Rik Marley: Dreams and Serendipity LOCAL BREWER BRINGS CREATIVITY AND EXPERIENCE TO BREWMASTER’S JOB AT FLYING GOOSE BREW PUB & GRILLE

R

Rik Marley didn’t plan on becoming a brewmaster and his path to brewing expertise was paved with a combination of serendipitous good luck combined with obsessive research and study. It all started one afternoon in a beer store in Concord, New Hampshire, in the late 1990s. Rik and his wife were home between the fall and winter tours of the Vermont band Phish. Rik estimates he’s seen the band “400 times,” and that lifestyle of following the perennially touring band had a direct connection to his eventual career as a beermaking expert. WOULDN’T IT BE NEAT? At the time, craft beer hadn’t exploded yet, and finding a beer store that carried a good selection of craft brew was not overly common. Browsing the shelves with his wife, Rik was struck by the choices before him. “Wouldn’t it be neat if you could make your own beer,” he remarked. An employee overheard him and brought him into the back room. The store had “a whole laboratory setup back there. It was pretty cool.” Rik bought his first home brew kit then and there. The challenge of learning the alchemy of hops and malt brought out the researcher in Rik. “I did terrible in high school. I did terrible in college. But things that I really enjoyed, I would do a lot of research. I enjoyed home brewing right off the bat. I did a lot of research, read a lot, bought a lot of books.” Rik went from brewing one batch a month to two, then upwards of three and four batches per month, and from using prepared ingredients like malt extract to using actual grains and malting them himself. “Pretty soon I had a little warehouse of homebrewing equipment that went with me wherever I moved. It became an obsession.”

FROM PASTIME TO OBSESSION TO CAREER Not only was it a pastime—an obsession—that was fun and enjoyable, it became Rik’s job. And here’s where the story loops back to Phish. He began to use his brewing abilities to fund his trips following the band. He would come home, brew up a new batch, bottle it, and then pack it up in the van and head out to the next tour date to sell his wares on the lot at Phish shows. “We made enough money to sleep in hotels and eat properly and buy concert tickets and gas to get to the next show. And come home with extra money.” It was also an extensive apprenticeship in brewing beer. “It was a pretty cool way of life,” says Rik. But all good things come to an end, and eventually Phish stopped touring. Since following Phish was about the band, not the lifestyle, the appeal evaporated. So, Rik moved back East and got a job as the assistant brewer at the Woodstock Inn Brewery in Woodstock, New Hampshire. The job came about through a bit of serendipity when he and his wife visited the brewery and Rik got to talking with the brewer. Turned out, the brewer was getting ready to move on and had given his notice. “Let me try some of your homebrew,” he told Rik. Duly impressed, the brewer put in a word and Rik got the job. 10,000 HOURS The next phase of Rik’s development as a brewing expert was what he calls his year of “ten thousand hours,” after Malcolm Gladwell’s proposition in his book Outliers that it takes ten thousand hours of practice to become an expert at something. During that year from 2008 to 2009, Rik was working at the Woodstock Inn Brewery, as the head brewer at the now-defunct Italian Oasis in Littleton, and taking the master brewer’s certification program at the American Brewers Guild in Middlebury. He also had a little daughter at home by now. During his scant free time, he would work on recipe formulation and brew about a batch a week.

