Just as restaurants, bars, brands, and — let’s face it, everyone — has changed with the COVID-19 times, so has the Fort Worth Weekly. Two years ago, we were publishing a monthly gourmet magazine called Zest 817. While it was glorious, in the end, the decision was made to go back to our broader focus of solid coverage of food and drinks from $ to $$$$ in our weekly dining section and our annual Eats Magazine each March. Just like our El Fuerte Taco Fest, our weekly and yearly editorial quests for the best tacos ranged from gas stations to gastro pubs, not just the fine dining scene, for example. Then came the pandemic. How delighted we are that 2020 is behind us. With restaurants and bars closed left and right starting March of 2020, FWW hunkered down, ran a lean staff, consolidated our separate food and beverage sections to a simple moniker of Eats & Drinks, canceled El Fuerte Taco Fest, and did not publish Eats Magazine 2020. In celebration of the local food community’s survival, the bars that now serve food, and the stores that give a local edge to shopping for culinary supplies for home cooking, we are proud to relaunch our annual magazine with a new name. As a tip of the hat to our previous culinary adventures, welcome to ZEST 2021, your guide to local eats, drinks, and shops. With thousands of places to choose from, we know how difficult it can be for businesses to stand out in the crowd. Each year, we provide our readers with the most comprehensive guide in DFW. Welcome to ZEST, the Weekly’s 14th annual food and drinks guide! ZEST informs the community about all the best restaurants, gastro pubs, farmers markets, bars, and more...all in one fell swoop. A Better Mocktail:

Beth Hutson of Elevated Elixir explains why the Sober Curious movement is gaining traction. Tell us about Elevated Elixir The Elevated Elixir is essentially a content platform that includes culinaryfocused beverages that are also alcoholfree. We’re primarily on Instagram, where we’ll share recipes and produce and release video episodes on IGTV as well as other fun pieces of content like profiles, photography, stop-motion photography, and graphics and motion graphics. We want to celebrate the experience of creating and sharing well thought out beverages, just without the added alcohol. Who is your audience? Drinkers and non-drinkers –– anyone who enjoys the experience of a handcrafted beverage. So far, we have noticed our audience skewing towards females, but we definitely have loyal and engaged male viewers, too. I think people are still wanting to be social but are craving fresh alternatives on the beverage side.

What are your goals? To encourage others that non-alcoholic beverages can be elevated in a culinary fashion. Ingredients can be fresh and creative. To get people excited about the experience of creating something delicious and visual. Also, to showcase the restaurants mixing up mocktails and amazing brands out there offering fabulous products, from tonics to simple syrups, kombuchas, coffees, and more. We just want to inspire conversations, get people excited about new flavor combinations, and just to have fun really. Another subset of it is to encourage others that you can socialize just fine without alcohol. What inspired you to create Elevated Elixir? My career has a solid foundation in the food and beverage industry. Over the past few years, I’ve toyed with the idea of “breaking-up” with alcohol, but my friends always tried to tell me that I could just keep drinking. Retrospectively, I think they were just worried about losing me (as a drinking buddy), but I can still toast a mocktail with them! After turning 40, I became clearer on my own personal “brand standards” in life and realized that drinking didn’t align with them. For me, alcohol was a false security blanket in social situations, and I feel like I can connect better without it. Ask my friends, I still have plenty of jokes to share after a #topotuesday happy hour. Can you tell our readers about the national “Sober Curious” movement? What is it? Who is involved? What’s

your role in it? Statistics are showing that alcohol consumption is ticking down, partially due to the growing interest in wellness, but also because of people wanting to develop more authentic connections in social settings. There are a number of people involved: leaders in recovery, F&B brands, and people like me, who are all about a happier, healthier, and more delicious lifestyle. I see myself as someone who is all about the experience of getting together over a beautiful beverage. I just want to inspire others with some fresh flavors and perspectives. What is your message to people out there who are having a difficult time dealing with the social pressure to drink? At the end of the day, you are the protec-

tor of yourself and chief curator of your life. If your authentic self doesn’t want to have a drink, just listen to that voice inside. Test it out a couple of times. If you can make it through the first 15 minutes without your go-to glass of wine, you’ve made it through the most difficult part. Have you gotten any local bars/restaurants to change or add to their menus to accommodate the sober curious crowd? Currently, you can go see my pals at Clay Pigeon, Piattello, and Brewed to enjoy a creative mocktail. Also, we have plans to collaborate with Leaves in the near future, who started tapping in to this #sobercurious movement earlier this year with special evenings and concoctions.

