Starting now, I pledge to give it a little more time and attention. And that’s just one of a series of good intentions I’ve set out with in 2018 – ways of being better. Which is something of a theme for this issue. Not just the usual addressing the diet and moving more stuff, but being more mindful, shopping ethically, doing the things that make us happy, exploring more of the things on offer in our great city and seeing more of the world. That’s a whole lot of mores right there, and here’s another: I really hope you find even more of the things that you love in this issue. We’re particularly excited about our interview with cover star Gizzie Erskine, who seems to have more going on this year than ever before. It’s inspiring reading.

His pictures, which are monumental in scale, depict massive man-made structures and huge gatherings of people in nightclubs, factories, arenas, and vast landscapes — often from a bird’s eye view. In an exclusive chat with Fabric, the TV chef dishes the dirt on her attitude to healthy eating, reveals what she has in the pipeline this year and shares exactly what you need to make it big in the kitchen

Nobody eats a healthier and more balanced diet than a chef, right? Not so, Gizzi Erskine assures me. “Most of the time I am cooking for work and I find that I eat terribly. I either eat in really indulgent restaurants because I have to for work, or I am cooking all day for other people and I just can’t face doing it for myself at the end of the day.” So yes, there are days when she’s powered almost entirely by Coca-Cola, and she has been known to tuck into the odd McDonald’s. “Every so often, if I want to eat some dirt, then I eat some dirt. I love junk. It would be a huge lie if I said otherwise,” she laughs. When she does cook for herself, though, she’s all about making it count. “My attitude full-stop towards cooking and eating is that I love food, and I don’t like to feel inhibited in what I can eat. I believe that when you cook something from scratch, it is good for you. But equally I am conscious that my weight does fluctuate, so I am always careful about eating more veg, cutting back on meat and dairy, eating good fats and oils and as much multi-coloured fruit and veg as I can.” Much of Gizzi’s current focus in on ensuring that people have a better understanding of nutrition, while not forgetting that eating well should be enjoyable. Which is precisely the premise of her book, Gizzi’s

Healthy Appetite: Food to nourish the body and feed the soul, which has just been re-released in paperback. While it may be perfectly timed for those New Year resolutions, with recipes for things like lasagne, garlic chicken kievs and molten caramel and chocolate puddings, this is no diet book. But then for Gizzi, refreshingly, very few foods are actually out of bounds. Is there anything she simply won’t touch? “Yes, but more from an ethical standpoint,” she explains, “because I just don’t like eating sad, factory farmed animals. So I can safely say that I never buy meat or fish from a supermarket. I would rather not eat those things.” It is these beliefs – about food and health – which led to Gizzi’s latest collaboration with model-turnednutritionist Rosemary Ferguson. “Rose and I met a few years ago at a festival. By the end of the night we got to chatting about what we both had in common with regards to food. And we discovered that we both find the whole wellness thing really worthy,” she explains. Rosemary is what Gizzi describes as “a real scientist”, but she is also very pragmatic about healthy eating. “She eats very, very well, and she goes out and she has a good time. Both of us love to go out and get drunk and go out for a burger the day after.” Born out of this shared love is Pure Filth, their joint FABRICMAGAZINE.CO.UK

business venture. Starting with a sell-out pop up restaurant at the Tate Modern late last year, with more pop up sites planned for this year and a permanent address in the offing, the pair set out to design a largely vegan menu of what they describe as healthy food for hedonists. “We didn’t see any reason why we couldn’t make micronutrient dense junk food,” Gizzi explains. “As a chef it was really important for me that it was delicious, but it was so cool to be working with a nutritionist, a scientist. She’d be going, ‘oh, have you thought about what might happen if you dehydrated this, that way we can get more nutrients in…’” Their hero dish, a black bean burger, comes in a beetroot bun, with the option of a real cheese sauce for non-vegan diners (“made with ghee and loads of Red Leicester and Cheddar cheese, and beer”), and served with sweet potato fries, salad, milkshakes made with dairy-free Booja-Booja ice cream and a seasonal raw apple pie bar. “You can hit up to eight of your ten a day in one meal. And most importantly it is absolutely delicious,” Gizzi tells me, grinning. The vegan trend is one she sees continuing to “kick off” in 2018. But what else looks set to be big? “Proper food halls,” she asserts, “supermarkets might get a bit of a sting in London.” It is a somewhat unsurprising answer, given the imminent opening of Mare Street Market, her next big project. “The site is just over 10,000sq ft and we are having a restaurant and an indoor market. Rough Trade are going in there, we’ve got our own coffee roaster, a huge, Harrods-style brass rail deli, loads of cool Hackney brands. George Lamb is broadcasting a radio station from there. There’ll be a huge bar, massive garden with BBQ area. It is going to be amazing…” It is just one of a long list of reasons why 2018 looks set to be an exciting year for Gizzi. This October will see Harper Collins publish her newest book, Slow. “People like putting things into a pot and letting them amalgamate and homogenise together to create something delicious,” she explains when I ask her about the idea behind the book, which teaches the art of slow cooking. “You ask anyone what they want to cook and they will probably say that they want to cook a good stew, a good hearty sauce, a good soup. Those are the skills that people feel that they need,