In August of 2009, Rik moved on to his current position as head brewer at Flying Goose Brew Pub & Grille courtesy of another bit of serendipity. Rik ran into the head brewer of Flying Goose, who told him he was leaving that position and there would be a job opening. Rik applied, and beat out a number of other qualified brewers to take the spot. The Flying Goose in New London is a casual, familyfriendly pub and restaurant that serves up comfortable and varied fare. They also have a demonstrated commitment to sustainability and efficiency. They source ingredients locally as much as possible and in 2011 the Flying Goose became the first solar-powered brewery in New Hampshire. Rik has gone to great lengths to improve efficiency in the brewery. The brewhouse he took over can be described as a “Frankenbrewery— there were dairy tanks, repurposed water storage tanks,” Rik says. “When I first got there, the efficiency was terrible. The yield was terrible. I have worked over the last 12 years to make it the most efficient brewhouse we can get.” Efficiency refers to how much product is produced in comparison with the raw materials that go in. One hundred percent efficiency would mean that a pint of water going in would come out as a pint of beer. “That’s literally impossible unless you’re in a lab,” says Rik, who has succeeded in achieving an efficiency rate of 88 to 90 percent. For comparison, other breweries, even large newer breweries, run at 75 percent efficiency and home brewers typically get a mere 64 percent. FERMENTATION IN THE IMAGINATION Rik’s imagination is fertile and he credits his productivity to his dreams and middle-of-the-night brainstorms. “A lot of these recipes that I brew—this is going to sound crazy, but to be honest I dream about a lot of these recipes. A lot of times I don’t even need to write it down.”

And people have responded to that creativity. Certain brews are so popular that it would be “brewer self-sabotage” to take them out of rotation. Long Brothers IPA is a case in point. “I’ve had people call me up and be like, ‘You’re so stupid, why’d you take Long Brothers off?’ And I’m like, Dude we’re just out of it right now. Calm down.” IN TRIBUTE As part of their commitment to their values, the Flying Goose has launched several fundraising initiatives. Beer lovers can enjoy a pint of Forever Locked Lager knowing they are supporting the Forever Locked program of the Wildlife Heritage Foundation of New Hampshire. A nonprofit partner of the New Hampshire Fish and Game Department, the Foundation aims “to educate both kids and adults on New Hampshire’s natural world, provide scholarship support for youth to attend New Hampshire’s Barry Conservation Camp, and contribute to conserving wild places in the Granite State,” according to their website, nhwildlifeheritage.org/forever-locked. A new initiative coming to the Flying Goose this summer is a beer named after and inspired by Rik’s good friend Jen

Hauser, who is gravely ill with cancer. “She’s pretty […] awesome. She loves IPAs. We’re going to do a really cool label.” Hauser Session IPA will clock in at 4.9% ABV and will on tap in mid-May. A percentage of the proceeds from each batch will be donated to Amy’s Treat, a nonprofit in Dover that is “dedicated to providing solutions to the day-to-day difficulties of living with cancer and offers unexpected ‘treats’ to renew the spirit,” according to their website, amystreat.org. After 12 years with Flying Goose and more than 20 in the brewing field, Rik is still energized by the work. “My favorite to brew is something new that I’m not sure how it’s going to come out.” And like any true brewing aficionado, when asked his own favorite, Rik’s answer is, “The next one.”  Rik Marley, Brewmaster Flying Goose Pub 40 Andover Road New London, NH (603) 526-6899 FLYINGGOOSE.COM

Sunapee Ragged Kearsarge Greenway THE EMERALD NECKLACE OF THE SUNAPEE REGION

The Sunapee Region of New Hampshire is rightfully known for its namesake lake and mountain, which allow residents and visitors to enjoy hiking, fishing, swimming, beautiful scenery, bird and wildlife sightings, as well as just being. But there is a treasure hiding in the region that deserves wider recognition.

The Sunapee Ragged Kearsarge Greenway (SRKG) is a series of 14 linked trails, 75 miles long, that circumnavigate the Sunapee region, connect the peaks of Sunapee, Kearsarge, and Ragged, and traverse ten towns. The network of trails was conceived in the 1980s by a group of folks from the Ausbon Sargent Land Preservation Trust, Lake Sunapee Protective Association, and the Society for the Protection of New Hampshire Forests. It is now overseen by a nonprofit corporation whose mission is to “create and maintain a forever green, great circle of trail corridors and conserved lands.

