Mango pudding

Mango pudding is a delightful and refreshing dessert, perfect for the mango season. Here's a simple and easy recipe for you to enjoy:

Ingredients

2 ripe mangoes (preferably sweet and juicy variety)

1 cup whole milk

1/2 cup sweetened condensed milk

1/2 cup heavy cream

1 teaspoon gelatin powder

2 tablespoons water

1 teaspoon vanilla extract (optional, but adds flavor)

Sliced mangoes, mint leaves, or whipped cream for garnish (optional)

Method

Peel the ripe mangoes and cut them into chunks. Reserve a few attractive slices for garnish and set them aside. Take the remaining mango chunks and blend them in a blender or food processor until you get a smooth puree. If needed, you can add a little water to help with blending.

In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for a minute or two to bloom.

In a saucepan, heat the whole milk over low to medium heat until it starts to steam (do not let it boil). Add the bloomed gelatin to the warm milk and stir until the gelatin completely dissolves. Remove the saucepan from heat.

In a separate mixing bowl, combine the mango puree, sweetened condensed milk, and heavy cream. Mix well until everything is thoroughly combined.

Slowly pour the warm milk and gelatin mixture into the mango mixture while stirring continuously. Add the vanilla extract if using and mix until you get a smooth and consistent mixture.

Pour the mango pudding mixture into individual serving bowls or a large serving dish.

Let the pudding cool to room temperature, and then cover the bowls or dish with plastic wrap and refrigerate for at least 2-3 hours or until the pudding sets and becomes firm.

Once the mango pudding is set, garnish with the reserved mango slices, mint leaves, or a dollop of whipped cream, if desired. Serve chilled and enjoy the delicious and easy mango pudding!

Note: You can adjust the sweetness by adding more or less condensed milk, depending on the sweetness of the mangoes and your personal preference. You can also experiment with different toppings such as toasted coconut flakes or chopped nuts for added texture and flavor.