Women’s History Month — an officially declared month highlighting women’s contributions to events in history and contemporary society — is celebrated each March in not just the United States but also in Australia and the United Kingdom. With California being known for wine and this commemoration having begun in 1978 as “Women’s History Week” in Sonoma, it only fits that we highlight the women of wine today. Carolyn Wente of Wente Vineyards in Livermore, CA, is a 4th generation winegrower and CEO of Wente Vineyards, the country’s oldest, continuously operated family-owned winery. Her daughters Niki and Aly have also joined the family business as 5th generation winegrowers. They have estate vineyards in Arroyo Seco and Livermore Valley. Lori Felten of Klinker Brick Wines in Lodi, CA, is

a 5th generation grape grower who continues the tradition of cultivating “Old Vine” Zinfandel vineyards that her ancestors planted in the early 1900s. Theresa Heredia of Gary Farrell Vineyards & Winery in Healdsburg, CA, is a highly respected specialist in small-lot, single-vineyard Chardonnay and Pinot Noir. She has championed the next generation style of winemaking by focusing on earlier harvesting, moderate new oak, fresh acidity, and whole cluster fermentation. Under Theresa’s leadership, the winery has earned hundreds of 90+ scores. Oregan has its share of women in wine as well. Desiree Noissete — founder of Mermosa Blanc de Blancs in Willamette Valley — describes mermaids as wildly free beings with powerful voices. With this wine, she honors her “family’s first mermaid,” ances-

tor Celestine Noisette, the Black Haitian woman who arrived on the shores of Antebellum Charleston and negotiated freedom for herself and her children. Right here in Burleson, TX, resides another wine woman, none other than Roxanne Meyers. A mom, globetrotter, and member of the Lost Oak Winery family, Roxanne is known for wearing many hats. From the tasting room to the presidency, she can be credited with growing Lost Oak Winery 600% in the last 13 years, developing a robust event business, and helping Lost Oak expand into the Hill Country. To taste the wines from Gary Farrell Vineyards, Klinker Brick Wines, Mermosa Blanc de Blancs, and Wente Vineyards, one can simply visit your local Central Market. There are definite advantages and disadvantages to different furniture pieces, so be sure to think carefully about which ones you’d like to have your guests sit in. One that is often contested is the bar stool. Not all restaurants have them, while others have a surplus. See why they can work for some restaurants but not in others.

Pros:

There are several pros to having bar seats in your restaurant. For starters, having this option allows for a higher seating capacity for your space. Not only that, but it’s also more inviting for solo diners. Many people travel for work and just want to enjoy a casual meal with a drink or two. Sitting on a bar stool allows for customers like this to relax, enjoy their meal, while also having some light conversation with the bartender. In addition to adding more seating, restaurant bar stools also add more variety into the space. It’s appealing to see different types of furniture in a restaurant, and can even impact the customer’s dining experience. It may seem silly, but since most people have regular chairs in their homes, having the ability to sit in something like a bar stool helps them relax more and enjoy getting out, since it’s less like their homes.

There are so many different ways you can furnish your restaurant. You could go with a more traditional look and have all of your furniture match. Or you could be a bit more contemporary and have a variety of furniture. Either way, you just want your space to look good and make your guests comfortable.

Cons:

Even though there are some clear advantages to having bar stools, there are also some clear disadvantages. One obvious reason is their height. This is usually a problem for older or very young customers, who have trouble getting on and off the stools. While these groups don’t make up your whole customer base, it certainly makes them less likely to come to, or recommend, your restaurant. There’s also an argument from younger people, that says bar stools are clunky and difficult to move. This can be for a few reasons, but mostly happens when the stools have armrests or they don’t

swivel. While having armrests can be nice at times, when the bar area is crowded, it makes moving and getting out of your space rather difficult. Having a swivel bar stool is great because it can help you maneuver out of crowded bars. But if your chair doesn’t have a swivel then sometimes it can seem impossible to get out. Another reason people dislike bar stools is because they’re uncomfortable. Not all bar stools have backs, which doesn’t give the person sitting in one much support. While some people might not mind, this could be a deal breaker for some customers, especially older ones. Also, since stools are usually made of wood or metal,

be sure to provide some kind of cushion too. Both of those options can become really uncomfortable if you sit on them for a long period of time, so the best way to avoid this problem is by buying cushioned stools or a cushion for people to add on their own. It’s clear that bar stools can be great for your restaurant, but they’re not a necessity. Before deciding, look at your space to see if you have room for them in the bar space for them. Keep some features in mind such as armrests, cushions, and the swivel ability when you’re looking, as they may alter the price of the stools.