THE GREEN CORRIDOR “From our standpoint, maintaining this green corridor, this 75 miles of hiking trails, is a huge benefit and valuable part of the community with an enormous impact,” says Dave Gardner, a volunteer with SRKG. “I’ve lived in other parts of New England where there really aren’t trails that are publicly accessible. [The SRKG is] an awesome benefit, not only recreationally, not only to the tourist economy, not only to the health benefits to the community but also to the environmental benefits of preserving this green corridor.” The SRKG is one of the more accessible trail systems in New Hampshire, in the sense that it does not take the kind of experience or fitness required by, say, a Presidential Traverse, in which backpackers hike all eight peaks of the Presidential Range in the White Mountains. The land that the SRKG trails cross is a combination of public and private lands that are minimally developed, giving hikers the opportunity to enjoy a sense of wilderness while still being in reach of civilization. The Sunapee area is not as remote


as the White Mountains, nor are the summits as high. Any person who can hike for a few hours can complete any of the SRKG trails. And they can do it knowing that they are never more than a couple of hours from a road or population center. The trail even goes through downtown Sunapee, Newbury, and Andover. BEAUTIFUL VIEWS, BEAUTIFUL FORESTS Lisa Hoekstra, an “unofficial expert” on the trail, who has hiked all of the trails multiple times, speaks movingly of the beauty of the trails. “There are sections that cross streams and rivers where if it’s been rainy, you might have to take off your shoes and roll up your pants, and sections where it’s wet and they have put up bridges and boardwalks. And there are places where it is just so beautiful because you’re walking through a pine forest and it’s soft underfoot from the needles.” The terrain across the 75 miles is quite varied and also includes sections that are “sharp and stony and rooty, and you have to be really careful.” And of course, there are the views from each of the principal summits plus several smaller peaks. Despite being not far from populated areas, the undeveloped terrain is home to many native species. “Definitely bear abundant,” says Lisa. “Definitely see deer— just about on every section, I’ve seen deer at one point or another. There’s one section I call moose alley because every time I walk it, I see evidence of moose.”

FINDING YOUR WAY A guidebook and map can be purchased from the SRKG website as well as at local bookstores. The trails are numbered 1 through 14, and the guidebook recommends following the trails in a clockwise direction. Trails are marked with green and white trapezoid-shaped markers. Trail number one begins in Newbury Harbor. After a short walk up Route 103, away from the harbor and onto a residential street, hikers enter the forest on the Newbury Trail. The trail climbs to a ridge and traverses the shoulder of the South Peak of Mount Sunapee before continuing to Sunapee’s main summit. After a couple hours of hiking, you’ve bagged your first peak. The trail continues down the Summit Trail to Old Province Road. That first stroll up Route 103 isn’t the only time the trails utilize public roadways. The whole system of trails is linked together using a number of roads. You’ll duck under Interstate 89 twice and cross Route 4a a couple times, and cross Routes 11 and 114, plus a few minor roads. But these forays onto traffic ways are just a few beads on the “emerald necklace” that is the SRKG. The lion’s share of your time on the trail will be in state forests and parks, private woodlands, and on old unmaintained roads. Along with the hike through Mount Sunapee State Park and over the summit of Mount Sunapee, the trail system winds through Gile State Forest, over Ragged Mountain, into Winslow State Park and Mount Kearsarge State Forest

Park, over Mount Kearsarge, through Black Mountain Forest, through Shadow Hill State Forest, and into Wadleigh State Park, before returning to Newbury Harbor. HIKING ALL 75 MILES Hikers who succeed in hiking every single trail can earn an award, a handsome medallion with the SRKG logo on it. The typical way for hikers to tackle the 75-mile loop is a little bit at a time. “I’ve done it that way,” says Dave. “I’ll do a hike one weekend and then do another the following, or a month later, or whatever.” It’s kind of like hiking all 48 of the 4,000foot peaks in New Hampshire. Some people bang them out in a few months, and some will take years to finish them all. For the fast hikers among us, the trail system is also the venue for an ultradistance race. The Ragged 75 Stage Race takes place in early August and launches from Ragged Mountain Resort in Danbury. The race is challenging but well-supported and popular. And some fleet individuals have attempted to race the trail system independent of any organized event. In 2015, Tom Flummerfelt achieved the fastest known time of 17 hours and 44 minutes, as recorded on fastestknowntime.com. Of course, there is the inevitable question: what about camping and multi-day hikes? The short