but they don’t have because these days we are in such a hurry when it comes to cooking.” Gizzi attributes her love of cooking to a childhood spent surrounded by good food. “My mum is a fantastic cook, who believes in good produce and eating really nice things. She was abroad quite a lot when we were young, so I would cook her recipes to make my sister happy when she was missing mum.” After moving out of home at age 17 she continued to cook. “Everyone always says that young people don’t cook, but they actually do. They have to, because they can’t afford to eat out! That’s what I invested all of my money in.” Speaking of which, where does Gizzi believe we should spend our money when it comes to the kitchen? “I love a proper gadget – chefy things like my Thermomix, but they are so expensive that I hate recommending them. Really you need nothing more than a decent knife, decent chopping board and decent pans. With that you can go far in the kitchen,” she assures me. That, and, of course, the right clothes – Gizzi has become known as much for her look as her cooking. A look that does not encompass traditional chef’s whites: “For years women were cooking in trousers that were designed for men’s hips rather than women’s, they look really ugly and they are hot and too tight in all the wrong places,” she shudders. So when Gizzi heard that chef Maxine Thompson was designing a range of trousers for female chefs, a collaboration felt natural. Gizzi’s PolkaPants are styled on the 60s cigarette pant, and made from a distinctive hand-printed leopard print fabric. “They are really functional, and they have got stretch, and they make your arse look amazing,” she laughs. Something that is almost as important as having the right skills and a good set of knives, apparently!

METABOLIC BALANCE Meeting Gloria Parfitt at The Hale Clinic, my hopes are high. Having discovered the secret behind the notable weight loss of a well known Insta celeb (nope, sorry, my lips are sealed…), I was optimistic that if anyone could reverse my weight gain, she could. As the country’s leading practitioner in – and success story herself of – Germany’s Metabolic Balance diet, Gloria’s enthusiasm and positivity are contagious. She explains to me the principles behind the diet; that everyone’s needs are unique, so it’s little wonder that ‘one size fits all’ diets vary so wildly in their success rates. After my blood tests have been analysed, I will be given a personalised plan of permissible foods and a meal plan, plus a set of rules that will set me up for success. These include leaving at least five hours between meals, no eating after 9pm, and choosing a different protein for each meal – they’re firm rules, but the list isn’t long, and I’m delighted to see my favourite smoked fish and avocado feature on my list, and a host of yummy meal ideas immediately present themselves.

All this, however, after Phase One – the detox. This is seriously strict: absolutely nothing but your choice of vegetables, rice or potatoes, but it only lasts for two days, and even I can handle a bit of hardship for 48 hours. There is also the Epsom salts element, but frankly the less said about that the better, apart from the sage and sorely learnt imperative to NOT leave the house for an entire day of car shopping immediately after taking them... Phase Two lasts for 14 days, during which I discover myself on more intimate terms with my kitchen scales than I’d have previously thought possible, and portions aren’t large; however, the effects of the... well, metabolic balancing, I guess, are almost immediate, and after a couple of days I find I’m barely hungry at all, despite eating extremely modestly. Before long it’s time for Phase Three, which is ongoing. It isn’t vastly

different from Phase Two but does have one vital modification – the inclusion of a treat meal of your choosing once a week. This not only provides a regular kick start to the metabolism, but – essentially – provides psychological relief, helping even the most faddy of dieters to stay the course. So, what’s the verdict? Well, at 12 days in I’ve already shifted half a stone, which I’m delighted about. But despite this, Metabolic Balance is no ‘wham bam thank you ma’am’ quick fix. Gloria talks of aiming for around 3-4 lbs of weight loss per week, which is reassuringly steady and sensible, and with my energy levels soaring and my appetite well and truly under control, I’m feeling genuinely excited about continuing. Going under the needle without the use of Botox or fillers: incorporating acupuncture into their facials for truly transformational results. I’ve used acupuncture in the past to resolve a whole host of healthrelated issues, so I really believe that it works, and that I have nothing to fear. And it goes without saying that, as with all of the treatments on offer at the clinic, the experience is as important as the results, so I know that relaxation and pampering will come part and parcel. It is everything I expect and more (not least because it means escaping from the kids for two hours on a Sunday morning). My therapist chats to me about my areas of concern before settling me on the comfortable bed and switching on some relaxing music. After thoroughly cleansing

