CHOCOLATE DIPPED STRAWBERRIES
A recipe for making these delicious chocolate dipped strawberries, as a petit four is the perfect way to end a summer lunch or picnic, served with Hipster's hand roasted coffee or a chilled glass of sweet Jurancon, with its fragrant delicate notes of peach and pear!

Johann Wolfgang Von Goethe Break the chocolate into pieces then melt gently in a thick-sided bowl over a saucepan of water at boiling temperature. ( a Bain Marie ). When the chocolate has completely melted leave to cool slightly.
I love making these with friends and children as a fun thing to do. For the wow factor, you’ll need some pretty mini cases available now in the home baking section at good supermarkets.
Ingredients • 100 gms Dark chocolate 70% cocoa • 1 punnet of fresh picked English Strawberries with stalks intact Beat the chocolate with a large spoon until glossy and smooth and beginning to thicken slightly. Take a firm hold of the stalk of a strawberry and gently dip and coat with chocolate about twothirds of the way up the berry.
Without letting the chocolate smudge allow to set. You can use a cake cooling rack or something similar. When set transfer to paper cases chocolate side up.
Keep refrigerated. These are best eaten fresh and will last for a day or so.