answer is that there isn’t a great way to do a multiday camping adventure on the trail. Much of the land the SRKG traverses is privately owned or part of state parks, and there is only one campground, at Mount Sunapee State Park, on the trail system. MONUMENTAL TASK, BUT WELL WORTH IT “We love thru-hikers. We love people using the trails,” says Dave. The issue with multi-day thruhiking is the camping. “We don’t have, and we do not maintain any campsites. We’re not set up to maintain shelters like the Appalachian Trail does. We don’t own any of the land.” Taking on the task of not just building but maintaining a shelter or campsite is well beyond the current capacity of the nonprofit organization. Merely maintaining the 75 miles of trails and coordinating with the conservation commissions of the 10 host towns plus local, regional, and state organizations is a monumental task. But it’s a task of tremendous value to the health and well-being of the community, its natural environment, and those who call this place home. Sweet Beet Market: More Than Just Veggies BRADFORD MARKET SUPPORTS THE COMMUNITY THROUGH ACCESS TO AND EDUCATION ABOUT HYPERLOCAL PRODUCE

In 2015, five young folks and one retired teacher had a vision for what a community could be, centered around a “restorative local food system” and using community outreach and the promotion of economic and environmental viability to help their community flourish into the fullest expression of itself. Out of that vision, Sweet Beet Market was born. THE OPPORTUNITY TO SOLVE PROBLEMS Hanna Flanders is the co-founder of the Kearsarge Food Hub, a nonprofit organization that takes a multifaceted approach to strengthening the local food system and community. Sweet Beet Market is one branch of that hub and began life as Sweet Beet Farm Stand on route 114 in Bradford. After college, Hanna returned to the Kearsarge area where she grew up and, along with three classmates from Kearsarge High School and two other visionaries, was motivated to bring to fruition some core beliefs about how best to serve a community. “How we grow and distribute and share food is a great opportunity to solve so many problems,” says Hanna. “How we use land, how we connect to each other, how a community can become more resilient, how we can work on social justice issues. It’s all really connected to our food. So, we came back home and wanted to strengthen our local food system however we could.” The farm stand was supplied by the farm Hanna and her teammates started, where they learned how to grow food in responsible, sustainable ways. They connected with other local farmers to bring their products into the farm stand along with what the Sweet Beet farm was growing. The farm stand offered not only fruits and vegetables but also meat, dairy products and eggs, maple syrup and honey, “and all the great things being produced locally.” While the Sweet Beet team was learning about farming and running a business, the project supported the surrounding agricultural community by providing a new market outlet; it was also an attempt to gauge the interest in the community for their ideas. After a couple of years, Sweet Beet Farm Stand was offered the opportunity to expand from a seasonal farm stand to a year-round market. Local company Unless, LLC had recently purchased the old Bradford Inn at 11 West Main Street and wanted to renovate

it into something that would serve the community. Owners Mike Bauer and Mike James invited the Sweet Beet crew to move their business into the inn. This bigger, indoor space gave them the opening to act on some of their larger ambitions. The Sweet Beet team did a community fundraiser and built a commercial kitchen, then grew their farm from a few plots of land spread throughout Bradford to a single location. Sweet Beet Market opened in 2017, and in 2018 the business registered as a 501(c)(3) nonprofit. WHAT IS “HYPERLOCAL”? The market offers vegetables and fruits from 20 “hyperlocal”—meaning within 30 miles—produce farms, plus eggs and meat from hyperlocal smallscale producers. “Small-scale meat production is something we feel really strongly is an important part of a sustainable food system,” says Hanna. Sweet Beet Market has a lot more on offer than visitors to the store might guess at first glance. They’re “more than veggies,” as Hanna likes to say. Shoppers can find staple New Hampshire items such as local maple syrup, honey, and jam. Also on offer are a great book selection on recipes, seasonal eating advice, and farming how-tos; local handmade jewelry; and mugs featuring the Sweet Beet logo made by Bradford artist Susan Moss. To round out their offerings, Sweet Beet Market works directly with 70 producers throughout New