my face, she inserts ultra-fine needles into my problem zones. So fine, in fact, that I can barely feel them. While they are left to do their work – they are responsible for stimulating circulation in order to improve collagen production – I’m treated to a relaxing massage of my neck, shoulders, head and hands. After removing the needles the therapist uses a combination of facial massage and jade rolling to soothe the skin. All too soon, 90 minutes are over. I think I can see an immediate difference – a tighter, brighter complexion – but I’m assured that the real results will be after a couple of days. BOMBAY BUSTLE Recently home from the trip of a lifetime to India, I am struggling – even more than usual – to soldier through the dark days of winter. The colours, smells and tastes, and the feeling of the warm sun on my skin are all so torturously clear in my mind… What I need, I reason, is a reminder of those happy days. It comes in the form of Bombay Bustle, on the site of Hibiscus on Maddox Street. Still revelling in the glory of a Michelin star for Jamavar, Samyukta Nair and Rohit Ghai have just opened their second London restaurant, with a menu inspired by the great cultural melting pot of Mumbai. It is a celebration of home-style Indian comfort food, including many of chef Rohit’s own mother’s recipes. Perfect for my current mood.

Stepping through the door, I truly feel like I have been transported to another land. Designed to feel like a train on Mumbai’s suburban network, the restaurant is all green leather seating, melamine tables, cosy carriage-style booths and luggage rack coat hooks, all so beautifully designed by Fabled Studio that it is not even a tiny bit twee. We start with a trio of dishes from the small plates selection. Spicy scrambled egg served on truffled naan is a pleasant surprise, while the Adipoli prawns are garlicky and gloriously plump and juicy, but the perfect dosas filled with delicately spiced duck and accompanied by creamy coconut chutney are a clear winner for us. Though there is plenty more to tempt us here – enough to enjoy a whole meal of tapas-style shared dishes, in fact – we are keen to sample the mains, too, and opt for a lamb biryani and paneer butter masala with a side of daba dahl. And we regret nothing. With spice levels perfectly pitched, everything tastes authentic and delicious. We’ve precious little room for pud, but the knowledge that, downstairs, the restaurant boasts its own dessert bar, makes it hard for us to resist. And the chocolate samosas, washed down with a glass of warm chai, are definitely worthy of those extra calories. As indeed is everything we have tucked in to. The area’s best-loved deli, Panzer’s, has recently re-opened with a gorgeous new look and exciting new product lines, and while that isn’t exactly breaking news, you may not have heard about the store’s rather brilliant juice bar, which opens this month. Just in time for that detox… Though all of the juices sound delicious, we’ve a hankering for a shot of purple power, made with almond milk, frozen banana, peanut butter, winter berries, cacao, oats and cinnamon. Co-founder of Yeotown Kitchen When I was a child I wanted to be… a gymnast and ballerina and opera singer – a real multi-tasker! The first thing I cooked was… bran muffins! Not sexy, I know. I can still remember my mom teaching me how to pour in molasses, which she would use as the sweetener. My kitchen heroes are… my little girls, because I am constantly inspired by how keen they are to experiment with different recipes, and that they have such a love of cooking (and getting messy doing it!) at such a young age.

In her book, Gizzi’s Healthy Appetite (Mitchell Beazley, £15), which was re-released last month, chef Gizzi Erskine is keen to start a new food revolution; one where COOK people have a better understanding of nutrition, but don’t forget that eating THIS should be enjoyable. And we think there’s no better place to start your food revolution than with a spot of breakfast. Gizzi says: “This baked porridge has the same emotional connection for me as a baked rice pudding. It is more of a brunch dish than a breakfast one. I say it’s a brunch dish because it’s slow-cooked in the oven, ideal for when you don’t want to sit and watch and stir porridge. It takes almost an hour to cook from start to finish, but it’s worth it. In Scotland we would have eaten this pretty plain, made with milk and a spot of salt, then scooped out of the dish and topped with brown sugar and more milk, but here I’ve made a healthier version that omits the sugar and will put lots of goodness into your body. I make this looser than most baked porridges as I hate stodgy porridge.”

