Simple Yellow Lentil Dhal
A nice winter warmer lentil dhal. In India, dal is the term used for all dried legumes, but it has also come to refer to a simple, filling stew-like preparation served with rice or flat bread. This yellow lentil dal recipe can be made with any type of lentil, just increase the cooking time 10 to 15 minutes if using black or green lentils. (serves 6) Ingredients

2 tablespoons of rapeseed oil 1 medium onion finely chopped 3 teaspoons of ground cumin 2 teaspoons of red chilli flakes (alternatively 1 red fresh red chilli) de-seed for less heat 2 cloves of garlic 1 teaspoon of salt 200g of rinsed yellow lentils 375ml of vegetable stock 1 teaspoon of ground tumeric
Method
Heat oil in saucepan over medium-high heat. Stir in cumin and chilli, and sauté for 1 minute. Add onion, garlic, and salt, and sauté 2 minutes more. Add lentils, vegetable broth, 2 cups water, and turmeric. Cover, reduce heat to medium-low, and simmer 25 minutes, or until all the liquid has been absorbed.