Hampshire to provide a variety of lightly processed food items. They get items such as pickled goods and spicy hot sauces from Genuine Local in Meredith. They receive regular deliveries of seafood from local fishermen cooperative NH Community Seafood as well as natural and specialty foods from a regional wholesaler. Minimal-ingredient baked goods come fresh from their own kitchen and area bakers such as Blue Loon Bakery and Orchard Hill Breadworks. Working with Food Connects, a food hub based in Brattleboro, Vermont, allows Sweet Beet to source fresh produce from the Connecticut River Valley of western Massachusetts. High-tunnel growing and the slightly longer growing season of southern New England bring fresh produce to Sweet Beet throughout the year. To make the market as much of a one-stop shop as possible, Sweet Beet sells sustainable home goods such as bamboo utensils, cleaning products and supplies, and metal straws and food storage containers. NOURISHING MINDS AS WELL AS BODIES One of the most critical parts of the Kearsarge Food Hub’s mission is to educate the community about aspects of food production, farming, sustainability, and more. As part of that mission, they organize trips to the farm for students from first grade up through college. They will also visit classrooms to “talk about where food comes from, how to connect with your food, how to grow food,” says Hanna. “One of our outcomes that we’re hoping for is producing more farmers.” CONNECTING THROUGH CONFLICT The journey Sweet Beet embarked on almost six years ago has brought them a long way, but it hasn’t been without pushback. Bradford has a population that spans the socioeconomic spectrum, and Sweet Beet Market has always had the aim to serve the community as a whole—to serve the whole range of consumers in their region. “We believe strongly that conflict can be a great way to connect,” says Hanna. “And there is a lot of conflict around how to develop in town. Some people want to redo the sidewalks and revitalize the buildings and attract more young people and visitors, while others are pushing back on that type of change. What we’re trying to do with our message is try to figure out how there can be a place for everybody. Inclusivity is a huge value of ours.”

Sunapee Cruises: A Family Business Anchored to the Community GENERAL MANAGER “CAPTAIN TIM” FENTON DESCRIBES PILOTING THE FAMILY BUSINESS THROUGH A PANDEMIC

F

Family businesses are the heart of any community, and Sunapee Cruises has been the heartbeat of local families since the 1960s.

Sunapee Cruises General Manager Tim Fenton grew up in the family business— literally. His parents owned Appleseed Restaurant in Bradford, and the family lived above the restaurant. The connection between Appleseed Restaurant and Sunapee Cruises is vital and goes back to 1999 when Appleseed took on the job of food service managers for the dinner cruise boat MV Kearsarge. They’d had years of experience with the boat when, in 2003, they officially purchased Sunapee Cruises. Sunapee Cruises is solidly a family business and has been in the family for 60 years. The grandfather and father of Tim’s wife, Lacey, owned it before the Fenton family, and Lacey grew up working on the boat. At one time or another, the whole family has worked on the boat. “My wife will still work on the boat, my brother-in-law, my sisters-in-law. It’s a very family-oriented business.” FACING THE PANDEMIC CHALLENGE The past year has been a challenging one for Sunapee Cruises. The COVID-19 pandemic has been especially tricky for public cruise boats. In the early days of the pandemic, the New Hampshire governor’s office for COVID-19 response was issuing regulations, mandates, and orders at a steady clip. Every business in the state needed guidance on whether they could stay open, how