INGREDIENTS coconut oil, for greasing 200g porridge oats 3 tbsp oat bran 2 tbsp coconut sugar or maple syrup ½ tsp salt 2 bananas, mashed 1 litre milk or almond milk 1 tsp vanilla extract 100g blueberries 100g raspberries toasted flaked almonds, to garnish

Preheat your oven to 200°C/Gas Mark 6 and liberally grease a baking dish with coconut oil. Pop the oats and oat bran in a large mixing bowl. In a separate bowl or large jug, add the mashed bananas, milk, vanilla extract, sugar or syrup and salt, and stir. Pour this mixture over the oats and oat bran and leave to stand for 5 minutes, or until the oats start to absorb the liquid. Arrange the blueberries and raspberries into the prepared baking dish, pour the porridge mixture over the top and bake for 25 minutes. Sprinkle the flaked almonds over the top, then return to the oven and continue to bake for another 25 minutes, or until golden brown on top. Allow to cool for 5 minutes, then serve with more almond milk if required.

My fail-safe dinner party menu is… seasonal salad with roasted root vegetables, toasted hazelnuts, pumpkin seed oil and pears as a starter. For mains, I find healthier versions of ‘comfort food’ favourites, which can suit both vegans and non-vegans, always work well. So, something like dairy-free mac and cheese with a cashew truffle sauce and kale with ginger and pomegranate molasses, with warm beluga lentils, spiced butternut squash and a warm mustard vinaigrette as a main. My last meal on earth would be… my mom’s salted dry cod and her ‘pan con tomate’ (Spanish style tomato on bread). When I feel down, I cook… paleo cookies with chocolate shards and coconut flakes. So yummy and comforting. My favourite London restaurant is… at the moment, of course, Yeotown Kitchen. But for special nights out, River Café is always a winner. My ultimate London day consists of… walking. A fast with lasting effects

A 10-day fast at the Buchinger Wilhelmi clinic in Germany will reboot your system, boost your energy levels and leave you lighter and brighter than before WOR DS C L A I R E ATH ERTO N

hen you live in a city full of fantastic food, it’s hard to imagine choosing to go hungry. So when I told people I was going to a fasting clinic for 10 days, the overwhelming response was ‘WHY?’ The answer was that since starting the 5:2 diet, I’d noticed that a couple of annoying niggles – like a permanently runny nose and falling into a near coma after lunch – would ease or stop altogether when I was fasting. So I started reading about the benefits. And I found an article about the Buchinger Wilhelmi clinic, on the shores of Lake Constance in southern Germany. Dr. Otto Buchinger founded the clinic in 1920, after curing his own rheumatism by fasting for 19 days. Since then, successive generations of his family have helped guests to lower their cholesterol, insulin and blood pressure levels, treat allergies, ease the pain of arthritis and – of course – lose weight. They’ve done this by running the clinic like a luxury hotel, with comfy beds, attentive staff and

every need taken care of. (Apart from the need to eat, of course.) To take your mind off that minor detail, there’s a packed daily program of activities, including meditation, exercises classes, guided walks and film showings. There’s also a fully equipped gym and a heated outdoor pool. If you’re feeling masochistic, you can even go to a cookery demonstration. FUEL FROM WITHIN But where does the energy to be active come from if you aren’t eating? During a fast, the body switches to ‘internal nutrition’. Put simply, that means it generates most of its energy from burning fat (hooray!). It also transforms proteins into glucose, to provide the brain with energy and to keep cell renewal going. So you’re still getting fuel – just without involving your digestive tract. But inevitably, the body needs time to adjust to this new mode. My second day in the clinic was a ‘digestive rest day’, which meant I ate three delicious fruit- and vegetable-based meals. I had my first appointment and

weigh-in with the nurse, saw a doctor, did a full blood test and booked the therapy sessions that came free with my package (personal training, nutrition and counselling). I felt chipper until about 6pm; then the headache hit. The next day, the first of my fast, was a challenge. I washed my 250 calories of thin vegetable broth down with litres of water, tea and a laxative called Glauber’s salt. The latter was so effective that it was soon apparent why they ask you to stay in your room for four hours afterwards. Exhausted, weak and headachy, I tried to remind myself why I was doing this by watching a film on the clinic iPad. I learnt that fasting is an essential animal activity – a way of surviving the winter. And as the average human body has 10kg of fat, we’ve got enough to survive for 40 days. So there really was no immediate danger of starving. I also felt better after my first hot liver compress. This is a hot water bottle that the nurse wraps in a towel around your middle, before tucking you in and telling you to sleep for two hours. At noon. It’s bliss. A TURN FOR THE BETTER The next day, I woke after a long, deep sleep to find that I felt okay. Still hungry – which for me never fully went away – but calm, rested and with enough energy to wander around the pretty town of Überlingen. In fact, apart from one morning when I felt weak and dizzy, I stayed in this relaxed state for the rest of the fast. I started to enjoy the daily routine – nurse check-up at 7.30am, a gentle exercise class at 8am, tea with honey in my room at 9.30am, fruit juice in the salon at 11.45am, hot liver compress at noon, a walk, swim or gym visit at 2.30pm, another hot water bottle at 4pm, back to the salon for broth at 6pm and in bed binge-watching Stranger Things by 9pm. I even, by some quirk of the schedule, got away with only having one

