now. But in its simplest description, my music is probably pop, rock and soul. Focus: Who are your influences? McArthur: My influences are definitely Michael Jackson, Stevie Wonder and the Beatles. Influences are so cliché, but I’d say my biggest are probably Michael Jackson and Stevie Wonder. Focus: What kind of guitar are you playing right now? McArthur: I’m playing a dreadnaught Martin. Actually, it’s kind of an interesting story. The only guitar I had was the first guitar that my grandfather had given me, up until two and a half years ago. And guitars are expensive. I had to save up my money, everything I had, to buy the two guitars I have now. Focus: Are you doing this solo, or is there a band involved? McArthur: It’s just me. I played around with the idea of starting a band and having band members, but being in management, I know what it’s like to manage people, so when it came to music, it was so important to me. I wasn’t interested in risking my music to anyone else’s hands. I didn’t want anyone else to be responsible for me failing. I wanted that responsibility. McArthur has some great music. Look for great things from this young man. He makes a solid first impression and when you consider his accomplishments, especially as a business owner at such a young age, there’s little doubt this young man is going to continue to be successful. The only question will be – how successful. We wish you the best of luck, Michael. If you’d like to support Michael, go to www.kickstarter.com and search for his name. At press time, Michael had reached 89 percent of his goal and needed only $533.00 to reach his goal.

Louie Mack’s B y now you’re deep into our big November issue, and to mark the special edition we took a special trip to the renowned Louie Mack’s Steakhouse in Lakeland. Reports indicated that they were known for bold steaks and audacious seafood. Naturally, we were excited to get there.

Upon arriving, we were met with renowned Executive Chef Ron Gerard who previously held the same title at Sunset Sams of Gaylord Palms in Orlando. Chef Ron told us how, immediately after arriving at Louie Mack’s and stocking the menu full of bold new items, he put together a dream team of top-notch cooks. “My team is probably the best team between Orlando and Tampa,” he said, showing sincere pride in his staff. We were seated in the spacious V.I.P. room at a long, granite table. While our drinks were coming out, we glanced through the menu. We found a solid list of high-end

appetizer favorites like Escargo, Pan Seared Sea Scallops, and Chicken Cordon Bleu.

delicious dish that’s fun to eat, and the whole experience costs less than $10.

For an appetizer we were treated with the Stuffed Softshell Crab. It would seem that at Louie Mack’s, when you really want crab, a tired ole crab on a plate doesn’t cut it. Earlier, General Manager Daniel Day explained to us the nature of our chef: “He’s got this confidence factor to him,” he stated. “He has a creative mind. He has a unique way of putting things together.”

The Seafood Pappardelle pasta dish really brought the seafood posse to the table. We enjoyed a big plate of pasta covered with sautéed lobster, huge scallops, shrimp, and mussels. The seafood was plump and drizzled with garlic butter and made for a pleasurable variety in a pasta dish.

We found out what Mr. Day meant when the crab came out. Perched atop a raised plate over some exotic grains that only a botanist could identify, a huge Softshell Crab flamboyantly posed with claws at the ready. Its antenna stretched out wildly as if a still model of a delicious looking crustaceanin the middle fighting a vicious battle. If that wasn’t enough to impress, we learned that this appetizing-looking fellow was stuffed full of more crab of another variety. The entire thing was edible, including the legs. It’s a

Finally, we were hit with the trump card when the cowboy-cut Ribeye was brought out. Our chef noted how his favorite part of the steak is the marbled portion along the edge. I zipped my knife right along the border and pulled the slice right off. As I lifted it with my fork, juice dripped off of the tender piece. Criss-crossed grill marks adorned the surface, and the marbled texture was evident all throughout the piece. I sank my teeth into it and I was met with more juice then, and I wasn’t even half way down the bite- these things are cut thick in order to fit the whole 20 ounces onto the plate.

Notes of wood accompanied each bite, and the quality of the Kobe beef (a regarded delicacy, renowned for its flavor, tenderness, and fatty, well-marbled texture) shines right on through. Stay tuned for Louie Mack’s Thanksgiving Day Buffet which will feature Slow Roasted Prime Rib with Au jus and horseradish cream, Honey Baked Ham, Carved Free Range Turkeys, along with everything else that you would expect ($29.95 for adults, $12.95 for kids).