many people could be in a building, and many other questions specific to each industry. There were guidelines for restaurants, grocery stores, outdoor attractions, hairdressers, and the list goes on. None, however, specifically related to public cruise boats. Navigating the sea of regulations to stay in compliance, not to mention keeping their staff and customers safe, was confusing and took time. And once they received approval to operate, the regulations had a significant impact on the number of guests they could have on board. For the dinner boat, they were operating at half capacity. For the afternoon narrated cruises, they were limited to about a third of normal capacity. Tim estimates they lost close to 75 percent of their private charters. “It was our most financially difficult season ever,” says Tim. “Operating expenses are substantial, and profits are typically made on days when the boats are full.” WEATHERING THE STORM TAKES CREATIVITY Creativity was required to keep the business afloat. Buffet-style meals have always been successful in terms of profitability and pleasing customers, but COVID required a switch to plated meals. This was safer for the health of passengers and crew but had the added effect of controlling food costs. Sunapee Cruises booked private cruises where the passengers were all from a single family or where the group was smaller than their usual minimum. And to encourage groups to book, they offered to waive the standard cancellation fees. “We just tried to think creatively about how to make people feel safe while continuing to make enough earnings.” They even tried running cruises no matter how small the group. However, they quickly discarded that approach because passengers ended up feeling strange or even guilty about being the only ones aboard. In talking with Tim, the importance of taking care of the crew through the difficult year is evident. “We wanted to make sure that our staff could continue to make a living,” says Tim. During the off-season, there is work for those who want it, and those employees are absorbed into the restaurant business at Appleseed. And clearly, that care goes both ways. Many crew members come back year after year to work the boats; one of the boat captains retired after 37 years of cruising. And when the COVID storm overtook the business, the staff manned their positions. “Our crew is awesome and willing to help in whatever ways they could.” MV KEARSARGE SAILING INTO THE SUNSET Sunapee Cruises runs two boats every season from May through October. Their flagship is MV Kearsarge, a dinner cruise ship that sets off at sixthirty in the evening. It’s a little more formal than the daytime cruises and serves a sit-down meal. MV Kearsarge has been cruising Lake Sunapee for 40

seasons and is due to retire by the end of this season. A new boat, formerly a Missouri riverboat, is currently en route and will be renovated to take its place as the new dinner boat for Sunapee Cruises. FISH STORIES AND LEGENDS The sister ship to the Kearsarge is MV Mt. Sunapee II, which hosts a narrated lake cruise daily at two p.m. The narration varies from cruise to cruise, depending on the captain. Each captain puts their own flair on the narration, emphasizing different bits of local lore or natural history. Typically featured are the surrounding mountains, lighthouses on the lake, notable homes and personalities, as well as fish stories and legends. A cruise on MV Kearsarge or MV Mt. Sunapee II is part of the lake tradition of many families who return every year. Tim tells of twin sisters who have been vacationing on Lake Sunapee since they were little girls and take a cruise to celebrate their birthday every year. Every summer is marked by a series of special cruise dates, from a Mother’s Day brunch cruise to wine pairing cruises and cruises that celebrate Love Your Lake Day in August. The fireworks cruise for Independence Day is very popular. But for Tim, one of his personal favorites is when he has the opportunity to sneak away for an afternoon and enjoy the two o’clock tour. It’s a rare treat for the boss to kick back, enjoy a cold brew on the top deck, and simply be one of the cruisers. “My family, we really love the lake community; we love Sunapee,” says Tim. “We’re not some giant unreachable corporation. We usually head up Burkehaven Hill Road which gets the only hill “over with” at the beginning. This 3.6-mile loop passes lovely homes and views on the way up the hill. At the top of the hill, the views open up to very grand and majestic lake and Mount Sunapee views across beautiful fields and meadows. Wind your way down past an area of beautiful homes originally built at the turn of the century. The stone chapel of Saint James Episcopal Church holds services in the summer months. THE KEZAR LAKE LOOP Hands down, I love the Kezar Lake loop in North Sutton which primarily hugs the shore and also has a short diversion out to open fields and a wetlands wildlife haven. SNORKELING IN LAKE SUNAPEE Snorkeling in Lake Sunapee can be an exciting experience. There are two places that offer some unique views. Loon Island Lighthouse has some major boulders surrounding it and on occasion some pretty big bass. Another site is off the east side of Emerald Island in Burkehaven. There are some large white quartz rocks and usually some good-sized fish hanging around. The best time for snorkeling is during the dry season when there is less turbidity in the water and better visibility. Surface temperatures in August are in the mid-seventies.