enema during my stay. (Although they apparently quell hunger pangs, so I might have benefited from having a few more.) A DIFFERENT KIND OF NORMAL After five days of this strangely soothing routine, it was time to break my fast – with apple compote and a single nut (go crazy!), followed by a deliciously thick soup in the evening. It felt like a feast after what I’d got used to. And the two 800-calorie days that ended my stay left me completely sated. So what were the health benefits of putting myself through all that? Well, my runny nose still ran, but a lot less than before. My back still ached, but the personal trainer gave me stretches that really helped. And of course, I lost weight – 7lb overall, with 2cm from my waist. I also found out that I’m very low in vitamin D, so I now take supplements. But three weeks after leaving the clinic, I’m still benefiting from the feeling of wellbeing that comes from rebooting your system. My energy levels and mood are still much more stable than before. I’m drinking far less coffee and eating a lot more vegetables. And because I find fasting much easier than before, I’ve kept the weight off that I lost by doing the 16:8 – where you do all of your day’s eating in one eight-hour window. The one downside? When I reintroduced red wine I came out in a rash on both forearms. I’ve decided to keep drinking it until that stops happening. (buchinger-wilhelmi.com)

The founder and CEO of Designed by Woulfe transformed this late-Victorian mansion f lat into a sublime entertaining space that balances understated luxury with playfulness. What’s more, it’s dog proof…

S

caffolding shrouds the front of the St. John’s Wood Edwardian mansion block and there are boxes of tiles and builder’s paraphernalia on the landing outside Brian Woulfe’s first floor apartment – classics signs of a renovation in progress. Brian opens the door to me, shadowed by his adorable eight-month-old puppy, the deliciously named Chow Mein. But as I step into the apartment, it’s immediately apparent that this is very much a finished project (bar a few tiles being replaced on the front

balcony). The overall impression is of smooth planes of bold colour, punctuated by textured surfaces and mid-Century silhouettes with just a hint of Art Deco. It is, quite simply, stunning. It’s a far cry from the dark and gloomy space that Brian and his partner first encountered when they viewed the property. “The previous owner was a woman in her eighties, who’d lowered the ceilings by 1.5m and blocked up the fireplace to make the space easier to heat,” Brian tells me. “We had to strip everything back to the joists and replace pretty much

everything: wiring, plumbing, even the chimney breast. We did keep some of the original architraves, though, and an old wood panel on the bay window.” Incredibly, this massive project took just 10 weeks from start to finish. “Something of this scale would normally take around six months,” admits Brian, “but we called in lots of favours, and begged to jump queues. The kitchen was pre-planned, which helped, but the sequencing of the works was very complicated. In the final two weeks, sometimes there were 20 or so people in the house.” FABRICMAGAZINE.CO.UK

Brian takes me on a tour of the apartment. The attention to detail everywhere is breathtaking: hand patinated surfaces, sleek chamfered edges on wardrobe and cabinet doors, a shagreen pattern cast in bronze on the headboard and bedside cabinet doors in the master bedroom. And incredibly sophisticated lighting, one of the most striking – or should I say subtle – features of this apartment. “I always start a project with a lighting plan,” explains Brian. The lighting is as beautiful as it is functional, from the low-level PIR inset lights in the skirting boards, to the ceiling lights in the master bedroom that throw pools of light on to the soft folds of the cashmere curtains (yes, cashmere). The teal velvet border on these gorgeous floorto-ceiling drapes, which perfectly matches the colour of the sumptuous upholstered headboard, was not, however, part of the original design. “Chow Mein chewed the bottom,” says Brian ruefully. This is a dog with seriously expensive tastes. Repeating shapes unify the space – the circular mirror in the sitting room is echoed by the wall-mounted ceramic artwork in the hallway and the globe-shaped pendant light above the dining table. Colour is a unifying element, too. Even though block colours dominate, every room has hints of colours from the other rooms – but there’s no white paintwork anywhere in the flat. “I’ve used an off-white, a pearlescent shade that’s softer, less brilliant than white,” explains Brian. “It’s so much easier to keep clean, especially on skirting boards, which are a major consideration with a dog like Chow Mein in the house.” The apartment is very much a place for living and relaxing. “It’s a feel-good space,” says Brian. Take the dining area – the Tom Faulkner table with marble top and custommade Lazy Susan was designed with 64 |

