Food Safari is all about getting out into the Suffolk countryside to discover great food and drink. Our unique experience days combine meeting inspirational producers, foraging or fishing with learning new skills like game butchery, sourdough bakery or sausage-making.

Wild Meat in a day Join experts from The Wild Meat Company for a fun day preparing, cooking and eating feathered and furred game. Our experts will share their wealth of experience about shooting, hanging and ageing wild game, and lead a hands-on butchery workshop. Then it’s your turn to relax while a chef from the British Larder Suffolk demonstrates some mouth-watering game dishes and shares tips for cooking game at home. After a gourmet lunch you’ll take home the game you’ve prepared and some inspirational recipes. From November to March we look at small game, outside those months we focus on venison.

Free Range Pig in a day An exclusive visit to the famously happy Blythburgh Free Range pigs, a landmark on the Suffolk coast and well known in top restaurants in Suffolk and beyond. On a visit to the farm you’ll see why the high welfare produces such great tasting meat and hear the facts behind pork labelling. After our farm visit, award-winning butcher Gerard King will prepare a pork carcass and talk about the best uses for the different cuts. You can get hands-on creating your own sausages and enjoy a delicious lunch.

Evening Butchery Workshops For anyone who has wanted to learn some basic butchery skills this is a great way to spend your Friday evening! These workshops take you behind the counter with Gerard King, award-winning butcher at the Suffolk Food Hall. Each month we look at a different kind of meat: pork, lamb, beef, poultry or game. You’ll get plenty of hands-on practice and learn good knife skills, boning, stuffing, rolling, the art of the butcher’s knot and tips on the best way to cook the different cuts of meat. We round off the evening with a relaxed supper. You will take home some of the meat you’ve prepared to show off to your friends and family.

A group on our Wild Meat in a Day course are expertly guided in the preparation of cuts of wild venison, supplied by Suffolk’s Wild Meat Company 5

Catch & Cook No fish can taste better than one you have caught yourself! Join us aboard our chartered boat for the chance to catch your own fish, and our chef will show you how to skin, gut and fillet it and prepare a delicious lunch at sea. We set off from Walberswick and our skipper will explain the different species, habitats, seasons and stocks of fish off the Suffolk coast. You’ll be fully kitted out with bait and tackle. Experienced anglers are welcome, but if you’ve never fished before there’ll be plenty of one-to-one tuition. Please check our weather policy for Catch & Cook.

Smokehouse Tour Pinney’s of Orford have been cultivating oysters and smoking fish for over 50 years at the remote and beautiful Butley Creek, near Orford. Not normally open to the public, this is a special behind-the-scenes tour, led by Bill Pinney, son of the founder of the enterprise. You will get to sample all the products during a seafood lunch at the family’s restaurant, The Butley Orford Oysterage. After lunch you will learn how to open oysters and carve whole smoked salmon.

Aboard our chartered boat on the River Ore a group go in search of lobsters and other seafood on Seafood in a Day.

Seafood in a Day From sea to plate, this day will take you on a journey to discover the wealth of seafood thriving in the River Ore. Aboard our chartered boat we’ll bait and lift lobster pots and, weatherpermitting, a fishing net. You’ll discover lobsters, crabs and other shellfish and enjoy the unusual land and seascape of Orford Ness and Havergate Island RSPB nature reserve. Back on dry land you’ll visit Pinney’s of Orford oyster beds and traditional smokehouse and meet Bill Pinney, son of the founder, who will explain the history of the 50-year-old business. You can sample all the Pinney’s products at lunch at the family’s restaurant, The Butley Orford Oysterage and learn how to shuck oysters and carve whole smoked salmon. 7


A spectacular harvest of wild mushrooms - we never know what we’ ll find on Mushrooms in a Day, but this time we took basketfuls home.

Beer Safari Join our journey to source the key ingredients of beer. Visit a hop farm, a malting barley farm and award-winning brewery, Adnams of Southwold, where we will meet the Head Brewer and taste a number of beers to see how the use of different hop varieties or types of malt create different beer styles. The day culminates in a delicious dinner at The Anchor at Walberswick, where you will learn how to pair beer with food. You’ll take home a new deeper appreciation for beer as well as an informative pack of notes.

Artisan Bread in a Day A behind-the-scenes day at the Pump Street Bakery. Artisan baker, Chris Brennan, will share his enthusiasm for baking real bread from natural ingredients and show you how he creates different styles of breads from baguettes to walnut & cherry using a natural sourdough. You will learn to shape, prove and bake a sourdough; see the tools and techniques used by artisan bakers and find out how to adapt them for home. You will take home some of the breads and pastries you have made as well as some recipes and tips for home-baking.

Mushrooms in a Day This is a great introduction to mushroom foraging for serious foodies; we focus on what is good for the pot! The day is all about identifying and gathering edible mushrooms and fungi as well as other abundant wild foods. Led by wild food expert, Jacky Sutton-Adam, we explore the woodland, fields and hedgerows of Henham Park, near Southwold. Over a gourmet wild food lunch we’ll discuss the best ways to cook and preserve wild foods. You will take home a detailed mushroom field guide, some inspirational recipes and if we are lucky, some mushrooms to cook at home.

Children’s Food Safari A true ‘field to fork’ experience that shows children the connection between the food we eat and the farms it comes from. Children will spend the day at a small farm and meet and feed a variety of rare-breed animals and visit a productive vegetable garden before getting hands-on learning to make sausages, burgers and bread to create a feast to share with the grown-ups. All the family will leave inspired to try something new at home, whether it’s growing a few salad leaves on the windowsill, making your own burgers or even keeping a few hens. Suitable for children aged 6 – 12 years. The content of the day will vary slightly with the seasons. Children must be accompanied by an adult.

Gift Vouchers Food Safari vouchers make an unusual and memorable gift for birthdays, Christmas or special occasions. You can specify an event or the recipient can choose the course that they want! We can send the gift voucher direct to you so you can give them the gift yourself, or we can deliver it direct to them. For those last minute gifts, we can send a voucher via email. Vouchers are valid for 12 months and can be put towards the cost of a more expensive course.

Where to Find Us Food Safari events take place along the Suffolk coast from Southwold to Orford. The Suffolk coast is approximately 2 ½ hours from London by car. Regular trains run from London Liverpool Street to Ipswich (just over an hour) and a number continue up the coast to Woodbridge and Darsham (for Walberswick and Southwold).
