Conceived by co-owner Brandon Ristaino, and served with verve by barkeep Thomas Wolsely, the Pimms No. 1212 features the spice and citrus of Pimms mixed with a cool flourish of cucumber syrup, a dash of Brokers gin, a tart squeeze of lemon, and an anise hint of absinthe. Topped with soda water and garnished extravagantly with cucumber and lemon, the ginger glow of the Pimms No. 1212 delivers a layered taste experience that will keep you guessing. Feeling adventurous? Ask Thomas for a float of bitters on top. His enthusiasm for his craft is contagious, making it fun to explore the menu.