entertaining very much in mind. “It’s a great social table, we use it for playing games as much as eating. During the day I often sit and work at it, with my laptop and papers spread out all over it. The table seats eight people, and I made sure that we had enough seating for everyone in the living room, so that no-one had to perch on the arm of a sofa with their pre-dinner drink. We chose the Flexform swivel armchairs because guests can turn around and talk to us if we’re in the kitchen cooking.” Cast bronze surfaces are a striking feature of Brian’s home. The standout piece is the magnificent drinks cabinet in the dining area with its Shou Sugi Ban (charred timber) effect doors. Like every piece in this home, a huge amount of thought has gone into how it can enhance the room’s ambience. It’s backlit and when you open the doors, clever interior lighting provides another layer of illumination. Brian was in charge of all the interior design decisions, but the one thing that his partner was not prepared to compromise on was the large TV. “I had to concede that point. But I really didn’t want the screen to be the focus of the living room, so I found the most minimalist model that I could. I chose this particular shade of blue for the walls so that the black screen would recede into the space.” And just to prove that aesthetics and practicality can go hand in hand, the TV is on an arm that swings out into the room at right angles so that you can watch it while sitting at the dining table. I ask Brian how he’d describe his style. “It’s a classic/contemporary mix, with metallic accents – bronze and brass. It’s classic in the sense of the way that the space is organised, with the bay window as the focal point for the dining area, the fireplace is the focal point of the living area. But it’s a relaxed, liveable

space, not at all precious. I want guests to feel comfortable in it, not to be worried about spilling something on the rug, or where to put their glass down. We have a dog, so we have to be practical – the flooring is engineered wood that’s sealed and can be sanded back, the rug isn’t an expensive silk one and can easily be replaced.” There’s a playfulness at work here, too. From the Arte wallpaper in the guest bedroom with its giant flamingos, to the artwork in the corridor created from a piece of broken skateboard and the trio of brass pineapples sitting on the coffee table, there are little whimsical touches throughout the apartment that soften its classical edges. Does he have a favourite piece? Brian ponders the question for a moment. “My orchid bowl has followed me everywhere,” he says. “I bought it in Thailand, and it’s a bit battered and bruised now, but in a refined interior like this that makes it even more interesting.” So why did Brian decide to put down roots in St. John’s Wood? “I’m a country boy at heart,” he says, “I grew up on a farm in Ireland, so I need to be near green spaces. Here, we’re close to Regent’s Park and Paddington Recreation Ground. The streets are very wide and tree-lined, so you have a real sense of space. Plus, the master bedroom has a balcony and overlooks a garden with glorious mature trees.” Another draw was the apartment’s perfect east/west orientation. “The sun pours in through the kitchen and dining room windows in the morning, and it sets over the garden behind the master bedroom. So the flat is drenched in light all day long.” After the grand tour, we sit down in those supremely comfortable Flexform swivel chairs for a coffee and a chat about Brian’s career to date, which hasn’t exactly followed a traditional path. “I was a concert pianist,” he reveals. “But I realised that spending six to eight hours a day 66 |

sitting on my own practising wasn’t really for me. So I decided to move away from performing and set up my own classical music label, Landor Records. I was also interested in interior design and had helped people out on various projects. Then I moved to Thailand where I worked with a developer on a big project. He liked my attention to detail, and what had been a hobby up to that point, turned into a career.” Since his first project in Thailand, Brian has worked all over the world: New York, Majorca, Sydney and the Hollywood Hills. “I’m just about to

start another project with an old New York client who has bought a new apartment,” he tells me. But his main focus now is on the UK, and alongside his private client projects, Designed by Woulfe is talking to a number of developers. “I’m helping them change direction with their show flats. So many new development interiors are a bit characterless, with a very neutral palette. I think that developers could be braver with colour – interiors should have personality.” And personality is something this apartment certainly has in spades. (designedbywoulfe.com)

10 TOP TIPS TO ENSURE A SMOOTH SALE Thinking about putting your property on the market in 2018? Simon Nosworthy, Head of Residential Conveyancing at Osbornes has the lowdown on what to do now to avoid frustrating delays later 1 Find out how big your outstanding mortgage is, and whether there are any early redemption penalties. If you contact your mortgage provider they should be able to provide this information in writing or over the phone.

Locate the title deeds for the property. They may be with your mortgage provider if you have one; however, many mortgage lenders no longer hold title deeds, so they may have been passed to you when you purchased the property, or if you recently re-mortgaged. The deeds might also be with a solicitor that you have used in the past. It is especially important to check this when selling a leasehold property – it can be really useful to have the original lease if it is available. 2

3 Locate all planning permissions for recent work done to the property. You should definitely have paperwork available for work that required planning permission in the last 10 years. If these documents have been lost, you should be able to obtain copies from the local authority. 4 Locate all building regulations consents for work done at the property. For example, if you have had replacement windows installed since April 2002, you will need building regulation consent or a FENSA certificate from the installer. Also, if you have had a new boiler installed after 1 April 2009 you will need to provide a Gas Safe certificate. Boilers installed before that date require a CORGI certificate. You should be able to obtain copies of lost documents from the local authority or online from the certificate provider.

Gather together all warranties and guarantees for any works done at the property, such as 5

replacement windows, cavity wall installation, timber or damp treatment. If these documents have been lost, you should be able to obtain copies from the guarantee or warranty provider.

leasehold, and you also have a share of freehold owned by a company that is limited by share capital, then you need to ensure that you have the original share certificate to hand.

6 If your property was built in the last 10 years then you should locate the original home building warranty that would have been supplied by a provider such as NHBC, Zurich or Premier Guarantee, to name just a few.

Taking the time to locate and obtain the documents and information listed above can save days or even weeks at the end of the sale. You can avoid the needless frustration that so many sellers feel when exchange is delayed because the buyer’s solicitors are “still waiting” for documents such as FENSA certificate or ground-rent receipt. If you pull together this basic documentation as soon as your house is put on the market, you will have time to obtain any lost documents before a sale is agreed and the legal work begins.

7 Obtain a set of recent utility bills (the water bill is most important, but your legal representative will probably also ask for a council tax bill and possibly also electricity). If you pay your bills by direct debit, make sure to get an annual statement from the utility provider and give that to your legal representative instead. 8 Locate notices that you have received in relation to neighbouring properties such as party wall act notices or notices of planning applications and decisions for these properties. 9 Arrange an Energy Performance Certificate (EPC). An EPC gives a property an energy efficiency rating from A (most efficient) to G (least efficient) and is valid for 10 years. It also provides information as to how you could make your home more energy efficient. An EPC is required for every sale. If you are selling through an estate agent, your estate agent can assist you with getting your property assessed. 10 If yours is a leasehold property, request an up-to-date ground-rent receipt from your landlord or managing agent. In the 19th century, Notting Hill was dominated by a racecourse – the Kensington Hippodrome – which was built as a rival to Epsom and Ascot. Covering 140 acres, the course was only in operation for five years, from 1837 until 1842. It eventually closed due to lack of financial success and the area was redeveloped. A passion for pastoral care The Independent Schools Inspectorate evaluates schools for it, there’s a national association dedicated to promoting it and the Independent Schools Association runs courses on it. Pastoral care has shot up the education agenda in recent decades. But what is it, and how can you tell if your child’s current or prospective school does it well? “Pastoral care is about nurturing and supporting the whole child, so they can achieve their academic and personal potential,” says Seth Bolderow, headmaster of Wetherby Senior School. “It’s not about removing obstacles, but about giving them the tools and strength of character to deal with those obstacles. So when exams and social pressures come along, they can cope.” In independent schools, pastoral care is delivered by tutors (supported by heads of section and a deputy head pastoral), with counselling available. But it’s part of every teacher’s role to look out for children who may need help. The aim is to create a culture where children feel comfortable to talk about worries or concerns, explains Seth. To establish if your child’s school has this culture, he suggests asking: 1 Who will be your point of contact if you’ve got a concern about your child? For a boarding school, it’ll be a housemaster or mistress. But with a day school, you need to check if there’s someone who will see your child every day.

2 What will that person’s contact be with your child? Will it just be in small groups, or will there be any oneto-one time? And who can they escalate issues to? 3 What will the school do if someone notices a downturn in academic work, or a change in mood? What support can they call upon or refer pupils to? 4 What’s the school’s personal, health, social and economic (PHSE) curriculum? When and how do they cover topics like sex, drugs, alcohol, social media and internet safety? 5 Finally, how do they tackle bullying? Good practice isn’t just to punish the bully. It’s to provide restorative justice, rebuild relationships and explore what made that child bully in the first place.

E X PA N D I N G H O R I Z O N S Wetherby Senior School is set to grow with the opening of its new Sixth Form Centre this September

September 2018 sees two new exciting developments at Wetherby Senior School. The opening of a second building, Hannah House, only a few minutes’ walk from the original building on Marylebone Lane, will double the size of the school. The new building will house a number of academic departments, a library and a spacious dining hall, as well as providing rehearsal and teaching space for the Music Department.

This summer is also the first time Year 11 students will sit their GCSE examinations. Year 11 are pioneers – they will become the first Sixth Form students in September next year. The development of Hannah House has given the school the space to create a Sixth Form Centre in the heart of the original building, which will have study and relaxation space as well as a café that boys can use throughout the day. The Year 11 pupils have been involved in the planning of many aspects of the Sixth Form, and will continue to help as the school finalises plans for their space. Boys who move into the Sixth Form will be able to build on the skills they have learnt as they have moved up through the school. Philosophy and thinking skills are built into the timetable from Year 7, helping the boys to develop into critical, creative and independent thinkers who know how to question what they are told and have their own opinions. These skills

will prove invaluable as they move into A Level study, where they will be expected to take more responsibility for their academic progression. Whilst the school encourages and helps them to learn independence, the pastoral support that is a key part of the Wetherby education will continue in the Sixth Form. The boys will all have a tutor to turn to for help and guidance with their studies, their university applications and dealing with the pressures that go along with aiming for the top universities in the UK or abroad. A programme of lectures will stimulate them academically and prepare them for the challenges that are to come in the future. Links are being built with girls’ schools in the area; this will allow boys to engage in a wider variety of activities and collaborate on the stage, in music ensembles and in charity endeavours. All of which will help them to build the skills to become effective leaders of the student body in their final year and make the most of the opportunities that will be presented to them in the next stage of their education. I knew from 16 years old that I wanted to study architecture, but I had a wobble on leaving school where I toyed with the idea of being an artist. One year of art school and I was sure I wanted to pursue architecture. Art is too abstract. What can you offer clients that others can’t? Very considered interior layouts, attention to detail and a passion for materials. We offer a high level of service and flexibility and make the whole process enjoyable! What’s your personal ethos? The more you work on something, the better it gets. Describe your dream project Converting a period building into an art museum. What’s your top tip for lighting a home in winter? The colour temperature of your light bulbs has a huge impact on the quality of light: make sure you’re using ‘warm’ light bulbs, especially with LEDs. What advice would you give to someone looking for an architect or interior designer? Make sure you like them as a person as it’ll be a long and intimate journey! Suffering from the January blues? There’s a simple answer: use lighting to create a warm, cosy and inviting home. “January makes you want to hunker down with friends and family for what the Danes call ‘hygge’,” says Michele Haynes, interior designer and property stylist for sale. “Lighting can create that warmth. But in the UK, we haven’t yet cottoned on to how crucial it is to use dimmers to make our lighting soft.” Her advice? “If you only do one thing, ask an electrician to adapt your overhead lights onto a dimmer. It’ll enable you to vary the mood in your home.” Michele has six more tips for lighting up your life: 1 Make the most of the daylight you have. Swap your light-blocking curtains for horizontal Venetian blinds.

They come in many lovely colours and finishes, from pastel wood to aluminium. And you can angle them so you can enjoy the view while keeping your privacy. 2 Get reflective. Swap your current lights (or just the shades) for ones made of copper, brushed gold or glass – trending now, they’ll add interest and bounce the light around. Curiousa & Curiousa (curiousa.co.uk) do some beautiful shades. 3 Mix up your textures. Too much glass can be cold and harsh, so mix it with tactile products, such as wood. The steam-bent oak lights from Tom Raffield (tomraffield.com) are simple but decorative. 4 Create little lighting vignettes around the room. Tom Dixon’s Beat Lights make

for lovely floor lights in a corner or by a sofa (tomdixon. net). Candles in glass holders are great on a mantelpiece. And decorative bulbs like those from Tala (talaled.com) would look beautiful on bookshelves. 5 Use lighting to create interesting spaces and shapes. Uplighters make spaces appear bigger and fresher: try a rope light or simple track lights under your kitchen cupboards. Or fit wall washes, which cast light up and down to create a lovely shape. You can even put portable directional uplighters on the porch to welcome your guests.
